    Determination of carboximetillysine in toasted and baked foods

    La carboximetillisina (CML) es un indicador de etapas avanzadas de la reacción de Maillard. Su formación en los alimentos dependerá directamente de la composición de los mismos, pero también de la temperatura y tiempo de calentamiento al que se ven sometidos durante el procesado. Concretamente, se ve favorecida cuando el tratamiento térmico es más severo, de ahí que esté presente en alimentos tostados u horneados como los productos de panadería o bollería. En el presente trabajo se analizó el contenido de CML en 9 tipos de alimentos: pan integral, pan de molde tostado a diferentes tiempos, colines, torta de inés rosales, palmera, caracola, suizo y medianoche y galleta integral más o menos horneadas. La determinación de CML se realizó mediante cromatografía de gases acoplada a espectrometría de masas, previa reducción, hidrólisis y derivatización. Los valores de CML determinados en las muestras del estudio oscilaron entre 1,38 mg/100 g muestra (palitos no integrales) y 10,4 mg/100 g de muestra (galleta más tostada). El pan de molde mostró un incremento en el contenido de CML paralelo al tiempo de tostado, pasando de 6,31 mg/100 g sin tostar, a 6,44 mg/100g con 1 minuto de tostado y a 8,95 mg/100 g con 6 minutos de tostado. En conclusión, es importante conocer la cantidad de CML que contiene un alimento, para controlar su ingesta, especialmente en los sometidos a tostado u horneado, ya que, como se ha comprobado en este estudio, el contenido de CML incrementa paralelamente al tratamiento térmico.Carboximetillysine (CML) is an indicator of advanced stages of Maillard reaction. Its formation in foods depends on their composition but, moreover, on temperature and time of thermal treatment whom they are submitted during processed. Particularly, it is favored when thermal treatment is more severe, with the result that it is present in toasted or baked foods such as bakery products. In the present study, CML content in 9 different foods was analyzed: integral bread, sliced bread which was toasted at different times, breadsticks, “inés rosales” cake, heart-shaped pastry, flaky pastry, bun with sugar and bun and integral biscuit more or less baked. Determination of CML was carried out by GCMS, after reduction, hydrolysis and derivatization. CML values in studied samples ranged from 1.38 mg/100 g of sample (no integral breadsticks) to 10.4 mg/100 g of sample (more toasted biscuit). In sliced bread a relationship between CML content and time of toasting was observed, increasing from 6.31 mg/100 g without toasting to 6.44 mg/100 g with 1 min and to 8.95 mg/100 g with 6 min of toasting.     En este artículo se analiza la medición del desempeño en Dirección de proyectos. El trabajo estudia la literatura actual, la aproximación de los cuerpos de conocimiento, y la perspectiva del sector público Colombiano. La metodología utilizada ha empleado estrategias cualitativas y cuantitativas. Por medio de la observación de un caso de estudio se ha recolectado información sobre los indicadores usualmente aplicados en un contexto en particular, para evaluar la gestión del desempeño de losproyectos. Una brecha entre la teoría y la práctica es analizada a través del estudio de indicadores y herramientas. Se conceptualizan los factores que pueden ser usados para medir el desempeño en la gestión de un proyecto lo cual representa la visión de la literatura y cuerpos de conocimiento. Con respecto a la medición del desempeño se encuentra un consenso general sobre la aplicación de técnicas. En la literatura existen diversas propuestas de las cuales se ha extraído un grupo de categorías que pueden ser usadas como un marco simplificado que soporte la elección de indicadores por parte de los directores. La importancia de la evaluación del desempeño de los proyectos ha sido validada como un factor global para el éxito de los mismos. Se ha encontrado una brecha y desafíos futuros para mejorar las condiciones del contexto descrito. Se pretende promover el uso de indicadores en esta práctica, y el desarrollo y aplicación de herramientas metodológicas que mejoren los resultados de la ejecución de proyectos.     Two rapid assays for screening of patulin biodegradation

    Artículo sobre distintos ensayos para comprobar la biodegradación de la patulinaThe mycotoxin patulin is produced by the blue mould pathogen Penicillium expansum in rotting apples during postharvest storage. Patulin is toxic to a wide range of organisms, including humans, animals, fungi and bacteria. Wash water from apple packing and processing houses often harbours patulin and fungal spores, which can contaminate the environment. Ubiquitous epiphytic yeasts, such as Rhodosporidium kratochvilovae strain LS11 which is a biocontrol agent of P. expansum in apples, have the capacity to resist the toxicity of patulin and to biodegrade it. Two non-toxic products are formed. One is desoxypatulinic acid. The aim of the work was to develop rapid, high-throughput bioassays for monitoring patulin degradation in multiple samples. Escherichia coli was highly sensitive to patulin, but insensitive to desoxypatulinic acid. This was utilized to develop a detection test for patulin, replacing time-consuming thin layer chromatography or high-performance liquid chromatography. Two assays for patulin degradation were developed, one in liquid medium and the other in semi-solid medium. Both assays allow the contemporary screening of a large number of samples. The liquid medium assay utilizes 96-well microtiter plates and was optimized for using a minimum of patulin. The semisolid medium assay has the added advantage of slowing down the biodegradation, which allows the study and isolation of transient degradation products. The two assays are complementary and have several areas of utilization, from screening a bank of microorganisms for biodegradation ability to the study of biodegradation pathways

    Project Management in Development Cooperation. Non-Governmental Organizations

    This article analyzes the adoption of project management practices in development cooperation NGOs and their influence on project performance. This paper illustrates the impact in the implementation of methodologies, techniques and tools on outcomes, measured by success criteria of several projects recently implemented. Information from the project managers of the organizations was collected, and complemented by a literature review. We analyzed the correlation among the variables that determine the adoption of a project, and the criteria that determine its success. The positive effect of project management adoption in the performance of cooperation projects is demonstrated, in spite of the low use of methodologies, techniques and tools within the sector. The article shows the importance of project management in cooperation and aid projects, with the purpose of increasing researchers' awareness about the field as applicable knowledge and about the benefits of its use in the sector. The paper shows that project management can improve project efficiency and accountability in other sectors.Este artículo analiza la adopción de prácticas propias de la gestión de proyectos en las ONG destinadas a la cooperación para el desarrollo, así como su influencia en la ejecución y el impacto de la aplicación de metodologías, técnicas y herramientas, en los resultados obtenidos por varios proyectos de reciente ejecución. Para tales efectos, se recolectó información de los directores de proyectos de las organizaciones seleccionadas, y adicionalmente se llevó a cabo una revisión de literatura sobre el tema. Con esta información se analizó la correlación entre las variables que determinan la adopción de un proyecto y los criterios que fijan el éxito en su ejecución, demostrando el efecto positivo de la adopción de este enfoque en la realización de proyectos de cooperación, a pesar de la escasa aplicación de las metodologías propuestas. El documento muestra la importancia de la gestión de proyectos en planes de cooperación y ayuda internacional, y tiene como objetivo incentivar el interés de los investigadores en el área dando a conocer los beneficios de su adopción en el sector. Por último, se demuestra que la aplicación de este enfoque también trae ventajas para el desarrollo de proyectos en otros sectores.Este artigo analisa a adoção de práticas de gestão de projetos na área da cooperação para o desenvolvimento, ONGs e a sua influência no desempenho do projeto. O documento ilustra o impacto da aplicação de metodologias tecnicas e ferramentas em resultados medidos por cri-terios de sucesso de vários projetos recentemente implementados. As informações dos gerentes de projetos das organizações foram coletadas e complementadas por uma revisão da literatura. Analisamos a correlação entre as variáveis que determinam a adoção e os criterios que determinam o sucesso de um projeto. O efeito positivo da adoção do projeto de gerenciamento do desempenho dos projetos de cooperação e demonstrado, apesar de um baixo uso de metodologias, tecnicas e ferramentas dentro do setor. O artigo mostra a importância da gestão de projetos em cooperação e de ajuda. Com o objetivo de aumentar a consciência sobre os pesquisadores do campo como aplicável conhecimento, sobre os benefícios de sua utilização no setor, o documento mostra que a gestão do projeto pode melhorar a eficiência do projeto e a prestação de contas em outros setores

    Integrated use of residues from olive mill and winery for lipase production by solid state fermentation with Aspergillus sp

    Two phase olive mill waste (TPOMW) is presently the major waste produced by the olive mill industry. This waste has potential to be used as substrate for solid state fermentation (SSF) despite of its high concentration of phenolic compounds and low nitrogen content. In this work, it is demonstrated that mixtures of TPOMW with winery wastes support the production of lipase by Aspergillus spp. By agar plate screening, Aspergillus niger MUM 03.58, Aspergillus ibericus MUM 03.49 and Aspergillus uvarum MUM 08.01 were chosen for lipase production by SSF. Plackett-Burman experimental design was employed to evaluate the effect of substrate composition and time on lipase production. The highest amounts of lipase were produced by A. ibericus on a mixture of TPOMW, urea and exhausted grape mark (EGM). Urea was found to be the most influent factor for the lipase production. Further optimization of lipase production by A. ibericus using a full factorial design (32) conducted to optimal conditions of substrate composition (0.073 g urea/g and 25% of EGM) achieving 18.67 U/g of lipolytic activity.Jose Manuel Salgado is grateful for Postdoctoral fellowship (EX-2010-0402) of Education Ministry of Spanish Government.     Social sciences research in neglected tropical diseases 2: A bibliographic analysis

    The official published version of the article can be found at the link below.Background There are strong arguments for social science and interdisciplinary research in the neglected tropical diseases. These diseases represent a rich and dynamic interplay between vector, host, and pathogen which occurs within social, physical and biological contexts. The overwhelming sense, however, is that neglected tropical diseases research is a biomedical endeavour largely excluding the social sciences. The purpose of this review is to provide a baseline for discussing the quantum and nature of the science that is being conducted, and the extent to which the social sciences are a part of that. Methods A bibliographic analysis was conducted of neglected tropical diseases related research papers published over the past 10 years in biomedical and social sciences. The analysis had textual and bibliometric facets, and focussed on chikungunya, dengue, visceral leishmaniasis, and onchocerciasis. Results There is substantial variation in the number of publications associated with each disease. The proportion of the research that is social science based appears remarkably consistent (<4%). A textual analysis, however, reveals a degree of misclassification by the abstracting service where a surprising proportion of the "social sciences" research was pure clinical research. Much of the social sciences research also tends to be "hand maiden" research focused on the implementation of biomedical solutions. Conclusion There is little evidence that scientists pay any attention to the complex social, cultural, biological, and environmental dynamic involved in human pathogenesis. There is little investigator driven social science and a poor presence of interdisciplinary science. The research needs more sophisticated funders and priority setters who are not beguiled by uncritical biomedical promises

    Measurement of the semileptonic charge asymmetry in B0 meson mixing with the D0 detector

    We present a measurement of the semileptonic mixing asymmetry for B0 mesons, a^d_{sl}, using two independent decay channels: B0 -> mu+D-X, with D- -> K+pi-pi-; and B0 -> mu+D*-X, with D*- -> antiD0 pi-, antiD0 -> K+pi- (and charge conjugate processes). We use a data sample corresponding to 10.4 fb^{-1} of ppbar collisions at sqrt(s) = 1.96 TeV, collected with the D0 experiment at the Fermilab Tevatron collider. We extract the charge asymmetries in these two channels as a function of the visible proper decay length (VPDL) of the B0 meson, correct for detector-related asymmetries using data-driven methods, and account for dilution from charge-symmetric processes using Monte Carlo simulation. The final measurement combines four signal VPDL regions for each channel, yielding a^d_{sl} = [0.68 \pm 0.45 \text{(stat.)} \pm 0.14 \text{(syst.)}]%. This is the single most precise measurement of this parameter, with uncertainties smaller than the current world average of B factory measurements.Comment: Version includes minor textual changes following peer review by journal, most notably the updating of Ref.     Measurements of single top quark production cross sections and |Vtb| in ppbar collisions at sqrt{s}=1.96 TeV

    We present measurements of production cross sections of single top quarks in \ppbar collisions at s=1.96  TeV\sqrt{s}=1.96\;\rm TeV in a data sample corresponding to an integrated luminosity of 5.4  fb15.4\;\rm fb^{-1} collected by the D0 detector at the Fermilab Tevatron Collider. We select events with an isolated electron or muon, an imbalance in transverse energy, and two, three, or four jets, with one or two of them containing a bottom hadron. We obtain an inclusive cross section of \sigma({\ppbar}{\rargap}tb+X, tqb+X) = 3.43\pm^{0.73}_{0.74}\;\rm pb and use it to extract the CKM matrix element 0.79<Vtb10.79 < |V_{tb}| \leq 1 at the 95% C.L. We also measure \sigma({\ppbar}{\rargap}tb+X) = 0.68\pm^{0.38}_{0.35}\;\rm pb and \sigma({\ppbar}{\rargap}tqb+X) = 2.86\pm^{0.69}_{0.63}\;\rm pb when assuming, respectively, tqbtqb and tbtb production rates as predicted by the standard model.Comment: 11 pages, 8 figures, submitted to Phys.
