The emergence of international food safety standards and guidelines: understanding the current landscape through a historical approach
Following the Second World War, the Food and Agriculture Organization (FAO) and the World Health Organization (WHO) teamed up to construct an International Codex Alimentarius (or 'food code') which emerged in 1963. The Codex Committee on Food Hygiene (CCFH) was charged with the task of developing microbial hygiene standards, although it found itself embroiled in debate with the WHO over the nature these standards should take. The WHO was increasingly relying upon the input of biometricians and especially the International Commission on Microbial Specifications for Foods (ICMSF) which had developed statistical sampling plans for determining the microbial counts in the final end products. The CCFH, however, was initially more focused on a qualitative approach which looked at the entire food production system and developed codes of practice as well as more descriptive end-product specifications which the WHO argued were 'not scientifically correct'. Drawing upon historical archival material (correspondence and reports) from the WHO and FAO, this article examines this debate over microbial hygiene standards and suggests that there are many lessons from history which could shed light upon current debates and efforts in international food safety management systems and approaches
Analysis of 61 exclusive enteral nutrition formulas used in management of active Crohn's disease - new insights into dietary disease triggers
Background:
Exclusive enteral nutrition (EEN) is an effective treatment for Crohn's disease.
Aims:
To investigate the hypothesis that ingredients of EEN formulas are unlikely to initiate a disease flare and that their dietary elimination is not essential for disease amelioration.
Methods:
We performed compositional analysis of EEN formulas with evidence of efficacy in management of active Crohn's disease. Macronutrient content was compared against the dietary reference values (DRV), the UK National Diet and Nutrition Survey (NDNS) and intake of Crohn's disease children. Food additives were crossâreferenced against the FAO/WHO database.
Results:
Sixtyâone formulas were identified with variable composition (carbohydrates [22.8%â89.3%], protein [7.8%â30.1%], fat [0%â52.5%]). Maltodextrin, milk protein and vegetable/plant oils were the commonest macronutrient sources. Their nâ6:nâ3 fatty acid ratio varied from 0.25 to 46.5. 56 food additives were identified (median per formula: 11). All formulas were lactoseâfree, glutenâfree, and 82% lacked fibre. The commonest food additives were emulsifiers, stabilisers, antioxidants, acidity regulators and thickeners. Food additives, implicated in Crohn's disease aetiology, were present in formulas (modified starches [100%], carrageenan [22%], carboxymethyl cellulose [13%] and polysorbate 80 [5%]). Remission rates did not differ between EEN formulas with and without those food additives. Analysis including only formulas from randomised controlled trials (RCTs) retained in the latest Cochrane metaâanalysis produced similar findings. EEN formulas contained less energy from saturated fat than NDNS intake.
Conclusion:
We have identified food ingredients which are present in EEN formulas that are effective in Crohn's disease and challenge perceptions that these ingredients might be harmful

A risk ranking process identified Salmonella spp. and pathogenic verocytotoxin-producing Escherichia coli (VTEC) as current high-priority biological hazards for meat inspection of bovine animals. As these hazards are not detected by traditional meat inspection, a meat safety assurance system for the farm-to-chilled carcass continuum using a risk-based approach was proposed. Key elements of the system are risk-categorisation of slaughter animals for high-priority biological hazards based on improved food chain information, as well as risk-categorisation of slaughterhouses according to their capability to control those hazards. Omission of palpation and incision during post-mortem inspection for animals subjected to routine slaughter may decrease spreading and cross-contamination with the high-priority biological hazards. For chemical hazards, dioxins and dioxin-like polychlorinated biphenyls were ranked as being of high potential concern; all other substances were ranked as of medium or lower concern. Monitoring programmes for chemical hazards should be more flexible and based on the risk of occurrence, taking into account the completeness and quality of the food chain information supplied and the ranking of chemical substances, which should be regularly updated to include new hazards. Control programmes across the food chain, national residue control programmes, feed control and monitoring of environmental contaminants should be better integrated. Meat inspection is a valuable tool for surveillance and monitoring of animal health and welfare conditions. Omission of palpation and incision would reduce detection effectiveness for bovine tuberculosis and would have a negative impact on the overall surveillance system especially in officially tuberculosis free countries. The detection effectiveness for bovine cysticercosis, already low with the current meat inspection system, would result in a further decrease, if palpation and incision are removed. Extended use of food chain information could compensate for some, but not all, the information on animal health and welfare lost if only visual post-mortem inspection is applied
Effects of lime and organic amendments derived from varied source materials on cadmium uptake by potato
Repeated applications of Cd-rich phosphate fertilizers have resulted in elevated concentrations of this toxic element in some New Zealand soils. Exceedance of the food safety standard for Cd (0.1 mg kgâ»Âč fresh weight) has been reported for potato (Solanum tuberosum L.). Composts may efficiently sorb Cd in soil and therefore reduce its phytoavailability, leading to reduced uptake by plants. We aimed to determine the potential of various composts, shredded corn stover, and lime at two different rates to reduce the transfer of Cd from a soil (containing 1.45 mg kgâ»Âč Cd) to potato (var. 'Nadine'). In the control, the peeled tubers, skins, leaves, and stems had Cd concentrations of 0.04, 0.09, 0.26, and 0.53 mg kgâ»Âč dry weight, respectively. There was a 71% reduction in tuber Cd concentrations in potatoes grown in soil amended with 5% (w/w) shredded corn stover, although it significantly decreased potato biomass. Potatoes grown in soil amended with pig manure compost, mushroom compost, sawdust-animal waste compost, and municipal compost at rates of either 2.5 or 5% (w/w) reduced tuber Cd concentrations by 58 to 66%, 46 to 63%, 52 to 53%, and 29 to 49%, respectively. Lime (1.3%) application in soil reduced tuber Cd concentrations by 50%. Composts significantly increased tuber biomass. Further work is warranted to identify the key components of composts that result in reduced Cd uptake by plants
