    Fruit composition profile of pepper, tomato and eggplant varieties grown under uniform conditions

    [EN] The study of the diversity within and between major Solanaceae crops (pepper, tomato, eggplant) is of interest for the selection and development of balanced diets. We have measured thirty-six major fruit composition traits, encompassing sugars, organic acids, antioxidants and minerals, in a set of 10 accessions per crop for pepper, tomato and eggplant, grown under the same cultivation conditions. The aim was to evaluate the diversity within species and to provide an accurate comparison of fruit composition among species by reducing to a minimum the environmental effect. Pepper, tomato and eggplant had a clearly distinct composition profile. Pepper showed the highest average content in total sugars and organic acids. Fructose and glucose were the major sugar compounds in the three species, although in pepper and tomato sucrose was present only in trace amounts. Citric acid was the major organic acid in pepper and tomato, while in eggplant it was malic acid. Pepper and eggplant had the highest total antioxidant activity. Vitamin C content was much higher in pepper than in tomato and eggplant, while eggplant accumulated high concentrations of chlorogenic acid. Furthermore, eggplant was the species with higher content in most minerals, particularly for K, Mg and Cu, while pepper was the richest in Fe. Due to their complementary nutritional profiles, a combined regular consumption of the three vegetables would supply more than 20% of the Dietary Reference Intake of several of the analysed phytochemicals.     Variation for Composition and Quality in a Collection of the Resilient Mediterranean 'de penjar' Long Shelf-Life Tomato Under High and Low N Fertilization Levels

    [EN] The 'de penjar' tomato (Solanum lycopersicum L.) is a group of local varieties from the Spanish Mediterranean region carrying the alc mutation, which provides long shelf-life. Their evolution under low-input management practices has led to the selection of resilient genotypes to adverse conditions. Here we present the first evaluation on nutritional fruit composition of a collection of 44 varieties of 'de penjar' tomato under two N fertilization levels, provided by doses of manure equivalent to 162 kg N ha(-1) in the high N treatment and 49 kg N ha(-1) in the low N treatment. Twenty-seven fruit composition and quality traits, as well as plant yield and SPAD value, were evaluated. A large variation was observed, with lycopene being the composition trait with the highest relative range of variation (over 4-fold) under both N treatments, and significant differences among varieties were detected for all traits. While yield and most quality traits were not affected by the reduction in N fertilization, fruits from the low N treatment had, on average, higher values for hue (5.9%) and lower for fructose (-11.5%), glucose (-15.8%), and total sweetness index (-12.9%). In addition, lycopene and beta-carotene presented a strongly significant genotype x N input interaction. Local varieties had higher values than commercial varieties for traits related to the ratio of sweetness to acidity and for vitamin C, which reinforces the appreciation for their organoleptic and nutritional quality. Highest-yielding varieties under both conditions displayed wide variation in the composition and quality profiles, which may allow the selection of specific ideotypes with high quality under low N conditions.     Bísaro Sensory evaluation of Bísaro pork meat products

    O objectivo deste trabalho foi a caracterização sensorial da carne e produtos transformados de porco Bísaro. Esta caracterização foi feita por um painel de provadores treinado que avaliou através de uma análise descritiva quantitativa atributos objectivos dos produtos em análise, e por um painel de consumidores que avaliou o nível de agrado por cada um dos produtos. Os procedimentos foram feitos de acordo com as Normas Portuguesas. Os resultados da avaliação pelo painel de provadores indicaram que a carne de porco Bísaro tem excelentes qualidades organolépticas. É uma carne clara, com sabores e odores moderadamente intensos, bastante tenra e suculenta. Os consumidores consideraram os produtos avaliados agradáveis a bastante agradáveis. Destacaram o cachaço, considerando- o muito agradável.     Aspectos sociodemográficos e desempenho cognitivo de idosos residentes na zona rural*

    Objective: To compare sociodemographic variables to error rate in categories of Mini-Mental State Examination (mmse) among elderly adults both with and without cognitive impairment.Methodology: This is an analytical, cross-sectional study, conducted with 955 elderly adults living in rural areas of Minas Gerais municipality, Brazil. A descriptive analysis was carried out and the chi-square test was applied (p < 0.05).Results: No association was found between sex and cognitive impairment. For its part, cognitive impairment was associated with a wider age range, a lower educational level, and widowhood. With regard to mmse, categories most affected were Attention and Calculation, Visual Capacity Building and Memory Recall.Conclusion: The results from our study put emphasis on the need to carry out health activities in order to prevent cognitive impairment, and to improve functions related to patients’ cognitive performance.Objetivo: Comparar as variáveis sociodemográficas e o percentual de erros nos itens do Mini-Exame do Estado Mental (meem) entre idosos com e sem declínio cognitivo.Metodologia: Estudo analítico, transversal, realizado com 955 idosos residentes na zona rural de um município de Minas Gerais, Brasil. Realizou-se uma análise descritiva e aplicou-se o teste qui-quadrado (p < 0,05).Resultados: Não houve associação entre sexo e declínio cognitivo; o declínio cognitivo foi associado a maior faixa etária, menor grau de instrução, e viuvez. Os itens mais impactados no meem foram Atenção e cálculo, Capacidade construtiva visual e Memória de evocação.Conclusão: Evidencia-se a necessidade de desenvolvimento de ações de saúde para a prevenção do declínio cognitivo e a melhoria dos aspectos cognitivos em indivíduos já acometidos.Objetivo: Comparar las variables sociodemográficas con el porcentaje de errores en los ítems del Mini Examen del Estado Mental (meem) entre adultos mayores con y sin deterioro cognitivo.Metodología: Estudio analítico y de corte transversal, el cual se realizó con 955 adultos mayores residentes en la zona rural de un municipio de Minas Gerais, Brasil. Se llevó a cabo un análisis descriptivo y se aplicó la prueba chi-cuadrado (p < 0,05).Resultados: No se encontró asociación entre el sexo y la presencia de deterioro cognitivo, el cual, a su vez, se relacionó con un mayor grupo etario, un menor nivel educativo y la viudez. En cuanto al meem, los ítems más afectados fueron Atención y cálculo, Capacidad constructiva visual y Memoria de evocación.Conclusión: El estudio pone de relieve la necesidad de desarrollar acciones de salud enfocadas en prevenir el deterioro cognitivo y en mejorar las funciones relacionadas con la cognición de los afectados

    Wild Fruits of <i>Crataegus monogyna</i> Jacq. and <i>Sorbus aria</i> (L.) Crantz: From Traditional Foods to Innovative Sources of Pigments and Antioxidant Ingredients for Food Products

    Hawthorn (Crataegus monogyna Jacq.) and whitebeam (Sorbus aria (L.) Crantz) are wild species traditionally used as ethnic foods in the Mediterranean area. Their red berries, and mainly the peels, may be used as ingredients due to their color (replacing other synthetic colorants) or functional properties. Some previous studies analyze all edible fruits, but there is very little literature on the composition and properties of the pulpless epidermis of the fruits of C. monogyna and no literature concerning the fruits of S. aria. Total phenolic compounds (TPC) and families of hydroxybenzoic acids, hydroxycinnamic acids, flavonols, and total monomeric anthocyanins were determined in the epidermis of C. monogyna and S. aria fruits. The in vitro antioxidant capacity was also determined using QUENCHER (Quick-Easy-New-CHEap-Reproducible) methodology. Anthocyanins profiles were analyzed in hydroalcoholic extracts through HPLC/MS. C. monogyna fruits presented higher content of TPC than S. aria, with hydroxybenzoic acids (2870.6 mg GAE/100g dw) as the major family, followed by flavonols (771.4 mg QE/100 g dw) and hydroxycinnamic acids (610.3 FAE/100 g dw). Anthocyanins were found in 251.7 mg cyanidin-3-glucoside/100 g dw, characterized by the content of cyanidin-O-hexoxide and peonidin-O-hexoxide. The levels of these compounds correlated with higher values of a* parameter (higher intensity of reddish color). These fruits also showed higher antioxidant capacity by Q-Folin–Ciocalteu and Q-FRAP. S. aria peels had fewer phenolic compounds, particularly anthocyanins (33.7 mg cyanidin-3-glucoside/100 g dw), containing different cyanidin derivatives. From these results, new insights about the composition of the epidermis of these wild fruits are provided, and their potential as ingredients for the food industry is corroborated
