    The Study of Changes in the Structural and Mechanical Properties of Turkey Fillet During Storage

    The method and equipment for the study of changes of structural-mechanical properties of Turkey fillet at storage were offered. The improved express-method of the study allows determine the relaxation effort and time at axial deformation and the firmness limit of meat fibers using penetration.The selection of registering equipment and sensors for the study of structural-mechanical properties of Turkey fillet was grounded. The methods of compensation of axial displacement of sensors at the study of penetration and relaxation were described. The principal scheme, appearance and example of work of setting were given.The changes of firmness and relaxation effort of cooled Turkey fillet at different storage terms were characterized.It was established, that organoleptically perceptible changes of structural-mechanical properties of Turkey fillet take place after 46 hours of storage. In first turn, relaxation is decelerated, the firmness limit is lowered that together with less firmness limit of fibers allows recommend it for formation of natural culinary goods of the given form, for example, rolls.The offered equipment and methodology of getting results of axial relaxation and penetration allows make conclusions about the essence of changes of rheological properties of Turkey fillet and also recommend the studied samples for one or another type of culinary processing

    Historical and Pedagogical Chronology of the Development of Ethno-confessional Musical Education of Mennonites in the South of Ukraine (End of the 18th - Early XX Centuries)

    Historical and chronological principles that the development of musical education of Mennonites in the South of Ukraine (from the end of the 18th century to the beginning of the 20th century) is based on were explained. With the use of archetype and historical-cultural methods of research and implementation of historical and pedagogical reconstruction, an educational-organizational criterion and its indicator (subordination of Mennonite schools) were determined. The main research problem is to maintain the integrity of the ethno-religious Mennonite group among the representatives of the titular nation with the help of spiritual music. The main result: three stages of historical and pedagogical development of musical education of Mennonites in the South of Ukraine were substantiated. The significance of the study is that the deficiency of historical and pedagogical knowledge about the spiritual music education of national minorities, which for centuries lived on Ukrainian lands and influenced the history of musical education in Ukraine, was eliminated

    Phenotypical Characteristics of the Biological Properties of Staphylococci Withdrawn From Patients with Allergic Dermatitis

    Atopic dermatitis, eczema, allergic dermatitis occupy the main place among dermatoses, where the allergic component is leading in the onset and development of the disease. The most common complication of allergic dermatitis is the attachment of a secondary pyococcus infection, which is associated with a decrease in the antimicrobial resistance of the skin surface. Therapy of infectious lesions is complicated by the increasing resistance of the main pathogens of pyoderma - Staphylococcus aureus and Staphylococcus epidermidis - to widely used antibiotics.The aim of the research: to determine the phenotypic features of staphylococci extracted from patients with allergic dermatitis to assess their pathogenic potential.Materials and methods. The object of the study was 369 staphylococcus isolates removed from affected and intact skin sections of patients with allergic dermatitis, as well as from representative skin sections of healthy individuals undergoing inpatient treatment at the Department of Dermatology of “Institute of Dermatology and Venereology of NAMS of Ukraine”. Biochemical identification and biological properties of staphylococci were determined using methods of classical bacteriology.Results. As a result of the conducted researches, it is established that the complex of phenotypic traits of the removed staphylococcus cultures indicates the presence in the pathogen of factors related to the resistance of the host protection mechanisms and determines the intensity of the alterative action of the infectant in relation to the host organism, the phenotypic manifestation of the studied factors was higher in the staphylococcus isolates removed from the affected skin areas of patients with allergic dermatitis. Conclusions. The level and frequency of phenotypic expression of pathogenicity factors are more pronounced in microorganisms obtained from patients from affected and intact areas compared to controls, which confirms their pathogenetic role in the burden of the disease, which in turn can be used as an auxiliary differential diagnosis criterion

Soldatov and other researchers, the authors clarified the goal and objectives of interethnic tolerance development among future teachers, and also systematized its main criteria and indicators. Also, the article presents the author's complex of pedagogical conditions that ensure the development of interethnic tolerance among pedagogical students at a university. The complex includes the following components: the use of active didactic forms and interactive teaching methods in the educational process that contribute to the formation of a tolerant worldview of students; organization of interpersonal interaction of pedagogical students by their inclusion in research activities; actualization of tolerant interethnic communication experience among future teachers through the introduction of tolerance episodes into the educational process; the development of competence among pedagogical students in the field of interethnic tolerance development among schoolchildren during the educational process
