    Impact of calcium on salivary α-amylase activity, starch paste apparent viscosity and thickness perception

    Thickness perception of starch-thickened products during eating has been linked to starch viscosity and salivary amylase activity. Calcium is an essential cofactor for α-amylase and there is anecdotal evidence that adding extra calcium affects amylase activity in processes like mashing of beer. The aims of this paper were to (1) investigate the role of salivary calcium on α-amylase activity and (2) to measure the effect of calcium concentration on apparent viscosity and thickness perception when interacting with salivary α-amylase in starch-based samples. α-Amylase activity in saliva samples from 28 people was assessed using a typical starch pasting cycle (up to 95 °C). The activity of the enzyme (as measured by the change in starch apparent viscosity) was maintained by the presence of calcium, probably by protecting the enzyme from heat denaturation. Enhancement of α-amylase activity by calcium at 37 °C was also observed although to a smaller extent. Sensory analysis showed a general trend of decreased thickness perception in the presence of calcium, but the result was only significant for one pair of samples, suggesting a limited impact of calcium enhanced enzyme activity on perceived thickness

    Influence of pH on mechanical relaxations in high solids lm-pectin preparations

    The influence of pH on the mechanical relaxation of LM-pectin in the presence of co-solute has been investigated by means of differential scanning calorimetry, ζ-potential measurements and small deformation dynamic oscillation in shear. pH was found to affect the conformational properties of the polyelectrolyte altering its structural behaviour. Cooling scans in the vicinity of the glass transition region revealed a remarkable change in the viscoelastic functions as the polyelectrolyte rearranges from extended (neutral pH) to compact conformations (acidic pH). This conformational rearrangement was experimentally observed to result in early vitrification at neutral pH values where dissociation of galacturonic acid residues takes place. Time-temperature superposition of the mechanical shift factors and theoretical modeling utilizing WLF kinetics confirmed the accelerated kinetics of glass transition in the extended pectin conformation at neutral pH. Determination of the relaxation spectra of the samples using spectral analysis of the master curves revealed that the relaxation of macromolecules occurs within ~0.1 s regardless of the solvent pH

    Programmed emulsions for sodium reduction in emulsion based foods

    In this research a microstructure approach to reduce sodium levels in emulsion based foods is presented. If successful, this strategy will enable reduction of sodium without affecting consumer satisfaction with regard to salty taste. The microstructure approach comprised of entrapment of sodium in the internal aqueous phase of water-in-oil-in-water emulsions. These were designed to destabilise during oral processing when in contact with the salivary enzyme amylase in combination with the mechanical manipulation of the emulsion between the tongue and palate. Oral destabilisation was achieved through breakdown of the emulsion that was stabilised with a commercially modified octenyl succinic anhydride (OSA)-starch. Microstructure breakdown and salt release was evaluated utilising in vitro, in vivo and sensory methods. For control emulsions, stabilised with orally inert proteins, no loss of structure and no release of sodium from the internal aqueous phase was found. The OSA-starch microstructure breakdown took the initial form of oil droplet coalescence. It is hypothesised that during this coalescence process sodium from the internalised aqueous phase is partially released and is therefore available for perception. Indeed, programmed emulsions showed an enhancement in saltiness perception; a 23.7% reduction in sodium could be achieved without compromise in salty taste (p < 0.05; 120 consumers).     Rheological and electrical analysis in carbon nanofibre reinforced polypropylene composites

    Two different types of carbon nanofibers (CNF) were incorporated in the same polypropylene (PP) matrix by twin-screw extrusion. The electrical characterization of both CNFs / PP composites as a function of volume fraction show different electrical performance: conducting and non-conducting. The objective of this work is to study the rheological behaviour of both composites with the aim of relating it to the electrical behaviour. The results indicate that the rheological behaviours are different, suggesting that rheology differentiates the microstructural variations responsible for the electrical performance. Furthermore, the main rheological parameters were correlated to the electrical conductivity. The results show that G´/ G´´ and G´ are the most sensitive parameters when compared to the onset of electrical percolation. Finally, in spite of the intrinsic measuring differences between electrical and rheological analysis, the two calculated thresholds are very similar: ~ 0.5 for the rheological and ~ 0.4 for the electrical.Financial support for this work has been provided by Consellería de Educación e Ordenación Universitaria, Xunta de Galicia through grant CN2011/008

    Experimental study exploring the interaction of structural and leakage dynamics

    Strategies for managing leakage from water distribution systems require the ability to effectively evaluate such real losses through the understanding of the behavior of individual leaks, including their response to changes in pressure regime due to demand or management strategies. This paper presents the results from an innovative experimental investigation aimed at understanding the response of longitudinal slits in pressurized viscoelastic pipes, specifically considering the interaction between the structural and leakage dynamics. For the first time, leakage flow rate, pressure, leak area, and material strain were recorded simultaneously, providing new knowledge of the complex interaction of these factors. The paper shows that strain and area are directly related, hence it is possible to employ strain as a predictor of leak area, calculated using a calibrated viscoelastic model. Using such an approach, the leakage flow rates under a range of quasi-static pressures were accurately predicted and validated. Overall the paper demonstrates that the orifice equation, with a constant coefficient of discharge, is suitable for accurately estimating dynamic leakage flow rates from longitudinal slits, provided that the leak area is suitably incorporated

    Bidirectional Modulation of Alcohol-Associated Memory Reconsolidation through Manipulation of Adrenergic Signaling.

    Alcohol addiction is a problem of great societal concern, for which there is scope to improve current treatments. One potential new treatment for alcohol addiction is based on disrupting the reconsolidation of the maladaptive Pavlovian memories that can precipitate relapse to drug-seeking behavior. In alcohol self-administering rats, we investigated the effects of bidirectionally modulating adrenergic signaling on the strength of a Pavlovian cue-alcohol memory, using a behavioral procedure that isolates the specific contribution of one maladaptive Pavlovian memory to relapse, the acquisition of a new alcohol-seeking response for an alcohol-associated conditioned reinforcer. The β-adrenergic receptor antagonist propranolol, administered in conjunction with memory reactivation, persistently disrupted the memory that underlies the capacity of a previously alcohol-associated cue to act as a conditioned reinforcer. By contrast, enhancement of adrenergic signaling by administration of the adrenergic prodrug dipivefrin at reactivation increased the strength of the cue-alcohol memory and potentiated alcohol seeking. These data demonstrate the importance of adrenergic signaling in alcohol-associated memory reconsolidation, and suggest a pharmacological target for treatments aiming to prevent relapse through the disruption of maladaptive memories.This work was supported by a UK Medical Research Council Programme Grant (G1002231) to BJE and ALM and was conducted in the Behavioural and Clinical Neuroscience Institute (BCNI), an initiative jointly funded by the MRC and the Wellcome Trust.     APPLYING INDUCTIVE METHOD TO IMPROVE THE ABILITY IN USING SUFFIX –ING OF GRADE XI STUDENTS OF MAN 1 PALU

    Penelitian ini bertujuan untuk mendeskripsikan penerapan metode induktif pada siswa dalam menggunakan akhiran -ing. Populasi dari penelitian ini adalah siswa kelas XI MAN 1 PALU, kelompok eksperimen dan control masing-masing berjumlah 25 siswa. Selanjutnya metode yang digunakan dalam penelitian ini adalah penelitian desain kuasi-eksperimental-nonequivalent kelompok control dan diterapkan selama 8 kali pertemuan. Variabel penelitian ini adalah metode induktif dan kemampuan siswa dalam menggunakan akhiran -ing. Sampel penelitian ini adalah siswa kelas XI IPS 2 and IPS 3, dipilih melalui purposive sampling teknik. Berdasarkan hasil penelitian, peneliti membuktikan bahwa penerapan metode induktif telah mengatasi masalah siswa. Metode ini mempengaruhi perhatian, pemahaman, dan prestasi mereka. Ditemukan bahwa pertama, ada 18 siswa atau sekitar 72% yang termotivasi untuk belajar bahasa Inggris. Kedua, nilai  6.5 lebih tinggi daripada (2.012). Ini berarti bahwa Ho ditolak dan H1 diterima. Akhirnya, dapat disimpulkan bahwa penerapan metode induktif dapat mempengaruhi kemampuan siswa dalam menggunak anakhiran –ing kelas XI di  MAN 1 PALU

    International audienceThe aim of this entry is to describe the DSF as a transform plate boundary pointing out the rate of activedeformation, fault segmentation, and geometrical complexities as a control of earthquake ruptures. Thedistribution of large historical earthquakes from a revisited seismicity catalogue using detailedmacroseismic maps allows the correlation between the location of past earthquakes and fault segments.The recent results of paleoearthquake investigations (paleoseismic and archeoseismic) with a recurrenceinterval of large events and long-term slip rate are presented and discussed along with the identification ofseismic gaps along the fault. Finally, the implications for the seismic hazard assessment are also discussed

    Measurement of Atmospheric Neutrino Oscillations with the ANTARES Neutrino Telescope

    The data taken with the ANTARES neutrino telescope from 2007 to 2010, a total live time of 863 days, are used to measure the oscillation parameters of atmospheric neutrinos. Muon tracks are reconstructed with energies as low as 20 GeV. Neutrino oscillations will cause a suppression of vertical upgoing muon neutrinos of such energies crossing the Earth. The parameters determining the oscillation of atmospheric neutrinos are extracted by fitting the event rate as a function of the ratio of the estimated neutrino energy and reconstructed flight path through the Earth. Measurement contours of the oscillation parameters in a two-flavour approximation are derived. Assuming maximum mixing, a mass difference of Δm322=(3.1±0.9)103\Delta m_{32}^2=(3.1\pm 0.9)\cdot 10^{-3} eV2^2 is obtained, in good agreement with the world average value.Comment: 9 pages, 5 figure
