system and who will likely have to work during the next thirty to forty years will be taking
part in the education of individuals who, with the permission of prophets and doomsayers,
will live part of their lives in the 22nd century. That long but simple statement causes a bit of
vertigo as well as a good amount of reflection on the part of we educators who were trained
in the 20th century, are working in the 21st century, and are responsible for preparing people
to build a tomorrow that is already today (Millán and Sancho, 1995). This is the starting point
of our research groups’ interest in exploring how men and women who have graduated from
teacher education programs with specializations in infant and primary education learn to be
teachers, and how they establish and position themselves as teachers during their university studies and the first years of their professional life..
Potential use of fatty acid profiles of the adductor muscle of cockles (Cerastoderma edule) for traceability of collection site
Geographic traceability of seafood is key for controlling its quality and safeguarding consumers’
interest. The present study assessed if the fatty acid (FA) profile of the adductor muscle (AM) of
fresh cockles (Cerastoderma edule) can be used to discriminate the origin of specimens collected in
different bivalve capture/production areas legally defined within a coastal lagoon. Results suggest
that this biochemical approach holds the potential to trace sampling locations with a spatial
resolution <10 Km, even for areas with identical classification for bivalve production. Cockles further
away from the inlet, i.e. in areas exposed to a higher saline variation, exhibited lower levels of
saturated fatty acids, which are key for stabilizing the bilayer structure of cell membranes, and a
higher percentage of polyunsaturated fatty acids, which enhance bilayer fluidity. Results suggest that
the structural nature of the lipids present in the AM provides a stable fatty acid signature and holds
potential for tracing the origin of bivalves to their capture/production areas
Trace element fingerprinting of cockle (Cerastoderma edule) shells can reveal harvesting location in adjacent areas
Determining seafood geographic origin is critical for controlling its quality and safeguarding
the interest of consumers. Here, we use trace element fingerprinting (TEF) of bivalve shells to
discriminate the geographic origin of specimens. Barium (Ba), manganese (Mn), magnesium (Mg),
strontium (Sr) and lead (Pb) were quantified in cockle shells (Cerastoderma edule) captured with
two fishing methods (by hand and by hand-raking) and from five adjacent fishing locations within
an estuarine system (Ria de Aveiro, Portugal). Results suggest no differences in TEF of cockle shells
captured by hand or by hand-raking, thus confirming that metal rakes do not act as a potential
source of metal contamination that could somehow bias TEF results. In contrast, significant
differences were recorded among locations for all trace elements analysed. A Canonical Analysis
of Principal Coordinates (CAP) revealed that 92% of the samples could be successfully classified
according to their fishing location using TEF. We show that TEF can be an accurate, fast and reliable
method to determine the geographic origin of bivalves, even among locations separated less
than 1 km apart within the same estuarine system. Nonetheless, follow up studies are needed to
determine if TEF can reliably discriminate between bivalves originating from different ecosystems
Estudio de las modificaciones en proteínas de reineta (Brama australis), sometidas a congelación y almacenamiento a -18ºC y -30ºC
El presente trabajo tuvo como objetivo estudiar las propiedades funcionales y térmicas en carne de reineta (Brama australis) congelada, mediante los análisis de capacidad de retención de agua (CRA), capacidad formadora de gel (CFG), textura, capacidad emulsionante (CE) y calorimetría diferencial de barrido (DSC). Para este estudio se utilizaron filetes de reineta obtenidos y extraídos bajo las mismas condiciones, los cuales fueron trozados, envasados, congelados y almacenados a temperaturas de -18ºC y -30ºC durante 7 meses. Los resultados para todos los tratamientos térmicos empleados no mostraron diferencias significativas entre individuos. Para los pescados congelados a -18ºC y -30ºC, los valores de proteínas totales fluctuaron entre 23,5 ± 0,0 y 25,4 ± 1,0 % respectivamente. Para el caso de CRA los valores se encontraron en un rango de 0,45 ± 0,1 y 1,59 ± 0,0 g agua/ g proteínas. En cuanto a la CFG sólo hubo formación de gel para la reineta fresca, existiendo producción de agregados proteicos para las muestras almacenadas. Por otra parte los valores de CE fluctuaron entre 960 a 1400 g de aceite/g proteína, con una tendencia al aumento a medida que el tiempo de almacenamiento fue mayor. Para el caso del DSC los valores de temperatura de desnaturalización (Td) y entalpía de desnaturalización (?H) de miosina fluctuaron entre 39,2 ± 0,5 y 44,8 ± 0,8 ºC y entre 1,12 ± 0,3 y 0,52 ± 0,2 J/g. Para la actina los valores fluctuaron entre 71,0 0,6 y 75,3 ± 0,5 ºC y entre 0,5 ± 0,1 y 0,7 ± 0,1 J/g, la cooperatividad disminuyó a medida que pasó el tiempo, lo cual está mostrando un cierto grado de desplazamiento de las proteínas. Los valores encontrados para propiedades térmicas presentan una directa relación con respecto a los valores de propiedades funcionales estudiadas, presentando ambos una disminución en el tiempo

si permanecen en esta actividad, trabajarán durante los próximos treinta o cuarenta
años con personas que vivirán parte de su vida en el siglo XXII. Este hecho constituye un punto
de reflexión para los educadores quienes recibimos nuestra formación básica en el siglo
XX, estamos desarrollando nuestro trabajo en el XXI, y tenemos la responsabilidad de preparar
a individuos para que puedan construir un mañana que ya es hoy (Millán y Sancho, 1995).
Aquí comienza el interés de nuestros grupos de investigación por explorar cómo los hombres
y las mujeres que han salido en los últimos años de las facultades de formación del profesorado,
con las especialidades de educación infantil y primaria, aprenden a ser docentes. Cómo
se han ido constituyendo y posicionando como maestros y maestras durante la formación inicial y los primeros años de su vida profesional..
