Environmentally sustainable food consumption : a review and research agenda from a goal-directed perspective
The challenge of convincing people to change their eating habits toward more environmentally sustainable food consumption (ESFC) patterns is becoming increasingly pressing. Food preferences, choices and eating habits are notoriously hard to change as they are a central aspect of people's lifestyles and their socio-cultural environment. Many people already hold positive attitudes toward sustainable food, but the notable gap between favorable attitudes and actual purchase and consumption of more sustainable food products remains to be bridged. The current work aims to (1) present a comprehensive theoretical framework for future research on ESFC, and (2) highlight behavioral solutions for environmental challenges in the food domain from an interdisciplinary perspective. First, starting from the premise that food consumption is deliberately or unintentionally directed at attaining goals, a goal-directed framework for understanding and influencing ESFC is built. To engage in goal-directed behavior, people typically go through a series of sequential steps. The proposed theoretical framework makes explicit the sequential steps or hurdles that need to be taken for consumers to engage in ESFC. Consumers need to positively value the environment, discern a discrepancy between the desired versus the actual state of the environment, opt for action to reduce the experienced discrepancy, intend to engage in behavior that is expected to bring them closer to the desired end state, and act in accordance with their intention. Second, a critical review of the literature on mechanisms that underlie and explain ESFC (or the lack thereof) in high-income countries is presented and integrated into the goal-directed framework. This contribution thus combines a top-down conceptualization with a bottom-up literature review; it identifies and discusses factors that might hold people back from ESFC and interventions that might promote ESFC; and it reveals knowledge gaps as well as insights on how to encourage both short- and long-term ESFC by confronting extant literature with the theoretical framework. Altogether, the analysis yields a set of 33 future research questions in the interdisciplinary food domain that deserve to be addressed with the aim of fostering ESFC in the short and long term
Zachowania niekorzystne dla równoważenia konsumpcji żywności w opiniach konsumentów
The purpose of the article is to specify behavior considered to be disadvantageous for achieving sustainable consumption by consumers. Sustainable consumption, in economics usually derived from the consumer usefulness theory, is, on the one hand, inseparably linked to the effectiveness of a food supply chain, and on the other, a phenomenon significantly less identifiable and much more difficult to verify. In research, factual material gained through a personal interview survey, conducted in the Greater Poland Voivodship was used. Respondents were chosen with the use of quota and purposive sampling. It was found that consumers are able to see some behavior that are unfavorable for achieving sustainable consumption. The average level of unfavorable behavior (2.25) proves that consumers see such behavior with a relatively low level of disadvantages for achieving sustainable food consumption (in the economic, ecologic and social aspect). Consumers see unfavorable behavior for achieving sustainable consumption as behavior of a low level of disadvantages, including behavior stemming from the cost of moving from a previous model to a sustainable model, which demands spending more time on planning and shopping and creates a need to control personal behavior in terms of shopping logistics, i.e. planning, organizing, storing, buying and consuming products, as well as waste disposal. A very low level disadvantage of achieving sustainable food consumption is connected, according to consumers, with some behavior demanding self-control and self-discipline (e.g. avoiding excessive, disadvantageous consumption), engagement in the life of the local society and spending more time on looking for local products (in order to exchange, borrow, share and foster the community). Information concerning behavior unfavorable for achieving sustainable food consumption can be used for planning and implementing actions aimed at disseminating the idea and increasing consumer awareness.Celem artykuły jest określenie zachowań, które są postrzegane jako niekorzystne dla równoważenia konsumpcji żywności przez konsumentów. Zrównoważona konsumpcja, w ekonomii najczęściej wyprowadzana z teorii użyteczności konsumenta, z jednej strony, jest zjawiskiem nierozerwalnie związanym z efektywnością łańcucha dostaw żywności, a z drugiej – zjawiskiem znacznie mniej rozpoznawalnym i trudnym do weryfikacji. W badaniach wykorzystano materiał faktograficzny uzyskany w drodze badania ankietowanego wykonanego techniką bezpośrednich wywiadów osobistych na terenie Wielkopolski. Respondentów dobrano w sposób kwotowo-celowy. Stwierdzono, że konsumenci w swoim otoczeniu dostrzegają występowanie zachowań niekorzystnych dla równoważenia konsumpcji żywności. Uzyskany średni stopień niekorzyści (2,25) wskazuje, że konsumenci oceniali podane zachowania jako te o stosunkowo niskim stopniu niekorzyści dla równoważenia konsumpcji żywności (w aspekcie ekonomicznym, ekologicznym i społecznym). Konsumenci dostrzegali niską niekorzyść dla równoważenia konsumpcji żywności w obrębie zachowań wynikających m.in. z kosztów przejścia z wcześniejszego modelu do zrównoważonego, poświęcania większej ilości czasu planowaniu oraz realizacji zakupów, konieczności kontrolowania własnych zachowań w zakresie logistyki zakupowej, tj. planowania, organizowania, przechowywania, nabywania, spożycia oraz pozbywania się odpadów. Bardzo niską niekorzyść (niedogodność) z tytułu równoważenia konsumpcji żywności, konsumenci wiązali z zachowaniami wymagającymi samokontroli i samodyscypliny (np. unikając nadmiernej niekorzystnej konsumpcji), zaangażowania w życie lokalnej społeczności, poświęcania większej ilości czasu (m.in. na poszukiwanie lokalnych produktów, aby móc dokonywać wymiany, pożyczać, współdzielić się i podtrzymywać wspólnotowości). Informacja o zachowaniach uznanych za niekorzystne dla równoważenia konsumpcji żywności może być wykorzystana do planowania jak i wdrażania działań zmierzających do upowszechniania idei i podnoszenia świadomości konsumentów
Normalizacja wyrobów piekarskich
The article presents selected aspects of the standardization, highly valued factor
that stimulates the economic development of the country. The attention was paid to the
purpose of the standardization, basic normative documents and standardizing activity.
Different proposals for the classification of bread applied in practice or appearing in scientific
studies were presented. It was emphasised that currently legal mess exists
in Poland, in terms of use of the bread classification. The necessity of legal regulations of
this issue by standard regulations was pointed out.Normalizacja to bardzo ceniony czynnik stymulujący rozwój ekonomiczny
danego kraju. W niniejszym artykule zwrócono uwagę na cel normalizacji, podstawowe
dokumenty normatywne oraz działalność normalizacyjną. Zaprezentowane różne klasyfikacje
pieczywa, stosowane w praktyce lub też występujące w opracowaniach o charakterze
naukowym, potwierdzają, iż w Polsce, w zakresie stosowania klasyfikacji pieczywa
istnieje obecnie nieporządek prawny. Dlatego też jest niezbędne uregulowanie zagadnień
związanych z klasyfikacją pieczywa przez przepisy normatywne. Uporządkowanie prawa w tym zakresie ułatwiłoby funkcjonowanie przedsiębiorstwom piekarskim, tworząc w ten
sposób dogodniejsze warunki do rozwoju i konkurowania na wspólnym rynku
Zmiany demograficzne a zachowania konsumentów na rynku pieczywa
Analysis of demographic changes occurring in Poland conducted in the present
article shows trends and allows the consideration of demographic premises of the development
and changes in behaviours of consumers on the bread market, i.e. of the product
which takes priority place in the group of essential needs. Following demographic indicators
were discussed: the size of Polish population, the rate of the fertility and mortalities,
the age structure, average life expectancy, the household and the level of education.
Appearing demographic trends allow forecasting the volume of demand for products.
It was stated that on the bread market there will be changes of quantitative, genre as well
as qualitative character that determine a challenge for enterprises of the bakery industry.Analiza przemian demograficznych zachodzących w Polsce, przeprowadzona
w niniejszym artykule, wskazuje trendy i pozwala na rozpatrywanie demograficznych
przesłanek rozwoju i zmian w zachowaniach konsumentów na rynku pieczywa,
tj. produktu zajmującego priorytetowe miejsce w grupie potrzeb podstawowych. Zarysowujące
się trendy demograficzne świadczą o spadku wielkości populacji, narastaniu strefy
biedy i wysokim bezrobociu. Zmniejsza się dzietność, zwiększają się długość życia ludności
i grupa osób starszych. Obserwuje się wzrost przemieszczeń ludności z miast na
wieś oraz wzrost udziału osób z wykształceniem wyższym i średnim. Zmiany demograficzne
pozwalają prognozować wielkość popytu na produkty. Na rynku pieczywa będą
postępować zmiany zarówno o charakterze ilościowym, rodzajowym, jak i jakościowym,
co stanowi wyzwanie dla branży piekarskiej
Polish bakery market after the year 2000
W pracy zawarto charakterystykę polskiego rynku pieczywa. Opisano stan, tendencje i prognozy spożycia pieczywa oraz wielkość jego produkcji. Dokonano też charakterystyki wybranych cech przedsiębiorstw piekarskich określając poziom koncentracji produkcji. Analizę uzupełniono przybliżając sytuację finansową i majątkową wybranych przedsiębiorstw piekarskich. Stwierdzono, że rynek pieczywa jest rynkiem nasyconym, jego ogólne spożycie nie będzie rosło. Zmianie ulegać będzie wielkość i struktura spożycia pieczywa. Należy spodziewać się, że zmniejszy się spożycie pieczywa. Ponadto, następuje widoczny proces przemieszczania się produkcji pieczywa do piekarń przemysłowych. Przy ogólnej stabilizacji przedsiębiorstw w branży następuje wzrost łącznej wartości sprzedaży w największych przedsiębiorstwach.The paper describes the characteristics of the Polish bakery market. Present status, trends and forecasts of consumption of bakery products and the production volume were described. Particular features of bakery companies were characterized in order to determine concentration of production. Buying factors as an innovation platform on regional and traditional products market
Celem artykułu była identyfikacja i hierarchizacja czynników wyboru produktów regionalnych
oraz wskazanie możliwości wykorzystania tych czynników jako podstawy do kreowania innowacji. Wykorzystano
materiały pierwotne pochodzące z badania ankietowego wykonanego techniką bezpośrednich
wywiadów osobistych. Wyniki poddano analizie merytorycznej z wykorzystaniem elementów analizy treści
rozwiniętej przez Berelsona. Stwierdzono, że do głównych motywów wyboru omawianych produktów należą
ich prozdrowotne właściwości oraz wysokie walory smakowe. Tworzą one pole do innowacji w obszarach:
produktowym, marketingowym oraz organizacyjnym. Wprowadzanie innowacji w przypadku produktów
tradycyjnych i regionalnych powinno odbywać się z rozwagą, ponieważ zbyt daleko idąca innowacja może
negatywnie oddziaływać na ich tradycyjny charakter oraz wizerunek produktu. Z tego powodu na omawianym
rynku istotne znaczenie mogą mieć innowacje o charakterze marketingowym, a także kreowanie produktów
komplementarnych w stosunku do wyrobów obecnych już na rynku.The aim of the paper was identification and prioritization of buying factors of regional products and
describe how those factors can be used as a base for innovation. Primary data from face to face interviews
run among consumers was used in the paper. Raw data were analyzed using content analysis developed by
Berelson. It was found that positive health effect and flavor attributes were declared by the consumers as
the main buying factors. Those attributes constitute a field for innovations in terms of products, marketing
and organizational issues. It should be stressed that developing innovations of traditional and regional
products may negatively affect on those products image. Due to this fact marketing innovations and creation
of complementary products to already existing goods could be the main way of innovation
The Wielkopolska region farmers and raising funds: an example of 132. PROW funds for the period 2007-2013
Głównym celem artykułu była analiza wykorzystania środków przez producentów rolnych Wielkopolski
w ramach ich uczestnictwa w systemach jakości (działanie 132. PROW 2007-2013). W Wielkopolsce w latach 2009-
2011 wnioski o pomoc w ramach działania 132. uzyskało niewielu rolników (2,02% w stosunku do ogółu przyjętych
wniosków w kraju). Wystąpiły różnice w aktywność producentów w układzie powiatów. Najczęściej producenci
ubiegali się o pomoc w ramach systemu „Produkcji ekologicznej” i „Integrowanej produkcji”. Płatność z tytułu
zwrotu kosztów otrzymał tylko co trzeci producent ubiegający się o pomoc, co wynikało z niespełnienia wymagań
proceduralnych. Wysokość udzielonej płatności zależała od systemu, w którym uczestniczył rolnik i związana była
głównie ze zwrotem kosztów przeprowadzanej kontroli, składek podniesionych na rzecz grupy producentów, jak
i zakupu specjalistycznych materiałów. Należy zauważyć, że zaangażowanie się w systemy podnoszenia jakości
oznacza dla producenta nie tylko zmianę kierunku rozwoju gospodarstwa, ale także zmianę systemu zarządzania i
organizacji pracy, mentalności i priorytetów, na co wielu producentów nie jest przygotowanych.The main objective of this paper is to analyze use of funds by Wielkopolskie voivodship farmers participating in
the quality systems (operation 132) under the RDP 2007-2013. Only of few applications were accepted during the
period 2009-2011 (2% of all accepted proposals in the country). There were differences in the producer profiles among
districts. Farmers engaged in organic or integrated production applied for funds most often. The costs compensation
payment was received by only one out of three farmers due to the failure to meet formal requirements. The payment
size was associated with the farmer’s participation in a particular system, refund of expenses of conducted control,
and purchase of specialized materials. The joining to a quality system resulted not only in the change of development
direction, but also in the change of management system and labor organization, attitudes and priorities, and many
farmers were not prepared for such changes. The suggested activities could also bring societal benefits, the promotion
of a region, increase awareness of food quality importance among farmers and consumers. For that reason such
activities should continue to be supported and promoted and become more recognizable

usługowej. Wraz z rozwijaniem się społeczeństw zauważa się coraz większy zakres korzystania z
usług żywieniowych, tym samym sektor usług żywieniowych staje się coraz ważniejszym
elementem rynku żywnościowego. Przemiany występujące na rynkach żywnościowych ujawniają
się miedzy innymi w rozwoju strategii produktywnych przedsiębiorstw, w których wzrasta
znaczenie usług żywieniowych. Celem artykułu jest omówienie usługi żywieniowej jako elementu
strategii produktowych przedsiębiorstw. Główny nacisk położono na dwa rodzaje strategii:
strategie, w których usługa żywieniowa stanowi samodzielny produkt oraz strategie, w których
usługa żywieniowa elementem złożonego produktu usługowego.Gastronomy is one of the oldest and common kind of service activities. Together with
development of societies catering services become more important part of the market. Changes on
the food market manifest themselves by development of products strategies, where the catering are
growing. The goal of the paper is analysis of catering service as a part of products strategies. The
main focus is on two types of strategies: strategies with catering service as a independent product
and strategies where the catering service is a part of complex service product
SEARCHING FOR AND PERCEPTION OF INFORMATION BY CONSUMERS IN THE LIGHT OF THE SUSTAINABLE CONSUMPTION IDEA — ON THE EXAMPLE OF FOOD MARKETS
The aim of this paper is to present the sources of information about food, the cost of collecting the information and the
perception of messages by consumers in the light of the sustainable food consumption idea. We used primary materials from
a direct, personal survey which were later analyzed with the use of Berelson’s content analysis method. We found that a
consumer shows low interest in sourcing the information about sustainable food consumption. The most credible, from the
consumer’s point of view, information about food, consumption and the food market, comes from reports and scientific
papers, as well as from the consumers’ families or friends. Gathering information is connected with devoting time which we
spend on finding the right content. The information connected to environmental issues was the most distinctive for the
respondents; other categories of information concerned the waste of food, shopping planning, the direction of changes,
personal health issues and the influence of food products on one’s health, as well as consumption in connection with
recommendations concerning health (among others, in the scope of nutrition, recommendations and specialistic advices). The
knowledge of the most credible sources of the information about food consumption, the frequency of acquiring such
knowledge, the costs of gathering information and the perception of messages should be reflected in properly chosen
communication channels for the promotion of sustainable food consumption. In the research over sustainable food
consumption we should focus more on our information needs. The network approach and the perspective of active
engagement of consumers in the process of creating innovations in food products give us a new approach for the market
analysis, popularization of the idea of sustainable food consumption and let us change some deeply rooted habits and
behaviors of consumers. As a result of such engagement, consumers will be more willing to cooperate and trust one another,
and thanks to the feeling of social effectiveness, they will be more interested in the development of the sustainable food
consumption model and food policy
The rural development programme 2014-2020 as a source of improvement of innovativeness
Celem artykułu jest identyfikacja i ocena postępów realizacji wybranych działań Programu Rozwoju
Obszarów Wiejskich (PROW) 2014-2020, jako źródła finansowania przedsięwzięć innowacyjnych
podmiotów. Kluczowym elementem dla kształtowania i rozwoju gospodarki innowacyjnej jest możliwość
korzystania przez podmioty z puli środków na podnoszenie konkurencyjności poprzez innowacyjność,
oferowanych ze środków europejskich. Przybliżono istotę innowacyjności, wskazano wybrane instrumenty
jej wspierania przewidzianej na lata 2014-2020. Omówiono obszary, zakresy i limity wsparcia oraz stopień
ich wykorzystania. Źródłem danych empirycznych były m.in. raporty, dokumenty statystyki publicznej i
niepublikowane dane ARiMR. Zwrócono uwagę, że percepcja i sytuacja ekonomiczno-finansowa podmiotów
funkcjonujących współcześnie w warunkach niepewności i niestabilności wpływanie na ich otwartość
na „ofertę UE”. Środki unijne umożliwiają nowym podmiotom wejście na drogę innowacyjności, a starym
jej kontynuowanie przez aktywność inwestycyjną. Z uwagi, że proces aplikacyjny ma charakter złożony i
utrudnia zainteresowanym ubieganie się o środki, należy podejmować działania, które przysłużą się wzrostowi
efektywności wykorzystania środków.The aim of the paper was identify and assess progress in selected actions implemented under the Rural Development
Programme (RDP) 2014-2020 as a source of financing entities’ innovative undertakings. The availability of European funds
allocated to entities for increasing their competitiveness through innovativeness is a key element creating and developing innovative
economy. The paper describes the essence of innovativeness and indicates selected instruments supporting innovativeness under
the RDP 2014-2020. It also discusses the areas, ranges limits and use of support provided to business projects. The empirical data
came from reports, documents with public statistics and unpublished data of the Agency for Restructuring and Modernisation of
Agriculture. The authors stressed out the fact that the perception as well as the economic and financial situation of entities currently
functioning under precarious and unstable conditions, affect their openness to the EU offer. The EU funds will enable new entities
to initiate innovative trends, whereas old entities can continue these trends through investment activity. The process of applying for
funds is complicated, so it is not easy to receive support. It is necessary to take actions which will increase efficient use of the funds
