    Encapsulation of ascorbic acid promotes the reduction of Maillard reaction products in UHT milk

    The presence of amino groups and carbonyls renders fortified milk with ascorbic acid particularly susceptible to the reduction of available lysine and to the formation of Maillard reaction products (MRPs), as Nε-(Carboxyethyl)-L-lysine (CEL), Nε-(Carboxymethyl)-L-lysine (CML), Amadori products (APs) and off-flavors. A novel approach was proposed to control the Maillard reaction (MR) in fortified milk: ascorbic acid was encapsulated in a lipid coating and the effects were tested after a lab scale UHT treatment. Encapsulation promoted a delayed release of ascorbic acid and a reduction in the formation of MRPs. Total lysine increased up to 45% in milk with encapsulated ascorbic acid, while reductions in CML, CEL and furosine ranged from 10% to 53% compared with control samples. The effects were also investigated towards the formation of amide-AGEs (advanced glycation end products) by high resolution mass spectrometry (HRMS) revealing that several mechanisms coincide with the MR in the presence of ascorbic acid (AA)

    Pyrolysis-gas chromatography (Py-GC) has become well established as a simple, quick and reliable analytical technique for a range of applications including the analysis of polymeric materials. Recent developments in Py-GC technology and instrumentation include laser pyrolysis and non-discriminating pyrolysis. Progress has also been made in the detection of low level polymer additives with the use of novel Py-GC devices. Furthermore, it has been predicted that future advances in separation technology such as the use of comprehensive two-dimensional gas chromatography will further enhance the analytical scope of Py-GC

    Biomass in the manufacture of industrial products—the use of proteins and amino acids

    The depletion in fossil feedstocks, increasing oil prices, and the ecological problems associated with CO2 emissions are forcing the development of alternative resources for energy, transport fuels, and chemicals: the replacement of fossil resources with CO2 neutral biomass. Allied with this, the conversion of crude oil products utilizes primary products (ethylene, etc.) and their conversion to either materials or (functional) chemicals with the aid of co-reagents such as ammonia and various process steps to introduce functionalities such as -NH2 into the simple structures of the primary products. Conversely, many products found in biomass often contain functionalities. Therefore, it is attractive to exploit this to bypass the use, and preparation of, co-reagents as well as eliminating various process steps by utilizing suitable biomass-based precursors for the production of chemicals. It is the aim of this mini-review to describe the scope of the possibilities to generate current functionalized chemical materials using amino acids from biomass instead of fossil resources, thereby taking advantage of the biomass structure in a more efficient way than solely utilizing biomass for the production of fuels or electricity

    Rapid 13C NMR Hyperpolarization delivered from para-hydrogen enables the low concentration detection and quantification of sugars

    Monosaccharides, such as glucose and fructose, are important to life. In this work we highlight how the rapid delivery of improved 13C detectability for sugars by nuclear magnetic resonance (NMR) can be achieved using the para-hydrogen based NMR hyperpolarization method SABRE-Relay (Signal Amplification by Reversible Exchange-Relay). The significant 13C signal enhancements of 250 at a high field of 9.4 T, and 3100 at a low field of 1 T, enable the detection of trace amounts of these materials as well as the quantification of their tautomeric makeup. Using studies on 13C and 2H isotopically labelled agents we demonstrate how hyperpolarization lifetime (T1) values can be extended, and how singlet states with long lifetimes can be created. The precise quantification of D-glucose-13C6-d7 at the millimolar concentration level is shown to be possible within minutes in conjunction with a linear hyperpolarized response as a function of concentration. In addition to the measurements using labelled materials, low concentration detection is also illustrated for millimolar samples with natural abundance 13C where isomeric form quantification can be achieved with a single transien
