    Modern trends of vacuum use for while feedstock pretreatment were analyzed and the main issues in production of quality meat products were determined. The influence of pulsating vacuum to structural elements of lean meat was scientifically based. It was determined that just prevacuum treatment of meat for processing in an apple juice makes possible to get tender and rich production. The possibility of double sided frying under electroosmotic effect to achieve the cooking doneness was researched, as well as essential duration reduction of heating and improving of organoleptic, physico-chemical points of the product. The reasonability of combining such technological methods as the vacuum treatment of meat for processing in an apple juice with further heating in a device for double sided frying under electroosmotic effect for improving organoleptic points quality and increasing of product yield.  Проанализированы современные тенденции использования вакуума в процессе предварительной обработки сырья и определены главные проблемы в процессе изготовления качественной мясной продукции. Научно обосновано влияние пульсирующего вакуума на структурные элементы мышечной ткани. Установлено, что именно предварительное вакуумирование мясного сырья в яблочном соке дает возможность получить нежную и сочную продукцию.Исследована возможность использования двустороннего обжаривания в условиях электоросмоса для достижения кулинарной готовности, весомого сокращения длительности термической обработки, улучшения органолептических и физико-химических показателей продукта.Доказана целесообразность совмещение таких технологических прийомов как вакуумирование мясного сырья в яблочном соке, с последующей термической обработкой в аппарате для двустороннего обжаривания в условиях электроосмоса с целью улучшения качества органолептических показателей и увеличения выхода готового продукта.Проаналізовано сучасні тенденції використання вакууму при попередній обробці сировини та виявлено основні проблеми в процесі виготовлення якісної м’ясної продукції. Науково обґрунтовано вплив пульсуючого вакууму на структурні елементи м’язової тканини.  Встановлено, що саме попереднє  вакуумування м’ясної сировини у яблучному соці  дає змогу отримати ніжну та соковиту готову продукцію. Досліджена можливість використання двостороннього жарення в умовах електроосмосу для досягнення кулінарної готовності, вагомого скорочення тривалості термічної обробки та  покращення органолептичних та фізико-хімічних показників продукту. Доведена доцільність поєднання таких технологічних прийомів як вакуумування м’ясної сировини у яблучному соці  з подальшою термічною обробкою в апараті для двостороннього жарення в умовах електроосмосу з метою покращення якості органолептичних показників та збільшення виходу готового продукту. &nbsp

    The dynamics of the population and peculiarities of the morphometric structure of Melophagus ovinus (Diptera, Hippoboscidae) in Ukraine

    The indices of the Melophagus ovinus (Linnaeus, 1758) population in Ukraine, and also the peculiarities of morphological and metric structure of the insects’ body at all the stages of their development within the conditions of the surveyed region were investigated. New data on morphometric differential signs of sexually mature males and females of sheep bloodsuckers were obtained. We established that M. ovinus is significantly widespread in Poltava and Zaporizhzhia regions, and parasitizes 26.1% of the examined sheep stock with the infection intensity of 92.7 ± 1.4 specimens and abundance – 24.7 specimens on one animal. The dynamics of M. ovinus population at different stages of development was characterized by the highest abundance of sexually mature males (11.1 specimens on one animal) and females (8.9 specimens). The given index concerning pupae and larvae was considerably lower (4.2 and 0.5 specimens on one animal). It was found that post-embryonic and adult development stages of M. ovinus differ in their metric indices.The length and width of the pupae were 17.4% and 13.2% larger than those of the larvae. The sizes of males and females relative to the indices of body length, the length and width of head, thoracic, and abdominal segments, the length of maxillary palpus and the length and width of the proboscis in fact differ in their values.     Measurement of the Depth of Maximum of Extensive Air Showers above 10^18 eV

    We describe the measurement of the depth of maximum, Xmax, of the longitudinal development of air showers induced by cosmic rays. Almost four thousand events above 10^18 eV observed by the fluorescence detector of the Pierre Auger Observatory in coincidence with at least one surface detector station are selected for the analysis. The average shower maximum was found to evolve with energy at a rate of (106 +35/-21) g/cm^2/decade below 10^(18.24 +/- 0.05) eV and (24 +/- 3) g/cm^2/decade above this energy. The measured shower-to-shower fluctuations decrease from about 55 to 26 g/cm^2. The interpretation of these results in terms of the cosmic ray mass composition is briefly discussed.Comment: Accepted for publication by PR

    Highlights from the Pierre Auger Observatory

    The Pierre Auger Observatory is the world's largest cosmic ray observatory. Our current exposure reaches nearly 40,000 km2^2 str and provides us with an unprecedented quality data set. The performance and stability of the detectors and their enhancements are described. Data analyses have led to a number of major breakthroughs. Among these we discuss the energy spectrum and the searches for large-scale anisotropies. We present analyses of our Xmax_{max} data and show how it can be interpreted in terms of mass composition. We also describe some new analyses that extract mass sensitive parameters from the 100% duty cycle SD data. A coherent interpretation of all these recent results opens new directions.     A search for point sources of EeV photons

    Measurements of air showers made using the hybrid technique developed with the fluorescence and surface detectors of the Pierre Auger Observatory allow a sensitive search for point sources of EeV photons anywhere in the exposed sky. A multivariate analysis reduces the background of hadronic cosmic rays. The search is sensitive to a declination band from -85{\deg} to +20{\deg}, in an energy range from 10^17.3 eV to 10^18.5 eV. No photon point source has been detected. An upper limit on the photon flux has been derived for every direction. The mean value of the energy flux limit that results from this, assuming a photon spectral index of -2, is 0.06 eV cm^-2 s^-1, and no celestial direction exceeds 0.25 eV cm^-2 s^-1. These upper limits constrain scenarios in which EeV cosmic ray protons are emitted by non-transient sources in the Galaxy.Comment: 28 pages, 10 figures, accepted for publication in The Astrophysical Journa

    The exposure of the hybrid detector of the Pierre Auger Observatory

    The Pierre Auger Observatory is a detector for ultra-high energy cosmic rays. It consists of a surface array to measure secondary particles at ground level and a fluorescence detector to measure the development of air showers in the atmosphere above the array. The "hybrid" detection mode combines the information from the two subsystems. We describe the determination of the hybrid exposure for events observed by the fluorescence telescopes in coincidence with at least one water-Cherenkov detector of the surface array. A detailed knowledge of the time dependence of the detection operations is crucial for an accurate evaluation of the exposure. We discuss the relevance of monitoring data collected during operations, such as the status of the fluorescence detector, background light and atmospheric conditions, that are used in both simulation and reconstruction.Comment: Paper accepted by Astroparticle Physic

    Calibration of the Logarithmic-Periodic Dipole Antenna (LPDA) Radio Stations at the Pierre Auger Observatory using an Octocopter

    An in-situ calibration of a logarithmic periodic dipole antenna with a frequency coverage of 30 MHz to 80 MHz is performed. Such antennas are part of a radio station system used for detection of cosmic ray induced air showers at the Engineering Radio Array of the Pierre Auger Observatory, the so-called Auger Engineering Radio Array (AERA). The directional and frequency characteristics of the broadband antenna are investigated using a remotely piloted aircraft (RPA) carrying a small transmitting antenna. The antenna sensitivity is described by the vector effective length relating the measured voltage with the electric-field components perpendicular to the incoming signal direction. The horizontal and meridional components are determined with an overall uncertainty of 7.4^{+0.9}_{-0.3} % and 10.3^{+2.8}_{-1.7} % respectively. The measurement is used to correct a simulated response of the frequency and directional response of the antenna. In addition, the influence of the ground conductivity and permittivity on the antenna response is simulated. Both have a negligible influence given the ground conditions measured at the detector site. The overall uncertainties of the vector effective length components result in an uncertainty of 8.8^{+2.1}_{-1.3} % in the square root of the energy fluence for incoming signal directions with zenith angles smaller than 60{\deg}.Comment: Published version.
