    Foot dermatitis and productive traits in broiler chickens kept with different stocking densities, litter types and light regimen

    The purpose of the research was to study the effects of high and low stocking density of broiler chickens, different types of litter and the adoption of short and long lighting regimen on broiler welfare through the evaluation of their productivity and incidence of foot pad dermatitis. 2,400 male Ross 508 were divided into 8 groups of four replicates each and reared in 32 pens according to a 3 factors experimental design of two levels each: low (LD) or high (HD) stocking density (11 and 14 birds/m2 for LD and HD respectively), chopped straw (CS) or wood shaving (WS) litters and short (SL) or long (LL) light regimens (16 h light and 8 h dark or 23 h light and 1 h dark respectively for SL and LL). Broiler growth rate and feed efficiency were positively influenced by a stocking density lower than 30 kg of live weight per m2. The adoption of a short light regimen reduced feed intake and improved feed conversion rate without modifying body live weight. Chickens reared on wood shaving litter showed a lower incidence of foot pad dermatitis

    Egg quality traits of laying hens reared in organic and conventional systems.

    This study aims to compare the physico-chemical properties of eggs (weight, eggshell breakingstrength, Haugh index, yolk colour, lipid, cholesterol, protein, ash and dry matter) laid either by hens reared accordingto the organic method or by caged hens kept in conventional system. More than 1,400 eggs have been analysedat the beginning, in the middle and at the end of the laying cycle in organic and conventional farms. The eggobtained from the organic system were lighter (64.4 vs 66.2 g) being yolk, albumen and eggshell weights statisticallylower in comparison with those produced in conventional system. The yolk/albumen ratio resulted lower inthe organic eggs (0.38 vs 0.39). The percentage of eggshell was not affected by the hen rearing system while theeggshell strength resulted higher in the eggs produced in the conventional system (3.265 vs 3.135 kg). The organicyolks were paler than the conventional ones. Organic eggs showed significantly higher contents of protein (17.1%vs 16.7%) and cholesterol (1.26% vs 1.21%)

    The Influence of the Season and Market Class of Broiler Chickens on Breast Meat Quality Traits

    Abstract The influence of the season and market class of broiler chickens on breast meat quality traits was determined on a total of 18 flocks reared and processed under commercial conditions. According to the Italian poultry production system the following classes of birds were considered: light size (1.2 kg of carcass weight; n = 90) and medium size (1.8 kg of carcass weight; n = 90), represented by females slaughtered at 40 and 52 d old, respectively, whereas heavy size were 57-d-old male broilers (2.4 kg of carcass weight; n = 90). After slaughter, 15 carcasses per flock (n = 270) were randomly collected during winter (n = 135) and summer (n = 135) seasons and used at 24 h postmortem to determine breast (pectoralis major) meat color (lightness, redness, and yellowness), pH, drip and cook loss, as well as Allo-Kramer (AK) shear values. Furthermore, pectoralis minor muscles were used to determine lipid, protein, moisture, and ash content. Finally, because the flocks included white- and yellow-skinned broilers, the color of the carcass skin was measured to assess the relationship between skin and raw breast meat color. With regard to the season, breast meat from birds slaughtered during summer exhibited a paler and less red color, lower pH, higher drip and cook losses, lower AK-shear, and a higher content of moisture and a lower content of protein and ash. In respect to medium and heavy birds, light broilers produced breast meat with higher values of redness, lower pH and cook loss, higher AK-shear values, and a higher content of moisture and ash. Finally, a positive correlation (r = +0.92; P ≤ 0.001) between skin and breast meat yellowness was found. These results indicate that during summer, broiler breast meat undergoes a depression of its functionality and quality. Moreover, the market class of birds also determined some differences in breast meat quality attributes

    Modified atmosphere packaging of hen table eggs: Effects on functional properties of albumen

    The aim of this study was to compare technological properties (gel hardness, foam drainage, and meringue crispness) of albumen of nonpacked table eggs (control) with those of eggs packed in high-barrier plastic pouches with 3 modified atmosphere packaging (MAP) conditions (air, 100% N2, and 100% CO2) during 28 d of storage at 25°C. The values of gel hardness for the control sample showed an increasing trend, demonstrating the highest values throughout the experiment duration compared with the other samples. This behavior was probably attributable to the pH increase detected only for this sample during storage (from 8.82 ± 0.06 for fresh egg to 9.96 ± 0.06 at the end of the experiment). Air and N2 samples showed constant and similar hardness values during storage. The hardness of coagulated albumen showed a strict correlation with raw albumen pH (r2 = 0.929; P < 0.001). Other than reducing albumen pH during storage, MAP with CO2 caused the formation of a soft and puffy coagulum with very low hardness, reaching the lowest value of 1.26 ± 0.38 N after 4 d of storage, that slowly increased to 2.11 ± 0.49 N at the end of the experiment. Foam stability decreased during storage for all samples, but CO2 eggs showed a significantly (P < 0.05) higher foam stability than fresh eggs until 15 d, reaching values similar to those of the other samples only at the end of the storage time. Packing eggs in CO2 promoted an improvement of meringue crispness. The application of this atmosphere could ameliorate the quality characteristics of albumen-based food products. Commercially, CO2 MAP could provide an albumen-based ingredient tailored to maximize the characteristics needed in the final product (e.g., fresh shell eggs special for meringue preparation) that could give an added value to the product

    Fragmentation cross sections of Fe^{26+}, Si^{14+} and C^{6+} ions of 0.3-10 A GeV on CR39, polyethylene and aluminum targets

    New measurements of the total and partial fragmentation cross sections in the energy range 0.3-10 A GeV of Fe^{26+}, Si^{14+} and C^{6+} beams on polyethylene, CR39 and aluminum targets are presented. The exposures were made at Brookhaven National Laboratory (BNL), USA, and Heavy Ion Medical Accelerator in Chiba (HIMAC), Japan. The CR39 nuclear track detectors were used to identify the incident and survived beams and their fragments. The total fragmentation cross sections for all targets are almost energy independent while they depend on the target mass. The measured partial fragmentation cross sections are also discussed.Comment: 4 pages, 5 eps figures.     Histology, composition, and quality traits of chicken Pectoralis major muscle affected by wooden breast abnormality

    Only a few years ago, the poultry industry began to face a recent abnormality in breast meat, known as wooden breast, which frequently overlaps with white striping. This study aimed to assess the impact of wooden breast abnormality on quality traits of meat. For this purpose, 32 normal (NRM), 32 wooden (WB), and 32 wooden and white-striped (WB/WS) Pectoralis major muscles were selected from the same flock of heavy broilers (males, Ross 708, weighing around 3.7 kg) in the deboning area of a commercial processing plant at 3 h postmortem and used to assess histology, proximate (moisture, protein, fat, ash, and collagen) and mineral composition (Mg, K, P, Na and Ca), sarcoplasmic and myofibrillar protein patterns, and technological traits of breast meat. Compared to the normal group, WB/WS fillets showed more severe histological lesions characterized by fiber degeneration, fibrosis, and lipidosis, coupled with a significantly harder texture. With regard to proximate and mineral composition, abnormal samples exhibited significantly (P < 0.001) higher moisture, fat, and collagen contents coupled with lower (P < 0.001) amounts of protein and ash. Furthermore, increased calcium (131 vs. 84 mg kg(-1); P < 0.05) and sodium (741 vs. 393 mg kg(-1); P < 0.001) levels were found in WB/WS meat samples. The SDS-PAGE analysis revealed a significantly lower amount of calcium-ATPase (SERCA, 114 kDa), responsible for the translocation of Ca ions across the membrane, in normal breasts compared to abnormal ones. As for meat quality traits, fillets affected by wooden abnormality exhibited significantly (P < 0.001) higher ultimate pH and lower water-holding/water-binding capacity. In particular, compared to normal, abnormal samples showed reduced marinade uptake coupled with increased drip loss and cooking losses as well. In conclusion, this study revealed that meat affected by wooden breast or both wooden breast and white striping abnormalities exhibit poorer nutritional value, harder texture, and impaired water-holding capacity

    A compact light readout system for longitudinally segmented shashlik calorimeters

    The longitudinal segmentation of shashlik calorimeters is challenged by dead zones and non-uniformities introduced by the light collection and readout system. This limitation can be overcome by direct fiber-photosensor coupling, avoiding routing and bundling of the wavelength shifter fibers and embedding ultra-compact photosensors (SiPMs) in the bulk of the calorimeter. We present the first experimental test of this readout scheme performed at the CERN PS-T9 beamline in 2015 with negative particles in the 1-5~GeV energy range. In this paper, we demonstrate that the scheme does not compromise the energy resolution and linearity compared with standard light collection and readout systems. In addition, we study the performance of the calorimeter for partially contained charged hadrons to assess the e/Ï€e/\pi separation capability and the response of the photosensors to direct ionization.Comment: To appear in Nuclear Instruments and Methods in Physics Research,

    Meaurement of Cosmic Ray elemental composition from the CAKE balloon experiment

    CAKE (Cosmic Abundances below Knee Energies) was a prototype balloon experiment for the determination of the charge spectra and of abundances of the primary cosmic-rays (CR) with Z>>10. It was a passive instrument made of layers of CR39 and Lexan nuclear track detectors; it had a geometric acceptance of ∼\sim0.7 m2^2sr for Fe nuclei. Here, the scanning and analysis strategies, the algorithms used for the off-line filtering and for the tracking in automated mode of the primary cosmic rays are presented, together with the resulting CR charge distribution and their abundances.Comment: 5 pages, 8 figure
