    Oral Wine Texture Perception and Its Correlation with Instrumental Texture Features of Wine-Saliva Mixtures.

    Unlike solid food, texture descriptors in liquid food are scarce, and they are frequently reduced to the term viscosity. However, in wines, apart from viscosity, terms, such as astringency, body, unctuosity and density, help describe their texture, relating the complexity and balance among their chemical components. Yet there is uncertainty about which wine components (and their combinations) cause each texture sensation and if their instrumental assessment is possible. Therefore, the aim of the present work was to study the effect of wine texture on its main components, when interacting with saliva. This was completed by using instrumental measurements of density and viscosity, and by using two types of panels (trained and expert). For that, six different model-wine formulations were prepared by adding one or multiple wine components: ethanol, mannoproteins, glycerol, and tannins to a de-alcoholised wine. All formulations were mixed with fresh human saliva (1:1), and their density and rheological properties were measured. Although there were no statistical differences, body perception was higher for samples with glycerol and/or mannoproteins, this was also correlated with density instrumental measurements (R = 0.971, p = 0.029). The viscosity of samples with tannins was the highest due to the formation of complexes between the model-wine and salivary proteins. This also provided astringency, therefore correlating viscosity and astringency feelings (R = 0.855, p = 0.030). No correlation was found between viscosity and body perception because of the overlapping of the phenolic components. Overall, the present results reveal saliva as a key factor when studying the wine texture through instrumental measurements (density and viscosity)

    Reversed-phase high-performance liquid chromatography–fluorescence detection for the analysis of glutathione and its precursor γ-glutamyl cysteine in wines and model wines supplemented with oenological inactive dry yeast preparations

    El pdf del artículo es la versión pre-print.A reversed-phase high-performance liquid chromatography-fluorescence detection methodology involving a pre-column derivatization procedure using 2,3-naphtalenedialdehyde in the presence of 5 and 0. 5 mM of dithiothreitol to determine total and reduced glutathione (GSH) and γ-glutamyl-cysteine (γ-glu-cys) in musts and wines has been set up and validated. The proposed method showed good linearity (R 2 >99% for reduced and total GSH, and R 2 >98% for γ-glu-cys) in synthetic wines, over a wide range of concentration (0-10 mg L -1). The limits of detection for reduced GSH in synthetic and real wines were almost the same (0. 13 and 0. 15 mg L -1, respectively) and slightly higher for γ-glu-cys (0. 24 mg L -1). The application of the method allowed knowing, for the first time, the amount of total and reduced GSH and γ-glu-cys released into synthetic wines by oenological preparations of commercial inactive dry yeast (IDY). In addition, the evolution of these three compounds during the winemaking and shelf life (0-9 months) of an industrially manufactured rosé wine supplemented with a GSH-enriched IDY showed that although GSH is effectively released from IDY, it is rapidly oxidized during alcoholic fermentation, contributing to the higher total GSH content determined in wines supplemented with GSH-enriched IDYs compared to control wines. © 2011 Springer Science+Business Media, LLC.IAO and JJRB acknowledge CAM and CSIC for their respective research grants.     Simulating and interpreting deep observations in the Hubble Ultra Deep Field with the JWST/NIRSpec low-resolution 'prism'

    The James Webb Space Telescope (JWST) will enable the detection of optical emission lines in galaxies spanning a broad range of luminosities out to redshifts z 10. Measurements of key galaxy properties, such as star formation rate and metallicity, through these observations will provide unique insight into, e.g. the role of feedback from stars and active galactic nuclei (AGNs) in regulating galaxy evolution, the co-evolution of AGNs and host galaxies, the physical origin of the 'main sequence' of star-forming galaxies, and the contribution by star-forming galaxies to cosmic reionization. We present an original framework to simulate and analyse observations performed with the near-infrared spectrograph (NIRSpec) on board JWST. We use the BEAGLE tool (Bayesian Analysis of GaLaxy sEds) to build a semi-empirical catalogue of galaxy spectra based on photometric spectral energy distributions of dropout galaxies in the Hubble Ultra Deep Field (HUDF).We demonstrate that the resulting catalogue of galaxy spectra satisfies different types of observational constraints on high-redshift galaxies, and use it as an input to simulate NIRSpec/prism (R∼100) observations.We show that a single 'deep' (∼100 ks) NIRSpec/prism pointing in the HUDF will enable S/N > 3 detections of multiple optical emission lines in∼30 (∼60) galaxies at z6 (z ∼ 4 - 6) down tomF160W 30 AB mag. Such observations will allowmeasurements of galaxy star formation rates, ionization parameters, and gas-phasemetallicitieswithin factors of 1.5,mass-to-light ratioswithin a factor of 2, galaxy ages within a factor of 3, and V-band attenuation optical depths with a precision of 0.3

    Human milk and mucosal lacto- and galacto-N-biose synthesis by transgalactosylation and their prebiotic potential in Lactobacillus species

    Lacto-N-biose (LNB) and galacto-N-biose (GNB) are major building blocks of free oligosaccharides and glycan moieties of glyco-complexes present in human milk and gastrointestinal mucosa. We have previously characterized the phospho-β-galactosidase GnbG from Lactobacillus casei BL23 that is involved in the metabolism of LNB and GNB. GnbG has been used here in transglycosylation reactions, and it showed the production of LNB and GNB with N-acetylglucosamine and N-acetylgalactosamine as acceptors, respectively. The reaction kinetics demonstrated that GnbG can convert 69 ± 4 and 71 ± 1 % of o-nitrophenyl-β-D-galactopyranoside into LNB and GNB, respectively. Those reactions were performed in a semi-preparative scale, and the synthesized disaccharides were purified. The maximum yield obtained for LNB was 10.7 ± 0.2 g/l and for GNB was 10.8 ± 0.3 g/l. NMR spectroscopy confirmed the molecular structures of both carbohydrates and the absence of reaction byproducts, which also supports that GnbG is specific for β1,3-glycosidic linkages. The purified sugars were subsequently tested for their potential prebiotic properties using Lactobacillus species. The results showed that LNB and GNB were fermented by the tested strains of L. casei, Lactobacillus rhamnosus (except L. rhamnosus strain ATCC 53103), Lactobacillus zeae, Lactobacillus gasseri, and Lactobacillus johnsonii. DNA hybridization experiments suggested that the metabolism of those disaccharides in 9 out of 10 L. casei strains, all L. rhamnosus strains and all L. zeae strains tested relies upon a phospho-β-galactosidase homologous to GnbG. The results presented here support the putative role of human milk oligosaccharides for selective enrichment of beneficial intestinal microbiota in breast-fed infants

    Selected Schizosaccharomyces pombe Strains Have Characteristics That Are Beneficial for Winemaking

    At present, wine is generally produced using Saccharomyces yeast followed by Oenococus bacteria to complete malolactic fermentation. This method has some unsolved problems, such as the management of highly acidic musts and the production of potentially toxic products including biogenic amines and ethyl carbamate. Here we explore the potential of the fission yeast Schizosaccharomyces pombe to solve these problems. We characterise an extensive worldwide collection of S. pombe strains according to classic biochemical parameters of oenological interest. We identify three genetically different S. pombe strains that appear suitable for winemaking. These strains compare favourably to standard Saccharomyces cerevisiae winemaking strains, in that they perform effective malic acid deacidification and significantly reduce levels of biogenic amines and ethyl carbamate precursors without the need for any secondary bacterial malolactic fermentation. These findings indicate that the use of certain S. pombe strains could be advantageous for winemaking in regions where malic acid is problematic, and these strains also show superior performance with respect to food safety

    International entrepreneurship in SMEs: a study of influencing factors in the textile industry

An important part of this literature has focused on the analysis of the contributing factors to IE development. From these studies, this work attempts to analyse and validate through an integrative model the effect on this construct in SME of some of the main factors proposed by the literature such as Skills and Competences, Attitude and Proactiveness, Creativity and Innovation, Networking, Employees and Activity. To proceed with this aim, we conducted an empirical research focused on 174 textile SME in Spain. The results obtained confirm a positive relationship between the studied factors and the IE development.     The JWST Extragalactic Mock Catalog: Modeling Galaxy Populations from the UV through the Near-IR over 13 Billion Years of Cosmic History

    We present an original phenomenological model to describe the evolution of galaxy number counts, morphologies, and spectral energy distributions across a wide range of redshifts (0.2<z<150.2\lt z\lt 15) and stellar masses [log(M/M)6][\mathrm{log}(M/{M}_{\odot })\geqslant 6]. Our model follows observed mass and luminosity functions of both star-forming and quiescent galaxies, and reproduces the redshift evolution of colors, sizes, star formation, and chemical properties of the observed galaxy population. Unlike other existing approaches, our model includes a self-consistent treatment of stellar and photoionized gas emission and dust attenuation based on the beagle tool. The mock galaxy catalogs generated with our new model can be used to simulate and optimize extragalactic surveys with future facilities such as the James Webb Space Telescope (JWST), and to enable critical assessments of analysis procedures, interpretation tools, and measurement systematics for both photometric and spectroscopic data. As a first application of this work, we make predictions for the upcoming JWST Advanced Deep Extragalactic Survey (JADES), a joint program of the JWST/NIRCam and NIRSpec Guaranteed Time Observations teams. We show that JADES will detect, with NIRCam imaging, 1000s of galaxies at z gsim 6, and 10s at z gsim 10 at mAB30{m}_{{AB}}\lesssim 30 (5σ) within the 236 arcmin2 of the survey. The JADES data will enable accurate constraints on the evolution of the UV luminosity function at z > 8, and resolve the current debate about the rate of evolution of galaxies at z gsim 8. Ready-to-use mock catalogs and software to generate new realizations are publicly available as the JAdes extraGalactic Ultradeep Artificial Realizations (JAGUAR) package

    JADES: Detecting [OIII] λ 4363 emitters and testing strong line calibrations in the high- z Universe with ultra-deep JWST/NIRSpec spectroscopy up to z ~ 9.5

    We present ten novel [OIII]λ4363 auroral line detections up to z~ 9.5 measured from ultra-deep JWST/NIRSpec MSA spectroscopy from the JWST Advanced Deep Extragalactic Survey (JADES). We leverage the deepest spectroscopic observations taken thus far with NIRSpec to determine electron temperatures and oxygen abundances using the direct Te method. We directly compare these results against a suite of locally calibrated strong-line diagnostics and recent high-z calibrations. We find the calibrations fail to simultaneously match our JADES sample, thus warranting a self-consistent revision of these calibrations for the high-z Universe. We find a weak dependence between R2 and O3O2 with metallicity, thus suggesting these line ratios are inefficient in the high-z Universe as metallicity diagnostics and degeneracy breakers. We find R3 and R23 are still correlated with metallicity, but we find a tentative flattening of these diagnostics, thus suggesting future difficulties when applying these strong line ratios as metallicity indicators in the high-z Universe. We also propose and test an alternative diagnostic based on a different combination of R3 and R2 with a higher dynamic range. We find a reasonably good agreement (median offset of 0.002 dex, median absolute offset of 0.13 dex) with the JWST sample at low metallicity, but future investigations are required on larger samples to probe past the turnover point. At a given metallicity, our sample demonstrates higher ionization and excitation ratios than local galaxies with rest-frame EWs(Hβ) ≈ 200-300 Å. However, we find the median rest-frame EWs(Hβ) of our sample to be~2× less than the galaxies used for the local calibrations. This EW discrepancy combined with the high ionization of our galaxies does not offer a clear description of [OIII]λ4363 production in the high-z Universe, thus warranting a much deeper examination into the factors influencing these processes
