    Influence of dimethyl dicarbonate on the resistance of Escherichia coli to a combined UV-Heat treatment in apple juice

    Commercial apple juice inoculated with Escherichia coli was treated with UV-C, heat (55°C) and dimethyl dicarbonate – DMDC (25, 50, and 75 mg/L)-, applied separately and in combination, in order to investigate the possibility of synergistic lethal effects. The inactivation levels resulting from each treatment applied individually for a maximum treatment time of 3.58 min were limited, reaching 1.2, 2.9, and 0.06 log10 reductions for UV, heat, and DMDC (75 mg/L), respectively. However, all the investigated combinations resulted in a synergistic lethal effect, reducing the total treatment time and UV dose, with the synergistic lethal effect being higher when larger concentrations of DMDC were added to the apple juice. The addition of 75 mg/L of DMDC prior to the combined UV-C light treatment at 55°C resulted in 5 log10 reductions after only 1.8 min, reducing the treatment time and UV dose of the combined UV-Heat treatment by 44

    Role of fruit juice in achieving the 5-a-day recommendation for fruit and vegetable intake

    Although there is strong evidence that consumption of fruit and vegetables is associatedwith a reduced rate of all-cause mortality, only a minority of the population consumes5 servings a day, and campaigns to increase intake have had limited success.This review examines whether encouraging the consumption of fruit juice might offera step toward the 5-a-day target. Reasons given for not consuming whole fruit involvepracticalities, inconvenience, and the effort required. Psychologically, what isimportant is not only basic information about health, but how individuals interprettheir ability to implement that information. It has been argued that fruit juice avoidsthe problems that commonly prevent fruit consumption and thus provides a practicalmeans of increasing intake and benefitting health through an approach with whichthe population can readily engage. Those arguing against consuming fruit juice emphasizethat it is a source of sugar lacking fiber, yet juice provides nutrients such asvitamin C, carotenoids, and polyphenols that offer health-related benefits. Actively encouragingthe daily consumption of fruit juice in public health policy could help populationsachieve the 5-a-day recommendation for fruit and vegetable intake

    This paper is meant to determine trends in changes in the organisation of fruit production at the beginning of the 21st century. It focuses on the determination of those trends as well as their circumstances. The analysis of changes in the organisation of fruit production was made using Grójec poviat as an example. The accession of Poland to the European Union resulted in the intensification of processes of specialisation and concentration in agriculture, due to which the area occupied by orchards started to grow systematically. With the growing area and the intensification of fruit crops, quantities of fruits produced also increased. Currently, Poland is one of the biggest fruit manufacturers in Europe, with Grójec poviat being the biggest producer in Poland
