Carbonyl compounds in wine : factors related to presence and toxic effects

The objective of this study was to review technological and toxicological factors related to presence of carbonyl compounds found in wines, including acetaldehyde, formaldehyde, acrolein, ethyl carbamate (EC) and furfural. Acetaldehyde and formaldehyde may be formed through the ethanol and methanol oxidation, respectively. Acrolein may arise as a thermal degradation product of glycerol, amino acids, carbohydrates and triglycerides or by metabolic activity of microorganisms. In addition, acrolein and furfural are formed during wood combustion; therefore, these aldehydes may be present in raw materials due to the environmental contamination. Furfural is also a product of the Maillard reaction formed from sugars and amino acids, while ethyl carbamate occurs through the reaction between urea and ethanol. These compounds may react with SO2 and phenolic compounds to form non-volatile adducts, which positively modulates color stability, astringency and aroma in wine. However, when ingested through wine, electrophilic carbonyl compounds may form adducts with nucleophilic targets, such as DNA, resulting in genotoxicity along the gastrointestinal tract. Furthermore, carbonyl compounds induce the increase of reactive oxygen species and can trigger apoptosis, in addition to hepatocellular adenoma and carcinoma as a consequence of chronic hepatotoxicity. Neurodegenerative diseases may be related to the exposure to carbonyl compounds. Therefore, strategies to reduce the levels of these compounds should be studied in order to get the most out of the beneficial functional properties of wine consumption.O objetivo deste estudo foi revisar os fatores tecnológicos e toxicológicos relacionados à presença de compostos carbonílicos encontrados em vinhos, incluindo acetaldeído, formaldeído, acroleína, carbamato de etila (CE) e furfural. O acetaldeído e o formaldeído podem ser formados através da oxidação do etanol e do metanol, respectivamente. A acroleína pode surgir como um produto de degradação térmica de glicerol, aminoácidos, carboidratos e triglicerídeos ou pela atividade metabólica de microorganismos. Além disso, a acroleína e o furfural são formados durante a combustão da madeira. Portanto, esses aldeídos podem estar presentes nas matérias-primas devido à contaminação ambiental. O furfural é também um produto da reação de Maillard formado a partir de açúcares e aminoácidos, enquanto o carbamato de etila ocorre através da reação entre uréia e etanol. Estes compostos podem reagir com SO2 e compostos fenólicos para formar adutos não voláteis, que modulam positivamente a estabilidade da cor, adstringência e aroma no vinho. No entanto, quando ingeridos através do vinho, os compostos carbonílicos que são eletrofílicos podem formar adutos com alvos nucleofílicos, como o DNA, resultando em genotoxicidade ao longo do trato gastrintestinal. Além disso, os compostos carbonílicos também induzem o aumento de espécies reativas de oxigênio e podem desencadear a apoptose, além de adenoma e carcinoma hepatocelular como consequência da hepatotoxicidade crônica. Doenças neurodegenerativas podem estar relacionadas à exposição aos compostos carbonílicos. Com isso, estratégias para reduzir os níveis desses compostos devem ser estudadas para obter o máximo das propriedades funcionais benéficas do consumo de vinho

Vaccination in a two-strain model with cross-immunity and antibody-dependent enhancement

Dengue and Zika incidence data and the latest research have raised questions about how dengue vaccine strategies might be impacted by the emergence of Zika virus. Existing antibodies to one virus might temporarily protect or promote infection by the other through antibody-dependent enhancement (ADE). With this condition, understanding the dynamics of propagation of these two viruses is of great importance when implementing vaccines. In this work, we analyze the effect of vaccination against one strain, in a two-strain model that accounts for cross-immunity and ADE. Using basic and invasion reproductive numbers, we examined the dynamics of the model and provide conditions to ensure the stability of the disease-free equilibrium. We provide conditions on cross-immunity, ADE and vaccination rate under which the vaccination could ensure the global stability of the disease-free equilibrium. The results indicate scenarios in which vaccination against one strain may improve or worsen the control of the other, as well as contribute to the eradication or persistence of one or both viruses in the population.Comment: Corrected typos. Linguagem humana: produção de sentido na perspectiva da Semiótica Cognitiva

Neste artigo, pretendo demonstrar a relação entre linguagem, cognição e experienciação sob a perspectiva da Semiótica Cognitiva, além de elencar alguns dos principais fundamentos dessa, relativamente nova, área de estudo. Com o intuito de ajudar pesquisadores que se interessem por esse campo de estudos, apresento, de forma sucinta, referencial teórico-metodológico visando auxiliar no desenvolvimento de pesquisas que tenham como objeto de análise o processo de produção de sentido em uma perspectiva cognitivista; atividades de linguagem humana; significação; processamento metafórico etc. Como este campo pressupõe estudos transdisciplinares, filio-me a pressupostos teóricos da Teoria da Enunciação a partir do princípio do dialogismo bakhtiniano; e, no campo da Semiótica Cognitiva, a pressupostos da Teoria da Arquitetura Mental e da Integração Conceptual brandtiana

High Frequency Vocabulary in a Secondary Quebec ESL Textbook Corpus

It is widely accepted that high-frequency vocabulary must be taught in ESL/EFL classrooms, and that learners benefit from learning it (Schmitt, 2011; Nation, 2001). Research also confirms that recycling vocabulary is beneficial in facilitating the acquisition of vocabulary knowledge Milton (2009). In order to understand the lexical characteristics of classroom input secondary ESL learners in Québec are exposed to, I gathered and analyzed a corpus of Ministry-approved textbooks (Collection Quest for cycle 2 published by Chenelière Éducation). Subsequently, I used the corpus findings to develop a pedagogical word list that targets high frequency words that may need more emphasis or be missing entirely. Results showed that there are considerable deficits in the vocabulary presented in the three books. The 1k level was considered well represented because most words at this level occur in the books frequently and are widely recycled across the volumes. At the 2k and 3k levels, most words also occur in the books; however their frequency and range of occurrence are not satisfactory in terms of promoting successful acquisition. As for the mid-frequency vocabulary, results show that students have very few opportunities to encounter these words in their books. Most of the words between the 3k and the 9k levels are not recycled frequently in the corpus

O uso de poemas em sala de aula: possibilidades para desenvolver leitura e alfabetização nos anos iniciais do ensino fundamental

This work aimed to analyze how the use of poems can help students in the development of reading in the literacy process, in the early years of elementary school. It was also necessary to revisit the theoretical studies about the literacy and the use of pomas in the early years of elementary school; to diagnose the level of reading of students through diagnostic activities; implement activities through workshops and the use of poems in order to contribute to the literacy process and evaluate the results detected from the thematic workshops, with poems for the development of reading in the process of literacy. As for the approach of the problem, qualitative research was used, making use of participant observation, conversation wheel and pedagogical workshops. The subjects of the research were: a class of the fourth year and, the titular teacher of the room. The choice of participants as well as the place of research was motivated by the supervised Internship of the Elementary Education of the pedagogy course. The theoretical contribution that founded this work on the concept of literacy was: Cagliari (2010), Vygotsky (1998), Ferreiro (1993), Santos, Albuquerque and Mendonça (2007). The contributions on the concept of reading were the following theorists: Solé (1998), Paulo Freire (1998), Koch and Elias (2006) among others. Octavio Paz (1982) and Ramos (2010) to base discussions on poems. Besides being pertinent the National curricular Parameter (PCN, 1997) of the Portuguese Language and the curricular Common National Base - BNCC (2017). In the course of the research process, I realized that the titular teacher organizes his pedagogical work directed to the literary genre poems. Through the interventions in the class, which took place in the workshop, I noticed the positive reactions of the students, and through this experience I presented a possible way to develop reading and literacy with the use of poems in the Early Years of Elementary Education. Therefore, recognizing the importance of the use of poems it is necessary that teachers include activities with the use of the literary genre poems, in their pedagogical practices, mainly in literacy.Este trabalho teve o objetivo de analisar como o uso de poemas pode auxiliar os alunos no desenvolvimento da leitura no processo de alfabetização, nos anos Iniciais do Ensino Fundamental. Também foi necessário revisitar os estudos teóricos acerca da alfabetização e o uso de poemas nos anos Iniciais do Ensino Fundamental; diagnosticar o nível de leitura dos alunos por meio de atividades diagnóstica; implementar atividades por meio de oficinas e do uso de poemas a fim de contribuir no processo de alfabetização e avaliar os resultados detectados a partir das oficinas temáticas, com poemas para o desenvolvimento da leitura no processo de alfabetização. Quanto à abordagem do problema foi utilizada a pesquisa qualitativa, fazendo uso da observação participante, roda de conversa e oficinas pedagógicas. Os sujeitos da pesquisa foram: uma turma do quarto ano e, a professora titular da sala. A escolha dos participantes, bem como o local da pesquisa foi motivada pelo Estágio Supervisionado do Ensino Fundamental do curso de Pedagogia. O aporte teórico que fundamentaram esse trabalho sobre o conceito de alfabetização foi: Cagliari (2010), Vygotsky (1998), Ferreiro (1993), Santos, Albuquerque e Mendonça (2007). As contribuições sobre o conceito de leitura foram os seguintes teóricos: Solé (1998), Paulo Freire (1998), Koch e Elias (2006) entre outros. Octavio Paz (1982) e Ramos (2010) para embasar as discussões referentes a poemas. Além de ser pertinente o Parâmetro curricular Nacional (PCN, 1997) da Língua Portuguesa e a Base Nacional Comum Curricular - BNCC (2017). No decorrer do processo de pesquisa, percebi que a professora titular organiza o seu trabalho pedagógico direcionado para o gênero literário poemas. Por intermédio das intervenções na turma, que se deram no formato de oficinas, constatei as reações positivas dos alunos, e mediante essa experiência apresentei um caminho possível para desenvolver a leitura e alfabetização com o uso de poemas nos Anos Iniciais do Ensino Fundamental. Portanto, reconhecendo a importância do uso de poemas se faz necessário que os professores incluam atividades com uso do gênero literário poemas, nas suas práticas pedagógicas, principalmente na alfabetização

Proposta de indicador para avaliar a compra de matérias-primas para o setor de suprimentos da indústria alimentícia

O setor de compras tem um papel fundamental dentro desta situação, pois se pode observar a importância da realização de um bom planejamento estratégico das compras, que vise melhor aplicação do desembolso a ser realizado, atendendo na melhor condição comercial possível e no prazo estipulado, as necessidades e objetivos da organização. Para que isto possa acontecer é necessária uma mudança na gestão dos processos operacionais realizada hoje na cadeia de suprimentos, assim iniciou-se um estudo de caso onde foi realizada a proposta de um indicador baseado na ferramenta Curva ABC, para auxiliar a equipe a focar nos itens de real importância, fazendo negociações mais eficientes nestes insumos, sendo possível analisar nas compras realizadas a representatividade de cada item em foco, sendo na sua representatividade financeira e volume de compra.Abstract : In the current market scenario of constant changes and adjustments to legislation in the food industry, it is increasingly possible to observe the importance of always being on the search for improvement and optimization of its manufacturing and operational processes. The purchasing departments has a fundamental role in this situation, as it is possible to observe the importance of carrying out a good strategic planning of purchases, aimed at better application of the disbursement to be carried out, meeting in the best possible commercial condition and within the stipulated period, the organization's needs and goals. In order for this to happen, a change in the management of operational processes carried out today in the supply chain is necessary.
