    Harina de piñón (Araucaria araucana (Mol.) K. Koch). Obtención y evaluación de la calidad nutricional y sensorial

    La Araucaria araucana es un árbol originario de la Cordillera de los Andes, cuyo fruto es conocido como piñón. Dicha semilla presenta un alto valor energético y proporciona una gran cantidad de carbohidratos y fibra, lo que permite diversas formas de empleo en productos alimenticios que aún no han sido exploradas; desaprovechando así su potencial gastronómico. Actualmente, la tendencia en investigación se inclina hacia la búsqueda de materias primas alternativas para la elaboración de nuevos productos con valor agregado. El objetivo fue evaluar aspectos nutricionales y sensoriales de la harina de piñón, su capacidad antioxidante, aplicada en galletas de piñón libres de gluten. Se determinó la composición química de la harina de piñón, contenido de polifenoles totales y actividad antioxidante mediante DPPH•. Se elaboraron galletas libres de gluten, y se analizó la composición nutricional y aceptabilidad de atributos color, sabor, aroma, textura y apariencia a través de escala hedónica de 9 puntos en 157 jueces no entrenados previo consentimiento informado. La harina de piñón presentó un contenido mayoritario de carbohidratos (75%), proteínas (6,5%) y grasas totales (5,7%). Se observó la presencia de capacidad de captación de radicales DPPH• (IC50 2342,72 μg/mL), probablemente asociado al contenido de fenoles totales encontrado (0,65 mg EAG/g harina deslipidizada). La textura fue el atributo mejor evaluado (7,01 puntos), seguido de color, sabor y apariencia, los cuales obtuvieron medias de puntaje similares entre sí. El aroma de las galletas recibió el puntaje medio más bajo (5,85 puntos). Las galletas evaluadas sensorialmente fueron aceptadas por más del 80% de los jueces. La harina de piñón es un alimento rico en carbohidratos, con moderado contenido de polifenoles y capacidad antioxidante, de buena aceptabilidad sensorial, cuyo consumo permitiría optimizar los recursos locales y potencialmente impulsar el mercado regional.Fil: Bergesse, Antonella Estefanía.     The aim of this article is to highlight the importance of 'spatiality' in understanding the materialization of risk society and cultivation of risk sensibilities. More specifically it provides a cultural analysis of pathogen virulence (as a social phenomenon) by means of tracing and mapping the spatial flows that operate in the uncharted zones between the microphysics of infection and the macrophysics of epidemics. It will be argued that epidemic space consists of three types of forces: the vector, the index and the vortex. It will draw on Latour's Actor Network Theory to argue that epidemic space is geared towards instability when the vortex (of expanding associations and concerns) displaces the index (of finding a single cause)

    This chapter offers a detailed reading of McEwan’s 2012 novel Sweet Tooth as a highly self-conscious and allusive literary spy thriller of the Cold War era, one which invites a renewed attention to the Cold War themes, ideas and literary strategies which have been important in his work since the late 1970s in which the novel is set. These flourished especially in the two novels written around the fall of the Berlin Wall, The Innocent and Black Dogs which also receive extended treatment here. In McEwan’s reworking of the Cold War spy thriller as postmodern literary fiction we find, it is argued, a recurrent fascination with misunderstandings and readjustments in emotional and political relations between the sexes as an analogy for Cold War politics and vice versa. Added to this McEwan increasingly packs his fictions with informed literary debate that constitute a profound exploration of literary genres and of the complex relationship between author and reader

    Effect of plasma shaping on performance in the National Spherical Torus Experiment

    The National Spherical Torus Experiment (NSTX) has explored the effects of shaping on plasma performance as determined by many diverse topics including the stability of global magnetohydrodynamic (MHD) modes (e.g., ideal external kinks and resistive wall modes), edge localized modes (ELMs), bootstrap current drive, divertor flux expansion, and heat transport. Improved shaping capability has been crucial to achieving Βt ∼40%. Precise plasma shape control has been achieved on NSTX using real-time equilibrium reconstruction. NSTX has simultaneously achieved elongation κ∼2.8 and triangularity δ∼0.8. Ideal MHD theory predicts increased stability at high values of shaping factor S≡ q95 Ip (a Bt), which has been observed at large values of the S∼37 [MA (m·T)] on NSTX. The behavior of ELMs is observed to depend on plasma shape. A description of the ELM regimes attained as shape is varied will be presented. Increased shaping is predicted to increase the bootstrap fraction at fixed Ip. The achievement of strong shaping has enabled operation with 1 s pulses with Ip =1 MA, and for 1.6 s for Ip =700 kA. Analysis of the noninductive current fraction as well as empirical analysis of the achievable plasma pulse length as elongation is varied will be presented. Data are presented showing a reduction in peak divertor heat load due to increasing in flux expansion. © 2006 American Institute of Physics

    Dualities of dementia illness narratives and their role in a narrative economy

    YesThe concept of 'narrative economies' has recently been proposed as a set of exchange relationships that, through biography and story-telling, facilitate access to resources and act as a source of value. We utilise this concept to inform our analysis of 18 qualitative interviews with five people with dementia and four informal carers. Our participants are members of a pre-existing group of dementia advocates, representing the voices of those living with the condition. There are a growing number of people in the early stages of dementia - like our participants - being called upon to account for their experience, as a means of developing a politicised 'collective illness identity'. These interviews present an opportunity to study a group of people who are actively involved in speaking as, and for, people with dementia. Four themes emerged from the data: becoming a voice of or for people with dementia; biographical reinforcement; responsibilisation; and resistance. These themes illustrate the ways in which people with dementia participate in their own identity construction and, as representatives of those living with dementia, they also illustrate the ways in which illness narratives produce material and symbolic value

    Narrative intelligence in nursing: storying patient lives in dementia care

    This paper examines narrative approaches to care within the context of dementia. It reviews the function of stories and explores some of the narrative genres that shape the cultural perceptions of dementia. We argue that narrative intelligence within healthcare is an important element in nurturing communal self-identity for people living with dementia. Listening and responding to stories and the cultural framework that this encompasses is an embodied action that is not just related to cognitive recall but situates us within a cultural community. People with dementia may have challenges in maintaining narrative legitimacy in the face of fractured stories and incoherent narratives. Health professionals can offer support in reframing and presenting counter stories that maintain identities that can potentially be marginalised, silenced and open to narrative foreclosure. This process requires health professionals to be attentive and responsive to how patients with dementia and their supporters construct and position the stories they tell and the meaning(s) they attach to them

    The James Webb Space Telescope Mission

    Twenty-six years ago a small committee report, building on earlier studies, expounded a compelling and poetic vision for the future of astronomy, calling for an infrared-optimized space telescope with an aperture of at least 4m4m. With the support of their governments in the US, Europe, and Canada, 20,000 people realized that vision as the 6.5m6.5m James Webb Space Telescope. A generation of astronomers will celebrate their accomplishments for the life of the mission, potentially as long as 20 years, and beyond. This report and the scientific discoveries that follow are extended thank-you notes to the 20,000 team members. The telescope is working perfectly, with much better image quality than expected. In this and accompanying papers, we give a brief history, describe the observatory, outline its objectives and current observing program, and discuss the inventions and people who made it possible.
