    Propiedades químicas y físicas de las grasas producidas mediante interesterificación química de sebo con aceites vegetales

    This study aims at manufacturing structured lipids by chemical interesterification (CI) of beef tallow with corn, canola and safflower oils individually at various tallow blend ratios (60, 70, 80%) and catalyst concentrations (0.75, 0.875, 1%). Several physical and chemical properties of interesterified products were determined and data were analyzed using univariate and multivariate statistical techniques. Interesterified lipids were more spreadable and showed plastic behavior due to their lower consistency and solid fat contents. Decreases in melting points to a temperature range of 26.5-45.5 °C regardless of oil type were observed. Interesterified fats displayed mostly β’ and β’+β crystal forms. The CI of tallow did not result in the formation of significant amounts of trans-fatty acids. Samples interesterified with corn oil had lower free fatty acid contents (1.87-3.9%) and higher oxidation induction times (3.82-12.25h) than other lipids. Therefore, fats containing corn oil-tallow could be used in the baking industry due to their potentially good aeration properties and smooth texture.Este estudio tiene como objetivo la fabricación de lípidos estructurados mediante interesterificación química (IQ) de sebo de res con aceites de maíz, canola y cártamo individualmente en varias relaciones de la mezcla (60% -70% -80%) y concentraciones de catalizador (0,75, 0,875, 1%). Se determinaron varias propiedades físicas y químicas de los productos interesterificados y los datos se analizaron con técnicas estadísticas univariante y multivariantes. Los lípidos interesterificados son más extensibles y tienen un comportamiento plástico debido a su menor consistencia y contenido de grasa sólida. Se observaron disminuciones en los puntos de fusión a un rango de temperatura de 26,5-45,5 °C, independientemente del tipo de aceite. Las grasas interesterificadas muestran principalmente formas cristalinas β ’y β’ + β. La IQ de sebo no dio lugar a la formación de cantidades significativas de ácidos grasos trans. Las muestras interesterificadas con aceite de maíz tienen un contenido de ácidos grasos libres más bajo (1,87-3,9%) y tiempos de inducción de oxidación más altos (3,82-12,25 h) que otros lípidos. Por lo tanto, las grasas que contienen sebo-aceite de maíz podrían usarse en la industria de la panadería debido a sus posibles buenas propiedades de aireación y textura suave

    Are cascading flows stable?

    The stability of flows cascading down slopes as dense inclined plumes is examined, with particular reference to flows observed in Lake Geneva during winter periods of severe cooling. A previous conjecture by Turner that the flow may be in a state of marginal stability is confirmed: the observed mean velocity and density profiles are unstable to Kelvin-Helmholtz instability, but only marginally so; the growth rates of the most unstable small disturbances to the cascading flow in Lake Geneva are small, with e-folding periods of about 2 h. A reduction in the maximum velocity by about 20% is required to stabilize the flow. The possibility that stationary hydraulic jumps may occur in the observed flow is also considered. Several plausible flow states downstream of transitions are examined, allowing for mixing and density changes to occur, ranging from one that preserves the shape of the density and velocity profiles to one in which, as a consequence of mixing, the velocity and density become uniform in depth within the cascading flow. Neither of these extreme states is found to conserve the fluxes of volume, mass and momentum through a transition in which the energy flux does not increase, and to be unique or ‘stable' in the sense that no further transition is possible to a similar flow state without more entrainment. Stable transitions to intermediate downstream flows that conserve flow properties and reduce energy flux are, however, found, although the smallest value of the flow parameter, Fr≡ Umax2/gΔ h (where Umax is the maximum flow speed, g is the acceleration due to gravity, Δ is a fractional density difference within the flow and h is the flow thickness) at which transitions may occur is only slightly less than that of the cascading flow in Lake Geneva. In this sense, the observed flow is marginally unstable to a finite-amplitude transition or hydraulic jump. Velocity and density profiles of possible flows downstream of a transition are found. The amplitudes of possible transitions and the flux of water entrained from the ambient overlying water mass are limited to narrow range

    Effects of processing parameters on chemical and physical properties of enzymatically interesterified beef tallow–corn oil blends

    The purpose of this study was to improve some physical and chemical characteristics of tallow through enzymatic interesterification process with corn oil and to investigate effects of process parameters on chemical and physical properties of obtained products. Full factorial design was constructed using blend ratio and reaction time as process parameters. Enzymatic interesterification was catalyzed with sn-1,3-specific lipase. Interesterified lipids have higher free fatty acid content and lower oxidative stability compared to initial blends. Interesterification did not cause trans-fatty acid formation and products mostly contained \u3b2 crystals. Solid fat content and slip melting point decreased up to 6 hr of interesterification; however, longer reaction times have negative effects on these parameters. Statistical analyses\u2019 results confirmed that reaction time is highly important for enzymatic interesterification. Practical applications: Some of interesterified lipids can be utilized as alternatives to margarines or butterfat due to their lower trans-fatty acid content and crystal morphology

    Patients With Kidney Cancer

    To develop a preoperative prognostic model in order to predict recurrence-free survival in patients with nonmetastatic kidney cancer.A multi-institutional data base of 1889 patients who underwent surgical resection between 1987 and 2007 for kidney cancer was retrospectively analyzed. Preoperative variables were defined as age, gender, presentation, size, presence of radiological lymph nodes and clinical stage. Univariate and multivariate analyses of the variables were performed using the Cox proportional hazards regression model. A model was developed with preoperative variables as predictors of recurrence after nephrectomy. Internal validation was performed by Harrells concordance index.The median follow-up was 23.6 months (1222 months). During the follow-up, 258 patients (13.7) developed cancer recurrence. The median follow-up for patients who did not develop recurrence was 25 months. The median time from surgery to recurrence was 13 months. The 5-year freedom from recurrence probability was 78.6. All variables except age were associated with freedom from recurrence in multivariate analyses (P 0.05). Age was marginally significant in the univariate analysis. All variables were included in the predictive model. The calculated c-index was 0.747.This preoperative model utilizes easy to obtain clinical variables and predicts the likelihood of development of recurrent disease in patients with kidney tumors

    Comparison of emotional approaches of medical doctors against COVID-19 pandemic: Eastern and Western Mediterranean countries

    Background: Pandemics are states of disease that occur worldwide and sharply increase in populations. It causes life events which trigger anxiety, depression, anger, sleep deprivation, emotional distress and stress. World Health Organization (WHO) declared coronavirus disease 2019 (COVID-19) a pandemic on March 11, pointing to the over 118,000 cases in over 110 countries. Many healthcare workers became ill during the pandemic and some among them died. In this study, we aimed to evaluate and compare level of stress against COVID-19 pandemic among doctors from Turkey and Italy. Methods: This research is a cross-sectional study in which Perceived Stress Scale (PSS-10) and Secondary Traumatic Stress Scale (STSS) are administered online via social networks. All data collection tools were delivered to individuals between 1 and 15 June 2020 and filled in online with Google Forms application. In total, 618 individuals were included in this study and all of them were medical doctors. Results: Higher PS and STS levels were found related to female gender, being married, working in pandemic hospital and older ages. Stress levels were found statistically higher in Turkish doctors when compared to Italian doctors for both stress scales (Turkish/Italian PSS:20.18 Â± 7.90/ 19.35 Â± 6.71, STSS: 44.19 Â± 13.29/ 38.83 Â± 13.74). Conclusion: The number of doctors per 1000 of population is lower and per capita visits to a physician are higher in Turkey when compared to Italy. Besides pandemic, these heavier working conditions, increased weekly working hours can cause stress for Turkish doctors. Reporting information such this study is important and international collaborations are essential to plan future prevention strategies. We need to strengthen international ties and build more international collaborations rather than staying within our national silos. Additionally, interventions to promote mental well-being in health care professionals exposed to COVID-19 need to be immediately implemented

    Pharmacokinetics of orally administered tetrahydrobiopterin in patients with phenylalanine hydroxylase deficiency

    Summary: The oral loading test with tetrahydrobiopterin (BH4) is used to discriminate between variants of hyperphenylalaninaemia and to detect BH4-responsive patients. The outcome of the loading test depends on the genotype, dosage of BH4, and BH4 pharmacokinetics. A total of 71 patients with hyperphenylalaninaemia (mild to classic) were challenged with BH4 (20 mg/kg) according to different protocols (1 × 20 mg or 2 × 20 mg) and blood BH4 concentrations were measured in dried blood spots at different time points (T0, T2, T4, T8, T12, T24, T32 and T48 h). Maximal BH4 concentrations (median 22.69 nmol/g Hb) were measured 4 h after BH4 administration in 63 out of 71 patients. Eight patients presented with maximal BH4 concentrations ∼44% higher at 8 h than at 4 h. After 24 h, BH4 blood concentrations dropped to 11% of maximal values. This profile was similar using different protocols. The following pharmacokinetic parameters were calculated for BH4 in blood: t max = 4 h, AUC (T0−32) = 370 nmol × h/g Hb, and t 1/2 for absorption (1.1 h), distribution (2.5 h), and elimination (46.0 h) phases. Maximal BH4 blood concentrations were not significantly lower in non-responders and there was no correlation between blood concentrations and responsiveness. Of mild PKU patients, 97% responded to BH4 administration, while one was found to be a non-responder. Only 10/19 patients (53%) with Phe concentrations of 600-1200 μmol/L responded to BH4 administration, and of the patients with the severe classical phenotype (blood Phe > 1200 μmol/L) only 4 out of 17 patient responded. An additional 36 patients with mild hyperphenylalaninaemia (HPA) who underwent the combined loading test with Phe+BH4 were all responders.     Multiple target task sharing support for the OpenMP accelerator model

    The use of GPU accelerators is becoming common in HPC platforms due to the their effective performance and energy efficiency. In addition, new generations of multicore processors are being designed with wider vector units and/or larger hardware thread counts, also contributing to the peak performance of the whole system. Although current directive–based paradigms, such as OpenMP or OpenACC, support both accelerators and multicore-based hosts, they do not provide an effective and efficient way to concurrently use them, usually resulting in accelerated programs in which the potential computational performance of the host is not exploited. In this paper we propose an extension to the OpenMP 4.5 directive-based programming model to support the specification and execution of multiple instances of task regions on different devices (i.e. accelerators in conjunction with the vector and heavily multithreaded capabilities in multicore processors). The compiler is responsible for the generation of device-specific code for each device kind, delegating to the runtime system the dynamic schedule of the tasks to the available devices. The new proposed clause conveys useful insight to guide the scheduler while keeping a clean, abstract and machine independent programmer interface. The potential of the proposal is analyzed in a prototype implementation in the OmpSs compiler and runtime infrastructure. Performance evaluation is done using three kernels (N-Body, tiled matrix multiply and Stream) on different GPU-capable systems based on ARM, Intel x86 and IBM Power8.
