    Characterization of collagen and fatty acid composition of “Carne Mirandesa-PDO” veal

    The objective of this study was to evaluate chemical parameters related to meat quality, contributing to a better characterization of “Carne Mirandesa-PDO” veal. This study was made in three farms, from the Northeast region of Portugal (PG, FA1 and FA2), where calves were raised permanently indoors, nurse from their dams overnight, and fed with hay and concentrate made with local ingredients and soybean meal. Twenty five calves were slaughtered at 7 months old. Twenty four hours after slaughter, samples were collected from four different muscles: longissimus dorsi (LD), semimembranosus (SM), gluteus biceps femoris (GB) and triceps brachii caput longum (TBL), vacuum packaged and freeze-dried. Determinations of crude protein (CP), ether extract (EE), collagen and fatty acid were made. Collagen, CP and EE were significantly (p<0.001) affected by muscle type. Fatty acid composition was mostly affected by farm and by muscle type. The SM muscle was poor in saturated fatty acids (14:0, 15:0, 16:0, 17:0 and 18:0) and richer in polyunsaturated fatty acids than the other muscles. The ratio between n-3 and n-6 PUFA observed in this study are close to the usually found for pasture fed animals indicating the healthy value of “Carne-Mirandesa PDO” veal

    Inactivation of Listeria monocytogenes by pulsed light in packaged and sliced salpicĂŁo, a ready-to-eat traditional cured smoked meat sausage

    The efficacy of pulsed light (PL) for the surface decontamination of a sliced ready-to-eat cured meat product, salpicão, was studied. The surface of the slices was inoculated with Listeria monocytogenes (107 cfu/g), and then PL treatment was applied. Microbial analyses (L. monocytogenes, coagulase-negative Staphylococci (CNS), Lactic acid bacteria (LAB) and Enterobacteriaceae) were performed immediately after the treatment. pH, aw, colour and volatile profile were also evaluated. Response Surface experimental Design was applied regarding factors voltage (ranging from 1828 to 3000 V) and distance (ranging from 2.6 to 5 cm) to the light source, and a maximum of 16.11 J/cm2 energy dose was achieved. A reduction of 1.58 log cfu/g in L. monocytogenes count was obtained when a fluence of 5.31 J/cm2 was applied. Enterobacteriaceae, LAB and CNS endogenous microbial populations were not influenced by PL treatment. PL application reduced a* values and influenced b* values without impacting the sample ΔE or L* values. The potential oxidative effect of this technology was evaluated by solid-phase microextraction (SPME) and gas chromatography-mass spectrometry (GC-MS), and no significant changes were verified after its application in this sliced cured meat product.info:eu-repo/semantics/publishedVersio

    The effect of Nannochloropsis oceanica feed inclusion on rabbit muscle proteome

    Nannochloropsis oceanica is a microalga, highly concentrated in protein and EPA (eicosapentaenoic acid). It has a recalcitrant cell wall that decreases nutrient digestibility. The objective of this study is to evaluate the effect of Nannochloropsis oceanica feed inclusion on the muscle proteome of fattening rabbits. Twenty rabbits were housed in individual cages for 5 weeks and were fed a control diet (n = 10) and one with 4.45% inclusion of microalga, replacing whole soybean meal (n = 10). After slaughter, samples of gastrocnemius muscle were taken for label-free proteomic analysis. A total of 1497 proteins were identified, 46 with differential abundance. Control rabbits had high abundance of proteins related to protein metabolism, suggesting higher muscle protein turnover. They also had higher abundance of structural proteins, suggesting a less tender meat by comparison with algae-fed rabbits. These had high abundance of proteins related to amino acid catabolism (Phe, Tyr) and synthesis (Gln).     Heavy quarkonium: progress, puzzles, and opportunities

    A golden age for heavy quarkonium physics dawned a decade ago, initiated by the confluence of exciting advances in quantum chromodynamics (QCD) and an explosion of related experimental activity. The early years of this period were chronicled in the Quarkonium Working Group (QWG) CERN Yellow Report (YR) in 2004, which presented a comprehensive review of the status of the field at that time and provided specific recommendations for further progress. However, the broad spectrum of subsequent breakthroughs, surprises, and continuing puzzles could only be partially anticipated. Since the release of the YR, the BESII program concluded only to give birth to BESIII; the BB-factories and CLEO-c flourished; quarkonium production and polarization measurements at HERA and the Tevatron matured; and heavy-ion collisions at RHIC have opened a window on the deconfinement regime. All these experiments leave legacies of quality, precision, and unsolved mysteries for quarkonium physics, and therefore beg for continuing investigations. The plethora of newly-found quarkonium-like states unleashed a flood of theoretical investigations into new forms of matter such as quark-gluon hybrids, mesonic molecules, and tetraquarks. Measurements of the spectroscopy, decays, production, and in-medium behavior of c\bar{c}, b\bar{b}, and b\bar{c} bound states have been shown to validate some theoretical approaches to QCD and highlight lack of quantitative success for others. The intriguing details of quarkonium suppression in heavy-ion collisions that have emerged from RHIC have elevated the importance of separating hot- and cold-nuclear-matter effects in quark-gluon plasma studies.     Evidence of Color Coherence Effects in W+jets Events from ppbar Collisions at sqrt(s) = 1.8 TeV

    We report the results of a study of color coherence effects in ppbar collisions based on data collected by the D0 detector during the 1994-1995 run of the Fermilab Tevatron Collider, at a center of mass energy sqrt(s) = 1.8 TeV. Initial-to-final state color interference effects are studied by examining particle distribution patterns in events with a W boson and at least one jet. The data are compared to Monte Carlo simulations with different color coherence implementations and to an analytic modified-leading-logarithm perturbative calculation based on the local parton-hadron duality hypothesis.Comment: 13 pages, 6 figures.     Search for Higgs bosons decaying to tautau pairs in ppbar collisions at sqrt(s) = 1.96 TeV

    We present a search for the production of neutral Higgs bosons decaying into tautau pairs in ppbar collisions at a center-of-mass energy of 1.96 TeV. The data, corresponding to an integrated luminosity of 5.4 fb-1, were collected by the D0 experiment at the Fermilab Tevatron Collider. We set upper limits at the 95% C.L. on the product of production cross section and branching ratio for a scalar resonance decaying into tautau pairs, and we then interpret these limits as limits on the production of Higgs bosons in the minimal supersymmetric standard model (MSSM) and as constraints in the MSSM parameter space.Comment: 7 pages, 5 figures, submitted to PL

    Measurement of three-jet differential cross sections d sigma-3jet / d M-3jet in p anti-p collisions at sqrt(s)=1.96 TeV

    We present the first measurement of the inclusive three-jet differential cross section as a function of the invariant mass of the three jets with the largest transverse momenta in an event in p anti-p collisions at sqrt(s) = 1.96 TeV. The measurement is made in different rapidity regions and for different jet transverse momentum requirements and is based on a data set corresponding to an integrated luminosity of 0.7 fb^{-1} collected with the D0 detector at the Fermilab Tevatron Collider. The results are used to test the three-jet matrix elements in perturbative QCD calculations at next-to-leading order in the strong coupling constant. The data allow discrimination between parametrizations of the parton distribution functions of the proton.Comment: 10 pages, 4 figures, 2 tables, submitted to Phys. Lett.
