Garlic (Allium sativum Linn) is a bulbous plant that contains several metabolites such asallicin, diallyl disulfide and trisulfidedially, aminoacids, sterols, saponins, alkaloids, flavonoids, triterpenoids. Base on previous research, saponin, metabolites could reduce formaldehyde contained in the food through the process of saponification. This research aimed to prove that the saponins in garlic could reduce levels of formaldehyde in the tofu. This research is an experimental laboratory with a group pretest posttest design. Tofu samples was taken with purposive sampling method at KM.5 traditional market. Sample were analyzed by qualitative and quantitatif used schiff reagent. Samples of tofu were given two treatments at the storage temperature of cold storage (2-8º C) with 4 variations garlic suspension concentration (10 %, 15 %, 20 % and 25 %) by the immersion for 60 minutes. Analyzed of quantitative by measurement were performen by spectrofotometerUv-Vis. The research showed that consentration of formalin in samples A, B, and C were 23,02 ppm, 24,94 ppm and 17,78 ppm. The results of Pearson and Spearman test showed a significant correlation between garlic suspension (Allium sativum Linn) and storage temperature to level of formalin with p<0.050. Based on this reasearch it could be concluded that the immersion of garlic suspension (Allium sativum Linn) could reduced levels of formalin in the tofu. Increasing the concentrations of garlic suspension was proved to the decreased levels of formaldehyde in the sampl

Get PDF
Vitamin E consists of two parts, namely tocopherol and tocotrienol which are found as minor components in candlenut oil. The process of increasing vitamin E concentrate in candlenut oil aims to obtain higher vitamin E levels from candlenut oil through a major and minor component separation with adsorption and desorption methods with three types of calcium silicate hydrate adsorbent namely calcium silicate with 90% absolute ethanol (Ca-S 90), calcium silicate with 75% absolute ethanol (Ca-S 75) and calcium silicate synthesized from CaO (Ca-S). The three adsorbents were synthesized by hydrothermal method at 170ºC for 24 hours accompanied by stirring and characterized by XRD, SEM-EDX, and BET. Furthermore, the adsorbent was applied to enrich vitamin E concentrate in candlenut oil through the adsorption process using a glass column with a mass ratio between candlenut oil and adsorbent that was 1:1, then the vitamin E desorption process was carried out by adding n-hexane solvent. Vitamin E levels obtained after the adsorption and desorption process were for Ca-S 75 adsorbent was 764.41 ppm (1. 82 times enriched), for Ca-S 90 adsorbent was 1011.29 ppm (2. 40 times enriched) and for Ca-S adsorbent was 1029, 38 ppm (2.4 5 times enriched) from the initial vitamin E level in candle nut oil was 420.66 ppm. Ca-S adsorbent showed the best vitamin E enrichment

Parametric and nonparametric identification of shell and tube heat exchanger mathematical model

Get PDF
Parametric and nonparametric models of a shell and tube heat exchanger are studied. Such models are very important because they provide information about controlling a system operation. Without the model, the control task would be difficult for tuning of controller. For many years, researchers have studied these models; however, their models are still less satisfactory since they are not in general form. This problem is caused by two key issues, namely, multiple unknown parameters and highly nonlinear structures. Energy balances have been set-up for condition of unknown parameters which involved, among others, temperature, flow rate, density and heat capacity. The identification process produces a dynamic model of the heat exchanger which is developed based on a lumped parameter system. The model developed is single input single output whereas input signal is hot water flow rate and the output is cold water temperature. The general form of the model obtained could have parametric model structures such as auto regressive with external input, average auto regressive moves with external input, output error or box-jenkins. The study in this thesis aims to solve the general form through parametric and nonparametric models which has been proposed as candidate models. Both candidate models have been implemented and tested by applying several data sets constructed in lab experiments. The first finding is the derivation of the dynamic model in the general form of the transfer function in s domain, and it has been proven that it has parametric model structure. The second finding is the first order without delay time transfer function of the nonparametric model where they have gain is 35.20C and time constant 7200s. These have proven to fulfill that the measured experimental data contains calculated error that is no than more 2%. The third finding is the parametric model obtained has proven that the measured experimental data contains calculated error level that is very satisfactory, i.e. less than 1%. This error has been determined based on the final prediction error for each model structure used. The best model has been chosen, i.e. bj31131. It has the smallest values of the loss function and final prediction error of 0.0023, and it has high values of the best fits, i.e. 96.84%. Parameter optimization has been calculated to determine minimization or maximization of functions which involved the parameter studied. It is used to find a set of design parameters that can in some way be defined as optimal. The first until the third findings are minor contribution while the parameter optimization has been a major contribution

The Utilization of Carboxymethyl Cellulose (Cmc) from Groundnut (Arachis Hypogaea L) Cellulose as Stabilizer for Cow Milk Yogurt

Get PDF
The utilization of carboxymethyl cellulose (CMC) from groundnut (Arachis hypogaea L) cellulose as stabilizer for cow milk yogurt has been done in three steps. The first step was α-cellulose isolation from groundnut skin powder which was analysed with FTIR. The result was compared to FTIR analysis of commercial cellulose to verify the compound obtained is cellulose. The second step involves alkalization process using isopropanol and NaOH, carboxymethylation process with sodium chloroacetate (NaMCA), neutralization using CH3COOH 90% and ethanol, purification with aquadest and followed by centrifugation and addition of acetone to produce carboxymethyl cellulose. The CMC produced gave positive result in the qualitative anlysis, the FTIR spectrum was similar to commercial CMC and the degree of substitution obtained was 0.71. The last step is yogurt making process. In this stage, the CMC concentration added was varied from 0 – 0.5%. Then, the yogurt produced went through quality analysis such as syneresis, pH, viscosity, protein, fat content and organoleptic tests. The best result was obtained at the addition of 0.5% CMC concentration with 7.69% and 2.11% protein and fat content, pH 4.6, viscosity was 1676.01 x 102 cP, low syneresis with 90.66% stability and 22 days of storage life. Organoleptic result shows that yogurt with 0.3% CMC addition gave the best result with distinctive aroma and sourness, and rather thick texture. The panelists preferred such yogurt to others. The quality analysis for yogurt with CMC stabilizer still meets SNI standard. [Use 10 pt Times New Roman for the abstract body with single spacing and 10 pt spacing for the next heading.
