The contribution of up-cycled food waste to a balanced diet of low-income households
This paper focuses on the contribution of an upcycling food organization to a balanced diet,
which rescues and redistributes fresh or freshly cooked food to low-income households. To determine
the nutritional balance of food hampers provided by our case study organization, according to the
Portuguese food guidelines, we have weighed all items of food hampers in three weighing rounds
over a period of four months. The results suggest that upcycled foods can contribute to a more
balanced diet in terms of “Potato, Cereal and Cereal Products”, “Vegetables”, “Meat, Fish, Seafood
and Eggs” and “Fruits”, both according to the Portuguese Food Wheel and compared to that of the
general Portuguese population. The novelty of this study is the evaluation of the contribution to the
balanced diet of the population in a vulnerable situation, of perishable foods such as freshly cooked,
in traditional restaurants, cafes, bakeries, and hotels, or is naturally fresh (fruit and vegetables food

Proposal of a tangible user interface to increase accessibility in geological exhibitions and the experience of museums
Currently, the museums use different interactive technologies to communicate their exhibitions; however, it turns out that in most cases, information is not accessible to all members of the public. In this paper, we present the design of a tangible user interface to enhance accessibility in geological exhibitions, specifically for the case of visitors with visual impairments, and we also present the study’s results about how to improve the experience of those who visit museums, using this tangible media technology as an exhibitor for samples. Estudo dos vitrais do Mosteiro de Santa Maria da Vitória (Batalha): Caracterização do vidro, decoração e morfologias de corrosão
Dissertação apresentada na Faculdade de Ciências e Tecnologias da Universidade Nova de Lisboa, para obtenção do grão de Mestre em Conservação e Restauro Área de especialização: VitralNeste trabalho foi realizado o estudo dos vitrais da nave lateral norte, Capela-Mor e Capela do Fundador do Mosteiro de Santa Maria da Vitória, na Batalha. Teve por objectivo estabelecer os diferentes períodos de produção e envolveu a caracterização material dos vidros, a análise das técnicas
decorativas utilizadas e também a identificação das diferentes morfologias de corrosão na superfície do vidro. Foram analisadas amostras de fragmentos originais do século XV e XVI e de fragmentos
introduzidos posteriormente ao século XVI e até ao século XX, em diferentes campanhas de restauro.
A caracterização das diferentes amostras de fragmentos de vidros foi realizada através de técnicas de análise não destrutivas. A identificação da composição dos vidros foi efectuada por microespectrometria de fluorescência de raios-X por dispersão em energia (μ-EDXRF), que foi complementada com a análise da distribuição dos elementos na matriz do vidro e nas superfícies com
amarelo de prata e grisalha, através de espectrometria de raios-X induzidos por feixe de iões (PIXE).
Finalmente, a caracterização dos produtos de corrosão foi efectuada por microscopia óptica e espectrometria Raman.
A combinação destas técnicas permitiu o conhecimento da composição dos vidros, com os óxidos SiO2, CaO, K2O e/ou Na2O como componentes maioritários, e da grisalha, em cuja constituição foram identificados como maioritários os elementos Fe, Cu e Pb. A presença e distribuição em profundidade
da prata e do cobre utilizados na produção do amarelo de prata foram também estudadas. A
espectrofotometria de absorção óptica no UV-Vis permitiu o conhecimento dos elementos e dos estados de oxidação e coordenação dos iões metálicos que são responsáveis pela cor em alguns vidros coloridos, sendo os mais comuns, o ferro, o manganês, o cobre e o cobalto.
Os vidros estudados podem ser divididos em dois grupos, de acordo com a sua composição: vidros potássicos, originais, produzidos nos séculos XV e XVI, e vidros sódicos, introduzidos nos restauros posteriores, nomeadamente no século XX. A principal diferença observada na composição das
grisalhas é o teor de PbO: cerca de 5% da massa nas grisalhas originais e teores superiores a 20% da massa nas grisalhas produzidas no século XX.
Simultaneamente, foram identificadas as morfologias de corrosão existentes, através da microscopia óptica e da micro espectrometria Raman, tendo-se identificado a existência de camadas iridescentes, fracturadas e ainda a presença de carbonato de Ca. Estes resultados foram relacionados
com ensaios de corrosão acelerados efectuados em vidros potassicos, por imersão em solução aquosa de amostras de vidros potássicos, produzidos com composição semelhante à do vidro do século XV
Designing an interactive exhibitor for assisting blind and visually impaired visitors in tactile exploration of original museum pieces
Blind and visually impaired visitors experience a lot of constraints when visiting museums exhibitions, giving the ocular centricity of these institutions, the lack of cognitive, physical and sensorial access to exhibits or replicas, increased by the inaccessibility to use the digital media technologies designed to provide different experiences, among other constraints.
This paper aims to present the design and implementation of an exhibitor to communicate original museum samples to blind and visually impaired patrons, without the need to be replicated, that interactively "tell stories about their lives" whenever picked up.
Tests performed with 13 partially sighted and blind participants at the main exhibition museum space, demonstrated very positive evaluations regarding pragmatic and hedonic qualities of the interaction, a positive capacity to mentally conceptualize the exhibits according to the audio descriptions, and how to enhance the experience of using more exhibitors like this one during a future visit to the museum.info:eu-repo/semantics/publishedVersio
Wise stones: an interactive accessible circuit designed to enhance the experiences of visitors with disabilities
Museums, now more than ever before, are committed to the inclusion of all
members of society, aiming to promote similar visitor experiences for their
various patrons. With the challenging mission of exhibiting and communicating
humanity's common heritage, while also preserving it, the creation of an
inclusive museum experience is a complex task with multiple dimensions.
This article aims to contribute to the field of accessibility in museums by
discussing the three main stages of designing the Wise Stones Accessible Circuit,
a five-year project which aimed to enhance access at the MM Gerdau Museum
in Brazil by creating an interactive tactile exhibit displaying original artifacts from
the museum's collection.
A participatory methodology was adopted throughout the project in which 37
professionals from multidisciplinary fields at various institutions, and 151
visitors, who performed a formal evaluation of the digital interactives, were
involved. Conclusions and implications of designing accessible digital
interactives, with feedback from as wide range a of visitors as possible, are
presented. Although the project's main goal was to enhance the museum
experience for persons with disabilities, it ended up benefitting all visitors.info:eu-repo/semantics/publishedVersio
Efficiency and capital structure in Portuguese SMEs
This paper aims to analyse the bi-directional relationship between technical efficiency, as a measure of companies’ performance, and capital structure, under the agency cost theory as well as the pecking order and trade-off theory, to explain the capital structure decisions. The technical efficiency was estimated by the DEA method and corrected by using a suitable bootstrap to obtain statistical inferences. To test the agency cost hypothesis, asymmetric information hypothesis, risk-efficiency hypothesis and franchise value hypothesis (under pecking order and trade off theories framework), two models were applied using some determinants of capital structure such as size, profitability, tangibility, liquidity as control and explanatory variables through a truncated regression with bootstrapping. From an initial sample of 1024 small and medium sized companies from the interior of Portugal, for the period 2006–2009, a subsample of 210 SMEs from secondary and tertiary
sectors was selected. The results suggest that medium sized companies have higher average bias-corrected efficiency than small companies; that short-term leverage is positively related to efficiency and that the companies in the sample follow pecking order theory.info:eu-repo/semantics/publishedVersio

Leveduras isoladas de produtos frutícolas: Capacidade fermentativa e estudos sobre a H+-ATPase da membrana plasmática
Dissertação apresentada para obtenção do Grau de Doutor em Biologia(especialidade Microbiologia), pela Universidade Nova de Lisboa,Faculdade de Ciências e TecnologiaSão muitas as leveduras capazes de fermentar glucose produzindo etanol e dióxido de
carbono. Contudo, Saccharomyces cerevisiae destaca-se pela velocidade com que fermenta
e pela concentração de etanol que pode O terceiro capítulo incide sobre a avaliação global da capacidade fermentativa de sete
leveduras seleccionadas, através da determinação de dois parâmetros: a concentração
máxima de etanol produzido e as velocidades específicas de fermentação e de respiração.
Tendo em vista comparar de forma expedita leveduras com capacidades fermentativas
marcadamente diferentes, foi desenvolvido um método com base na perda da viabilidade
celular em função da concentração de etanol adicionado ao meio de cultura e temperatura
de incubação. Os ensaios foram realizados em duas condições: 11% v/v etanol/30 ºC e 20%
v/v etanol/16 ºC. O capítulo termina com a determinação da actividade da ATPase da
membrana plasmática, essencial para a célula responder com eficácia à agressão pelo
etanol, das espécies de levedura isoladas. Nestes estudos foram utilizados como termo de
comparação a bem estudada S. cerevisiae e a sua espécie muito próxima S. bayanus.
O quarto capítulo é dedicado à caracterização da H+-ATPase da membrana plasmática das
espécies de levedura seleccionadas. Foi determinado o pH óptimo para a actividade da H+-
ATPase, assim como avaliada a influência do etanol presente no meio de cultura nessa
actividade. Com base em regiões conservadas do gene PMA1 da H+-ATPase da membrana
plasmática de leveduras cujas sequências genómicas já estão disponíveis publicamente,
procedeu-se à pesquisa do gene PMA1 nas espécies não-Saccharomyces seleccionadas
neste estudo. Os fragmentos amplificados por PCR foram sequenciados e as sequências
obtidas foram analisadas com dois objectivos: a) tentar compreender se as diferenças
detectadas se poderão relacionar com as diferentes características fenotípicas observadas;
e b) avaliar a possibilidade de inferir sobre relações filogenéticas entre espécies.
A dissertação termina com considerações globais sobre os resultados obtidos e
apresentação de perspectivas para trabalho futuro no tópico abordado no presente trabalho.atingir. Algumas estirpes de S. cerevisiae chegam a produzir cerca de 20% v/v etanol, enquanto a maioria das outras leveduras fermentativas deixa de crescer e/ou de fermentar a partir de 6% v/v. Apesar do crescente conhecimento acerca dos alvos celulares associados à toxicidade do etanol, os mecanismos subjacentes aos desempenhos das diferentes leveduras ainda estão longe de ser totalmente conhecidos ou esclarecidos.
O objectivo principal deste projecto foi o de identificar mecanismos-chave que possam
conduzir a um aumento da eficiência na produção de etanol por leveduras não-
Saccharomyces isoladas de fruta comum na alimentação humana (ananás, banana, maçã,
manga, papaia, pêssego e uva). Foram objectivos específicos do trabalho realizado: (i)
desenvolver um método de hibridação in situ (FISH) para identificação rápida e directa de
leveduras que ocorrem em produtos frutícolas; (ii) avaliar a capacidade fermentativa global de leveduras não-Saccharomyces isoladas de produtos frutícolas; (iii) estudar a influência do
etanol na H+-ATPase da membrana plasmática em leveduras não-Saccharomyces; e (iv)
caracterizar o gene que codifica a H+-ATPase da membrana plasmática em leveduras não-
Saccharomyces.
Depois de uma introdução geral aos vários aspectos da investigação realizada, no segundo capítulo são apresentados os resultados do isolamento de leveduras e sua identificação.
Descreve-se o processo de isolamento de 20 estirpes (representantes de sete espécies
pertencendo a seis géneros diferentes) a partir do material escolhido, identificação morfofisiológica e bioquímica das leveduras isoladas e a identificação molecular, através da sequenciação da região D1/D2 do gene do RNA ribossómico da subunidade 26S, das leveduras fermentativas. Foram desenvolvidas, e aplicadas, sondas oligonucleotídicas específicas para a detecção directa e identificação, através do método de hibridação in situ(FISH), de quatro espécies de leveduras que ocorreram com maior frequência na fruta amostrada: Candida quercitrusa, C. pseudointermedia, Pichia guilliermondii e Hanseniaspora uvarum
Analysis of oleotourism and museology: bibliometric analysis and systematic literature review
Traditional Olive Grove represents about 80% of the awards in the National Olive Oil Competition of Portugal, substantiating the importance and relevance of the sector. The term "oleotourism" is considered as a movement that increasingly aims to know all the features, qualities, and differences in olive oil production. As a dynamic movement, this term uses museology to present and promote its products to the public and tourism. From museology articles, it wasunderstood that the museums should not be limited to the institutionally conceived idea, instead of that, it should be understood as a global science of a distinct, which encompasses the universe and society. Subsequently, the relevance of conducting qualitative research arises, studying the literature on oleotourism associated with museology and analysing their contributions and effects on tourism. After reviewing the existing databases, the SCOPUS database was selected to collect and analyse the bibliographic material. Hence, as the purpose, this study aimed to highlight the scientific publications with the most significant impact of the terms "oleotourism" and "museology", understanding their research trends. In the systematisation process, we considered the final 100 articles with the most citations published in journals between 2005 and 2021. The articles analysed were reviewed using the Preferred Reporting Items for Systematic Reviews and Meta-Analyses for the systematic literature review. For the bibliometric analysis, the Bibliometrix R program was used. As a result, from the bibliometric analysis, it was found that, as research trends, the keywords "olive oil tourism" and "museums" were highlighted, with Italy, Spain and the United Kingdom as the countries with the most citations. In addition, the journals "Sustainability", "Museum Anthropology", and "Museum Management and Curation" in the publications on these themes are highlighted. In comparison, through the systematic literature review, it was understood that the research trends focused on: the conceptualisation of oleotourism; the influence of museology on tourism; and the importance of museum education. Despite the importance of this research in helping future studies, there are some limitations on their analysis, which will be recommended to use specific databases for the themes and increase the number of articles considered.info:eu-repo/semantics/publishedVersio
