The practice of the evaluation of the learning is not simply the confrontation between the established goals and the obtained results. Perrenoud affirms that the evaluation is not simple selection, it possess a logic that consolidates the social hierarchy. Luckesi emphasizes that the evaluation, like act diagnosis, has by objective the inclusion and not exclusion. Thus, for Luckesi, the practice of the evaluation of the learning is a love act, symbol of the educational exercise.

The sensory, microbial and bioactive quality changes of untreated (CTRL) and mild heat−treated (HT; 90 ºC/45 s) smoothies were studied and modelled throughout storage (5, 15 and 25 ºC). The overall acceptability was better preserved in HT samples being highly correlated (hierarchical clustering) with the flavour. The sensory quality data estimated smoothie shelf−life (CTRL/HT) of 18/55 (at 5 ºC), 4.5/12 (at 15 ºC), 2.4/5.8 (at 25 ºC) days. The yeast and moulds growth rate was lower in HT compared to CTRL while a lag phase for mesophiles/psychrophiles was observed in HT−5/15 ºC. HT and 5 ºC−storage stabilized the phenolics content. FRAP reported the best correlation (R2=0.94) with the studied bioactive compounds, followed by ABTS (R2=0.81) while DPPH was the total antioxidant capacity method with the lowest adjustment (R2=0.49). Conclusively, modelling was used to estimate the shelf−life of a smoothie based on quality retention after a short time−high temperature heat treatment that better preserved microbial and nutritional quality during storage. The financial support of this research was provided by the Ministerio Español de Economía y Competitividad MINECO (Projects AGL2013−48830−C2−1−R and AGL2013−48993−C2−1−R) and by FEDER funds. 580-584Tunillo, or pitaya of august (Stenocereus stellatus) is a prehispanic fruit, endemic to the Mixteca region in Mexico and to which a lot of medicinal properties have been associated. However, there are few scientific studies regarding its characterization and use. For these reasons, in this study we carried out a chemical characterization of the juice of four-color variants as well as determine the antihyperglycemic capacity of seed. Physical and chemical characterization were carried out in juice of fruits of Stenocereus after a preselection based on pulp color. Total soluble solids, pH, titratable acidity, organic acid and betalains were quantified in juice and antihyperglycemic capacity was measured in seed. Physicochemical parameters in juice were similar in the 4 variants; regarding the content of pigments, the red variant showed the highest values as well as the highest organic acids. However, the white, orange, and red variants showed better antihyperglycemic capacity. Red tunillo is the best candidate for obtaining pigments and its higher organic acids content correlates with its lower acceptance by the local population. The seeds of the white, orange, and red colors showed promising anhyperglycemic capacity, which suggest that they should be considered for the development of antidiabetic treatments. These results contribute to the use of compex matrices considered waste products of the fruits. This would undoubtedly increase their commercial value

The micromechanical properties of injection molded starch–wood particle composites were investigated as a function of particle content and humidity conditions. The composite materials were characterized by scanning electron microscopy and X-ray diffraction methods. The microhardness of the composites was shown to increase notably with the concentration of the wood particles. In addition, creep behavior under the indenter and temperature dependence were evaluated in terms of the independent contribution of the starch matrix and the wood microparticles to the hardness value. The influence of drying time on the density and weight uptake of the injection-molded composites was highlighted. The results revealed the role of the mechanism of water evaporation, showing that the dependence of water uptake and temperature was greater for the starch–wood composites than for the pure starch sample. Experiments performed during the drying process at 70°C indicated that the wood in the starch composites did not prevent water loss from the samples.Peer reviewe

Introduction: This article summarizes the clinical practice guide (CPG) for the screening and management of malnourished patients or patients at risk of malnutrition in the Social Security of Peru (EsSalud). Objective: To provide clinical recommendations based on evidence for the screening and management of malnourished patients or patients at risk of malnutrition in EsSalud. Methods: A CPG for the screening, management and monitoring of malnourished patients or patients at risk of malnutrition in EsSalud was developed. To this end, a guideline development group (local GDG) was established, including medical specialists and methodologists. The local GDG formulated 9 clinical questions to be answered by this CPG. Systematic searches of systematic reviews and -when it was considered pertinent- primary studies were conducted in Pubmed and CENTRAL during 2021. The evidence to answer each of the posed clinical questions was selected. The quality of the evidence was evaluated using the Grading of Recommendations Assessment, Development, and Evaluation (GRADE) methodology. In periodic work meetings, the local GDG used the GRADE methodology to review the evidence and formulate the recommendations, points of good clinical practice, and the flowchart of screening and management. Finally, the CPG was approved with Resolution No. 128-IETSI-ESSALUD-2021. Results: This CPG addressed 9 clinical questions, divided into three topics: screening, management and monitoring of malnourished patients or patients at risk of malnutrition. Based on these questions, 6 recommendations (3 strong recommendations and 3 weak recommendations), 39 points of good clinical practice, and 2 flowcharts were formulated. Conclusion: This article summarizes the methodology and evidence-based conclusions from the CPG for the screening, management and monitoring of malnourished patients or patients at risk of malnutrition in EsSalud.Introducción: El presente artículo resume la guía de práctica clínica (GPC) para el tamizaje y manejo de los pacientes desnutridos o en riesgo de desnutrición del Seguro Social del Perú (EsSalud).
