Incorporation of probiotic bacteria (Lactobacillus acidophilus and Bifidobacterium ssp.) in Argentinean ovine cheese

The market of cheeses from ewe’s milk has been growing steadily in Argentina. The nutritional benefits of these products can be enhanced by adding probiotic cultures. In the present study, the survival of a mix of probiotic microorganisms (Lactobacillus acidophilus La-5 and Bifidobacterium animalis ssp. lactis Bb12) in a semi-hard ovine cheese, manufactured with a technology previously developed in our institute was evaluated. Besides, the effect of its incorporation on the chemical composition and ripening parameters of cheeses, including the fatty acid composition and CLA production, was investigated. Experimental cheeses made with Bb12 and La-5 retained counts of the probiotic strains at the required therapeutic level (107 CFU g−1 ). No significant differences were detected between experimental and control cheeses with respect to the different parameters evaluated: gross composition, nitrogen fractions, lipolysis, fatty acids profiles of cheese fat including CLA, and volatile fraction. Results demonstrated that the ovine cheese matrix seems to be suitable for delivery of probiotic microorganisms.Fil: Perotti, Maria Cristina. Implementación de soluciones por medio de servicios instalados en gnu/linux

El desarrollo de esta actividad investigativa y practica se fundamentó en la implementación de un servidor en el sistema operativo de GNU/Linux, como software libre, a partir de la herramienta Zentyal 6.2 y estaciones de trabajo que permitiera implementar diferentes servicios dentro de una red, al aplicar los diferentes pasos y procedimientos para la creación, configuración e implementación de cada una de las temáticas a desarrollar para dicho sistema. Para la elaboración de dicho proyecto fue necesario realizar el paso a paso de manera específica y con evidencias que permiten comprender de forma ilustrada el correcto funcionamiento de los servicios necesarios que un servidor debe ofrecer dentro de la red de una empresa.The development of this investigative and practical activity was based on the implementation of a server with the Zentyal 6.2 tool and workstations that allowed to implement different services within a network, by applying the different steps and procedures for the creation, configuration and implementation of each of the themes to be developed for said system. Problem-based learning and the Inverted Classroom as a learning strategy for the development of maths

Todo cambio en el ámbito educativo debe originarse con la identificación y planteamiento de problemas pedagógicos para lograr mejorar la calidad académica de los docentes y de los demás actores involucrados. El objetivo del proyecto fue realizar un diagnóstico de las competencias matemáticas por medio de las Pruebas Saber de 3° para diseñar estrategias basadas en el ABP y el aula invertida como herramientas que faciliten el aprendizaje y favorezcan la motivación y concentración en esta asignatura específica. El estudio fue de tipo descriptivo. La población estuvo conformada por los estudiantes de grado tercero de la Institución Educativa Departamental (IED) Rural San Pedro Apóstol, donde se realizó un análisis de los resultados de sus pruebas, evidenciando debilidad en los planteamientos e interpretaciones de problemas matemáticos. Por tal motivo, se hizo necesaria la implementación de estas dos herramientas metodológicas para mejorar la capacidad de razonamiento y acentuar un sólido pensamiento crítico en los estudiantes.Any change in the educational field must originate with the identification and approach of pedagogical problems to achieve the academic quality of the teachers and the other actors involved. The objective of the project was to make a diagnosis of the mathematical competences through the Knowledge Saber of 3 ° to design strategies based on the PBL and the Inverted Classroom as tools that facilitate learning and encourage motivation and concentration in this specific subject. The study was descriptive. The population was conformed by the students of third degree of the IED Rural San Pedro Apóstol, where an analysis of the results of their tests was made, evidencing weakness in the approaches and interpretations of mathematical problems. Diseño del proceso de selección de personal de la Fundación Socialsendas de Paz en el municipio de Magangué

La fundación Social Sendas de Paz es una fundación que tiene más de 10 años de creación y funcionamiento en el municipio de Magangué, en sus inicios se denominada Corporación Bendecir pero hace dos años aproximadamente cambio su razón social, dando apertura a una nueva visión de trabajo con la comunidades de todas las edades, sexo, raza o nivel social. Uno de los programas banderas de la fundación es el trabajo realizado con la población infantil; atienden alrededor de 300 niños y niñas pertenecientes a los estratos 1 y 2, ofreciéndoles una formación integral en 4 áreas de desarrollo (Cognitiva, espiritual, social y física). Aun a pesar de la experiencia que han adquirido al pasar los años aun no cuentan con un proceso de selección de personal diseñado ni esquematizado; han realizado estos procesos de manera informal y sin ninguna clase de convocatorias. Do Best-Selected Strains Perform Table Olive Fermentation Better than Undefined Biodiverse Starters? A Comparative Study

Twenty-seven Lactobacillus pentosus strains, and the undefined starter for table olives from which they were isolated, were characterised for their technological properties: tolerance to low temperature, high salt concentration, alkaline pH, and olive leaf extract; acidifying ability; oleuropein degradation; hydrogen peroxide and lactic acid production. Two strains with appropriate technological properties were selected. Then, table olive fermentation in vats, with the original starter, the selected strains, and without starter (spontaneous fermentation) were compared. Starters affected some texture profile parameters. The undefined culture resulted in the most effective Enterobacteriaceae reduction, acidification and olive debittering, while the selected strains batch showed the lowest antioxidant activity. Our results show that the best candidate strains cannot guarantee better fermentation performance than the undefined biodiverse mix from which they originate
