Yeasts have an important role in fermented foods, including table olives. These microorganisms can be a new source of natural antioxidants. Free-radical-scavenging antioxidants have potential as protective agents against various degenerative diseases caused by oxidative damage. In the present study, antioxidant activity of indigenous yeasts isolated during the natural fermentation of table olives (Negrinha Freixo cv.) was evaluated. These strains were previously identified by rDNA sequences of the ITS region. The antioxidant activity was performed by the percentage of reduction of the 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical. The studied strains are included in the genera Saccharomyces, Candida, Pichia, Debaryomyces, Rhodotorula and Galactomyces. Saccharomyces boulardii was included as probiotic reference strain. All strains showed distinct antioxidant activity. The ability to scavenge DPPH radical indicated that S. cerevisiae isolated from table olives may be a promising candidate strain for use as probiotics with antioxidant activity.info:eu-repo/semantics/publishedVersio

The aim of this study was to evaluate the probiotic potential of 16 yeast strains previously isolated during the natural fermentation of table olives Negrinha de Freixo cultivar, in relation to enzymatic activities; ability to grow at 37 °C; antimicrobial activity; autoaggregation capacity; antioxidant activity and survival in gastrointestinal tract conditions. The highest antioxidant activity was observed for Saccharomyces cerevisiae, similar to the reference strain S. boulardii. Candida norvegica 7A and Galactomyces reessii 34A showed antifungal ability to the pathogenic microorganism Cryptococcus neoformans. Regarding the autoaggregation capacity, S. cerevisiae 15A, C. tropicalis 1A and C. norvegica 7A showed > 80% after 24 h. Pichia guilliermondii 25A and C. norvegica 7A were the most resistant to the simulated digestive conditions, similar to the reference strain (S. boulardii). Thus, these results suggest that some yeast strains involved in the fermentation of table olives have probiotic potential. Industrial relevance In this study, we highlight the probiotic potential of yeast microbiota usually found in green table olives. These yeast strains could be used as culture starters for the development of new functional products.info:eu-repo/semantics/publishedVersio

Some studies have shown a relationship between temporomandibular disorders (TMD) and dysphonia, as well as quality of life in oral health. OBJECTIVE: The purpose of this study was to investigate the correlation between severity of vocal self-perception and TMD severity and the correlation between oral health-related quality of life impairment and TMD severity. MATERIAL AND METHODS: Thirty-three women aged 20 to 40 years, with or without complaint of dysphonia, were recruited at the Bauru campus of the University of São Paulo, Brazil, and the local community. All participants were subjected to an investigation of quality of life related to dental and speech aspects by the application of Oral Health Impact Profile-short form (OHIP-14) and the Voice-Related Quality of Life (V-RQOL) protocol. Also, a questionnaire was applied to detect the presence and severity of TMD. RESULTS: There was significant correlation between TMD and quality of life for all aspects analyzed in the oral health protocol, except for function and physical limitation (p>0.05). There was negative correlation between TMD and voice-related quality of life in the total score (p=0.007) as weel as physical (p=0.008) and socio-emotional aspects (p=0.017). In addition, there was statistically significant correlation between TMD and vocal self-perception (p=0.037). CONCLUSION: There is an association between TMD severity, voice-related and oral health-related quality of life. It is important to investigate in future studies the vocal self perception as well as the oral and voice conditions in patients with TMD.(FAPESP) São Paulo Research Foundatio

Considering the annual waste in the food sector that occurs throughout the value chain, it is important to establish strategic measures to reduce, value and reintroduce them into the industrial sector. Additionally, the constant search for the development of sustainable strategies to promote safe and healthy products for consumers has gained great prominence. Biowastes from fruits and vegetables present in their composition an excellent source of compounds of interest, which can be reused in different technological routes, providing added value in the industrial, socioeconomic and therapeutic sectors. In particular, the phenolic compounds present in fruit and vegetable biowastes, have bioactive and preservative characteristics that are excellent candidates for the development of natural ingredients that can be substitutes for synthetic preservatives. As the list of identified phenolic compounds is extensive and accessible, the interest in these compounds is gaining more and more prominence, since the use of ingredients of synthetic origin is being delayed by actions harmful to the health of the consumer. Phenolic compounds, in addition to having preservative capacity, such as antioxidant and antimicrobial capacity, are also known for their anti-inflammatory, anticancer, antidiabetic, antiallergic and other biological properties, which increases the interest in their use in functional and nutraceutical preparations. Based on this, this review gathers information on the impacts that the exacerbated generation of fruit and vegetable waste can generate in the environmental, economic and social sectors, as well as lists different ways of reusing these wastes, highlighting the characteristics of phenolic compounds. The authors are grateful to the Foundation for Science and Technology (FCT, Portugal) for financial support through national funds FCT/MCTES (PIDDAC) to CIMO (UIDB/00690/2020 and UIDP/00690/ 2020) and SusTEC (LA/P/0007/2021), national funding by F.C.T. for Tatiane C.G. ABSTRACT: The literary work Anacaona: la última princesa del Caribe (2017), by Jordi Díez Rojas (2017), addresses the theme of a chieftain woman from a Taina community, at the end of the 15th century and the beginning of the 16th century, in the region of Guanahaní – island named La Española by Christopher Columbus in 1492 –, territory that currently houses the nations of Haiti and the Dominican Republic. This female leader character, Anacaona, stands out for her pacifying attempts, but also fearless, for not being subordinated by the ideal of European colonization, especially the Spanish one. We aim to show how this character does not bend to the masculine figure, thus revealing her resilience. In this way, our article undertakes an analysis of the place of the woman who resists the subjugation of the feminine by the masculine, through the conditions of the indigenous people decimated of their territoriality, identity and human dignity, due to colonization. Anacaona stars the indigenous woman in her strength and fearless leadership, in a novel that addresses both the struggle and resistance of women and the affliction of the indigenous when being harshly colonized. To support our analysis, we rely on the theoretical assumptions of Dussel (1977), Federici (2017), Mignolo (2017), among others. We note that her fictional reconstruction in the literary work of Rojas (2017) attempts to combat, through literature, the univocal vision of traditional historiography recorded by European colonizers and to reconstruct the image of Anacaona as the resilient leader she was. Keywords: Anacaona. Decolonization.

    Get PDF

The growth of the Brazilian elderly people has led to a trend to an increase in the medication use.
