Основні вимоги до систем управління безпечністю харчової продукції за міжнародними стандартами: BRС, IFS, FSSC 22000, ISO 22000, Global GAP, SQF
The research analyzed the international standards basic requirements structure: BRС, IFS, FSSC 22000, ISO 22000, Global GAP, SQF for food safety management systems that realize principles of the HACCP concept. A comparative analysis of the international standards basic requirements for food safety management systems has identified that the requirements structure is identified as an interconnected set of rules, system-structured processes for the purposeful prevention of hazard risks at certain stages or in the food business. The main differences between the standards are in the modification of approaches to the implementation of the HACCP principles, the interpretation of the basic concepts and definitions, the detailed requirements, the application of their own programs of the processes and procedures identification that allow to ensure that the results correspond to the set task. Other differences in standards are at the level of system-elemental, structural, and functional components. Standards have the same goals, so their requirements are similar and have a certain level of identity, much of the difference is at the audit level, which uses different levels, system points and categories. The requirements of all standards are structured and differentiated into mandatory and recommended blocks, which enables companies to gradually implement changes. IFS, FSSC, ISO standards have high level structure (HLS), which is common basis for ISO standards that greatly simplifies the integration of several systems simultaneously in monitoring, action adjustments, audit processes. The GlobalGAP standard requirement system, unlike other considered ones, has a narrow target, which has provided a detailed description, for tracking, a set of indicators for quality and safety including genetically modified organisms and allergens, however, it is compatible with others. Taking into account the globalization of markets conditions in analyzing the international standards requirements, their correlation with global safety-related criteria such as: implementation of the HACCP principles, recognition of the standard GFSI, providing traceability principles and mechanisms and prerequisites for programs (PRP), validity of the certificate, coherence of processes in the creation of integrated systems with standards ISO 9001, ISO 14001, OHSAS 18000.У цьому дослідженні проаналізовано структуру базових вимог міжнародних стандартів: BRС, IFS, FSSC 22000, ISO 22000, Global GAP, SQF до систем управління безпечністю харчової продукції, що реалізують принципи концепції НАССР. Порівняльний аналіз базових вимог міжнародних стандартів на системи управління безпечністю харчової продукції визначив, що структура вимог ідентифікується, як взаємопов’язана сукупність правил, системно структурованих процесів для цілеспрямованого попередження ризиків небезпечності на певних стадіях або в галузях харчової діяльності. Основні відмінності стандартів полягають у модифікації підходів реалізації принципів НАССР, трактуванні основних понять і визначень, деталізації вимог, застосуванні власних програм ідентифікації процесів і процедур, які дозволяють забезпечувати відповідність результатів поставленому завданню. Інші відмінності стандартів знаходься на рівні системно-елементних, структурних, функціональних компонентів. Стандарти мають однакові цілі, тому їх вимоги є схожі і мають певний рівень ідентичності, при цьому значна частина відмінностей знаходиться на рівні аудиту, де застосовують різні рівні, системи балів і категорій. Вимоги усіх стандартів структуровані та диференційовані на блоки обов’язкових та рекомендованих, що дає можливість компаніям поступово впроваджувати зміни. Стандарти IFS, FSSC, ISO мають високорівневу структуру (HLS), яка є спільною основою для стандартів ISO, що значно спрощує інтегрування декількох систем водночас в процесах: моніторингу, коригуванні дій, аудиту. Система вимог стандарту GlobalGAP, на відміну від інших розглянутих, має вузьке цільове призначення, що забезпечило детальний опис, для відстеження, комплексу показників щодо якості та безпечності, включаючи генетично модифіковані організми і алергени, втім вона є сумісна з іншими. З огляду на умови глобалізації ринків в аналізі вимог міжнародних стандартів досліджено їх співвідношення за глобальними критеріями гарантування безпечності, такими як: реалізація принципів НАССР, визнання стандарту GFSI, забезпечення принципів та механізми простежуваності і програм-передумов (PRP), термін дії сертифікату, взаємоузгодженість процесів в створенні інтегрованих систем із стандартами ISO 9001, ISO 14001, OHSAS 18000
OPTYMALIZACJA PARAMETRÓW KONTROLOWANYCH PROCESÓW WYBUCHU PRZY UŻYCIU ZŁOŻONYCH METOD ANALITYCZNYCH
The optimal charge power and position necessary for forming the maximum possible size of the crater along with preservation of the integrity of the two nearby objects with the numerical quasiconformal mapping methods with the alternate parameterization of the of the medium and process character are established. Unambiguously the boundaries of crater, pressed and disturbed soil zones are identified and the corresponding field dynamic grid is built. Особливості заcтocування біологічно цінної рocлиннoї cирoвини Скoлiвщини у вигoтoвленнi cтрав галицькoї кухні
The paper considers the peculiarities of the non-traditional vegetable raw materials of Skolivshchyna in the production of Galician cuisine with health-improving properties. We studied the experience of scientists in improving the quality of food and increasing their biological value through the addition of functional plant materials. The authors of the article described the results of the improvement of three dishes of Ukrainian cuisine, in the recipes of which there are non-traditional vegetable raw materials of high nutritional and biological value. This is a characteristic feature of modern trends in the food industry, which supports the main trends of rational and healthy eating and allows you to adapt traditional Ukrainian dishes to the consumer preferences of today's residents. The publication substantiates the use of Agropyrum repens, Urtica dioica L. and Oxalis acetosella as raw components of updated dishes. The aim of the work was to improve the technology of cooking Galician cuisine with partial replacement of several traditional recipe components. The research was conducted on the basis of the Department of Hotel and Restaurant Business and Food Technologies of Ivan Franko Lviv National University. The raw materials used met the quality and safety requirements of current regulations.У роботі розглянули особливості зacтocувaння нетрадицiйнoї рocлиннoї cирoвини Скoлiвщини при виготовленні страв галицькoї кухні з оздоровчими властивостями. Вивчено досвід науковців щодо поліпшення показників якості страв та підвищення їхньої біологічної цінності через додавання функціональної рослинної сировини. В статті описано результати удосконалення трьох страв української кухні, в рецептури яких внесена нетрадиційна рослинна сировина високої харчової та біологічної цінності, що є характерною особливістю сучасних тенденцій розвитку раціонального та оздоровчого харчування у харчовій індустрії та дозволяє адаптувати традиційні українські страви до споживчих уподобань. У публікації обґрунтовано використання кропиви дводомної, пирію повзучого та щавлю заячого як нетрадиційних сировинних компонентів оновлених рецептур страв. Метою роботи стало удосконалення технології приготування страв галицької кухні з частковою заміною кількох традиційних рецептурних компонентів. Дослідження проводили на базі кафедри готельно-ресторанної справи та харчових технологій ЛНУ імені І. Франка. Використана сировина відповідала за якістю і безпечністю вимогам діючої нормативної документації
Методы комплексного анализа моделирования процесса вытестения нефти теплоносителем с учетом еффекта гиднорозрыва
На основі розроблених методів комплексного аналізу, створено підхід до розв’язання нелінійних крайових задач неізотермічної багатофазної фільтрації в елементах площового заводнення за умов збурення фільтраційної течії тріщинами гідравлічного розриву пласта. Побудовано числовий алгоритм для розрахунку гідродинамічної сітки, відшукання полів температури та насиченості, координат критичних точок, фільтраційних витрат як на нагнітальних, так і на експлуатаційних свердловинах, моментів часу прориву витісняючого реагенту та повного заводнення експлуатаційних свердловин, встановлення значень об’єму витісненого флюїду протягом визначеного часу та відповідного об’єму, що залишається у пласті в довільний момент часу, зокрема після припинення процесу витіснення, а також відшукання місцезнаходження ділянок «застою» нафти тощо. Проведено аналіз числових розрахунків перерозподілу відповідних фільтраційних характеристик та встановлено особливості протікання процесу витіснення нафти у випадках неізотермічної та ізотермічної фільтрації.Based on the complex analysis methods developed by the authors, an approach was developed for solving nonlinear boundary value problems of a non-isothermal multiphase filtration in the elements of flooding under conditions of the filtration flow perturbation by the hydraulic fracturing cracks. The numerical algorithm is constructed to calculate the hydrodynamic grid, the fields of temperature and saturation, the coordinates of critical points, the filtration rate of injection and production wells, the time of fracturing fluid penetration and complete flooding of wells. With this algorithm, we calculate the volume of fluid displaced during the specified amount of time and the corresponding volume remaining in the reservoir at any given time, in particular after stopping the injection, as well as determining the oil «stagnation» locations and the like. An analysis of numerical calculations of redistribution of the corresponding filtration characteristics was performed and the specific properties of the oil displacement process in cases of non-isothermal and isothermal filtrations were determined.На основе разработанных методов комплексного анализа, создан подход к решению нелинейных краевых задач неизотермической многофазной фильтрации в элементах площадного заводнения в условиях возмущения фильтрационного течения трещинами гидравлического разрыва пласта. Построен числовой алгоритм для расчета гидродинамической сетки, отыскания полей температуры и насыщенности, координат критических точек, фильтрационного расхода как на нагнетательных, так и на эксплуатационных скважинах, моментов времени прорыва вытесняющего реагента и полного заводнения эксплуатационных скважин, расчет значений объема вытесненного флюида на протяжении определенного времени и соответствующего объема, оставшегося в пласте в произвольный момент времени, в частности, после прекращения процесса вытеснения, а также отыскания местонахождения участков «застоя» нефти и тому подобное. Проведен анализ числовых расчетов перераспределения соответствующих фильтрационных характеристик и установлены особенности протекания процесса вытеснения нефти в случаях неизотермической и изотермической фильтрации

Математичне моделювання термодинамічних ефектів у присвердловинній зоні газового пласта
With the use of ideas of stepwise recording of process and medium characteristics, the methodology of mathematical modelling of filtration and mass-exchanging processes in a formation wellbore zone has been suggested. The methodology considers thermodynamic effects which appear as a result of gas throttling through micro fractures of shale rock when, on condition of quasistationary filtration flow, displacement process is described by specially modified Darcy's law with critical gradient.
Model problem of hydrodynamic effects investigation in a formation wellbore zone in case of gas filtration in a formation with low permeability has been formulated. On the example of radial gas flow the peculiarities of temperature field division algorithm building have been illustrated
ОДИН ПІДХІД ДО ПІДВИЩЕННЯ ТОЧНОСТІ КОНФОРМНИХ ВІДОБРАЖЕНЬ ОБЛАСТЕЙ КОМПЛЕКСНОГО ПОТЕНЦІАЛУ НА ФІЗИЧНІ ОБЛАСТІ
Запропоновано механізм підвищення точності конформних відображень у випадку застосування числових методів комплексного аналізу при дослідженні фізичних областей із порушеними умова ортогональності в околах «ключових» точок ділянок прикладання потенціалів. Відповідний алгоритм реалізований за умови задання форми досліджуваного двовимірного об’єкта за допомогою бісплайнової кривої. Остання, до початку розв’язання задачі, апроксимується чотирма функціями того ж типу, але ортогональними
між собою в околах «ключових» точок ділянок прикладання потенціалів. Хоч запропонована процедура вносить певні збурення у форму вихідної області, проте в цілому суттєво підвищує адекватність відповідної математичної постановки задачі. Наведено порівняльні таблиці, які демонструють переваги застосування такої процедури «фіктивної ортогоналізації»
ЛОКАЛІЗОВАНІ ХВИЛІ У СОЦІОКОМУНІКАТИВНИХ СЕРЕДОВИЩАХ
В статті запропоновано новий клас моделей поширення повідомлень у соціальних мережах. Зазначений клас моделей враховує специфічні механізми передачі повідомлень в ланцюжках мережевого графу. Авторами розроблено оригінальний алгоритм обчислення моментів часу передавання повідомлень по відповідному ланцюжку, який зводиться до розв’язання серії задач Коші для систем звичайних нелінійних диференціальних рівнянь. Застосовано спеціальну процедуру континуалізації, що дозволяє суттєво спростити результуючі системи рівнянь та замінити частину рівнянь рівнянням типу Буссінеска. Наявність солітонних розв’язківзгаданих рівнянь дає підстави розглядати соціокомунікаційні солітони як ефективний інструмент моделювання процесів передачі повідомлень у соціальних мережах та досліджувати їх впливи на їх поширення
