    Change & Maintaining Change in School Cafeterias: Economic and Behavioral-Economic Approaches to Increasing Fruit and Vegetable Consumption

    Developing a daily habit of consuming fruits and vegetables (FV) in children is an important public-health goal. Eating habits acquired in childhood are predictive of adolescent and adult dietary patterns. Thus, healthy eating patterns developed early in life can protect the individual against a number of costly health deficits and may reduce the prevalence of obesity. At present, children in the United States (US) under-consume FV despite having access to them through the National School Lunch Program. Because access is an obstacle to developing healthy eating habits, particularly in low-income households, targeting children’s FV consumption in schools has the advantage of near-universal FV availability among more than 30 million US children. This chapter reviews economic and behavioral-economic approaches to increasing FV consumption in schools. Inclusion criteria include objective measurement of FV consumption (e.g., plate waste measures) and minimal demand characteristics. Simple but effective interventions include (a) increasing the variety of vegetables served, (b) serving sliced instead of whole fruits, (c) scheduling lunch after recess, and (d) giving children at least 25 minutes to eat. Improving the taste of FV and short-term incentivizing consumption of gradually increasing amounts can produce large increases in consumption of these foods. Low-cost game-based incentive program may increase the practicality of the latter strategy

    Increasing vegetable intakes: rationale and systematic review of published interventions

    Purpose While the health benefits of a high fruit and vegetable consumption are well known and considerable work has attempted to improve intakes, increasing evidence also recognises a distinction between fruit and vegetables, both in their impacts on health and in consumption patterns. Increasing work suggests health benefits from a high consumption specifically of vegetables, yet intakes remain low, and barriers to increasing intakes are prevalent making intervention difficult. A systematic review was undertaken to identify from the published literature all studies reporting an intervention to increase intakes of vegetables as a distinct food group. Methods Databases—PubMed, PsychInfo and Medline—were searched over all years of records until April 2015 using pre-specified terms. Results Our searches identified 77 studies, detailing 140 interventions, of which 133 (81 %) interventions were conducted in children. Interventions aimed to use or change hedonic factors, such as taste, liking and familiarity (n = 72), use or change environmental factors (n = 39), use or change cognitive factors (n = 19), or a combination of strategies (n = 10). Increased vegetable acceptance, selection and/or consumption were reported to some degree in 116 (83 %) interventions, but the majority of effects seem small and inconsistent. Conclusions Greater percent success is currently found from environmental, educational and multi-component interventions, but publication bias is likely, and long-term effects and cost-effectiveness are rarely considered. A focus on long-term benefits and sustained behaviour change is required. Certain population groups are also noticeably absent from the current list of tried interventions

    Home food preparation practices, experiences and perceptions: A qualitative interview study with photo-elicitation

    Food-related choices have an important impact on health. Food preparation methods may be linked to diet and health benefits. However, the factors influencing people’s food choices, and how they are shaped by food preparation experiences, are still not fully understood. We aimed to study home food preparation practices, experiences and perceptions amongst adults in North East England. A matrix was used to purposively sample participants with diverse socio-demographic characteristics. Participants developed photographic food diaries that were used as prompts during semi-structured interviews. Data were analysed using the Framework Method. Interviews were conducted with 18 adults (five men and 13 women), aged approximately 20 to 80 years, to reach data saturation. Participants’ practices varied widely, from reliance on pre-prepared foods, to preparing complex meals entirely from basic ingredients. Key themes emerged regarding the cook (identity), the task (process of cooking), and the context (situational drivers). Resources, in terms of time, money and facilities, were also underpinning influences on food preparation. Participants’ practices were determined by both personal motivations to cook, and the influence of others, and generally reflected compromises between varied competing demands and challenges in life. Most people appeared to be overall content with their food preparation behaviour, though ideally aspired to cook more frequently, using basic ingredients. This often seemed to be driven by social desirability. Home food preparation is complex, with heterogeneous practices, experiences and perceptions both between individuals and within the same individual over time, according to shifting priorities and circumstances. Generalisability of these findings may be limited by the regional participant sample; however the results support and build upon previous research. Focussing interventions on life transition points at which priorities and circumstances change, with careful targeting to stimulate personal motivation and social norms, may prove effective in encouraging home food preparation.This report is independent research arising from a Doctoral Research Fellowship Grant DRF-2014-07-020 for the lead author (SM), supported by the National Institute for Health Research.     Manure Placement Depth Impacts on Crop Yields and N Retained in Soil

    The objective of this study was to determine the impact of manure placement depth on crop yield and N retention in soil. Experimental treatments were deep manure injection (45 cm), shallow manure injection (15 cm), and conventional fertilizer-based management with at least three replications per site. Water infiltration, and changes in soil N and P amounts were measured for up to 30 months and crop yield monitored for three seasons following initial treatment. Deep and shallow manure injections differed in soil inorganic N distributions. For example, in the manure slot the spring following application, NO3-N in the surface 60 cm was higher (p \u3c .01) when injected 15 cm (21.4 ÎŒ g/g) into the soil than 45 cm (11.7 ÎŒ g/g), whereas NH4-N had opposite results with shallow injection having less (p = 0.045) NH4-N (102 ÎŒ g/g) than deep (133 ÎŒ g/g) injection. In the fall one year after the manure was applied, NO3-N and NH4-N were lower (p = 0.001) in the shallow injection than the deep injection. The net impact of manure placement on total N was that deep injection had 31, 59, and 44 more kg N ha− 1 than the shallow injection treatment 12, 18, and 30 months after application, respectively. Deep manure injection did not impact soybean (Glycine max L.) yield, however corn (Zea mays L.) yield increased if N was limiting. The higher corn yield in the deep injected treatment was attributed to increased N use efficiency. Higher inorganic N amounts in the deep injection treatment were attributed to reduced N losses through ammonia volatilization, leaching, or denitrification. Results suggest that deep manure placement in glacial till soil may be considered a technique to increase energy, N use efficiency, and maintain surface and ground water quality. However, this technique may not work in glacial outwash soils due to the inability to inject into a rocky subsurface

    Funerary reuse of a Roman amphitheatre: Palaeodietary and osteological study of Early Middle Ages burials (8th and 9th centuries AD) discovered in the Arena of Verona (Northeastern Italy)

    The economic and political disruption following the collapse of the Roman Empire is an important moment for the cultural and biological history of Western Europe. One of the trends associated this socioeconomic change is the reuse of Roman public monuments for different purposes including funerary ones. The cultural meaning of this practice, occasionally described throughout Europe, is however still unclear. Here, we present a study of a group of burials (N = 10) recently discovered in the Roman amphitheatre (Arena) of Verona (Northeastern Italy) and dating to Early Middle Ages (8th and 9th century AD). Specifically, we address the following research questions: (1) What depositional events are responsible for the observed stratigraphic sequence? 2) Which demographic composition and health condition characterize this sample? (3) What kind of diet characterized these individuals? In order to address these questions, we performed an osteological and isotopic (ή13C and ή15N) study of the skeletal evidence for the assessment of palaeopathological and dietary patterns and a histological analysis for the refinement of age at death and the calculation of the minimum number of individuals (MNI). A 14C study was also performed in order to better define the depositional sequence of these individuals. The results, besides being among the first palaeodietary data for Early Middle Ages in this region, highlight: (a) the funerary use of this location for at least one century; (b) an MNI of 10 individuals of both sexes and different age classes, featuring relatively high frequencies of unspecific stress markers (porotic hyperostosis and linear enamel hypoplasia) and trauma, and (c) a diet characterized by a consistent contribution of C4 plants and a good access to animal proteins. These results suggest a long‐spanning practice and the absence of any selectivity in the choice of these individuals. Finally, isotopic data align with previous studies on Bronze and Iron Age samples confirming a long tradition of alimentary exploitation of C4 plants in this area
