    Research of Rational Concentration of Oilseed Crops Meals in the Sandy Dough Semi-finished Product

    The work studies the rational concentration of meals of soya, sunflower and milk thistle in a sandy dough semi-product for improving healthy properties of ready products (biological value, stomach peristalsis, metabolism, saturation with vitamins and mineral substances). Analytic studies were conducted and advantages of using meals in dough products were determined. The chemical composition of meals was determined, and the optimal composition for satisfying the human need that is in ratio 3:4:3 was calculated. The quality of meals was estimated, and their organoleptic parameters were analyzed. The sensor analysis of sandy semi-products of oilseed crops meals was realized. It was established, that adding of the meal composition instead of flour in amount 20 % is an optimal solution for using in a sandy dough semi-product.There was established the influence of meals of oilseed crops on organoleptic parameters of developed sandy semi-products. Advantages and defects of using the aforesaid meals were established. Ways of improving the outlook and consistence of shortcakes were offered. Ways of further studies were established

    Do Soup Kitchen Meals Contribute to Suboptimal Nutrient Intake & Obesity in the Homeless Population?

    The double burden of suboptimal nutrient intake and obesity exists when available foods lack essential nutrients to promote health and provide high amounts of energy. This study evaluated the nutrition content of 41 meals served to the homeless at 3 urban soup kitchens. The mean nutrient content of all meals and of meals from each of the kitchens was compared to two-thirds of the estimated average requirement (EAR). The mean nutrient content of the meals did not provide two-thirds of the EAR for energy, vitamin C, magnesium, zinc, dietary fiber, or calcium but provided 11.8% of calories from saturated fat. On average one meal did not meet homeless individuals’ estimated requirements; however, 2 meals did meet estimated requirements but provided inadequate fiber and high amounts of energy, saturated fat, and sodium. Soup kitchen meals may contribute to the high prevalence of obesity and chronic disease reported in the homeless, food insecure population

    Factors Associated with Choking During Meals; a Risk Indicator for Repetitive Fevers in the Elderly Community

    Background: Choking during meals is a common symptom in the elderly, however the factors associated with it have not been fully clarified. In this study, we examined the factors associated with choking during meals. Methods: The oral health status and practices that promote oral health conditions was surveyed in 1305 community dwelling elderly using a self-administered questionnaire. Eight items including satisfaction with their oral condition, denture fit, chewing ability, tooth brushing frequency, dental visits, exercises to train muscles for chewing and swallowing, choking during meals, and repetitive fever were selected for analysis. Results: 25.1% of the subjects experienced choking during meals, which was significantly associated with repetitive fever occurrence. Differences in satisfaction levels with their oral condition, denture fit, chewing ability, and tooth brushing frequency were observed between groups with and without choking. Age, satisfaction level, and chewing ability were significantly associated with choking during meals. Conclusions: This study demonstrated that choking during meals is a risk indicator for repetitive fever in the elderly living in community settings. Poor chewing ability and dissatisfaction with their oral condition were risk factors associated with choking. These results suggest that training the elderly to eat efficiently and safely and improving oral conditions is necessary for those who suffer from choking during meals to prevent repetitive fever. &nbsp

    Comparing the environmental impacts of meatless and meat-containing meals in the United States

    This study compares the environmental impacts of meatless and meat-containing meals in the United States according to consumption data in order to identify commercial opportunities to lower environmental impacts of meals. Average consumption of meal types (breakfast, lunch, dinner) were assessed using life cycle assessment. Retail and consumer wastes, and weight losses and gains through cooking, were used to adjust the consumption quantities to production quantities. On average, meatless meals had more than a 40% reduction in environmental impacts than meat-containing meals for any of the assessed indicators (carbon footprint, water use, resource consumption, health impacts of pollution, and ecosystem quality). At maximum and minimum for carbon footprint, meat-containing dinners were associated with 5 kgCO2e and meatless lunches 1 kg CO2e. Results indicate that, on average in the US, meatless meals lessen environmental impacts in comparison to meat-containing meals; however, animal products (i.e., dairy) in meatless meals also had a substantial impact. Findings suggest that industrial interventions focusing on low-impact meat substitutes for dinners and thereafter lunches, and low-impact dairy substitutes for breakfasts, offer large opportunities for improving the environmental performance of the average diet

    The classic corrido is a part of Mexican tradition and is woven into Mexico\u27s rich cultural history. Listeners have endeared corridos for generations simply for the storytelling. They characterize small Mexican communities and their iconic heroes and represent the hope and courage that they must have in the face of injustice, oppression or danger. The protagonist in the corrido, commonly possessing the characteristics of Robin Hood, is a constant theme. This hero character also meets with an untimely death, usually the result of betrayal. The heightening of the element of conflict and violent death has transformed the classic corrido into the narcocorrido. It is often compared to American rap and the hip-hop music genre, glorifying violence, corruption and illegal activities. As with the classic corrido, the narcocorrido also has its icons, although some become icons through self-proclamation by commissioning the ballads. This study explores the content of the corrido and its role as the narrative of Mexican culture.     The national Meals on Wheels network continues to face limited funding, rising costs, unprecedented demand and need and increasing for-profit competition. That is why Meals on Wheels America set out to compare the experience and health outcomes realized by older adults who receive three different levels of service: daily traditional meal delivery, once-weekly frozen delivery and individuals on a waiting list. This study, funded by AARP Foundation and conducted by researchers at Brown University, implemented a groundbreaking approach to investigating the impact of meal service delivery on homebound seniors receiving Meals on Wheels. The study's findings validate what we've all known for decades anecdotally through firsthand experience: that Meals on Wheels does in fact deliver so much more than just a meal
