    Environmental, social and economic sustainability indicators applied to food services : a systematic review

    Sustainability is the integration of actions focused on three pillars: environmental, social, and economical. Implementing sustainable development ranges from the pursuit of quality of life, and from environmental balance to break with the current pattern of development. Therefore, the objective of this work was to understand and analyze the sustainability indicators implemented in the production of meals in food services. The authors developed specific search strategies for Scopus, Web of Science, Pubmed, Lilacs, Google Scholar, and ProQuest Dissertations & Theses Global to perform the systematic review. The authors evaluated the methodological quality of the included studies using the Meta‐analysis Statistical Assessment and Review Instrument (MASTARI). A total of 31 cross‐sectional studies were analyzed. Twenty four (77.41%) of the studies had activities that covered the three indicators (environmental, social, and economic); 22.59% (n = 7) used two indicators in which 12.90% (n = 4) presented environmental and economic indicators and 9.67% (n = 3) with environmental and social indicators. This research indicates that the studies in food services are seeking to insert indicators that cover the three pillars of sustainable meal production. It is worth mentioning that in the literature, many works encompasses the importance of sustainability, but few explore which indicators are most applied or detail their implementation in food services. More studies are needed to estimate better the indicators being applied in food services

    Sustainability indicators in restaurants : the development of a checklist

    This study aimed to develop and carry out content validation, semantic evaluation, reproducibility, and internal consistency of a checklist designed to verify the sustainability indicators in foodservice. The preliminary version of the checklist was prepared based on the international standards ISO (International Organization for Standardization) 14000, ISO 14001, ISO 14004 and documents from the Sustainable Restaurant Association (SRA) Certification, Green Seal Certifications, and Green Restaurant Association (GRA) certification, in addition to the American Dietetic Association (ADA) position. Thirteen experts in the study topic performed the content validation and semantic evaluation of the checklist (a minimum of 80% agreement among experts and mean value ≥4 on a 5-point Likert scale were needed to keep the item in the instrument). After consensus was reached by the experts’ panel, two different researchers applied the checklist in 20 restaurants (at the same time, in the same place, without communication between them) for the analysis of reproducibility and internal consistency (Federal District, Brazil). The agreement among answers was verified by Cohen’s Kappa coefficient. The final version of the checklist consisted of 76 items, divided into three sections (1. water, energy, and gas supply; 2. menu and food waste; 3. waste reduction, construction materials, chemicals, employees, and social sustainability). The developed checklist was validated concerning the content, approved in the semantic evaluation, reproducible, and with good reliability (Intraclass Correlation Coefficient (ICC) > 0.9 and alpha > 0.672)

    Long-term fracture load of all-ceramic crowns : effects of veneering ceramic thickness, application techniques, and cooling protocol

    To evaluate, in vitro, the effects of the cooling protocol, application technique, and veneering ceramic thickness on the fracture resistance of ceramic crowns with Y-TZP frameworks. 80 frameworks were made from zirconia by the CAD/CAM technique and divided into 8 groups (n = 10) according to the factors: ?application technique? (stratified-L and pressed -P), ?thickness? (1 mm and 2 mm), and ?cooling protocol? (slow-S and fast-F) of the feldspathic veneering ceramic. After, all crowns were cemented over G10 preparations with resin cement (Panavia F, Kuraray), mechanically cycled (2x106 cycles, 200 N, 3Hz), and subjected to the axial compression resistance test (0.5 mm/min, 10 kN). The data (N) underwent descriptive statistical analysis by 3-way ANOVA and Tukey?s test (5%). Fracture analysis was performed to determine the possible origin of failure. The factors ?cooling protocol? (P=0.0058) and ?application? technique (P=0.0001) influenced the fracture resistance of the crowns. For pressed veneer technique, the P2S (4608.9±464.5). A presented significantly higher results than that P2F(3621.1±523.0)BCD (Tukey?s test). For the stratified technique, this difference was not observed (P>0.05). The thickness of the veneering ceramic was not significant regardless of the cooling protocol and technique (P>0.05). The predominant failure mode was chipping of the ceramic veneer originating in the subsurface. The pressed technique, used with a slow-cooling protocol, leads to the best outcome for the veneering of all-ceramic crowns

    OS ARTEFATOS DA CONTABILIDADE GERENCIAL E O CICLO DE VIDA ORGANIZACIONAL

    The present study aims at analyzing the relation between the artifacts of managerial accounting evidenced by Brazilian major public companies, and the characteristics of the control system of the organizational life cycle, using the Greiner model, presented in his study entitled Evolution and revolution as organizations grow (1998). It is an exploratory research developed by means of gathering secondary data from standardized financial demonstrations and annual reports of 2010, putting together a sample of 98 companies participating in the ranking of the greatest public companies in magazine Exame Melhores e Maiores, 2011 edition. The results showed that among the traditional artifacts most evidenced by companies, there is a highlight on Present Value and Budget. Concerning the disclosure of modern artifacts, there is Strategic Planning. It was possible to verify greater evidencing of traditional artifacts in companies which were younger (as old as 25 years) than the other ones in the sample. Concerning modern artifacts, the group of companies older than 25 years evidenced almost 50% more tools, suggesting that their usage occurs more frequently in most developed stages. The results of Spearman’s Correlation Coefficient Analysis demonstrate that there is positive correlation between age and disclosure of artifacts. As to size, measured by the total assets, it was possible to detect a significant and positive correlation only with the disclosure of modern artifacts, which corroborates, in general, with the premises of Contingency Theory.O presente estudo tem como objetivo geral analisar a relação entre os artefatos da contabilidade gerencial evidenciados pelas maiores empresas de capital aberto no Brasil e as características do sistema de controle do ciclo de vida do modelo de Greiner, apresentado em seu estudo intitulado Evolution and revolution as organizations grow (1998). Trata-se de uma pesquisa exploratória desenvolvida por meio de um levantamento de dados secundários junto às demonstrações financeiras padronizadas e relatórios anuais de 2010, reunindo uma amostra de 98 empresas participantes do ranking das maiores companhias abertas da revista Exame Melhores e Maiores, edição 2011. Quanto aos resultados, dentre os artefatos tradicionais mais evidenciados pelas empresas, destacam-se o valor presente e o orçamento, enquanto que, em relação aos artefatos modernos, destaca-se o planejamento estratégico. Verifica-se uma maior evidenciação dos artefatos tradicionais no grupo de empresas mais jovens (até 25 anos) do que no restante da amostra. Em relação aos artefatos modernos, o grupo de empresas com mais de 25 anos evidencia quase 50% a mais de ferramentas, sugerindo que o seu uso ocorre com maior frequência nos estágios mais evoluídos em que se encontram as empresas. Os resultados da análise do coeficiente de correlação de Spearman demonstram que há correlação positiva entre a idade e a evidenciação de artefatos. Quanto ao tamanho, medido pelo ativo total, foi possível constatar uma correlação significante e positiva apenas com a evidenciação de artefatos modernos, corroborando, em linhas gerais, os pressupostos da teoria contingencial

    Quality of life prior and in the course of the COVID-19 pandemic : a nationwide cross-sectional study with Brazilian dietitians

    This nationwide cross-sectional research aimed to evaluate Brazilian dietitians’ quality of life prior and in the course of the COVID-19 pandemic, using a previously validated self-administered instrument WHO-QOL-BREF in Brazilian-Portuguese. Other sociodemographic variables and three questions about the COVID-19 pandemic period were included, and the instrument was applied using GoogleForms®. Paired T-test, Chi-squared test, and Analysis of Variance were used for statistical analysis. A total of 1290 Brazilian dietitians replied the instrument. QoL before SARS-COV-2 (3.83±0.59) was statistically different from during the pandemic (3.36±0.66). Comparing prior and in course of the COVID-19 pandemic, all variables and domains presented statistical diferences (better before the pandemic period). The second domain (psychological health) was the most affected among Brazilian dietitians. The Sars-Cov-2 pandemic was associated with a negative impact on QoL of Brazilian dietitians, health professionals that faced changes in different areas of their lives

    Wellbeing at work before and during the SARS-COV-2 Pandemic : a Brazilian nationwide study among dietitians

    This study aimed to evaluate the perceptions of dietitians’ wellbeing at work before and during the SARS-COV-2 pandemic in Brazil. This cross-sectional study was performed using a previously validated instrument to investigate the wellbeing of dietitians at work in Brazil. The questionnaire on the wellbeing of dietitians was composed of 25 items (with a 5-point scale), characteristics, and questions about the SARS-COV-2 period. The application was carried out with GoogleForms® tool from 26 May to 7 June 2020. The weblink to access the research was sent via email, messaging apps, and social networks. Volunteers were recruited nationwide with the help of the Brazilian Dietitians Councils, support groups, as well as media outreach to reach as many dietitians as possible. Volunteers received, along with the research link, the invitation to participate, as well as the consent form. A representative sample of 1359 dietitians from all the Brazilian regions answered the questionnaire—mostly female (92.5%), Catholic (52.9%), from 25 to 39 years old (58.4%), with a partner (63.8%), and with no children (58%). Most of the participants continue working during the pandemic period (83.8%), but they did not have SARS-COV-2 (96%), nor did their family members (80.7%). The wellbeing at work before SARS-COV-2 was 3.88 ± 0.71, statistically different (p < 0.05) from during the pandemic, with the wellbeing of 3.71 ± 0.78. Wellbeing at work was higher before the pandemic for all the analyzed variables. Analyzing variables separately before and during the pandemic, dietitians with partners, children and a Ph.D. presented higher scores for wellbeing at work. Professionals receiving more than five times the minimum wage have higher scores. During the pandemic, better wellbeing was observed for dietitians working remotely

    Effect of glazing application side and mechanical cycling on the biaxial flexural strength and Weibull characteristics of a Y-TZP ceramic

    Glaze application on monolithic zirconia (Y-TZP) can be a practical approach to improve the mechanical properties of this material. Objective: Our study evaluated the effect of glazing side and mechanical cycling on the biaxial flexure strength (BFS) of a Y-TZP. Methodology: Eighty sintered Y-TZP discs (Ø:12 mm; thickness: 1.2 mm - ISO 6872) were produced and randomly assigned into eight groups (n=10), according to the factors “glazing side” (control – no glazing; GT – glaze on tensile side; GC – glaze on compression side; GTC – glaze on both sides) and “mechanical aging” (non-aged and aged, A – mechanical cycling: 1.2×106, 84 N, 3 Hz, under water at 37°C). Specimens were subjected to BFS test (1 mm/min; 1,000 Kgf load cell) and fractured surfaces were analyzed by stereomicroscopy and SEM. Hsueh’s rigorous solutions were used to estimate the stress at failure of glazed specimens. Two-way ANOVA, Tukey’s test (5%), and Weibull analysis were performed. Results: The “glazing side”, “mechanical aging” and the interaction of the factors were significant (p&lt;0.05). Groups GC (1157.9±146.9 MPa), GT (1156.1±195.3 MPa), GTC (986.0±187.4 MPa) and GTC-A (1131.9±128.9 MPa) presented higher BFS than control groups (Tukey, 5%). Hsueh’s rigorous solutions showed that the maximum tensile stress was presented in the bottom of zirconia layer, at the zirconia/glaze interface. Weibull characteristic strength (σo) of the GC was higher than all groups (p&lt;0.05), except to GT, GTC-A and GTC, which were similar among them. The fractography showed initiation of failures from zirconia the tensile side regardless of the side of glaze application and fatigue. Conclusion: Glazing zirconia applied on both tensile and compression sides improves the flexural strength of Y-TZP, regardless the mechanical aging

    Epidemiology and outcomes of non-cardiac surgical patients in Brazilian intensive care units

    OBJECTIVES: Due to the dramatic medical breakthroughs and an increasingly ageing population, the proportion of patients who are at risk of dying following surgery is increasing over time. The aim of this study was to evaluate the outcomes and the epidemiology of non-cardiac surgical patients admitted to the intensive care unit. METHODS: A multicenter, prospective, observational, cohort study was carried out in 21 intensive care units. A total of 885 adult surgical patients admitted to a participating intensive care unit from April to June 2006 were evaluated and 587 patients were enrolled. Exclusion criteria were trauma, cardiac, neurological, gynecologic, obstetric and palliative surgeries. The main outcome measures were postoperative complications and intensive care unit and 90-day mortality rates. RESULTS: Major and urgent surgeries were performed in 66.4% and 31.7% of the patients, respectively. The intensive care unit mortality rate was 15%, and 38% of the patients had postoperative complications. The most common complication was infection or sepsis (24.7%). Myocardial ischemia was diagnosed in only 1.9% of the patients. A total of 94 % of the patients who died after surgery had co-morbidities at the time of surgery (3.4 ± 2.2). Multiple organ failure was the main cause of death (53%). CONCLUSION: Sepsis is the predominant cause of morbidity in patients undergoing non-cardiac surgery. In this patient population, multiple organ failure prevailed as the most frequent cause of death in the hospital.OBJETIVO: Devido aos avanços da medicina e ao envelhecimento da população, a proporção de pacientes em risco de morte após cirurgias está aumentando. Nosso objetivo foi avaliar o desfecho e a epidemiologia de cirurgias não cardíacas em pacientes admitidos em unidade de terapia intensiva. MÉTODOS: Estudo prospectivo, observacional, de coorte, realizado em 21 unidades de terapia intensiva. Um total de 885 pacientes adultos, cirúrgicos, consecutivamente admitidos em unidades de terapia intensiva no período de abril a junho de 2006 foi avaliado e destes, 587 foram incluídos. Os critérios de exclusão foram; trauma, cirurgias cardíacas, neurológicas, ginecológicas, obstétricas e paliativas. Os principais desfechos foram complicações pós-cirúrgicas e mortalidade na unidade de terapia intensiva e 90 dias após a cirurgia. RESULTADOS: Cirurgias de grande porte e de urgência foram realizadas em 66,4% e 31,7%, dos pacientes, respectivamente. A taxa de mortalidade na unidade de terapia intensiva foi de 15%, e 38% dos pacientes tiveram complicações no pós-operatório. A complicação mais comum foi infecção ou sepse (24,7%). Isquemia miocárdica foi diagnosticada em apenas 1,9%. Um total de 94 % dos pacientes que morreram após a cirurgia tinha co-morbidades associadas (3,4 ± 2,2). A principal causa de óbito foi disfunção de múltiplos órgãos (53%). CONCLUSÃO: Sepse é a causa predominante de morbidade em pacientes submetidos a cirurgias não cardíacas.     Gliclazide Prevents 5-FU-Induced Oral Mucositis by Reducing Oxidative Stress, Inflammation, and P-Selectin Adhesion Molecules

    Oral mucositis (OM) is one of the main side effects of the head and neck cancer treatment, particularly radiotherapy and/or chemotherapy. OM is characterized by ulcers, erythema, dysphagia, xerostomia, and increased susceptibility to opportunistic infections. In the perspective of finding pharmacological therapies to prevent inflammation and ulceration of OM, the investigation of the pleiotropic effect of commercial drugs is needed, among them gliclazide, an antidiabetic drug. This study aimed to evaluate the effect of gliclazide in an experimental OM model induced by 5-fluorouracil. Male hamsters were pre-treated with oral gliclazide (1, 5, or 10 mg/kg) for 10 days. Cheek pouch samples were subjected to histopathological and immunohistochemical analysis (COX2, iNOS, MMP-2, NFκB P65, GPx) and imunofluorescence (P-selectin). IL-1β and TNF-α levels, Myeloperoxidase activity (MPO) and malondialdehyde (MDA) levels were investigated by ultraviolet-visible spectroscopy analysis. NFκB NLS P50 protein levels were analyzed by western blotting. The group treated with gliclazide at a dose of 10 mg/kg showed presence of erythema, no evidence of erosion, and absence of mucosal ulceration with a score of 1 (1–2) (p &lt; 0.01). Histopathological data for the group treated with gliclazide 10 mg/kg showed re-epithelialization, discrete mononuclear inflammatory infiltrate and absence of hemorrhage, edema, ulcers and abscesses with a score of 1 (1–1) (p &lt; 0.01). Treatment with gliclazide 10 mg/kg reduced MPO activity (p &lt; 0.001), MDA levels (p &lt; 0.001) and NFκB NLS P50 (p &lt; 0.05) protein levels, resulting in low immunostaining to Cox-2, iNOS (p &lt; 0.05), NFκB P65 (p &lt; 0.05), and negative immunoreaction to MMP-2 (p &lt; 0.001). However, it appeared that for Gpx1, the staining was restored in the GLI 10-FUT group compared with 5FUT/saline (p &lt; 0.05). Immunofluorescence revealed decreased levels of P-selectin (p &lt; 0.001) after treatment with gliclazide 10 mg/kg (p &lt; 0.05). In summary, gliclazide accelerated mucosal recovery and reduced oxidative stress and inflammation in the 5-FU-induced OM in hamsters
