    Antioxidant and Antimicrobial Activity of Rosemary (Rosmarinus officinalis) and Garlic (Allium sativum) Essential Oils and Chipotle Pepper Oleoresin (Capsicum annum) on Beef Hamburgers

    The inclusion of natural ingredients to preserve meat and meat products has increased in recent years. This study evaluated rosemary (REO) and garlic essential oils (GEO) as well as chipotle pepper oleoresin (CPO), alone or in combination, as preservatives on beef hamburgers (BH). Six treatments were evaluated: T1 (control, without additives), T2 (GEO 1%), T3 (REO 1%), T4 (CPO 0.5%), T5 (GEO 1% + CPO 0.5%) and T6 (REO 1% + CPO 0.5%). The microbiological quality, physicochemical characteristics, sensory evaluation, and lipid oxidation of hamburgers were evaluated. REO, GEO and CPO limited the growth of aerobic microorganisms, S. aureus, Salmonella spp., B. thermosphacta, moulds and yeasts, lactic acid bacteria and coliforms (p < 0.05); however, this effect depended on time. Furthermore, lipid oxidation decreased significantly (p < 0.5) in all treatments, except for T5 (GEO 1% + CPO 0.5%). Regarding sensory acceptance, consumers preferred BH with GEO in terms of colour, odour, flavour and overall appearance (p < 0.05).     Propiedades composicionales, estructurales y fisicoquímicas de las semillas de aguacate y sus potenciales usos agroindustriales

    The avocado fruit is one of the most successful products of agri-food production and industrialization in Mexico. It can be consumed fresh or processed in a wide variety of derived products. During its processing, a large amount of agro-industrial waste is generated, such as avocado seed, which has valuable components, with the potential to be used in various industries as an ingredient in the formulation of functional products. The objective of this research was to summarize the current knowledge of the composition, structure, properties and possible industrial applications of avocado seeds, and their main by-products. This study was carried out in accordance with the PRISMA declaration, for which a systematic bibliographic search of research articles from the last 20 years in different databases was used; taking into account various inclusion and exclusion criteria. It was found that obtaining starches and bioactive compounds from the avocado seed are the most studied categories. Being Nigeria, Mexico and the United States of America the countries with the most related reports during 2015-2020. It is concluded that there is a growing interest in the revaluation of avocado seeds, because it is considered a potential source of various components such as vitamins, minerals, antioxidants, healthy fatty acids, carbohydrates, among others, with possible industrial applications for the development of functional products with added value.El fruto de aguacate es uno de los productos más exitosos de la producción e industrialización agroalimentaria de México. Se puede consumir fresco o procesado en una gran variedad de productos derivados. Durante su procesamiento, se generan una gran cantidad de residuos agroindustriales como la semilla del aguacate, la cual tiene componentes valiosos y con potencial de ser utilizada en diversas industrias como ingrediente en la formulación de productos funcionales. El objetivo de esta investigación fue resumir el conocimiento actual de la composición, la estructura, las propiedades y las posibles aplicaciones industriales de las semillas de aguacate y sus principales subproductos. Además, este estudio se realizó de acuerdo con la declaración Prisma, para lo cual se hizo una búsqueda bibliográfica y sistemática de artículos de investigación de los últimos 20 años en diferentes bases de datos, tomándose en cuenta diversos criterios de inclusión y exclusión. Entre los resultados, se encontró que la obtención de almidones y compuestos bioactivos a partir de la semilla de aguacate es la categoría más estudiada, siendo Nigeria, México y Estados Unidos los países con más reportes relacionados durante 2015-2020. La conclusión es que existe un creciente interés por la revalorización de las semillas de aguacate, debido a que se considera una fuente potencial de diversos componentes como vitaminas, minerales, antioxidantes, ácidos grasos saludables, carbohidratos, entre otros, y con posibles aplicaciones industriales para el desarrollo productos funcionales con valor agregado

    Prevalence, associated factors and outcomes of pressure injuries in adult intensive care unit patients: the DecubICUs study

Epidemiologic data is however unavailable. We aimed to provide an international picture of the extent of pressure injuries and factors associated with ICU-acquired pressure injuries in adult ICU patients. Methods: International 1-day point-prevalence study; follow-up for outcome assessment until hospital discharge (maximum 12 weeks). Factors associated with ICU-acquired pressure injury and hospital mortality were assessed by generalised linear mixed-effects regression analysis. Results: Data from 13,254 patients in 1117 ICUs (90 countries) revealed 6747 pressure injuries; 3997 (59.2%) were ICU-acquired. Overall prevalence was 26.6% (95% confidence interval [CI] 25.9–27.3). ICU-acquired prevalence was 16.2% (95% CI 15.6–16.8). Sacrum (37%) and heels (19.5%) were most affected. Factors independently associated with ICU-acquired pressure injuries were older age, male sex, being underweight, emergency surgery, higher Simplified Acute Physiology Score II, Braden score 3 days, comorbidities (chronic obstructive pulmonary disease, immunodeficiency), organ support (renal replacement, mechanical ventilation on ICU admission), and being in a low or lower-middle income-economy. Gradually increasing associations with mortality were identified for increasing severity of pressure injury: stage I (odds ratio [OR] 1.5; 95% CI 1.2–1.8), stage II (OR 1.6; 95% CI 1.4–1.9), and stage III or worse (OR 2.8; 95% CI 2.3–3.3). Conclusion: Pressure injuries are common in adult ICU patients. ICU-acquired pressure injuries are associated with mainly intrinsic factors and mortality. Optimal care standards, increased awareness, appropriate resource allocation, and further research into optimal prevention are pivotal to tackle this important patient safety threat

    Physicochemical, thermal and rheological properties of three native corn starches

    Abstract Native starch was isolated from two corn landraces (blue and white) and a hybrid variety and then characterized for its physicochemical, thermal and rheological properties. The hybrid variety showed the highest starch yield, with its starch showing the highest fat, moisture and protein content but the lowest onset temperature of gelatinization. The hybrid corn starch also showed the highest G’ and G” values. The tested starches showed similar Tp, Tc, and ΔH values. The amylose contents ranged from 21.5 to 22.4%, with starch from blue corn showing the highest amylose content. All starches were white, with L values ranging from 93.6 to 99.5. The light absorbance of the starch gels increased with storage time. The obtained results demonstrated that the physicochemical, thermal and rheological properties of corn starch are highly dependent on the corn type

    The growth pattern of probiotics can be modified by changing their nutritional factors and their physiological stage. Meanwhile, high intensity ultrasound (HIUS) can be employed to increase probiotics’ biomass. The one-factor-at-a-time (OFAT) approach was employed to investigate the influence of the growth medium (MRS broth, whole milk, and skim milk), culture age (1 day and 7 days old) and ultrasound parameters (time and amplitude) on the kinetic parameters of L. acidophilus. The oldest culture (7 days) had a greater lag phase and time to reach the end of the sigmoidal curve (Tmax) (p max) compared to the youngest culture (1 day). Regarding the growth medium, skim milk presented the greatest L. acidophilus counts (p max and Tmax. When 30% amplitude was applied, a greater μmax and a smaller Tmax were observed (p L. acidophilus.     Physicochemical, Structural, Thermal and Rheological Properties of Flour and Starch Isolated from Avocado Seeds of Landrace and Hass Cultivars

    The objective of this study was to obtain and characterize flours and starches from the avocado seeds of Hass and landrace cultivars. The morphological, physical-chemical, structural, thermal and rheological characteristics were evaluated. The flour yield of the Hass and landrace cultivars was 41.56 to 46.86% (w/w), while for starch, it was 35.47 to 39.57% (w/w) (cv. Hass and landrace, respectively). Scanning electron microscopy (SEM) revealed the presence of oval starch granules and other particles in flour, in contrast to flours, starches showed lower ash, proteins and lipids content. However, the amylose content was higher in starches (42.25&ndash;48.2%). Flours showed a higher gelatinization temperature (Tp = 73.17&ndash;73.62 &deg;C), and their starches presented greater gelatinization enthalpy (&#8710;Hgel = 11.82&ndash;13.43 J/g). All samples showed a B-type diffraction pattern, and the crystallinity was higher in the flours. The rheological analysis (flow curves and viscoelastic tests) evidenced a pseudoplastic (n = 0.28&ndash;0.36) behavior in all samples analyzed, but the consistency index (k) was higher in starches. In general, the flours and starches from avocado seeds presented interesting proximal, thermal and functional properties for possible application in food systems, and these findings could contribute to the revaluation of this by-product

    Evaluation of Cooking Quality, Nutritional and Texture Characteristics of Pasta Added with Oat Bran and Apple Flour

    This study reports the effect of the addition of oat bran and apple flour on the cooking quality, digestibility, antioxidant, nutritional and texture characteristics of a spaghetti-type pasta. Pasta samples were prepared by substituting 50% of durum wheat semolina with oat bran (OBP) or apple flour (AFP). AFP presented higher cooking loss and water absorption index than the control pasta prepared with 100% durum wheat semolina (WSP). The supplementation of pasta with oat bran increased the total dietary fiber content (16.43% w/w, dw), while apple flour decreased the protein content (11.16% w/w, dw). There was no significant difference in the resistant starch content among all pasta samples. The pasta samples made with 50/50 durum wheat semolina/oat bran and 50/50 durum wheat semolina/apple flour increased the antioxidant activity by &asymp;46% and &asymp;97%, respectively. The OBP and AFP samples had a similar texture to the control pasta. A 50% replacement of durum wheat semolina with oat bran in a pasta formulation decreased the caloric content and digestibility of its starch components. These attributes found in the oat bran pasta and apple flour pasta make them a healthy choice for the diet of people with specific nutritional needs
