    Emulsiones múltiples; compuestos bioactivos y alimentos funcionales *

    Resumen La continua aparición de evidencias científicas acerca del papel de la dieta y/o sus componentes en el bienestar y la salud, ha favorecido la aparición de los alimentos funcionales que en la actualidad constituyen uno de los principales impulsores del desarrollo de nuevos productos. La aplicación de emulsiones múltiples abre nuevas posibilidades en el diseño y desarrollo de alimentos funcionales. Tales sistemas pueden emplearse como producto intermedio (ingrediente alimentario) dentro de las estrategias tecnológicas habitualmente empleadas en la optimización de la presencia de compuestos bioactivos en alimentos más saludables y funcionales. Este artículo presenta un breve análisis de los tipos, características y formación de emulsiones múltiples, posibilidad de localización de compuestos bioactivos, así como su potencial aplicación en el diseño y preparación de alimentos saludables y funcionales. Tales aplicaciones se manifiestan especialmente relevantes en relación con aspectos cuantitativos y cualitativos del material lipídico (reducción de grasa/calorías y optimización del perfíl de ácidos grasos), encapsulamiento de compuestos bioactivos fundamentalmente hidrofílicos y reducción de sodio. Esta estrategia ofrece interesantes posibilidades en relación con el enmascaramiento de sabores y mejora de las propiedades sensoriales de los alimentos

    Antioxidant activity of hydroxytyrosol in frankfurters enriched with n-3 polyunsaturated fatty acids

    8 páginas,6 tablas.The capacity of hydroxytyrosol (HXT) to inhibit lipid oxidation in cooked pork meat batter, oil-in-water emulsions and potential functional frankfurters formulated with a healthier oil combination (as animal fat replacer) was studied during chilling storage, and its effect compared with those produced by synthetic antioxidants (BHA/BHT). Although efficiency varied, HXT was an effective antioxidant during chilling storage in the three food matrices studied. In general the order of inhibition capacity of HXT against lipid oxidation (thiobarbituric acid-reactive substances-TBARS) was cooked meat batter > oil-in-water emulsion > frankfurters, whereas in the case of BHA/BHT (with lower inhibitory activity than HXT) it was cooked meat batter > oil-in-water emulsion, and there was no antioxidative effect in frankfurters. Whereas significant correlations were established between lipid oxidation (TBARS) and antioxidative capacity measured by photochemiluminescence (PCL) in frankfurters supplemented with HXT and BHA/BHT, no significant correlations were found between ferric reducing/antioxidant power assay (FRAP) and TBARS and PCL.This research was supported by the projects AGL2008-04892- CO3-01 and Consolider Ingenio 2010: CARNISENUSA (CSD2007- 00016).Peer reviewe

    Первичная сексуально−эротическая дезадаптация как причина внебрачных связей супругов

    Показаны закономерности развития, проявления и течения сексуально−эротической формы первичной дезадаптации супругов, имеющиеся у них варианты и разновидности сексуальной дезадаптации. Описаны причины, частота и характер обусловленных этой формой дезадаптации внебрачных связей, моральные качества и личностные особенности супругов, способствующие совершению ими супружеских измен. Дается рекомендация учитывать полученные в исследовании данные при психотерапевтической коррекции сексуально−эротической дезадаптации и разработке системы психопрофилактики сопровождающего ее внебрачного секса.The regularities of development, manifestations and course of sexual−erotic form of primary spouse dysadaptation as well as the variants and varieties of dysadaptation are shown. The causes, frequency and character of extramarital relations due to this form of dysadaptation, moral qualities and personality peculiarities of the spouses providing marital unfaithfulness are described. It is recommended to consider the received information in psychopreventive correction of sexual−erotic dysadaptation and working out the system of psychoprevention of the extramarital sex

Identifying which components of physical fitness are associated with HRQoL in people with fibromyalgia may contribute to the development of more specific therapeutic strategies. Objective. The 2 aims of this study were to examine the association of different components of physical fitness (ie, flexibility, muscle strength, speed and agility, and cardiorespiratory fitness) with HRQoL and to determine the extent to which any association between the components of physical fitness and HRQoL were of clinical relevance to women with fibromyalgia. Design. A cross-sectional design was used. Methods. This study included 466 women with fibromyalgia from southern Spain (Andalusia). The Senior Fitness Test battery and the handgrip test were used to assess physical fitness, and the 36-Item Short-Form Health Survey (SF-36) was used to assess HRQoL. Tender points, cognitive impairment, anthropometric measurements, and medica- tion usage were also measured. First, multivariate linear regression was used to assess the individual relationship of each physical fitness test with the 8 dimensions of the SF-36. Second, a standardized composite score was computed for each component of physical fitness (flexibility, muscle strength, speed and agility, and cardiorespiratory fitness). A 1- way analysis of covariance to assess the differences in each of the 8 dimensions of the SF-36 across each physical fitness composite score was conducted. Forward stepwise regression was performed to analyze which components of physical fitness were independently associated with the SF-36 physical and mental component scales. Results. Overall, higher levels of physical fitness were associated with higher levels of HRQoL (regardless of the SF-36 subscale evaluated). The effect sizes for HRQoL between participants with the lowest and the highest physical fitness levels ranged from moderate to large (Cohen d = 0.53–0.90). The muscle strength composite score was independently associated with the SF-36 physical component scale, whereas the flexibility composite score and cardiorespiratory fitness were independently associated with the SF-36 mental component scale. Limitations. A limitation was that the cross-sectional design precluded the estab- lishment of causality. Additionally, only women were included in the study, because fibromyalgia predominantly affects women. Conclusions. High levels of physical fitness were consistently associated with better HRQoL in women with fibromyalgia; clinically relevant differences were demonstrated between those at extreme physical fitness levels. Muscle strength, flexibility, and car- diorespiratory fitness were independent indicators of HRQoL. These results warrant further prospective research on the potential of fitness to predict HRQoL in this population
