    Conformational changes of polymers in model batter systems

    Cake batters - made of flour, egg, sugar and fat - are complex systems. Ingredients interactions and their impact on protein secondary structure and starch conformational structures were studied in model batter systems using Attenuated Total Reflectance Fourier Transform Infrared (ATR-FTIR) spectroscopy. The results showed the possibility of using the pregelatinized starch without affecting protein conformation. The estimation of protein secondary structure highlighted the prevalence of \u3b1-helical structures in the model batter system, while \u3b2-sheets are predominant in flour systems as known in dough systems. The protein conformation in batter system is related to fat-protein interactions and could explain fat functionality in the final product. Starch crystallinity increased when each ingredient - except for pregelatinized starches - was added to the flour. Changes in starch conformation could be related to the redistribution of water between the batter ingredients. The overall results highlighted the importance of ingredients on the structural conformation of the batter polymers - starch and proteins - which could be the key factor to understand the functional properties of the batter

    The development of the GSFC DORIS contribution to ITRF2014

    AbstractThe NASA GSFC DORIS analysis center has processed data from January 1993 to December 2014 and provided 1141 weekly solutions in the form of normal equations for incorporation into the DORIS solution for ITRF2014. The solution time series, designated as gscwd26, were based on tracking data to eleven DORIS satellites divided generally into seven-day arcs. With respect to the ITRF2008 submission (Le Bail et al., 2010), the measurement model was updated to model the beacon frequency variations at certain DORIS sites, to apply the DORIS antenna phase law for the Starec and Alcatel antennae, and to apply the antenna offset corrections in the NASA GSFC orbit determination software rather than using the data-supplied corrections. We show that computing the antenna offset corrections in the orbit determination software is superior to using the offset corrections that are supplied with the DORIS data, and that this improves the RMS of fit for SPOT-2, Envisat, SPOT-4, and SPOT-5. The updates for the force model included: (1) the development of improved nonconservative force modeling for SPOT-2, SPOT-3, SPOT-5, Envisat, and HY-2A, and (2) the application of an updated static gravity model based on GRACE and GOCE data, and weekly models of the variations in the low degree gravity field deduced independently from tracking by Satellite Laser Ranging (SLR) and DORIS. The post-ITRF2008 DORIS coordinate WRMS after the launch of Envisat and SPOT-5 is improved from 11.20 to 12.45mm with ITRF2008 (Le Bail et al., 2010), to between 8.50 and 9.99mm with the gscwd26 SINEX solution. The application of the DORIS antenna phase laws shifts the DORIS scale wrt DPOD2008 by +6.0mm from 1993/01/03 to 2002/06/06, and by +11.4mm from 2002/06/13 to 2011/10/30. The application of more detailed models of time-variable gravity reduces the slopes in the Helmert transformation parameters Tx, and Ty (w.r.t. DPOD2008) after 2005. The annual amplitude in these parameters is reduced from 3.2mm (for Tx), 4.1mm (for Ty), to 1.7mm (for Tx) and 2.8mm (for Ty)

    Combined Weekly Coordinate Solutions from SLR and DORIS

    In International Terrestrial Reference Frame (ITRF) 2005 and ITRF2008, the approach for the construction of solutions by the IERS has been for individual analysis centers of each technique to process geodetic tracking data, and for each technique to develop a solution (or contribution) that is integrated into the final ITRF solution by careful combination of the technique solutions. The connections between the geodetic networks are realized by the application of local ties. In an alternate approach, we may assure processing homogeneity by creating normal equations for different techniques with the same orbit determination software, using identically derived algorithms. Another derivative of this approach is to realize the ties between the techniques using satellites tracked with multiple techniques; in effect tieing the networks together using satellite dynamics. In this solution, we develop a time series and a set of cumulative solutions from Satellite Laser Ranging (SLR) & Doppler Orbitography and Radio-positioning Integrated by Satellite (DORIS) based on homogeneous processing with the NASA GEODYN precise orbit determination suite of programs, where we jointly combine weekly the SLR data to Lageos1, Lageos2, Starlette, and Stella with the DORIS data from SPOT2-SPOT5, as well as satellites that utilize both techniques (TOPEX/Poseidon, Envisat, Jason-2). We discuss the modeling that is applied including upgrades implemented since the submission of the GSC ITRF2008 contributions for IDS. Firstly, we compare the SLR-only solutions comprising four geodetic satellites with the standard approach of utilizing only Lageos1 & Lageos2. Secondly, we evaluate the impact on the DORIS coordinates of the joint analysis with the SLR data

    The attitudes of European consumers toward innovation in bread; interest of the consumers toward selected quality attributes

This three years project started in October 2006. It aims at developing innovative processes and innovative formulations for the Bake Off technology taking into consideration, energy demand of the process, nutrition parameters and overall quality of the bread. To help and to advise the project on the expectations of the European consumers toward innovation, a consumer survey has been carried out taking into consideration 1050 consumers from 5 countries (Belgium, Croatia, Spain, France and Poland). The global objectives are (i) to better understand the attitudes of the European innovations in bread and (ii) to understand the main determinants of it. Globally the key points that arose from the survey were the environmental concern and the concern regarding health; these two aspects seem to steer the attitudes of the consumer. Basically, two categories of consumers were observed; (i) frequent (daily) buyers with a focus on quality and pleasure and (ii) less frequent buyers (once a week) with a more pronounced interest in nutrition and energy (process). The first group was named the crust group and the second one the crumb group. The crumb family seems to be the one that is the most interested in the outcomes of the EU-FRESHBAKE project. This group is concerned by nutrition quality and would prefer a bread which has been done with a less energy demanding process. The “crust” group is schematically less interested in the nutrition, in the shelf life and in the energy demand of the process used to prepare the bread.     Synthesis, characterization and thermochemistry of synthetic Pb–As, Pb–Cu and Pb–Zn jarosites

    The enthalpy of formation from the elements of well characterized Pb-As, Pb-Cu, and Pb-Zn synthetic jarosites, corresponding to chemical formulas (H3O)0.68±0.03Pb0.32±0.002Fe2.86±0.14(SO4)1.69±0.08(AsO4)0.31±0.02(OH)5.59±0.28(H2O)0.41±0.02, (H3O)0.67±0.03Pb0.33±0.02Fe2.71±0.14Cu0.25±0.01(SO4)2±0.00(OH)5.96±0.30(H2O)0.04±0.002 and (H3O)0.57±0.03Pb0.43±0.02Fe2.70±0.14Zn0.21±0.01(SO4)2±0.00(OH)5.95±0.30(H2O)0.05±0.002, was measured by high temperature oxide melt solution calorimetry and gave ΔH°f = -3691.2 ± 8.6 kJ/mol, ΔH°f = -3653.6 ± 8.2 kJ/mol, and ΔH°f = -3669.4 ± 8.4 kJ/mol, respectively. Using estimated entropies, the standard Gibbs free energy of formation from elements at 298 K ΔG°f of the three compounds were calculated to be -3164.8 ± 9.1 kJ/mol, -3131.4 ± 8.7 kJ/mol, and -3153.6 ± 8.9 kJ/mol, respectively. Based on these free energies, their logKsp values are -13.94 ± 1.89, -4.38 ± 1.81 and -3.75 ± 1.80, respectively. For this compounds, a log10{Pb2+} - pH diagram is presented. The diagram shows that the formation of Pb-As jarosite may decrease aqueous arsenic and lead concentrations to meet drinking water standards. The new thermodynamic data confirm that transformation of Pb-As jarosite to plumbojarosite is thermodynamically possible

    Third structure determination by powder diffractometry round robin (SDPDRR-3)

    The results from a third structure determination by powder diffractometry (SDPD) round robin are discussed. From the 175 potential participants having downloaded the powder data, nine sent a total of 12 solutions (8 and 4 for samples 1 and 2, respectively, a tetrahydrated calcium tartrate and a lanthanum tungstate). Participants used seven different computer programs for structure solution (ESPOIR, EXPO, FOX, PSSP, SHELXS, SUPERFLIP, and TOPAS), applying Patterson, direct methods, direct space methods, and charge flipping approach. It is concluded that solving a structure from powder data remains a challenge, at least one order of magnitude more difficult than solving a problem with similar complexity from single-crystal data. Nevertheless, a few more steps in the direction of increasing the SDPD rate of success were accomplished since the two previous round robins: this time, not only the computer program developers were successful but also some users.
