    Перспективи використання культивованих грибів у технології ковбасних виробів

    In order to solve the problems associated with expanding range of sausage meat component of high biological value, a search was conducted for alternative, natural and affordable sources of protein. Protein deficiency in human nutrition has led to the search for ways to increase biological value. It was proposed the optimal ratio of components of sausage meat, consisting of meat and mushroom raw materials. The purpose of this combination is to achieve the composition of sausages to the desired approximation of the "ideal protein" with the established technological effects for this production. The main objective of this work is to study the food and taste qualities of the finished product to expand the range of functional sausages at meat processing enterprises in Ukraine and China. Analysis of these data shows that an increase in the level of meat substitution with mushroom raw materials leads to a redistribution of the mass fractions of moisture, protein, fat and ash. The redistribution of these same indicators is affected by the physical state of the introduced mushroom raw material: powder or finely crushed mass. It was recorded a decrease in the mass fraction of fat by approximately 3% and 6%, respectively. Therefore, it was noted a decrease in energy value from 362 kcal to 335-304 kcal. The proportion of carbohydrates in the experimental samples has increased by an average of 1-2%. The mass fraction of protein remained almost unchanged, but the composition of the protein was closer to the "ideal protein". According to the results of organoleptic evaluation, it was found that when developing recipes for cooked smoked sausages, it is advisable to add boiled mushrooms in an amount of 15 - 20% in finely crushed form. It is advisable to add in the amount of 3.0 - 7.0% at the mixing stage in the form of a dry powder of fried mushrooms. The data presented in this article make it possible to assess the prospects of t he food industry in the production of sausages enriched with semi-finished products of varying degrees of readiness based on cultivated mushrooms. The results of the analytical study reflect the unique degree of the cultivated mushrooms amino acid composition approximation to the "ideal protein". Particular attention was paid to essential (limiting) amino acids and their content in new types of sausages.Для вирішення проблем, пов'язаних з розширенням асортименту ковбасних виробів підвищеної біологічної цінності, був проведений пошук альтернативних, природних і доступних джерел білка. Такими пропонується розглядати культивовані гриби. Дефіцит білка в раціон харчування людей, давно вже став причиною пошуку способів підвищення біологічної цінності, тому ми пропонуємо оптимальні співвідношення компонентів ковбасного фаршу, що складається з м'ясного та грибного сировини. Метою такого комбінування є досягнення складу ковбасних виробів до бажаного наближення до "ідеального білку" при встановлених технологічних ефектах для даного виробництва. Основним завданням роботи є вивчення харчових і смакових якостей готової продукції для розширення асортименту функціональних ковбасних виробів на м'ясопереробних підприємствах України і Китаю. Аналіз наведених даних показує, що зі збільшенням рівня заміни м'яса грибним сировиною проходить перерозподіл масових часток вологи, білка, жиру і зольності. На перерозподіл цих же показників впливає фізичний стан внесеного грибного сировини: порошок або тонко подрібнена маса. Було зафіксовано зменшення масової частки жиру приблизно на 3% і 6% відповідно. Отже, зниження енергетичної цінності: з 362 ккал до 335 - 304 ккал. Частка вуглеводів у дослідних зразках збільшувалася в середньому на 1-2%. Масова частка білка залишалася практично незмінною, але склад білка був ближчий до "ідеального білку". За результатами органолептичної оцінки з'ясовано, що при розробці рецептур варено-копчених ковбас доцільно вносити варені гриби в кількості 15 - 20% в тонкоподрібненому вигляді. У вигляді сухого порошку з обсмажених грибів - в кількості 3,0 - 7,0% на етапі перемішування. Наведені в статті дані, дозволяють оцінити перспективу напрямків харчової промисловості в сфері виробництва ковбасних виробів, збагачених напівфабрикатами різного ступеня готовності на основі культивованих грибів. Результати аналітичного дослідження, відображають унікальну ступінь наближення амінокислотного складу культивованих грибів до "ідеального білку". Особливу увагу приділено есенціальним (лімітуючим) амінокислотам, їх вмісту в складі нових видів ковбасних виробів

    Nonequilibrium wetting transitions with short range forces

    We analyze within mean-field theory as well as numerically a KPZ equation that describes nonequilibrium wetting. Both complete and critical wettitng transitions were found and characterized in detail. For one-dimensional substrates the critical wetting temperature is depressed by fluctuations. In addition, we have investigated a region in the space of parameters (temperature and chemical potential) where the wet and nonwet phases coexist. Finite-size scaling analysis of the interfacial detaching times indicates that the finite coexistence region survives in the thermodynamic limit. Within this region we have observed (stable or very long-lived) structures related to spatio-temporal intermittency in other systems. In the interfacial representation these structures exhibit perfect triangular (pyramidal) patterns in one (two dimensions), that are characterized by their slope and size distribution.Comment: 11 pages, 5 figures.     Phase-Induced (In)-Stability in Coupled Parametric Oscillators

    We report results on a model of two coupled oscillators that undergo periodic parametric modulations with a phase difference θ\theta. Being to a large extent analytically solvable, the model reveals a rich θ\theta dependence of the regions of parametric resonance. In particular, the intuitive notion that anti-phase modulations are less prone to parametric resonance is confirmed for sufficiently large coupling and damping.     A New Finite-lattice study of the Massive Schwinger Model

    A new finite lattice calculation of the low lying bound state energies in the massive Schwinger model is presented, using a Hamiltonian lattice formulation. The results are compared with recent analytic series calculations in the low mass limit, and with a new higher order non-relativistic series which we calculate for the high mass limit. The results are generally in good agreement with these series predictions, and also with recent calculations by light cone and related techniques

    Finite time and asymptotic behaviour of the maximal excursion of a random walk

    We evaluate the limit distribution of the maximal excursion of a random walk in any dimension for homogeneous environments and for self-similar supports under the assumption of spherical symmetry. This distribution is obtained in closed form and is an approximation of the exact distribution comparable to that obtained by real space renormalization methods. Then we focus on the early time behaviour of this quantity. The instantaneous diffusion exponent νn\nu_n exhibits a systematic overshooting of the long time exponent. Exact results are obtained in one dimension up to third order in n1/2n^{-1/2}. In two dimensions, on a regular lattice and on the Sierpi\'nski gasket we find numerically that the analytic scaling νnν+Anν\nu_n \simeq \nu+A n^{-\nu} holds.Comment: 9 pages, 4 figures, accepted J.     A Universal Approach to Eliminate Antigenic Properties of Alpha-Gliadin Peptides in Celiac Disease

    Celiac disease is caused by an uncontrolled immune response to gluten, a heterogeneous mixture of wheat storage proteins, including the α-gliadins. It has been shown that α-gliadins harbor several major epitopes involved in the disease pathogenesis. A major step towards elimination of gluten toxicity for celiac disease patients would thus be the elimination of such epitopes from α-gliadins. We have analyzed over 3,000 expressed α-gliadin sequences from 11 bread wheat cultivars to determine whether they encode for peptides potentially involved in celiac disease. All identified epitope variants were synthesized as peptides and tested for binding to the disease-associated HLA-DQ2 and HLA-DQ8 molecules and for recognition by patient-derived α-gliadin specific T cell clones. Several specific naturally occurring amino acid substitutions were identified for each of the α-gliadin derived peptides involved in celiac disease that eliminate the antigenic properties of the epitope variants. Finally, we provide proof of principle at the peptide level that through the systematic introduction of such naturally occurring variations α-gliadins genes can be generated that no longer encode antigenic peptides. This forms a crucial step in the development of strategies to modify gluten genes in wheat so that it becomes safe for celiac disease patients. It also provides the information to design and introduce safe gluten genes in other cereals, which would exhibit improved quality while remaining safe for consumption by celiac disease patients

    Presence of celiac disease epitopes in modern and old hexaploid wheat varieties: wheat breeding may have contributed to increased prevalence of celiac disease

    Gluten proteins from wheat can induce celiac disease (CD) in genetically susceptible individuals. Specific gluten peptides can be presented by antigen presenting cells to gluten-sensitive T-cell lymphocytes leading to CD. During the last decades, a significant increase has been observed in the prevalence of CD. This may partly be attributed to an increase in awareness and to improved diagnostic techniques, but increased wheat and gluten consumption is also considered a major cause. To analyze whether wheat breeding contributed to the increase of the prevalence of CD, we have compared the genetic diversity of gluten proteins for the presence of two CD epitopes (Glia-α9 and Glia-α20) in 36 modern European wheat varieties and in 50 landraces representing the wheat varieties grown up to around a century ago. Glia-α9 is a major (immunodominant) epitope that is recognized by the majority of CD patients. The minor Glia-α20 was included as a technical reference. Overall, the presence of the Glia-α9 epitope was higher in the modern varieties, whereas the presence of the Glia-α20 epitope was lower, as compared to the landraces. This suggests that modern wheat breeding practices may have led to an increased exposure to CD epitopes. On the other hand, some modern varieties and landraces have been identified that have relatively low contents of both epitopes. Such selected lines may serve as a start to breed wheat for the introduction of ‘low CD toxic’ as a new breeding trait. Large-scale culture and consumption of such varieties would considerably aid in decreasing the prevalence of CD

    Systematic Review of Active Surveillance for Clinically Localised Prostate Cancer to Develop Recommendations Regarding Inclusion of Intermediate-risk Disease, Biopsy Characteristics at Inclusion and Monitoring, and Surveillance Repeat Biopsy Strategy

    none38siContext: There is uncertainty regarding the most appropriate criteria for recruitment, monitoring, and reclassification in active surveillance (AS) protocols for localised prostate cancer (PCa). Objective: To perform a qualitative systematic review (SR) to issue recommendations regarding inclusion of intermediate-risk disease, biopsy characteristics at inclusion and monitoring, and repeat biopsy strategy. Evidence acquisition: A protocol-driven, Preferred Reporting Items for Systematic Reviews and Meta-analyses (PRISMA)-adhering SR incorporating AS protocols published from January 1990 to October 2020 was performed. The main outcomes were criteria for inclusion of intermediate-risk disease, monitoring, reclassification, and repeat biopsy strategies (per protocol and/or triggered). Clinical effectiveness data were not assessed. Evidence synthesis: Of the 17 011 articles identified, 333 studies incorporating 375 AS protocols, recruiting 264 852 patients, were included. Only a minority of protocols included the use of magnetic resonance imaging (MRI) for recruitment (n = 17), follow-up (n = 47), and reclassification (n = 26). More than 50% of protocols included patients with intermediate or high-risk disease, whilst 44.1% of protocols excluded low-risk patients with more than three positive cores, and 39% of protocols excluded patients with core involvement (CI) >50% per core. Of the protocols, ≥80% mandated a confirmatory transrectal ultrasound biopsy; 72% (n = 189) of protocols mandated per-protocol repeat biopsies, with 20% performing this annually and 25% every 2 yr. Only 27 protocols (10.3%) mandated triggered biopsies, with 74% of these protocols defining progression or changes on MRI as triggers for repeat biopsy. Conclusions: For AS protocols in which the use of MRI is not mandatory or absent, we recommend the following: (1) AS can be considered in patients with low-volume International Society of Urological Pathology (ISUP) grade 2 (three or fewer positive cores and cancer involvement ≤50% CI per core) or another single element of intermediate-risk disease, and patients with ISUP 3 should be excluded; (2) per-protocol confirmatory prostate biopsies should be performed within 2 yr, and per-protocol surveillance repeat biopsies should be performed at least once every 3 yr for the first 10 yr; and (3) for patients with low-volume, low-risk disease at recruitment, if repeat systematic biopsies reveal more than three positive cores or maximum CI >50% per core, they should be monitored closely for evidence of adverse features (eg, upgrading); patients with ISUP 2 disease with increased core positivity and/or CI to similar thresholds should be reclassified. Patient summary: We examined the literature to issue new recommendations on active surveillance (AS) for managing localised prostate cancer.     Intimate partner violence and infant morbidity: evidence of an association from a population-based study in eastern Uganda in 2003

    <p>Abstract</p> <p>Background</p> <p>Although recent studies suggest that there is an association between intimate partner violence and child mortality, the underlying mechanisms are still unknown. It is against this background that as a secondary objective, we set out to explore whether an association exists between intimate partner violence and illness in infants.</p> <p>Methods</p> <p>We conducted a population based household survey in Mbale, eastern Uganda in 2003. Participants were 457 women (with 457 infants) who consented to participate in the study. We measured socio-demographics of women and occurrence of intimate partner violence. We measured socio-demographics, immunization, nutritional status, and illness in the previous two weeks of the children.</p> <p>Results</p> <p>The mean age of the women was 25 years (SD 5.7) while the mean age of the infants was 6 months (SD 3.5). The prevalence of lifetime intimate partner violence was 54% (95% CI 48%–60%). During the previous two weeks, 50% (95% CI 50%–54%) of the children had illness (fever, diarrhoea, cough and fast breathing). Lifetime intimate partner violence was associated with infant illness (OR 1.8, 95% CI 1.2–2.8) and diarrhoea (OR 2.0, 95% CI 1.2–3.4).</p> <p>Conclusion</p> <p>Our findings suggest that infant illnesses (fever, diarrhoea, cough and fast breathing) are associated with intimate partner violence, and provide insights into previous reports that have shown an association between intimate partner violence and child mortality, suggesting possible underlying mechanisms. Our findings also highlight the importance of intimate partner violence on the health of children, and the need for further research in this area.</p
