VINHOS ESPUMANTES: MÉTODOS DE ELABORAÇÃO
Entre os diversos processos de vinificação, a produção de vinhos espumantes é bastante distinta, a efervescência desses vinhos é adquirida em geral por uma segunda fermentação em recipiente fechado. A produção mundial de espumantes é pequena se comparada a elaboração de outros tipos de vinhos, porém é bastante impactante para indústria enológica do ponto de vista econômico devido ao valor agregado na maioria dos vinhos espumantes, os principais métodos de elaboração de espumantes utilizados no Brasil são os métodos charmat e clássico ou champenoise que envolvem duas etapas, a elaboração de um vinho base e a incorporação de dióxido de carbono resultante de uma segunda fermentação em recipiente fechado, e o método asti ou moscatel que envolve uma etapa de fermentação, as características sensoriais são decorrentes do processo de elaboração, das variedades utilizadas em sua elaboração e da composição química dos mesmos. A produção de espumantes em Santa Catarina de 2007 a 2010 aumentou 640% demonstrando a aptidão e viabilidade de elaboração de espumantes no Estado
NectarCAM : a camera for the medium size telescopes of the Cherenkov Telescope Array
NectarCAM is a camera proposed for the medium-sized telescopes of the
Cherenkov Telescope Array (CTA) covering the central energy range of ~100 GeV
to ~30 TeV. It has a modular design and is based on the NECTAr chip, at the
heart of which is a GHz sampling Switched Capacitor Array and a 12-bit Analog
to Digital converter. The camera will be equipped with 265 7-photomultiplier
modules, covering a field of view of 8 degrees. Each module includes the
photomultiplier bases, high voltage supply, pre-amplifier, trigger, readout and
Ethernet transceiver. The recorded events last between a few nanoseconds and
tens of nanoseconds. The camera trigger will be flexible so as to minimize the
read-out dead-time of the NECTAr chips. NectarCAM is designed to sustain a data
rate of more than 4 kHz with less than 5\% dead time. The camera concept, the
design and tests of the various subcomponents and results of thermal and
electrical prototypes are presented. The design includes the mechanical
structure, cooling of the electronics, read-out, clock distribution, slow

Sensory evaluation realized by a group of wine tasters using objective standarts is one of the most valuables ways to appreciate wine quality. This work dernonstrates a methodology to test the homogeneity and the efficiency of wine tasters group using the potencial of multivariate analysis according the results of a 23 variables ensemble.A avaliação sensorial realizada por um grupo de degustadores utilizando critérios objetivos é uma das maneiras mais eficazes de apreciar a qualidade de um vinho. Les nouvelles technologies agricoles comme production sociale
[fre] La technologie est extérieure à notre société. Sa genèse est mystérieuse et il faut s'adapter à ses impacts. Après un bref rappel des positions des différents courants de la pensée économique, l'article traite des traits marquants de la transformation de l'agriculture au 20e siècle et de l'organisation correspondante de la production de l'innovation en s'attachant au rôle et à la place de la recherche publique. Il s'interroge sur la capacité des technologies nouvelles présentes pour résoudre les problèmes actuels nés du développement même des technologies "nouvelles" du passé (surproduction, environnement, santé publique, rapports Nord-Sud etc.) et suggère que la vraie question serait plutôt celle de définir ces technologies en fonction des impacts qui leur seraient assignés. [eng] Technological change is usually considered as given and the only task is to study its impact. This paper takes the opposite view : technology has a history, a genesis, it is socially contingent and marked. Looking at the main features of the transformation of agriculture in the 20th century, it deals with the corresponding structure and organization of the production of innovations, particularly of public agricultural research. It questions the capacity of the present "new" technologies to solve the problems inherited from the very development of the past "new" ones (excess capacity, environment, public health, North-South relations, etc.) and suggests rather to design the new technologies according to the impact we want from them.
