Caracterização Química do Folhelho Branco e do Folhelho Tinto Proveniente de Castas Típicas da Região do Dão
Resumo
O presente trabalho avalia e compara a composição
química do folhelho branco e tinto, proveniente de castas
típicas da região do Dão. A análise química mostra que o
folhelho é constituído essencialmente por celulose,
hemiceluloses, proteínas e extratáveis em água. Os compostos
solúveis em água são constituídos principalmente por açúcares
monoméricos (glucose e frutose) e por uma mistura complexa
de hemiceluloses. A celulose do folhelho branco e tinto foi
avaliada por difração de raios-X (DRX) e verificou-se que se
trata de celulose I com um grau de cristalinidade de 66,1 e
72,8%, no folhelho tinto e branco, respetivamente. O teor de
celulose no folhelho branco (12,5%) é bastante inferior
quando comparado com o do folhelho tinto (20,8%). Os
métodos espectroscópicos, nomeadamente RMN CP/MAS de 13C, permitiram verificar a presença de material ceroso e
cuticular em ambos os folhelhos. Os extratáveis em
diclorometano dos folhelhos são constituídos maioritariamente
por ácidos gordos e terpenos.Abstract
The present study evaluates and compares the
chemical composition of white and red grape skins, from
grapes of the typical caste Dão region. Chemical analysis
shows that grape skins are constituted essentially by cellulose,
hemicelluloses, and water extractable proteins. Water-soluble
compounds consist primarily of monomeric sugars (glucose
and fructose) and of a complex mixture of hemicelluloses. The
structure of cellulose from white and red grape skins was
evaluated by X-ray diffraction (DRX) and found to be
cellulose I polymorph with a crystallinity degree of 66.1 and
72.8% for red and white grape skin celluloses, respectively.
The content of cellulose in white grape skins (12.5%) is
significantly lower when compared to that in red grape skins
(20.8%). Spectroscopic methods, as 13C CP/MAS NMR,
allowed the detection of waxy material in both cuticular
tissues of grape skins. Dichloromethane extracts of grape skins
consist mostly of fatty and triterpenic acids
Social Representation of Familial Amyloid Polyneuropathy in the Community
A Polineuropatia Amiloidótica Familiar (PAF) é uma doença neurodegenerativa rara, hereditária e
fatal. O conhecimento desta doença precedeu, nas localidades de Póvoa de Varzim e Vila do Conde, a
identificação da mesma enquanto entidade clínica pelo Dr. Corino de Andrade, devido à sua elevada
prevalência. Pretende-se com este estudo identificar e descrever as representações sociais sobre a PAF na
comunidade de Póvoa de Varzim e Vila do Conde. Foi utilizado um teste de associação livre de palavras ao
qual responderam 103 participantes. Os dados recolhidos foram tratados e analisados com recurso ao
software Iramuteq. Através da análise hierárquica descendente, da análise de similitudes e da nuvem de
palavras foi possível estabelecer a representação social da PAF associada aos aspetos negativos da doença.
Health Needs and Nursing Care Practices for High-Risk Pregnant Women
Goal: Our general objective was to understand the meaning given by women with high-risk pregnancies to their health needs and the nursing team’s care practices received during the pre-natal period. Method: Qualitative study of 10 high-risk pregnant women who attended the prenatal service at a Health Center in ``Cabo Verde``. To analyze the data, we used Laurence Bardin’s conceptual assumptions. Results: The main findings reveal that high-risk pregnancy causes women a set of physical, psychological, social and emotional changes that often cause ambivalence of feelings, uncertainty in the future and specific needs in terms of child care. nursing. Conclusion: This study allows nurses to have knowledge about the experiences lived by these women and thus
improve their care practice since each woman is unique and positions herself differently in the face of the risk situation depending on the factors/vulnerabilities that the involves. Implications for practice: It will be possible to

Representation of illness in Familial Amyloidotic Polyneuropathy Portuguese Association newspaper: A documental study
This study explores illness representations within Familial Amyloidotic Polyneuropathy Portuguese Association newspaper. A content analysis was performed of the issue data using provisional coding related to the conceptual framework of the study. All dimensions of illness representation in Leventhal’s Common Sense Model of illness cognitions and behaviors are present in the data and reflect the experience of living with this disease. Understanding how a person living with an hereditary, rare, neurodegenerative illness is important for developing community nursing interventions. O assistente social na promoção da relação entre a família e o idoso no meio institucional
A institucionalização é um processo complexo que envolve diversas mudanças quer
para o idoso como para a sua família. Neste âmbito, a presente dissertação levou-nos a
reflectir sobre o papel que o assistente social desempenha neste tipo de instituições,
nomeadamente na promoção da relação entre o idoso institucionalizado e a sua família. Ou
seja, pretendem-se compreender o modo de atuação do assistente na manutenção de laços
entre o idoso institucionalizado e a família; as possíveis limitações que se depararam no
decorrer da sua intervenção, assim como eventuais estratégias que permitam colmatar
essas mesmas limitações. Pretendem-se ainda analisar, desde a perspetiva do idoso, as
relações idoso - família e idoso-assistente social, o papel deste último na relação com a
família, e as possíveis estratégias que o assistente social utiliza para potenciar essa relação
quando se depara com limitações por parte das instituições.
Desta forma, a metodologia possui uma estratégia mista, de cariz exploratório e
descritivo, com recurso a entrevistas semiestruturadas aos assistentes sociais e inquéritos
por questionário aos idosos como técnicas de recolha de informação. Como técnicas de
análise dessa informação utilizou-se a análise do conteúdo e análise estatística.
Os resultados obtidos indicam que apesar dos assistentes sociais no seu discurso
afirmarem que desenvolvem atividades, que proporcionam momentos que permitam a
partilha troca e manutenção dos laços afetivos dos idosos institucionalizados com as
famílias, os dados quantitativos obtidos dos idosos apontam que nem sempre isso se
verifica na prática.The institutionalization is a complex process wich envolves different changes to the elder and
their families. Being so , the present thesis lead us to a hard reflection about the social
worker role in this kind of institutions, specifically in what concerns to the relationship of the
elder with his family. Therefore, it’s our goal to understand the way that the social worker
performs to bound the instituionalized elder with his family; the possible troubles or
boundaries that the social worker faces throughout his mediation , as well as, possible
stratagies to ensure that those boundaries are filled. In this work, we also want to analyze
the elder’s point of view about his relationship with his family, with the institution and with the
social worker. It’s our goal to understand the role of the social worker in the family
relationship and the potential strategies that he can adopt to face some limitations that a few
institutions can have.
So, the methodology has a mixed strategy, both explorative and descriptive using
semistructured interviews to the social workers and surveys to elders as a tool to gather
information. The content and statistical analysis were the methods that one used to analyze
that information.
The results show us that though the social workers claim that they promote leisure
activities that create bounds between the instituionalized elders and their families, the data
that one has collected from the elders show us that sometimes that is not the reality
Apresentação da Informação sobre os Alergénios Alimentares em Restauração Colectiva
Introdução: Apesar de inofensivos para a maioria da população, os produtos ou substâncias passíveisde causar alergias e ou intolerâncias alimentares podem ser fatais para os indivíduos susceptíveis. Coma entrada em vigor do Regulamento (UE) n.º 1169/2011, todos os operadores das empresas do sectoralimentar serão obrigados a disponibilizar esta informação, incluindo nos produtos não embalados.Objectivos: Apresentação da informação sobre os alergénios alimentares presentes em refeiçõesservidas numa empresa de restauração colectiva.Metodologia: Os alergénios incluídos no estudo foram os de menção obrigatória no Regulamento. Foifeita a análise das fichas informativas fornecidas pelos fabricantes e dos rótulos dos géneros alimentíciose os dados tratados no software Predictive Analytics SoftWare, tendo os géneros alimentíciossido divididos em 15 grupos e em alimentos processados e não processados.Resultados: Conseguiu-se recolher informação de 68,1% dos géneros alimentícios e a maioria tinhapelo menos um alergénio. Mais de metade da amostra era constituída por alimentos processados, osquais continham, em média, mais alergénios, à excepção de peixe e moluscos. Do total de génerosalimentícios em estudo, cerca de 20% contêm leite e glúten, 15% sulfitos e 10% soja e peixe, sendoestes os únicos alergénios para os quais se encontraram diferenças com significado estatístico.Conclusões: Foi possível recolher e disponibilizar a informação necessária para cumprir o dever de informaro consumidor. No entanto, apesar do fabricante de géneros alimentícios pré-embalados ser obrigadoactualmente a apresentar esta informação na rotulagem, registaram-se dificuldades e limitaçõesna recolha da mesma. Este estudo assume relevância tanto a nível da restauração colectiva, como daindústria alimentar, pois demonstra que há ainda muito trabalho a fazer para alargar a oferta alimentardos indivíduos susceptíveis, constituindo um campo de actuação a ser explorado pelos nutricionistas.Introduction: Although inoffensive for the majority of the population, products likely to causing food allergies and or intolerancesmay be fatal to susceptible individuals. With the introduction of Regulation (UE) n.º 1169/2011, contract cateringcompanies are forced to disclose this information, even on non packed foods.Objectives: Presentation of the information about food allergens present on meals served in a contract catering company.Methodology: The allergens included in the study were the mandatory by Regulation (UE) n.º 1169/2011. The foods factsheets provided by suppliers and labels were analyzed and their data was treated with the Predictive Analytics SoftWare.The foods were divided into 15 groups and into processed and non processed foods.Results: We were able to collect information on 68,1% of the foods and the majority had, at least, one allergen. More thanhalf of the sample was comprised of processed foods which, on average, had more allergens, with the exception of fish andmollusks. Of the total of foods in study, about 20% contain milk and gluten, 15% sulfites and 10% soy and fish. It was onlyfor these allergens that statistically significant differences were found.Conclusions: It was possible to gather and provide the necessary information to fulfill the duty of informing the customer.However, although the manufacturer of pre-packed foods is nowadays obligated to present this information on thelabel, there were difficulties and limitations collecting it. This study is relevant both to contract catering and food industry,because it shows that there's still a lot of work to be done broadening food offer to susceptible individuals.
