    Horizontal and vertical networks for innovation in the traditional food sector

    The locus of innovation is not the individual firm anymore but increasingly the network in which the firm is embedded. Hence, in this paper innovation is investigated in the broader context of networks and applied to the traditional food sector. Networking refers to a process of identifying and acting on complementary interests with or without formal means of cooperation and plays an important role for the diffusion and adoption of innovations, because they increase the flow of information. Two main types of networks exist. Vertical networks relate to cooperation of partners belonging to the same chain. Meanwhile, horizontal networks refer to coopereation among firms which are primarily competitors. Data were collected during focus groups and in-depths interviews in three European contries: Belgium, Hungary, and Italy. In each country, data are collected from retailers/wholesalers, food manufacturers and suppliers in the beer, hard and half hard cheese, ham, sausage, or white paprika chain. In the investigated countries both vertical and horizontal networks exist. However, the intensity of using the network differs. On the one hand vertical networks are well developed based on quality assurance schemes and traceability, though these networks often face difficulties due to high lack of trust. On the other hand, horizontal networks are well developed when a producer consortium is involved. However, these networks can be inhibited through strong competition. The partners in traditional food networks focus mainly on innovation related to product characteristics such as new size, form and packaging without changing the traditional character of the product. The main barriers for innovation in the traditional food networks are the lack of understanding the benefits of networking activities for innovation, the lack of trust, the lack of knowledge of appropriate methods and skills, and the lack of financial and physical resources. Our study points out that successful SMEs use their networks to overcome lacks of knowledge and information and to create possibilities of joint use of resources

    The Importance of Clusters for Sustainable Innovation Processes: The Context of Small and Medium Sized Regions

    The purpose of the current paper is to provide a critical state-of-the-art review of current research on clusters and its correlation to innovation dynamics in small and medium-sized regions. In particular, we focus on the systematization of the main concepts and theoretical insights that are tributary to the cluster overview in terms of its relevance for the sustainability of the innovation processes, knowledge production and diffusion, which take place inside small and medium-sized regions. The present working paper takes into account the initial studies on English industrial districts (in the nineteenth century), passing through the Italian industrial districts (in the 70s and 80s of the twentieth century), until the modern theories of business clusters and innovation systems. These frameworks constitute the basis of an approach to endogenous development, which gives a central role to the interaction between economic actors, the society and the institutions and to the identification, mobilization and combination of potential resources within a particular geographical area.Cluster; Innovation; Endogenous development; Territory.

    Contribución del comercio electrónico al desempeño de las PyMEs industriales: un modelo estructural

    El rol que juegan las Tecnologías de la Información y comunicación (TIC) para lograr un mejor desempeño organizacional aún requiere de un análisis más profundo entre las pequeñas y medianas empresas (PyMEs) de los países en desarrollo. Este estudio pretende ampliar la literatura empírica sobre la relación entre TIC, comercio electrónico y desempeño de las PyMEs en países en desarrollo. Para alcanzar este objetivo, utilizamos una muestra de 87 empresas manufactureras de la ciudad de Bahia Blanca, Argentina correspondiente al año 2015. Mediante la estimación de un Modelo de ecuación estructura, se obtiene que la adopción del comercio electrónico posee una influencia positiva y significativa en las ventas de las PyMEs la cual es potenciada por el nivel de uso de las TIC. Otros factores organizacionales tales como el tamaño de la empresa y los programas públicos explican el desempeño, pero no son predictores significativos de la adopción del comercio electrónico.The role Information and Communication Technologies (ICT) play in achieving a better organizational performance still needs further analysis among small and medium sized enterprises (SME) from developing countries. This study aims to extend the empirical literature on the relationship between ICT, electronic commerce and SME performance in developing countries. To achieve this goal, we employ a sample of 87 manufacturing firms from the city of Bahía Blanca, Argentina in the year 2015. By estimating a structural equation model, we obtain that electronic commerce adoption has a positive and significant influence on SME sales which is reinforced by the level of ICT use.     Food supply chain stakeholders' perspectives on sharing information to detect and prevent food integrity issues

    One of the biggest challenges facing the food industry is assuring food integrity. Dealing with complex food integrity issues requires a multi-dimensional approach. Preventive actions and early reactive responses are key for the food supply chain. Information sharing could facilitate the detection and prevention of food integrity issues. This study investigates attitudes towards a food integrity information sharing system (FI-ISS) among stakeholders in the European food supply chain. Insights into stakeholders' interest in participating and their conditions for joining an FI-ISS are assessed. The stakeholder consultation consisted of three rounds. During the first round, a total of 143 food industry stakeholders-covering all major food sectors susceptible to food integrity issues-participated in an online quantitative survey between November 2017 and February 2018. The second round, an online qualitative feedback survey in which the findings were presented, received feedback from 61 stakeholders from the food industry, food safety authorities and the science community. Finally, 37 stakeholders discussed the results in further detail during an interactive workshop in May 2018. Three distinct groups of industry stakeholders were identified based on reported frequency of occurrence and likelihood of detecting food integrity issues. Food industry stakeholders strongly support the concept of an FI-ISS, with an attitude score of 4.49 (standard deviation (S. D.) = 0.57) on a 5-point scale, and their willingness to participate is accordingly high (81%). Consensus exists regarding the advantages an FI-ISS can yield towards detection and prevention. A stakeholder's perception of the advantages was identified as a predictor of their intention to join an FI-ISS, while their perception of the disadvantages and the perceived risk of food integrity issues were not. Medium-sized companies perceive the current detection of food integrity issues as less likely compared to smaller and large companies. Interestingly, medium-sized companies also have lower intentions to join an FI-ISS. Four key success factors for an FI-ISS are defined, more specifically with regards to (1) the actors to be involved in a system, (2) the information to be shared, (3) the third party to manage the FI-ISS and (4) the role of food safety authorities.     Performance measurement in SMEs: systematic literature review and research directions

    [EN] The purpose of this paper is double. First, the research about performance measurement (PM) in small and medium-sized enterprises (SMEs) will be analysed in order to know its evolution. Next, the research gaps in the business context of these companies will be identi¿ed. This paper presents a systematic literature review of 131 articles of PM in SMEs between 2006 and 2019. A conceptual framework is proposed to characterize the studies according to three factors: (1) purpose of the approach; (2) scope of PM; and (3) business context in which the studies are articulated. The reviewed papers were selected from Scopus and Web of Science databases. For this study, we considered the works conducted in the manufacturing sector, and excluded those that focused on the services sector. The results show that most of the studies are concentrated in the context of individual company, on the other hand networks, clusters, and supply chains have received less attention.     Performance measurement : challenges for tomorrow

    This paper demonstrates that the context within which performance measurement is used is changing. The key questions posed are: Is performance measurement ready for the emerging context? What are the gaps in our knowledge? and Which lines of enquiry do we need to pursue? A literature synthesis conducted by a team of multidisciplinary researchers charts the evolution of the performance-measurement literature and identifies that the literature largely follows the emerging business and global trends. The ensuing discussion introduces the currently emerging and predicted future trends and explores how current knowledge on performance measurement may deal with the emerging context. This results in identification of specific challenges for performance measurement within a holistic systems-based framework. The principle limitation of the paper is that it covers a broad literature base without in-depth analysis of a particular aspect of performance measurement. However, this weakness is also the strength of the paper. What is perhaps most significant is that there is a need for rethinking how we research the field of performance measurement by taking a holistic systems-based approach, recognizing the integrated and concurrent nature of challenges that the practitioners, and consequently the field, face
