    Characterization and commercialization of fresh tomatoes at CEASA: profile of wholesalers

    The Terminal Markets are the main centers for distribution of vegetables, fruits and flowers from different States of Brazil. The CEAGESP wholesalers can be shippers or growers. The amount of tomato commercialized in these terminal markets is very expressive. It was possible to determine the profile and the main features of the wholesale market at CEAGESP. About 45.8% of the wholesalers had an average commercialization volume of 10,000 tons/year, and 70.8% of them commercialize their own production. Cultivars Carmen and Débora were the leaders on the market. The results pointed out that wholesalers had more than one type of buyer, and the main ones were street fair and supermarkets. Most of the tomato is commercialized in boxes (box K), followed by 20.8% of plastic boxes and 16.7% of cardboard packages. CEAGESP wholesalers adopt tomato classification, either done manually (58.4%), or by machines (8.3%) or using both systems (33.3%). The standardization index was not satisfactory, with color and sizes in different degrees, and therefore 45.8% has to be reclassified.Os Centros de Abastecimento, conhecidos por CEASAS, são pontos de concentração física da produção de hortigranjeiros e flores oriundos de diversas regiões do país. As mercadorias são destinadas aos atacadistas, que podem também ser produtores rurais ou apenas intermediários. O tomate possui grande representatividade de comercialização dentro dessas centrais de abastecimento. A partir de questionários, identificou-se o perfil dos comerciantes de tomate de mesa na CEAGESP. Constatou-se que 45,8% dos entrevistados possuem um volume médio de tomate comercializado durante o ano maior que 10.000 toneladas, sendo que, desses, 70,8% possuem produção própria de tomate. As cultivares Carmen e Débora foram as líderes de comercialização no período avaliado. Os resultados apontaram que os atacadistas comercializam com mais de um tipo de comprador, sendo os principais feirantes e supermercados, com ampla utilização da embalagem de madeira, caixa K, seguindo com 20,8% em caixas plásticas e 16,7% com caixas de papelão. Os permissionários comercializam o tomate classificado, seja manualmente (58,4%), ou usando máquinas (8,3%) ou ambos os procedimentos (33,3%), porém os índices de padronização não são satisfatórios, encontrando-se numa mesma caixa mistura intensa de graus de coloração e tamanhos variados, o que leva a 45,8% do produto a ser reclassificado.32432

    The creation of the Brazilian Program for the Modernization of the Horticulture by the Secretariat of Agriculture and Supplying of the State of São Paulo at CEAGESP, determined the standardization of fruit and vegetables in the follow aspects: degree of coloration, format, calibers, defects and packing. Therefore, the main goal of this research is to correlate the classification given by the Brazilian Program with the one used by the wholesalers at CEAGESP, verifying if the established norms are being fulfilled for cultivar Carmen and Debora (SAKATA SEED). The results showed, that for cultivar Carmem, for the averages of the observed values it does not move away from the norms created by the Program for sizes small and medium. However, for the case of cultivar Debora, the results showed differences between the adopted classifications. The tomatoes were devaluated, because had been commercialized below of the standardization indicated for the Brazilian Program.A criação do Programa Brasileiro para a Modernização da Horticultura pela Secretaria de Agricultura e Abastecimento do Estado de São Paulo, em conjunto com a Companhia de Entrepostos e Armazéns Gerais de São Paulo (CEAGESP), determinou a padronização das hortaliças e frutas comercializadas nos seguintes aspectos: grau de coloração, formato, calibres, defeitos e embalagens, um trabalho iniciado em setembro de 1997. O objetivo deste trabalho foi relacionar a classificação fornecida pelo Programa Brasileiro com a realizada pelos atacadistas no mercado da CEAGESP, verificando se as normas estabelecidas estão sendo cumpridas para os tomates cultivares Carmem e Débora (SAKATA SEED). Os resultados mostraram que, para o tomate cultivar Carmem, a partir da análise de teste de hipótese de proporção, as médias dos valores observados não se afastam muito das normas criadas pelo Programa para os tamanhos pequeno e médio.     Real time determination of physical impact damage in packing lines and under laboratory conditions and its effects in tomato fruits quality

    Tomatoes are one of the most important vegetable crops grown in Brazil and are among the crops that have one of the highest post-harvest losses indexes in the country. The present work aimed at evaluating impact damage observed in packing lines of fresh tomatoes as well as to determine, under laboratory conditions, quality alterations of tomato fruits submitted to impact damage in different surface types. Critical points evaluation was accomplished using an instrumented sphere. Critical transference points found showed variations in acceleration levels from 30 to 129 G (m s-2). Tests carried out under laboratory conditions showed that padded surfaces reduced up to 31% impact damage. Incidence of severe internal physical damage was evaluated by a subjective scale and increased by 79% on hard surfaces for the highest fall drop. On the other hand, it was observed an effective reduction in physical damage on fruits when padded surfaces were used. When a 10-cm drop was performed, the maximum reduction measured was 10% for hard surfaces and 5% for previously padded surfaces. For quality parameters, it was observed for high drops on hard surfaces, highest values for weight loss, total acidity, lower values for vitamin C and Soluble Solids.O tomate de mesa é uma das principais hortaliças consumidas no Brasil e apresenta elevados índices de perdas pós-colheita. O objetivo deste trabalho foi avaliar a magnitude dos impactos verificados em linhas de beneficiamento para tomate de mesa, bem como determinar, em laboratório, as alterações na qualidade de tomates submetidos a danos físicos controlados em diferentes superfícies. Para a avaliação dos pontos críticos e registro da magnitude dos impactos, foi usada uma esfera instrumentada. Os pontos críticos de transferência demonstraram valores de aceleração entre 30 e 129 G (m s-2). Os testes laboratoriais evidenciaram que superfícies acolchoadas reduziram em até 31% a magnitude de impacto. A incidência de danos físicos internos foi crescente e atingiu 79% em superfícies rígidas para a maior altura de queda livre. Por outro lado, observou-se redução na incidência de danos físicos nos frutos quando superfícies protetoras foram utilizadas, verificando-se na altura de 10 cm um limite mínimo de 5% de danos severos, enquanto para superfície rígida o mínimo correspondeu a 10%.     Evaluation of the use of cold chambers used to fruits and vegetables storage in the terminal warehouse of São Paulo

    Post-harvest shelf life of fruits and vegetables is direct related to storage temperatures of these products. At controlled conditions of temperature and humidity, the speed of metabolic reactions can be reduced, allowing better conservation of the products. The evaluation was carried out in the Terminal Market of São Paulo- CEAGESP, to identify the condition of cold chambers used for storage of fruits and vegetables. The parameters investigated were: air temperature, relative humidity, refrigerated conditions, type of floor, chamber and door dimensions. Data were used to calculate thermal load. Apples and pears were the most stored commodities (63.25%) in CEAGESP, followed by bananas (24.10%). Based on the average commercialization volume, it was observed that 73.91% of the motors were super dimensioned.O tempo de vida pós-colheita de frutas e hortaliças está diretamente relacionado à temperatura de armazenamento do produto. Em condições controladas de temperatura e umidade relativa do ar, as reações metabólicas podem ser retardadas, proporcionando melhor conservação do produto. Foram realizadas avaliações das câmaras frias destinadas à estocagem de frutas e hortaliças na Companhia de Entrepostos e Armazéns Gerais de São Paulo, CEAGESP - São Paulo - SP, com o objetivo de identificar a situação das câmaras frias utilizadas nesse entreposto. As condições de estocagem dos produtos foram avaliadas por meio dos parâmetros: temperatura do ar, umidade relativa, isolamento, equipamento frigorífico (condensador, compressor, evaporador), piso, dimensões da câmara e da porta. Avaliou-se a eficiência de uso por meio do cálculo para a determinação da carga térmica. Observou-se que maçã e pêra possuem os maiores volumes comercializados, utilizando-se de estocagem pelo frio (63,25%), seguido pela banana (24,10%). Baseando-se no volume médio de comercialização dos permissionários, constatou-se que 73,91% possuem motores superdimensionados a sua capacidade calorífica de uso.83283

    Reducing the environmental impact of surgery on a global scale: systematic review and co-prioritization with healthcare workers in 132 countries

    Abstract Background Healthcare cannot achieve net-zero carbon without addressing operating theatres. The aim of this study was to prioritize feasible interventions to reduce the environmental impact of operating theatres. Methods This study adopted a four-phase Delphi consensus co-prioritization methodology. In phase 1, a systematic review of published interventions and global consultation of perioperative healthcare professionals were used to longlist interventions. In phase 2, iterative thematic analysis consolidated comparable interventions into a shortlist. In phase 3, the shortlist was co-prioritized based on patient and clinician views on acceptability, feasibility, and safety. In phase 4, ranked lists of interventions were presented by their relevance to high-income countries and low–middle-income countries. Results In phase 1, 43 interventions were identified, which had low uptake in practice according to 3042 professionals globally. In phase 2, a shortlist of 15 intervention domains was generated. In phase 3, interventions were deemed acceptable for more than 90 per cent of patients except for reducing general anaesthesia (84 per cent) and re-sterilization of ‘single-use’ consumables (86 per cent). In phase 4, the top three shortlisted interventions for high-income countries were: introducing recycling; reducing use of anaesthetic gases; and appropriate clinical waste processing. In phase 4, the top three shortlisted interventions for low–middle-income countries were: introducing reusable surgical devices; reducing use of consumables; and reducing the use of general anaesthesia. Conclusion This is a step toward environmentally sustainable operating environments with actionable interventions applicable to both high– and low–middle–income countries

    Quality evaluation of fresh market tomato treated with ethylene

Procurou-se a partir de duas cultivares avaliar a qualidade pós-colheita desses frutos, colhidos no estádio de amadurecimento verde-maduro, submetidos ao tratamento com gás etileno. As cultivares utilizadas foram Débora e Andréa. O tratamento utilizado foi realizado a partir de mistura gasosa, etil 5% diluído em ar comprimido, fluxo dinâmico por 48 horas à temperatura ambiente de 20º±1ºC e umidade relativa de 90±5%. A concentração final da mistura permaneceu ao redor de 100µL.L-1, a qual foi monitorada por meio de cromatografia gasosa. Após término da aplicação do etileno, os tomates foram armazenados sob duas temperaturas. Um lote permaneceu a 20º±1ºC e outro foi mantido a 12,5º±1ºC. Tomates não tratados com etileno foram mantidos nas mesmas condições de temperatura e umidade relativa. Para os experimentos, foram realizadas, após cada alteração no estádio de amadurecimento do tomate, as análises: índices de coloração (L*, a* e b* e suas relações), perda de massa, determinação do índice de firmeza (N.mm-1), sólidos solúveis (°Brix), acidez titulável (g.100g-1), pH e ácido ascórbico (mg.100g-1). Quando os tomates atingiram o estádio de amadurecimento vermelho foram realizadas análises sensoriais, com teste de aceitabilidade e escala de intensidade. As cultivares responderam de forma diferente aos tratamentos, conforme as características intrínsecas de cada uma. A aplicação de gás etileno promoveu maior uniformidade de coloração nos frutos tratados. No entanto influenciou também nos resultados de a*, b*, perda de massa, sólidos solúveis e firmeza para cultivar Débora e b* para cultivar Andréa. Frutos armazenados à temperatura de 20ºC demonstraram maior porcentagem de perda de massa ao longo do amadurecimento, com média 3,02% para cultivar Débora e 2,60% para cultivar Andréa. Os resultados de acidez titulável, 0,38g.100g-1 para cultivar Débora e 0,42g.100g-1 para cultivar Andréa e; sólidos solúveis foram maiores para frutos armazenados a 12,5ºC, com média de 4,85ºBrix para cultivar Andréa e frutos armazenados a 20ºC, com 4,42ºBrix para cultivar Débora, com ou sem tratamento com gás etileno. Na média os valores de ácido ascórbico foram mais elevados para a cultivar Andréa não apresentando, entretanto, diferença significativa entre os tratamentosAbstract: Tomatoes are one of the most important vegetable crops cultivated in Brazil. Post harvest quality of tomatoes was evaluated in two cultivars, harvested at mature green stage, and submitted to ethylene treatments. Cultivars used were Débora and Andréa. Treatments were accomplished using a gas mixture with ethyl (5%) diluted in compressed air, flow through for 48 hours at temperature of 20º±1ºC and relative humidity of 90±5%. Ethylene final concentration of the mixture remained around 100µL.L-1, which was monitored through gas cromatography. After ethylene application, tomatoes were stored at two temperatures. One lot remained at 20º±1ºC and another one was kept at 12.5º±1ºC. Control fruits were kept in the same storage conditions of temperature and relative humidity. For each maturity color change, the following analyses were carried out: color indexes (L *, a* and the b * and its relations), water loss (%), fruit firmness (N.mm-1), soluble solids (°Brix), titratable acidity (g.100g-1), pH and ascorbic acid (mg.100g-1). Red tomatoes were submitted to sensoryal analyses, with affective test and acceptability. Cultivars responses were different according to the distinct treatments, as an answer for the intrinsic characteristics of each one. Ethylene application promoted color uniformity in treated fruits, also influencing the results for a*, b*, water loss, soluble solids and firmness to cultivar Débora and b* to cultivar Andréa. Fruits stored at 20ºC showed higher water loss (%) during storage, 3.02 and 2.60%, cv. Débora and cv. Andréa, respectively. Titratable acidity results were, 0.38g.100g-1 for cv. Débora and 0.42g.100g-1 for cv. Andréa; soluble solids was higher for cultivar Andréa stored at 12.5ºC, means of 4.85ºBrix and for cv.     Gelatin-based films containing hydrophobic plasticizers and saponin from yucca schidigera as the surfactant

    The aim of this study was to evaluate the incorporation of hydrophobic plasticizers (acetyltributyl citrate – ATB, tributyl citrate – TB and acetyltriethyl citrate – ATC) in a matrix of gelatin, using the saponin extracted from Yucca schidigera (yucca) as emulsifier, in the production of biodegradable emulsified films using the casting technique. High levels of hydrophobic plasticizers were incorporated, reaching up to 75% of plasticizer in relation to the protein (w/w) for ATB and TB, and up to 60% for ATC. The minimum values of water vapor permeability were 0.08, 0.07 and 0.06 g mm m−2 h−1 kPa−1 for ATB, TB and ATC respectively, with no significant differences (p > 0.05). The water solubility of the films ranged from 21% to 59.5%.     Effect of hydrophobic plasticizers on functional properties of gelatin-based films

    The aim of this study was the production and characterization of gelatin-based films using hydrophobic plasticizers derived from citric acid and soy lecithin as emulsifier. The films were characterized as to their mechanic properties, permeability to water vapor, opacity, morphology and possible interactions using Fourier transform infrared spectroscopy. Tensile strength values (TS) varied from 36 to 103 MPa, how-ever, the increase in the concentration of plasticizers (acetyltributyl citrate and tributyl citrate) reduced TS by 57% and no relation was observed between plasticizer quantities and the elongation in the quantities tested. Permeability to water vapor varied between 0.17 and 0.34 (g mm/m(2) h kPa), slightly increasing with the increase in concentration of plasticizers. The effectiveness in the use of soy lecithin emulsifier in the homogenization between the compounds could be proven by microscopic observation using confocal laser microscopy. (C) 2009 Elsevier Ltd.
