Following changes of total polyphenol content of Furmint samples during fermentation
A borban előforduló polifenoloknak fontos hatása van a bor érzékszervi tulajdonságaira (összehúzó hatás, kesernyésség, testesség, bársonyosság), így a borászati termékek fenolos érésének tanulmányozása sok szempontból figyelmet érdemelnek. A bor polifenoljainak jelentős része a szőlőből származik, és a bor feldolgozása, erjesztése és érlelése során különböző átalakulásokon megy keresztül. Mindamellett, hogy a bor fenolos érettsége érzékszervi szempontból fontos paraméter, mégis, a mustok polifenol-tartalmának az erjedés alatt bekövetkezett változásáról adatot nem találtunk. Jelenleg a piacon kedveltebbek a friss, könnyed fehér borok, amelyek alacsonyabb összpolifenol-tartalommal rendelkeznek, ezért figyelmünk az e kategóriába sorolható egyik fajtaborra irányult. Munkánk céljául tűztük ki, hogy megfigyeljük a magyar furmint minták összespolifenol-tartalmának változásait a 15 napos erjedés során, így eldönteni, hogy a fermentációs folyamat nyomon követhető-e egy viszonylag olcsó, egyszerű fotometriás méréssel. Adaptáltuk a Magyar Borkódexben található, Folin-Ciocalteu-index meghatározására szolgáló módszert, úgy, hogy azzal az összpolifenol-tartalmat számszerűen mérni tudjuk, valamint minta-és reagensigényét méretcsökkentéssel redukáltuk. Az összes mintában a kiinduló értékek az irodalom alapján várható 300–500 mg/l galluszsav-egyenérték (GAE) között mozogtak. Az 5-6. napon minden mintában hirtelen változást észleltünk az összpolifenol-tartalomban. A hátralévő időben az összpolifenol-tartalom átmeneti hul- lámzásokkal, de végig csökkenő tendenciát mutatott. A megfigyelt ingadozások háttere – a polifenol-összetétel változása, átrendeződések az erjedés folyamán – további vizsgálatokkal felderítendő. ----- Polyphenols occurring in wine have important contributions to the sensory properties (astringency, hardiness, bitterness) thus the study of phenolic maturity of oenological products deserve attention. A major portion of wine polyphenols are derived from the grape (others from the material of the wooden barrels). Nevertheless, data dealing with the polyphenol content of grape juice during fermentation were not found. Nowadays the white wines with fresh character, less astringency, and lower total polyphenol content (TPC) are more popular on the Hungarian market thus the study is focusing to the Furmint wine which represents this category. The aim of the study is to observe changes of TPC in Hungarian Furmint grape juices during the 15-day fermentation period and thus decide if the fermentation is follow-able via a simple and relatively low-cost spectrophotometric method. Furthermore the standard method of determination of Folin-Ciocalteu indices in white wine referred to in the Hungarian Code of Wine was adapted to perform quantitative measurements of total polyphenol content in gallic acid equivalents (GAE). The sample and reagent demand of the method is reduced with keeping the original concentrations and reaction conditions thus it may be applicable to large sample numbers. The initial TPC values were 300-500 mg GAE/L in the examined Furmint samples. A sudden decrease of TPC values was observed at the 5-6 day of fermentation, and after this a decreasing tendency was observable with temporary fluctuations. The background of these processes (changes and rearrangements of polyphenol composition during fermentation) needs to be further investigated by chromatographic methods

Extraction and Identification of Major Polyphenol Constituents of Northern Hungarian Horsemint (Mentha Longifolia L. (L.))
(Mentha longifolia (L.) L.) is a less studied species from the viewpoint of its nonvolatile constituents and this work is the first phytochemical screening of it in Hungary. The aim of the experiments is to elaborate an efficient extraction method of its polyphenolic antioxidants. Thirty-six accessions were sampled. Soxhlet and an ultrasonic extraction were applied, both with methanol (MeOH) and ethanol:water 7:3 (WA). The analysis of the extracts was carried out by HPLCDAD method. Rosmarinic acid, hesperidin, diosmin and cynaroside were observed to be common constituents of all samples. Other major constituents were observed in all of the chromatograms at ca. tR=13.5 min. and tR=19.7 min (unknown A and B). Their identification needs further examination. Regarding antioxidant activity, WA extraction was more efficient than MeOH Soxhlet extraction

1) Behatóan tanulmányoztuk a Pd(0)-katalizálta szén - szén(nitrogén) kötés kialakítását az O- és N- hetrociklusok körében. 2) A csontritkulás ellen hatásos ipriflavon analógjainak előállítása során tanulmányoztuk a flavanonok gyűrűszűkülési reakciójának korlátait. 3) Sikeresen folytattuk a célra-orientált kutatásunkat egy új GP inhibítor hatású antidiabetikum kifejlesztésére. 4) Tanulmányoztuk 1,4-dioxánvázas májvédő hatású vegyületek enantioszelektív szintézisét. 5) Candida albicans ellen hatásos kis toxicitású prenilezett flavanon származékok szintézisét dolgoztuk ki. 6) Elsőként ismertük fel a szilárd fázisban mért, a röntgen adatok alapján kvantumkémiai úton számított CD összehasonlításán alapuló abszolút konfiguráció meghatározás lehetőségét . 7) Potenciálisan dopaminerg hatású új apomorfin származék szintézisét dolgoztuk ki. 8) Biológiailag aktív szénhidrát származékok szintézisét megoldva számottevően szélesítettük a szintetikus ismereteinket e területen 9) A fenti kutatásainkkal fiatal kutatók ( 3fő/post.doc., 8 fő/PhD hallgató, 3 fő/ MSc és 3 fő/BSc fokozattal rendelkező kémikus) képzését segítettük elő és a tanszék infrasturkuráját is fejlesztettük a fentebb felsoroltak kapcsán . | 1) Pd(0)-catalyzed C-C(N) formation has been studied intensively in the field of O-and N- heterocycles. 2) In the course of the synthesis iprifavone analogues of potential antiosteoporosis activity, the scope and limitation of the ring-contraction of flavanones have been investigated in detail. 3) Our target-oriented research has been successfully continued for the development of a new antidiabetic agent possessing GP inhibitor activity. 4) The enantioselective synthesis of 1,4 benzodioxane derivatives of liver protecting activity has been studied. 5) The synthesis of prenylated flavanone derivatives possessing low toxicity and high activity against Candida albicans has been achieved. 6) We have firstly recognized that the absolute configuration of chiral molecules could be determined safely by the comparison of their CDs measured in solid state and calculated by a TDDFT CD methodology using their X-ray coordinates as input for the calculation. 7) The synthesis of new apomorfin derivatives of improved binding affinity to dopamine receptors has been achieved. 8) Our synthetic experiences in the field of carbohydrate chemistry was significantly improved by the synthesis of a series of carbohyrate derivatives of biological activity. 9) The education of young research fellows (3 post.doc., 8 PhD student , 3 MSc and 3 BSc chemist) was supported and the infrastructure of our institute has also been improved by the above listed researches

Chemotypes and Their Stability in <i>Mentha longifolia</i> (L.) L.—A Comprehensive Study of Five Accessions
Mentha longifolia (L.) L. is the most widespread wild-growing mint species found, and its chemical composition is extremely diverse. We studied the essential oil (EO) yield, composition, and chemotaxonomy of five, northern Hungarian accessions of the species in a cultivation experiment covering two vegetation years at two parallel sites. The long-term goal is to establish the cultivation of this stress-tolerant species in Hungary as a source of flavoring and preservative agents for commercial use. Essential oil yield (1–2 mL/100 g) was observed to be dependent on both the accession and the year. Accession HV1 is assumed to be a new, presumably rare chemotype containing carvacrol (19.28–20.56%), 1,8-cineole (14.87–17.45%), thymol (13.36–13.90%), carvacryl acetate (8.81–10.40%), and para-cymene (7.24–8.01%). Only minor fluctuations occurred in concentrations of these constituents due to habitats and years. A radical change in essential oil composition was observed in accession HV2, as one batch was based on thymol (19.79%) and 1,8-cineole (14.93%), while the others were rich in dihydrocarvone isomers (up to 69%). Although this needs further investigation, it does explain the coexistence of limonene-oxo and γ-terpinene pathways in horsemint. According to the literature, the pathway leading to thymol isomers and/or esters may be rare in the entire Mentha genus. We also demonstrated that known chemotypes of horsemint may differ in variability of their EO composition. Our results also led to the conclusion that any declaration on chemotype needs detailed examination and is not realistic on the basis of a single sample. Assumptions were made about the potential areas of utilization: beside fragrance and flavoring uses of essential oils free from pulegone and menthofurane, thymol-based ones may be used as antioxidative and anti-spoilage agents
