    Turkey Jerky as a Potantial Meat Snack

    The research was aimed to obtain a product with high nutritional value and long shelf life called as Turkey Jerky. It was produced with turkey breast meats which marinated with 7 different spices (Salvia rosmarinus (R), Thymus vulgaris (T), Pimenta racemosa (P), Origanum majorona (M), mixed spicy (MX) and control group (C)), vinegar, olive oil, soy sauce and liquid smoke. At the end of the marination, turkey breast meats were dried in the drying oven and kept in room conditions for 30 days after vacuum packaging. Microbiological, chemical, and sensory analyses were performed for treatments on the 0, 15 and 30 days. For turkey meat, the moisture, pH, ash, water activity (aw), fat and protein contents were determined as 72.34plusmn%253B 1.21, 5.83 plusmn%253B 0.02, 1.18 plusmn%253B 0.01, 0.972 plusmn%253B 0.001, 1.05 plusmn%253B 0.12 and 27.30 plusmn%253B 0.24 %25, respectively. There were significant differences in treatments all chemical properties than control samples. Salvia rosmarinus and Pimenta racemosa samples had the highest protein and ash content%253B Origanum majorona samples had the highest fat content. After marination, both moisture content and water activity values for all samples had decreased significantly. Otherwise, pH values had increased slightly. TBA value was found in the least control group for the beginning of the storage and the treatments had increasing effect on TBAs values. Origanum majorona samples and Pimenta racemosa samples had lower TBA values than other treatments. However, control and Origanum majorona samples have highest the differences between 0 and 30 days for TBA values. Besides, mix spicy treatment had the lowest differences for 30 days. According to the microbiaological analyses, Origanum majorona samples were the most safety treatment. For all samples, it has been observed that the microbial load increases slightly during the maintenance period. Sensory evaluation also dedicted that Origanum majorona samples had the best sensorial properties and general accaptibility. As a result, while the increases in microbial load was not observed much compared to a product that is vacuum packed and stored in room conditions, the chemical contents of the products were generally preserved. Considering these results, the turkey jerky is an alternative healthy snack

    Retrospective evaluation of malignant melanoma patients: A single-center experience

    Introduction: Melanoma is a cancer arising from the malignant transformation of melanocytes. It is mostly seen in the skin, eyes, mucosal membranes, and meninges. Melanoma is one of the fastest rising of all cancers in the world.Methods: We retrospectively examined the medical records of adult patients who were diagnosed with melanoma between January 2005 and December 2013 according to the Hospital-Based Cancer Registry (HBCR) of Hacettepe University Oncology Hospital.Results: A total of 338 patients [193 (57.1%) men and 145 (42.9%) women] were included in the study. The male to female ratio was 1.3/1. The mean age of patients was 55.2±15.2 years (minimum-maximum: 16-87 years). The rate of male patients was higher in patients with cutaneous and uveal melanoma (respectively, 56.8% and 58.6%), whereas the rate of female patients was higher in patients with mucosal melanoma (female: 55.6% and male: 44.4%; respectively, p=0.746 and p=0.518). The median follow-up time was estimated to be 27.7 months (1-103 months). During follow-up period, 127 (37.6%) patients died, and 16 (4.7%) patients were lost to follow-up. The median overall survival time was 76.3 months. The 5-year survival rate was 53%. When all patients were evaluated according to melanoma subtypes, patients with melanoma of unknown primary origin had the lowest median survival time (6.4 months).Conclusions: It is necessary to increase the awareness of people about melanoma and to make physicians more sensitive about skin examination in order to detect cutaneous melanomas in the early stages

    Do MEFV mutations influence arterial stiffness in FMF patients?

    Background: Pulse wave velocity (PWV) is the most used technique to evaluate the arterial elasticity, which is an early indicator of atherosclerosis. We aimed to evaluate if MEFV Mutations influence arterial stiffness in patients with Familial Mediterranean fever (FMF) Methods: 70 patients diagnosed with FMF and 50 age-and sex-matched controls were included in the study. Genetic analysis of the patients was performed. After the measurement of PWV; the presence of AS was determined. Results: Mean PWV value and arterial stiffness frequency of FMF patients were significantly higher than the control group (p <0.001, p <0.001) respectively. In addition, FMF patients with M694Vmutations had higher PWV values and arterial stiffness frequency than those with other mutations. (p=0.045), (p=0.001). There were no differences within all genetic mutation types in terms of arterial stiffness frequency.Conclusions: As a result, due to subclinical inflammation in FMF patients, they have risk for cardiovascular complications. These patients especially those with M694Vmutations have to be followed more closely because of increased cardiovascular risk and PWV measurements may be a good tool to detect early development of atherosclerosis.

    Evidence of association of vitamin D receptor Apa I gene polymorphism with bone mineral density in postmenopausal women with osteoporosis

    The vitamin D receptor (VDR) was the firstcandidate gene to be studied in relation to osteoporosis, andmost attention has focused on polymorphisms situated nearthe 3' flank of VDR. The aim of this study was toinvestigate the association about VDR gene Apa I polymorphismwith bone mineral density (BMD) in postmenopausalwomen with osteoporosis. We studied a total of 136postmenopausal women with a mean age of 56.36±10.29 years. Among them, a total of 75 had osteoporosis,37 had osteopenia, and 24 had normal BMD. Venous bloodsamples were obtained for evaluation of bone metabolismand genotyping. The VDR Apa I genotype was determinedby polymerase chain reaction-restriction fragment lengthpolymorphism. BMDs at the lumbar spine and hip weremeasured by dual-energy X-ray absorptiometry. Postmenopausalwomen with aa genotype had significantly lowerBMD values (grams per centimeter square) at lumbar spinescompared to persons with AA genotype. Also, postmenopausalwomen with AA genotype had significantly higherserum Ca level than the subjects with aa genotype. Inconclusion, our result may indicate that VDR Apa I genepolymorphism may be responsible for a important part ofthe heritable component of lumbar spine BMD in postmenopausalwomen, possibly related to impaired calciumabsorption from the bowel

    Altitudinal Effects on Innate Immune Response of a Subterranean Rodent.

Zoological science. 2020;37(1):31-41.Immune defense is costly to maintain and deploy, and the optimal investment into immune defense depends on risk of infection. Altitude is a natural environmental factor that is predicted to affect parasite abundance, with lower parasite abundance predicted at higher altitudes due to stronger environmental stressors, which reduce parasite transmission. Using high and low altitude populations of the Turkish blind mole-rat (TBMR) Nannospalax xanthodon, we tested for effects of altitude on constitutive innate immune defense. Field studies were performed with 32 wild animals in 2017 and 2018 from two low- and one high-altitude localities in the Central Taurus Mountains, at respective altitudes of 1010 m, 1115 m, and 2900 m above sea level. We first compared innate standing immune defense as measured by the bacteria-killing ability of blood serum. We then measured corticosterone stress hormone levels, as stressful conditions may affect immune response. Finally, we compared prevalence and intensity of gastrointestinal parasites of field-captured TBMR. We found that the bacteria-killing ability of serum is greater in the mole-rat samples from high altitude. There was no significant difference in stress (corticosterone) levels between altitude categories. Coccidian prevalence and abundance were significantly higher in 2017 than 2018 samples, but there was no significant difference in prevalence, abundance, or intensity between altitudes, or between sexes. Small sample sizes may have reduced power to detect true differences; nevertheless, this study provides support that greater standing innate immunity in high altitude animals may reflect greater investment into constitutive defense

    Investigation of the expression levels of CPEB4, APC, TRIP13, EIF2S3, EIF4A1, IFNg, PIK3CA and CTNNB1 genes in different stage colorectal tumors

    Background/aim: The aim of the study is to assess expression levels of CPEB4, APC, TRIP13, EIF2S3, EIF4A1, IFNg, PIK3CA and CTNNB1 genes in tumors and peripheral bloods of colorectal cancer patients in stages I–IV. Materials and methods: The mRNA levels of the genes were determined in tumor tissues and peripheral blood samples of 45 colorectal cancer patients and colon tissues and peripheral blood samples of 5 healthy individuals. Real-time polymerase chain reaction method was used for the analysis. Results: The mRNA level of the CPEB4 gene was significantly downregulated in colorectal tumor tissues and was upregulated in the peripheral blood of colorectal cancer patients relative to the controls (P < 0.05). APC mRNA level was significantly downregulated in tissues and upregulated in the peripheral blood (P < 0.05). TRIP13 mRNA level was upregulated in peripheral blood and also significantly upregulated in colorectal tumor tissues (P < 0.05). EIF2S3 mRNA level was upregulated in tissues and also significantly upregulated in peripheral blood (P < 0.05). PIK3CA mRNA level was downregulated in tissues and upregulated in peripheral blood. EIF4A1 mRNA level was downregulated in tissues and significantly upregulated in peripheral blood (P < 0.05). CTNNB1 mRNA level was downregulated in tissues and upregulated in peripheral blood. IFNg mRNA level was upregulated in both colorectal cancer tumor tissues and peripheral blood. Conclusion: TRIP13 and CPEB4 mRNA up regulation in the peripheral blood of patients with colorectal cancer may be a potential target for early stage diagnosis. In addition to this evaluation, although there is not much study on EIF2S3 and EIF4A1 mRNA changes in cases with colorectal cancer, upregulation in peripheral blood draws attention in our study. These data will shed light on the new comprehensive studies
