    Antioxidant and Angiotensin 1 Converting Enzyme Inhibitory Functions from Chicken Collagen Hydrolysates

    Chicken collagen was explored for its possible ACE inhibitory and antioxidant activities. Flavourzyme, Neutrase and Alcalase were employed for hydrolysis of chicken collagen at predetermined times with optimal conditions for corresponding enzymes. Flavourzyme hydrolysate showed the highest antioxidant activity as measured by ORAC-FL assay (20942 μmol TE/100 g) followed by Neutrase (19207 μmol TE/100 g) and Alcalase (14352 μmol TE/100 g). Further purification by size exclusion chromatography showed that lower molecular weight fractions (between 170-776 Dalton) have highest antioxidant capacity (52787 and 44093 μmol TE/100 g for Flavourzyme and Neutrase fractions respectively). The ACE inhibitory activity of collagen hydrolysates also appeared to be higher with low molecular weight fractions (between 1200-450 Dalton) having IC50 value of about 47.2 and 59.7 μg/ml for Flavourzyme and Neutrase respectively.     Quality and microbiological safety of microwave-cooked broccoli

    [SPA] Cocinar verduras en bolsas para microondas se ha convertido en un método muy utilizado por consumidores modernos, pero existen escasos reportes de su efecto en la calidad de estos productos. Este trabajo estudió el efecto de la cocción en bolsa versus cocción convencional en microondas en la calidad microbiológica y nutricional de floretes de brócoli. El efecto del tiempo de cocción en estos parámetros de calidad también fue evaluado. Floretes de brócoli se cocinaron en bolsas para microondas, en un horno de microondas, durante 3 y 5 minutos. Floretes cocinados en las mismas condiciones, sin bolsa, se usaron como controles. Antes y después de la cocción se analizó: carga microbiana y capacidad antioxidante (AOC). La cocción en bolsa mostró mayor reducción de bacterias mesófilas respecto a la cocción convencional, para los dos tiempos de cocción evaluados. Para tiempos de 5 min, la cocción en bolsa retuvo en mayor medida la AOC respecto a la cocción convencional. La cocción en bolsas de microondas es un método novedoso que demostró ser microbiológicamente seguro y preservó el potencial saludable de floretes de brócoli. Además, es una opción de cocción rápida, fácil y limpia que satisface las necesidades de los consumidores modernos. [ENG] Cooking vegetables in microwave-bags has become a popular cooking method; however, information about effect of this emerging cooking method on quality parameters of vegetables is limited. The aim of this work was to study the effect of microwave-bag cooking vs. conventional microwaving on microbiological and nutritional quality of broccoli florets. The influence of cooking time on these quality parameters was also evaluated. Broccoli florets were placed into microwaveable bags and cooked in a microwave oven for 3 and 5 min. Product cooked under the same conditions, without using bag, was used as a control. Samples were taken before and after cooking. Microbial count and antioxidant capacity (AOC) were analyzed. For both cooking time, microwave-bag cooking showed higher reduction of mesophilic bacteria than conventional microwaving. For cooking time of 5 min, microwave-bag cooked broccoli retained AOC to a greater extent than conventional microwaved. Microwave-bag cooking is a novel method that showed to be microbiologically safe and preserved healthy potential of broccoli floret.     Prevention, control, and elimination of neglected diseases in the Americas: Pathways to integrated, inter-programmatic, inter-sectoral action for health and development

    BACKGROUND: In the Latin America and Caribbean region over 210 million people live below the poverty line. These impoverished and marginalized populations are heavily burdened with neglected communicable diseases. These diseases continue to enact a toll, not only on families and communities, but on the economically constrained countries themselves. DISCUSSION: As national public health priorities, neglected communicable diseases typically maintain a low profile and are often left out when public health agendas are formulated. While many of the neglected diseases do not directly cause high rates of mortality, they contribute to an enormous rate of morbidity and a drastic reduction in income for the most poverty-stricken families and communities. The persistence of this "vicious cycle" between poverty and poor health demonstrates the importance of linking the activities of the health sector with those of other sectors such as education, housing, water and sanitation, labor, public works, transportation, agriculture, industry, and economic development. SUMMARY: The purpose of this paper is three fold. First, it focuses on a need for integrated "pro-poor" approaches and policies to be developed in order to more adequately address the multi-faceted nature of neglected diseases. This represents a move away from traditional disease-centered approaches to a holistic approach that looks at the overarching causes and mechanisms that influence the health and well being of communities. The second objective of the paper outlines the need for a specific strategy for addressing these diseases and offers several programmatic entry points in the context of broad public health measures involving multiple sectors. Finally, the paper presents several current Pan American Health Organization and other institutional initiatives that already document the importance of integrated, inter-programmatic, and inter-sectoral approaches. They provide the framework for a renewed effort toward the efficient use of resources and the development of a comprehensive integrated solution to neglected communicable diseases found in the context of poverty, and tailored to the needs of local communities

    A new method to trace colloid transport pathways in macroporous soils using X‐ray computed tomography and fluorescence macrophotography

    The fast and deep percolation of particles through soil is attributed to preferential flow pathways, and their extent can be critical in the filtering of particulate pollutants in soil. Particle deposition on the pore walls and transport between the pores and matrix modulate the preferential flow of particulate pollutants. In the present research, we developed a novel method of combining fluorescence macrophotography and X‐ray computed tomography (CT) to track preferential pathways of colloidal fluorescent microspheres (MS) in breakthrough experiments. We located accumulations of MS by fluorescence imaging and used them to delimit the deposition structures along the preferential colloid pathways by superimposing these images on the 3‐D pore network obtained from CT. Advection–diffusion with transport parameters from the dual‐porosity equation correlated with preferential pathway features across different soil management techniques. However, management did not influence the morphology of the MS preferential pathways. Preferential flow occurred in only a small fraction of the total pore network and was controlled by pores connected to the soil surface and by matrix density

    A comprehensive review on carotenoids in foods and feeds: status quo, applications, patents, and research needs

    Carotenoids are isoprenoids widely distributed in foods that have been always part of the diet of humans. Unlike the other so-called food bioactives, some carotenoids can be converted into retinoids exhibiting vitamin A activity, which is essential for humans. Furthermore, they are much more versatile as they are relevant in foods not only as sources of vitamin A, but also as natural pigments, antioxidants, and health-promoting compounds. Lately, they are also attracting interest in the context of nutricosmetics, as they have been shown to provide cosmetic benefits when ingested in appropriate amounts. In this work, resulting from the collaborative work of participants of the COST Action European network to advance carotenoid research and applications in agro-food and health (EUROCAROTEN, www.eurocaroten.eu, https://www.cost.eu/actions/CA15136/#tabs|Name:overview) research on carotenoids in foods and feeds is thoroughly reviewed covering aspects such as analysis, carotenoid food sources, carotenoid databases, effect of processing and storage conditions, new trends in carotenoid extraction, daily intakes, use as human, and feed additives are addressed. Furthermore, classical and recent patents regarding the obtaining and formulation of carotenoids for several purposes are pinpointed and briefly discussed.     Elevated Plasma IL-6 Associates with Increased Risk of Advanced Fibrosis and Cholangiocarcinoma in Individuals Infected by Opisthorchis viverrini

    Opisthorchis viverrini is considered among the most important of the food-borne trematodes due to its strong association with advanced periductal fibrosis and bile duct cancer (cholangiocarcinoma). We investigated the relationship between plasma levels of Interleukin (IL)-6 and the risk of developing advanced fibrosis and bile duct cancer from chronic Opisthorchis infection. We show that IL-6 circulates in plasma at concentrations 58 times higher in individuals with advanced fibrosis than age, sex, and nearest-neighbor matched controls and 221 times higher in individuals with bile duct cancer than controls. We also observed a dose-response relationship between increasing levels of plasma IL-6 and increasing risk of advanced fibrosis and bile duct cancer; for example, in age and sex adjusted analyses, individuals with the highest quartiles of plasma IL-6 had a 19 times greater risk of developing advanced periductal fibrosis and a 150 times greater risk of developing of bile duct cancer than individuals with no detectable level of plasma IL-6. Finally, we show that a single plasma IL-6 measurement has excellent positive predictive value for the detection of both advanced bile duct fibrosis and bile duct cancer in regions with high O. viverrini transmission. These data support our hypothesis that common mechanisms drive bile duct fibrosis and bile duct tumorogenesis from chronic O. viverrini infection. Our study also adds a unique aspect to the literature on circulating levels of IL-6 as an immune marker of hepatobiliary pathology by showing that high levels of circulating IL-6 in plasma are not related to infection with O. viverrini, but to the development of the advanced and often lethal pathologies resulting from chronic O. viverrini infection

    Mutation increasing β-carotene concentrations does not adversely affect concentrations of essential mineral elements in pepper fruit

    <div><p>Vitamin and mineral deficiencies are prevalent in human populations throughout the world. Vitamin A deficiency affects hundreds of millions of pre-school age children in low income countries. Fruits of pepper (<i>Capsicum annuum</i> L.) can be a major dietary source of precursors to Vitamin A biosynthesis, such as β-carotene. Recently, pepper breeding programs have introduced the orange-fruited (<i>of</i>) trait of the mutant variety Oranzheva kapiya, which is associated with high fruit β-carotene concentrations, to the mutant variety Albena. In this manuscript, concentrations of β-carotene and mineral elements (magnesium, phosphorus, sulphur, potassium, zinc, calcium, manganese, iron and copper) were compared in fruit from P31, a red-fruited genotype derived from the variety Albena, and M38, a genotype developed by transferring the orange-fruited mutation (<i>of</i>) into Albena. It was observed that fruit from M38 plants had greater β-carotene concentration at both commercial and botanical maturity (4.9 and 52.7 mg / kg fresh weight, respectively) than fruit from P31 plants (2.3 and 30.1 mg / kg fresh weight, respectively). The mutation producing high β-carotene concentrations in pepper fruits had no detrimental effect on the concentrations of mineral elements required for human nutrition.</p></div

    Fish under exercise

    Improved knowledge on the swimming physiology of fish and its application to fisheries science and aquaculture (i.e., farming a fitter fish) is currently needed in the face of global environmental changes, high fishing pressures, increased aquaculture production as well as increased concern on fish well-being. Here, we review existing data on teleost fish that indicate that sustained exercise at optimal speeds enhances muscle growth and has consequences for flesh quality. Potential added benefits of sustained exercise may be delay of ovarian development and stimulation of immune status. Exercise could represent a natural, noninvasive, and economical approach to improve growth, flesh quality as well as welfare of aquacultured fish: a FitFish for a healthy consumer. All these issues are important for setting directions for policy decisions and future studies in this area. For this purpose, the FitFish workshop on the Swimming Physiology of Fish (http://www.ub.edu/fitfish2010) was organized to bring together a multidisciplinary group of scientists using exercise models, industrial partners, and policy makers. Sixteen international experts from Europe, North America, and Japan were invited to present their work and view on migration of fishes in their natural environment, beneficial effects of exercise, and applications for sustainable aquaculture. Eighty-eight participants from 19 different countries contributed through a poster session and round table discussion.     The Neglected Tropical Diseases of Latin America and the Caribbean: A Review of Disease Burden and Distribution and a Roadmap for Control and Elimination

    The neglected tropical diseases (NTDs) represent some of the most common infections of the poorest people living in the Latin American and Caribbean region (LAC). Because they primarily afflict the disenfranchised poor as well as selected indigenous populations and people of African descent, the NTDs in LAC are largely forgotten diseases even though their collective disease burden may exceed better known conditions such as of HIV/AIDS, tuberculosis, or malaria. Based on their prevalence and healthy life years lost from disability, hookworm infection, other soil-transmitted helminth infections, and Chagas disease are the most important NTDs in LAC, followed by dengue, schistosomiasis, leishmaniasis, trachoma, leprosy, and lymphatic filariasis. On the other hand, for some important NTDs, such as leptospirosis and cysticercosis, complete disease burden estimates are not available. The NTDs in LAC geographically concentrate in 11 different sub-regions, each with a distinctive human and environmental ecology. In the coming years, schistosomiasis could be eliminated in the Caribbean and transmission of lymphatic filariasis and onchocerciasis could be eliminated in Latin America. However, the highest disease burden NTDs, such as Chagas disease, soil-transmitted helminth infections, and hookworm and schistosomiasis co-infections, may first require scale-up of existing resources or the development of new control tools in order to achieve control or elimination. Ultimately, the roadmap for the control and elimination of the more widespread NTDs will require an inter-sectoral approach that bridges public health, social services, and environmental interventions
