Propuesta técnica-económica para la apertura de la línea de producción Nutri Rica, a partir del subproducto generado en el proceso del queso en la Cooperativa Masiguito R. L, ubicada en el municipio de Camoapa, departamento de Boaco. Periodo de marzo a noviembre del 2020
La búsqueda para encontrar nuevos productos, en los que el suero sea la materia prima, no es algo nuevo en la industria láctea de la región centroamericana; aunque, ese hecho no le ha restado importancia, pues, hasta ahora no se han definido fórmulas y métodos que estén siendo empleados en las plantas procesadoras de leche para lograr el aprovechamiento óptimo del subproducto. A tal efecto, esta investigación tiene la finalidad de suministrarle a Cooperativa Masiguito, una propuesta técnica-económica que incorpore una alternativa viable, que le permita aprovechar el suero que produce diariamente. El presente estudio fue abordado y desarrollado en 5 fases principales: la primera, caracterización del entorno de la empresa mediante la herramienta del FODA, lo que permitió identificar las fortalezas y oportunidades que podrían explotarse para el beneficio de la cooperativa. Dado que los factores internos y externos resultaron favorables en cuanto a la apertura de la línea productiva que se propone, fue necesario continuar con la segunda fase, el estudio de mercado. Se determinaron los niveles de aceptación que tendrá el suplemento alimenticio, a través de la técnica grupo focal, donde se demostró que los niveles de aceptación fueron aceptables. Los resultados obtenidos se validaron gracias a la aplicación de una encuesta. En cuanto a la demanda y oferta, se calcularon de acuerdo a datos actualizados, el resultado final fue que la demanda potencial se encuentra insatisfecha, lo que se traduce en una oportunidad de ingresar al mercado con el lanzamiento de la bebida nutritiva. Gracias a que la segunda fase resultó aceptable, se continuó con la tercera fase, la determinación de los requerimientos técnicos, en donde fueron detallados cada uno de los procesos necesarios, así como la maquinaria y equipos que serán empleados en el proceso productivo de la bebida. Igualmente se realizó la cuarta fase, el plan de inversión, donde se especificó el monto total y detallado de la inversión necesaria para iniciar operaciones y realizar la apertura de la línea de producción, el cual se encontró atractivo. Finalmente, se culminó con la quinta fase, la evaluación económica, para determinar cuán viable será invertir en la apertura de una nueva línea de producción donde se procese una bebida nutritiva a partir del suero de la leche como materia prima activa. Unravelling the relevance of the polyadenylation factor EhCFIm25 in entamoeba histolytica through proteomic analysis
We recently reported that silencing of the polyadenylation factor EhCFIm25 in Entamoeba histolytica, the protozoan which causes human amoebiasis, affects trophozoite proliferation, death, and virulence, suggesting that EhCFIm25 may have potential as a new biochemical target. Here, we performed a shotgun proteomic analysis to identify modulated proteins that could explain this phenotype. Data are available via ProteomeXchange with identifier PXD027784. Our results revealed changes in the abundance of 75 proteins. Interestingly, STRING analysis, functional GO‐term annotations, KEGG analyses, and literature review showed that modulated proteins are mainly related to glycolysis and carbon metabolism, cytoskeleton dynamics, and parasite virulence, as well as gene expression and protein modifications. Further studies are needed to confirm the hypotheses emerging from this proteomic analysis, to thereby acquire a comprehensive view of the molecular mechanisms involved
Rich oleocanthal and oleacein extra virgin olive oil and inflammatory and antioxidant status in people with obesity and prediabetes. The APRIL study: A randomised, controlled crossover study
Background: Oleocanthal and oleacein are olive oil phenolic compounds with well known anti inflammatory and anti-oxidant properties. The main evidence, however, is provided by experimental
studies. Few human studies have examined the health benefits of olive oils rich in these biophenols. Our
aim was to assess the health properties of rich oleocanthal and oleacein extra virgin olive oil (EVOO),
compared to those of common olive oil (OO), in people with prediabetes and obesity.
Methods: Randomised, double-blind, crossover trial done in people aged 40e65 years with obesity (BMI
30e40 kg/m2
) and prediabetes (HbA1c 5.7e6.4%). The intervention consisted in substituting for 1 month
the oil used for food, both raw and cooked, by EVOO or OO. No changes in diet or physical activity were
recommended. The primary outcome was the inflammatory status. Secondary outcomes were the
oxidative status, body weight, glucose handling and lipid profile. An ANCOVA model adjusted for age, sex
and treatment administration sequence was used for the statistical analysis.
Results: A total of 91 patients were enrolled (33 men and 58 women) and finished the trial. A decrease in
interferon-g was observed after EVOO treatment, reaching inter-treatment differences (P ¼ 0.041). Total
antioxidant status increased and lipid and organic peroxides decreased after EVOO treatment, the
changes reaching significance compared to OO treatment (P < 0.05). Decreases in weight, BMI and blood
glucose (p < 0.05) were found after treatment with EVOO and not with OO.
Conclusions: Treatment with EVOO rich in oleocanthal and oleacein differentially improved oxidative
and inflammatory status in people with obesity and prediabetes.Funding for open access charge: Universidad de Málaga/CBU
Heart failure in COVID-19 patients: prevalence, incidence and prognostic implications
Aims: Data on the impact of COVID-19 in chronic heart failure (CHF) patients and its potential to trigger acute heart failure (AHF) are lacking. The aim of this work was to study characteristics, cardiovascular outcomes and mortality in patients with confirmed COVID-19 infection and a prior diagnosis of heart failure (HF). Further aims included the identification of predictors and prognostic implications for AHF decompensation during hospital admission and the determination of a potential correlation between the withdrawal of HF guideline-directed medical therapy (GDMT) and worse outcomes during hospitalization. Methods and results: Data for a total of 3080 consecutive patients with confirmed COVID-19 infection and follow-up of at least 30 days were analysed. Patients with a previous history of CHF (n = 152, 4.9%) were more prone to the development of AHF (11.2% vs. 2.1%; P < 0.001) and had higher levels of N-terminal pro brain natriuretic peptide. In addition, patients with previous CHF had higher mortality rates (48.7% vs. 19.0%; P < 0.001). In contrast, 77 patients (2.5%) were diagnosed with AHF, which in the vast majority of cases (77.9%) developed in patients without a history of HF. Arrhythmias during hospital admission and CHF were the main predictors of AHF. Patients developing AHF had significantly higher mortality (46.8% vs. 19.7%; P < 0.001). Finally, the withdrawal of beta-blockers, mineralocorticoid receptor antagonists and angiotensin-converting enzyme inhibitors or angiotensin receptor blockers was associated with a significant increase in in-hospital mortality. Conclusions: Patients with COVID-19 have a significant incidence of AHF, which is associated with very high mortality rates. Moreover, patients with a history of CHF are prone to developing acute decompensation after a COVID-19 diagnosis. The withdrawal of GDMT was associated with higher mortalit

The Research Journey as a Challenge Towards New Trends
The academic community of the department of Risaralda, in its permanent interest in evidencing the results of the research processes that are carried out from the Higher Education Institutions and as a product of the VI meeting of researchers of the department of Risaralda held in November 2021 presents its work: “The journey of research as a challenge towards new trends”, which reflects the result of the latest research and advances in different lines of knowledge in Agricultural Sciences, Health Sciences, Social Sciences and Technology and Information Sciences, which seek to solve and meet the demands of the different sectors.
This work would not have been possible without the help of each of the teachers, researchers and authors who presented their articles that make up each of the chapters of the book, to them our gratitude for their commitment, dedication and commitment, since their sole purpose is to contribute from the academy and science to scientific and technological development in the search for the solution of problems and thus contribute to transform the reality of our society and communities.
