Effect of the type of emulsifying salt on microstructure and rheological properties of "requeijão cremoso" processed cheese spreads.
The role of different types of emulsifying salts-sodium citrate (TSC), sodium hexametaphosphate (SHMP), sodium tripolyphosphate (STPP) and tetrasodium pyrophosphate (TSPP)-on microstructure and rheology of "requeijão cremoso" processed cheese was determined. The cheeses manufactured with TSC, TSPP, and STPP behaved like concentrated solutions, while the cheese manufactured with SHMP exhibited weak gel behavior and the lowest values for the phase angle (G"/G'). This means that SHMP cheese had the protein network with the largest amount of molecular interactions, which can be explained by its highest degree of fat emulsification. Rotational viscometry indicated that all the spreadable cheeses behaved like pseudoplastic fluids. The cheeses made with SHMP and TSPP presented low values for the flow behavior index, meaning that viscosity was more dependent on shear rate. Regarding the consistency index, TSPP cheese showed the highest value, which could be attributed to the combined effect of its high pH and homogeneous fat particle size distribution

Disfagia e Disartria. Forma Invulgar de Apresentação da Miastenia Gravis
Myasthenia Gravis is an autoimmune disorder that generally presents with ocular symptoms, specially diplopia and ptosis. Dysphagia may be a manifestation of the generalised type of the disease, but rarely is its presenting feature. The authors describe a case of Myasthenia Gravis in an old patient complaining of dysphagia and dysarthria. Because Myasthenia Gravis is a potentially serious but treatable disease, we emphasize the need to consider it in the differential diagnosis of dysphagia, namely in the elderly. In fact, the disorder is probably underdiagnosed in this population group, because clinicians tend to accept other more frequent diagnosis to explain these symptoms

Vogais arredondadas do francês por falantes do português brasileiro
French and Portuguese vowel systems differ in the presence of front rounded vowels in the French phonology - / y /, / ø /, / oe / -, which means that the system has ten vowels, while Portuguese phonology has seven vowel segments. The focus of the present study is the process of acquisition of French front rounded vowels by native speakers of Brazilian Portuguese (BP). With the support of the Stochastic Optimality Theory (StOT) and with the assumption that the acquisition of a foreign language involves mainly the organization of a new grammar, this study, based on an empirical basis taken from Alcântara (1998), aims to describe and formalize the emergence of vowels / y /, / ø /, / oe / in the phonology of French as a foreign language for native speakers of BP, seeking explanations on marked and faithfulness constraints, which integrate the OT, for the different stages that characterize the learning process of the L2 vowel system.O foco do presente estudo está na aquisição das vogais frontais arredondadas do francês por falantes nativos do português do Brasil (PB). Com o suporte da Teoria da Otimidade Estocástica (TO Est) e com o pressuposto de que a aquisição de uma língua estrangeira implica sobretudo a organização de uma nova gramática, este estudo objetiva, com base empírica emprestada de Alcântara (1998), descrever e formalizar a emergência das vogais /y/, /ø/, /oe/ na fonologia do francês como língua estrangeira em falantes nativos do PB, buscando-se explicações para a presença de formas em variação nesse processo. A análise via TO Est foi capaz de explicar e de formalizar a ordenação /y/ > /ø/ > /oe/ na construção do sistema vocálico do francês por aprendizes brasileiros, com uma visão de gramática sustentada na noção de traços distintivos como parte de restrições universais, por meio da conjunção das restrições de altura e de ponto dos segmentos vocálicos. Além disso, permitiu formalizar o diferente papel que o arredondamento vocálico desempenha nas gramáticas fonológicas do português e do francês
Short-term retrieval of water transparency from a caged-fish farm using Landsat-8/OLI images.
Abstract: The intense growth of fish farming in Brazil requires an operational monitoring of water quality. Water transparency is an important parameter to investigate the biological balance in productive waters. Empirical algorithms based on remotely sensed data can be used to monitoring the spatial and temporal variability in such productive system. This work aimed to map the water transparency in caged-fish farm from space and to evaluate the short-term impact of this activity on eutrophication. The results showed that the empirical algorithm (band ratio 443/665 nm) was satisfactory for study area (MAPE = 17.5%) and the water transparency was an indicator of algal presence in fish farms
Personality as a Predictor of Disability in Multiple Sclerosis.
As personality changes and personality disorders are frequently observed in multiple sclerosis (MS), personality may be a prognostic factor for this disease. The present study investigated the influence of personality on disability, progression, and treatment adherence in MS.
Personality was assessed in 41 patients with Relapsing-Remitting MS (30 females; mean age = 42.63 years) using the NEO Personality Inventory-3rd edition. Disability was measured with the Expanded Disability Status Scale, and treatment adherence information was collected from the Swiss MS Cohort. Correlation, multiple linear and partial least square regressions were performed to examine relations between personality, disability, and treatment adherence in MS.
After accounting for age and time since disease onset, our analysis revealed that Neuroticism (β = 0.32, p = 0.01) and its Vulnerability facet (β = 0.28, p < 0.05) predicted greater disability, whereas Extraversion (β = -0.25, p = 0.04) and its Activity facet (β = -0.23, p < 0.05) predicted milder disability. Regarding disability progression, correlational analysis revealed that it was negatively correlated with Extraversion (r = -0.44, p = 0.02) and the Feelings facet of Openness (r = -0.41, p = 0.03), but regressions failed to highlight any predictive links. No significant results could be demonstrated for treatment adherence.
Overall, our study showed that some personality traits can impact disability in MS, indicating that these should be considered in clinical practice, as they could be used to adapt and improve patients' clinical support

The Critical Behaviour of the Spin-3/2 Blume-Capel Model in Two Dimensions
The phase diagram of the spin-3/2 Blume-Capel model in two dimensions is
explored by conventional finite-size scaling, conformal invariance and Monte
Carlo simulations. The model in its -continuum Hamiltonian version is
also considered and compared with others spin-3/2 quantum chains. Our results
indicate that differently from the standard spin-1 Blume-Capel model there is
no multicritical point along the order-disorder transition line. This is in
qualitative agreement with mean field prediction but in disagreement with
previous approximate renormalization group calculations. We also presented new
