Correction factor determination in leafy vegetable crops commercialized in Brasilia, Brazil
O Brasil tem índices elevados de desperdício de alimentos, fato
que afeta a economia e acentua os problemas sociais. O planejamento
inadequado do processamento de alimentos, desde a pós-colheita
até o consumo, é um dos canais do desperdício. As hortaliças têm
sua durabilidade afetada por serem passíveis de sofrer modificações
inerentes aos processos de crescimento e de maturação e por passarem
por práticas higienizadoras e por serem submetidas a operações de
subdivisão e/ou de cocção. Para tentar minimizar as perdas, a determinação
do Fator de Correção (FC) de hortaliças é essencial, pois, este
pode propiciar uma avaliação mais precisa do grau de desperdício e
quais os fatores que podem intervir nas perdas. Este trabalho consiste
na determinação de FC das seguintes hortaliças folhosas: alface americana,
alface crespa, alface lisa, alface roxa, acelga, almeirão, agrião,
chicória, couve manteiga, escarola, espinafre, mostarda, repolho
branco, repolho roxo e rúcula. Foram adquiridas unidades de venda
(no atacado) de cada hortaliça na Central de Abastecimento (CEASA)
de Brasília-DF, de três fornecedores diferentes, em diferentes meses
de colheita (abril, maio junho e outubro), perfazendo 36 amostras
por hortaliça. Com o objetivo de detectar se existe influência dos
meses de colheita sobre os fatores de correção parcial (FC 1) e final
(FC 2), empregou-se a análise de variância e o teste de Tuckey para
comparação das médias, ao nível de 5% de significância Os resultados
apontaram que, para a maioria das hortaliças, não houve influência dos
meses de colheita sobre o desperdício, considerando-se que não houve
diferença estatística significativa entre os dados. No entanto para a
acelga, a escarola e o repolho branco foram detectadas diferenças
significativas. Para a acelga, o menor FC (ou seja, o menor desperdício)
ocorreu na entressafra; já para o repolho branco, o menor FC
ocorreu na safra. Assim, de modo geral, as perdas avaliadas pelo FC
estão mais relacionadas ao manipulador das folhosas e ao estado de
conservação das hortaliças do que ao período de safra. Desta forma,
para as hortaliças que apresentaram diferenças com relação à época
de amostragem, recomenda-se observância quanto ao período de
planejamento dos cardápios visando a obtenção do aproveitamento
eficiente do produto. ______________________________________________________________________________________________________________ ABSTRACTBrazil has high indexes of food waste, which affects regional
economy and increases social problems. Inadequate planning of food
processing, from postharvest to consumption, is one of the reasons
of loss. Vegetable crops are live organisms and their durability is
affected by the processes of subdivision and cooking. To reduce
losses, the determination of the Correction Factor is essential in
order to evaluate the losses and the factors which interfere on these
losses. This work consists on determining the Correction Factor of
the following vegetable crops: Crisphead Lettuce, Unheaded Lettuce,
Lettuce, Purple Leafs, Chard, Endive, Watercress, Common Chicory,
Borecole Green Collard, Escarole, Spinach, Mustard, Cabbage, Red
Cabbage and Rocket Crop. Three sale units of each vegetable crop
were acquired at the CEASA in Brasília (Federal District, Brazil),
from three different suppliers, with four replicates, a total of 36
samples of each vegetable crop. Aiming to detect the influence of
the gathering month on the Partial Correction Factor (CF 1) and
Final Correction Factor (CF 2) analysis of variance (ANOVA) and
Tukey test were carried out. In all tests a level of 5% of statistical
significance was considered. The results showed that for the majority
of the vegetables, harvest does not influence loss. However for chard,
the lower CF occurred at harvest. On the other hand for cabbage,
the lower CF occurred at harvest. This way for the majority of the
vegetables, the losses evaluated by the CF are more related to handling
procedures and conservation. For cabbage, it is recommended not
to include it on meals in the harvest period because the vegetable
is more expensive and losses are higher. Therefore, for vegetables
that are influenced by harvest, it is recommended to observe the best
period for menu planning
Alternativa tecnológica na utilização de peixe de baixo valor comercial oriundo da modalidade de pesca de arrasto: tira-vira percophis brasiliensis enlatado / Technological alternative in the use of low commercial value fish arising from the trawl fishing mode: tira-vira percophis brasiliensis canned
Introdução: O estoque decrescente das principais espécies marinhas consumidas no Brasil tem estimulado estudos a cerca do aproveitamento e desenvolvimento de produtos utilizando espécies de baixo valor comercial. A modalidade de pesca de arrasto de camarão produz grande volume de categoria mistura que são peixes de baixo valor comercializados. Porém, é necessário desenvolver produtos com maior praticidade para atender a atual demanda do consumidor brasileiro. A conserva desenvolvida com peixes da categoria mistura pode ser alternativa viável para indústrias e consumidores, aliando alto valor nutricional e praticidade. Objetivos: O objetivo deste trabalho foi desenvolver produto enlatado utilizando o tira-vira (Percophis brasiliensis) de baixo valor comercial capturado e comercializado na categoria “mistura” da modalidade de pesca de arrasto, assim como realizar análise físico-química, microbiológica, toxicológica e sensorial do produto. Metodologia: Para a avaliação microbiológicas realizaram-se pesquisa de Salmonella sp., contagens de Staphylococcus coagulase positiva, coliformes totais e coliformes termotolerantes e clostrídio sulfito redutor a 46ºC e os resultados indicaram que o produto se encontrava dentro dos padrões microbiológicos da legislação. Resultados: Os resultados da composição centesimal dos peixes analisados foram: umidade 73,54%, proteínas 17,93%, carboidratos 2,67%, lipídios totais 4,88% e cinzas 0,98%. As avaliações toxicológicas mostraram que os produtos apresentaram qualidade satisfatória conforme a legislação, e o resultado do teste de pré-esterilidade comercial indicou que o tratamento térmico foi adequado para manter a inocuidade das conservas durante armazenamento. A análise sensorial indicou que o produto foi aceito com 97,70% e o aspecto global do produto atingiu média de 6,11 (±0,93). Conclusão: A partir dos resultados, conclui-se que o uso da tecnologia de enlatamento para este peixe de baixo valor comercial mostrou-se viável e resultou em um produto com excelente aceitação sensorial.

Biodiversity loss is one of the main challenges of our time,1,2 and attempts to address it require a clear un derstanding of how ecological communities respond to environmental change across time and space.3,4
While the increasing availability of global databases on ecological communities has advanced our knowledge
of biodiversity sensitivity to environmental changes,5–7 vast areas of the tropics remain understudied.8–11 In
the American tropics, Amazonia stands out as the world’s most diverse rainforest and the primary source of
Neotropical biodiversity,12 but it remains among the least known forests in America and is often underrepre sented in biodiversity databases.13–15 To worsen this situation, human-induced modifications16,17 may elim inate pieces of the Amazon’s biodiversity puzzle before we can use them to understand how ecological com munities are responding. To increase generalization and applicability of biodiversity knowledge,18,19 it is thus
crucial to reduce biases in ecological research, particularly in regions projected to face the most pronounced
environmental changes. We integrate ecological community metadata of 7,694 sampling sites for multiple or ganism groups in a machine learning model framework to map the research probability across the Brazilian
Amazonia, while identifying the region’s vulnerability to environmental change. 15%–18% of the most ne glected areas in ecological research are expected to experience severe climate or land use changes by
2050. This means that unless we take immediate action, we will not be able to establish their current status,

hortaliças, por passarem por diversas práticas higienizadoras e por serem submetidas
operações culinárias de subdivisão e cocção, têm sua durabilidade relacionada a uma
série de fatores fisiológicos, mecânicos e ambientais. A deterioração das hortaliças é
um processo irreversível e inevitável, sendo um dos grupos de alimentos mais
desperdiçado. Para buscar minimizar perdas, a determinação do Fator de Correção de
hortaliças, cuja fórmula é estabelecida pela relação do peso bruto (alimento como é
adquirido) e com o peso líquido (alimento depois de limpo e processado) é essencial,
pois, por meio dele, pode-se avaliar mais precisamente o grau de desperdício e quais
fatores intervêm em perdas. Este trabalho consiste da determinação de Fator de
Correção das seguintes hortaliças folhosas: Alface Americana, Alface Crespa, Alface
Lisa, Alface Roxa, Acelga, Almeirão, Agrião, Chicória, Couve manteiga, Escarola,
Espinafre, Mostarda, Repolho Branco, Repolho Roxo e Rúcula.
Com o objetivo de detectar se existe influência dos meses de coleta sobre os
fatores de correção parcial (FC 1) e final (FC 2) utilizou-se as seguintes ferramentas
estatísticas: Análise de Variância (ANOVA) - quando os fatores de correção ou seu
logaritmo apresentaram normalidade e (i) Kruskal-Wallis - quando os fatores de
correção ou seu logaritmo não apresentaram normalidade. Uma vez encontrada
diferenças significativas entre os meses de coleta aplicou-se o teste de Tuckey afim de
detectar os meses que diferem entre si. Em todos os testes considerou-se um nível de
5% de significância estatística
Antibacterial Activity of Terpenes and Terpenoids Present in Essential Oils
Background: The antimicrobial activity of essential oils has been reported in hundreds of studies, however, the great majority of these studies attribute the activity to the most prevalent compounds without analyzing them independently. Therefore, the aim was to investigate the antibacterial activity of 33 free terpenes commonly found in essential oils and evaluate the cellular ultrastructure to verify possible damage to the cellular membrane. Methods: Screening was performed to select substances with possible antimicrobial activity, then the minimal inhibitory concentrations, bactericidal activity and 24-h time-kill curve studies were evaluated by standard protocols. In addition, the ultrastructure of control and death bacteria were evaluated by scanning electron microscopy. Results: Only 16 of the 33 compounds had antimicrobial activity at the initial screening. Eugenol exhibited rapid bactericidal action against Salmonella enterica serovar Typhimurium (2 h). Terpineol showed excellent bactericidal activity against S. aureus strains. Carveol, citronellol and geraniol presented a rapid bactericidal effect against E. coli. Conclusions: The higher antimicrobial activity was related to the presence of hydroxyl groups (phenolic and alcohol compounds), whereas hydrocarbons resulted in less activity. The first group, such as carvacrol, l-carveol, eugenol, trans-geraniol, and thymol, showed higher activity when compared to sulfanilamide. Images obtained by scanning electron microscopy indicate that the mechanism causing the cell death of the evaluated bacteria is based on the loss of cellular membrane integrity of function. The present study brings detailed knowledge about the antimicrobial activity of the individual compounds present in essential oils, that can provide a greater understanding for the future researches
