    Comparison of different preservation methods on the microbiological, texture and color properties of industrial bread during storage time

    Consumption of bread made from preserved dough is increasing in bakeries, supermarkets and restaurants all around the world, because of the ease of producing freshly baked product, at any time of the day. Using preserved dough has advantages such as saving time, space, equipment and retailing expenses. The aim of this work was to study the behaviour of wheat bread dough during storage time under different preservation methods. Industrial wheat bread dough was packed into polyethylene bags (40g portions) and storage with partial vacuum (50%), modified atmosphere (MAP) (50%CO2/50%N2) and freezing (-35ºC). Samples were storage at 4ºC and -18ºC, during 15 and 60 days, for vacuum and MAP, and freezing, respectively. A control with air was also made to simulate industrial production. Dough and bread (dough was cooked in the oven at 200ºC during 11min) texture, color, moisture content, water activity and pH were determined. Samples were analysed over shelf life (0,1,2,4,8,15,30,60 days). The analysis of variance (ANOVA) and the Tukey test were used to determine statistically different values at a significant level of (p<0.05). Through the results obtained in the microbiological analysis it was concluded that dough and bread are according with the quality and food safety parameters required by Regulation (EC) No. 1441/2007 and the guidelines defined by the Health Protection Agency (HPA), presenting satisfactory quality in relation to the parameters analysed. Texture results showed that hardness of bread crumb and crust increased over storage time for air (control), vacuum and MAP conditions. On the contrary, hardness of samples, under freezing storage, remained constant until the end of time. The same behaviour was found for pH results. There were no significant differences in water activity and moisture content during storage time, regardless of the preservation method. Concerning color results, luminosity of dough and bread crumb decreased during storage time for all the conditions studied. It was concluded that wheat dough bread storage under freezing conditions could be a viable solution for the industry in order extend shelf-life, while assuring consumers a quality product at any time of the day, enabling greater efficiency to the bakeries.info:eu-repo/semantics/publishedVersio

    Fostering Collaboration Between local HEIs and Global Professional Engineering Organization

    This organizational improvement plan (OIP) proposes a change process to foster collaboration between a not-for-profit engineering organization and higher education institutions (HEIs) situated in the Central Ontario Region. This OIP will help students create successful conditions to transition from HEIs to workplaces by providing them with support from a multidisciplinary team, including professional engineers. Support will be needed to engage students in events that underscore creativity, critical thinking, communication, and other leadership competencies for facing 21st-century challenges. As a section chair, I will work as a change initiator/participant with a guiding coalition encompassing students, faculty members, HEI administrators, and executives from the engineering organization to create a sustainable change solution. This OIP uses the principles of adaptive, humble, and distributive leadership approaches. The leadership framework drives the implementation plan, which focuses on developing a student-run society that will create and promote activities to help students transition from HEIs to workplaces. The solution presented offers a way of ensuring financial support and management methods to increase stakeholder accountability and engagement. Lessons learned from the change process will be shared with engineering associations and HEIs across Canada. The report demonstrates how the implementation plan and the adopted change model and leadership approaches are woven into monitoring and evaluation methods grounded on a continuous and open communication system. This OIP may be adapted to similar contexts in which chapters of professional associations and engineering schools have the common goal of enhancing student engagement with the local community

    Interferências nas Práticas Performáticas Musicais: Gatilhos e Minimização por Meio de Técnicas de Yoga

    O potencial de uma performance musical pode ser significativamente prejudicado caso o(a) performer se distraia com interferências - externas ou internas - que possam surgir no decorrer de sua realização. Desta forma, o objetivo do presente estudo é de compreender os gatilhos de tais interferências, além de buscar teorias e práticas que possam contribuir para minimizá-las. Para isso, observamos a realização de duas performances musicais e o como os artistas lidaram com as interferências externas que surgiram. No que tange às interferências internas, nos embasamos na teoria do Espectro da Consciência formulada por Ken Wilber (1995) e aplicada no âmbito da performance musical por Abel Moraes (2000) para compreender como elas se desencadeiam. Para finalizar, verificou-se que a prática de pranayama, técnica advinda do Yoga, se mostra como uma possí­vel ferramenta na colaboração à minimização das interferências internas no âmbito psicológico

    Symbolic Knowledge Extraction from Trained Neural Networks Governed by Lukasiewicz Logics

    This work describes a methodology to extract symbolic rules from trained neural networks. In our approach, patterns on the network are codified using formulas on a Lukasiewicz logic. For this we take advantage of the fact that every connective in this multi-valued logic can be evaluated by a neuron in an artificial network having, by activation function the identity truncated to zero and one. This fact simplifies symbolic rule extraction and allows the easy injection of formulas into a network architecture. We trained this type of neural network using a back-propagation algorithm based on Levenderg-Marquardt algorithm, where in each learning iteration, we restricted the knowledge dissemination in the network structure. This makes the descriptive power of produced neural networks similar to the descriptive power of Lukasiewicz logic language, minimizing the information loss on the translation between connectionist and symbolic structures. To avoid redundance on the generated network, the method simplifies them in a pruning phase, using the "Optimal Brain Surgeon" algorithm. We tested this method on the task of finding the formula used on the generation of a given truth table. For real data tests, we selected the Mushrooms data set, available on the UCI Machine Learning Repository

    Sendo a Academia Militar, uma Instituição de Ensino Superior Militar ciosa das suas tradições seculares, faz com que o Patrono do Curso, tenha uma importância extraordinária para os alunos que acabam de ingressar no primeiro ano, uma vez que presta homenagem e retrata de forma expressiva, quem no passado foi primus inter pares pelos seus feitos em prol da Nação, sendo a personagem que certamente perdurará até ao fim das suas carreiras militares como «vínculo indelével e catalizador de coesão e camaradagem»1. O Marechal de Campo António Teixeira Rebelo foi um homem notável, que viveu toda a sua vida com um único objectivo: servir o Exército Português e o seu país. Foi um militar exímio e um homem de eleição, inspirado por nobres ideais de altruísmo e amor pátrio, competentíssimo no saber e vocacionalmente dotado para o ensino. Para compreender o papel determinante que Teixeira Rebelo teve na sociedade e no Exército, é de suma importância que o enquadremos na época em que viveu, descrevendo o ambiente nacional e internacional que Portugal enfrentava nos meados do século XVIII e início do século XIX, realçando os factos mais significativos que marcaram e modificaram Portugal.     Uma proposta de leitura de poesia a partir do acervo do PNBE

    Pesquisas realizadas ao longo das três últimas décadas revelam que o trabalho com o poema no nível médio de ensino segue um padrão historicista que pouco contribui para a formação de leitores. Por outro lado, experimentos realizados em diferentes séries do ensino básico, lançando mão de uma metodologia de viés interacionista, têm como resultado um envolvimento efetivo do jovem leitor na construção dos sentidos do poema. Neste artigo, apresentaremos e discutiremos uma pesquisa voltada para o ensino de literatura no nível médio, bem como o resultado de um levantamento sobre o impacto do Programa Nacional Biblioteca da Escola (PNBE) no ensino de literatura em cinco escolas públicas de Campina Grande, Paraíba. Serão observados os possíveis usos do acervo deste importante programa de socialização de obras literárias no trabalho com o texto literário. Por fim, será apresentada uma proposta de abordagem de um dos livros de poemas selecionados para o acervo do PNBE – 2013. O intuito é, a partir de um diagnóstico das pesquisas sobre o trabalho com o poema e do aproveitamento (ou não) do acervo do PNBE no ensino médio, apontar algumas perspectivas metodológicas de trabalho com a poesia, privilegiando o diálogo texto-leitor. Fundamentamo-nos, sobretudo, nas contribuições acerca da Estética da Recepção, apostando em novas propostas metodológicas para o trabalho com o texto literário em sala de aula, notadamente o poema.

    Qualitative formability assessment tools for blank development in press forming

    This thesis introduces improved methods for determining the approximate blank shape for the design surface. A new alternative mapping procedure is introduced that can be used for more complex surfaces. Simple cases of non-developable surfaces are addressed and then a new algorithm is used to handle more realistic shapes. A volume conservation technique for mapping is presented as an extension of a previous studied constant area transformation algorithm. A methodology for calculating surface geometric strains is presented which is used as a validation tool in the determination of the blank

    Temporal patterns of TV watching for Portuguese viewers

    Audiometer systems provide enormous amounts of detailed TV watching data. Several relevant and interdependent factors may influence TV viewers' behavior. In this work we focus on the time factor and derive Temporal Patterns of TV watching, based on panel data. Clustering base attributes are originated from 1440 binary minute-related attributes, capturing the TV watching status (watch/not watch). Since there are around 2500 panel viewers a data reduction procedure is first performed. K-Means algorithm is used to obtain daily clusters of viewers. Weekly patterns are then derived which rely on daily patterns. The obtained solutions are tested for consistency and stability.     IMAGENS, CORES E MÚSICA: O HAICAI DE ALICE RUIZ NA SALA DE AULA

    O presente artigo apresenta uma experiência de leitura com os haicais de Alice Ruiz em uma turma do 1º ano do ensino médio. A experiência foi realizada em uma escola da rede pública da cidade de Maceió–AL, com a colaboração de 27 alunos, sendo que 19 estudantes tiveram uma participação mais ativa. Para a incursão da poesia no âmbito escolar, procuramos elaborar um fazer pedagógico calcado em algumas premissas do Método Recepcional, de Aguiar e Bordini (1993). No que concerne aos estudos em torno do haicai de Alice Ruiz, apresentamos uma perspectiva crítica e analítica. Para isto, estudamos, em um primeiro momento, a fortuna crítica da poetisa através do olhar de Murgel (2010), Marques (2012), Cruz e Tinoco (2012). Em um segundo momento, analisamos alguns poemas sob o ponto de vista da estilística de Cohen (1974) e de Staiger (1975), chamando a atenção para alguns aspectos formais da obra e o sentido que assumem. Em seguida, abordamos as estratégias de leitura literária através das reflexões teóricas inspiradas em alguns preceitos da Estética da Recepção, de Jauss (1994). Por fim, discutimos a recepção e a experiência de leitura em sala de aula. Desse modo, os resultados obtidos em nossa pesquisa mostram estudantes mais interessados na leitura de poesia em sala de aula, participativos e perceptivos no que se refere às questões estéticas e temáticas de alguns poemas da Alice Ruiz.Palavras-chave: Haicai.     Using different levels of information in planning green infrastructure in Luanda, Angola

    UIDB/04647/2020 UIDP/04647/2020Integrating natural processes to build areas through the creation of green infrastructure (GI) in Africa with its rapid urbanisation is a challenge because of the information base. The aim of this paper is planning a GI linking biophysical, social, and legal contents in a specific Africa country with an approach that combines different scales and different levels of data and information. The paper proposes a framework beginning at the macro scale to integrate and operationalise the definition of GI in an African context, namely for the Luanda metropolitan area. The approach to nature and ecological structure (GI) has four phases: analysis, integration, diagnosis and proposal. All steps are developed in a GIS environment and consider variations in the biophysical, social, cultural, and legal dimensions. The research discusses the problems in collecting existing information and leads with missing data within the context of urbanisation growth and climate change adaptation. The proposed green infrastructure includes protected areas (existing and proposed), natural values, risk areas, rivers, and agricultural areas, to increase resilience and flexibility in an adaptation context. The results allow to include in the GI the mangrove areas, native flora, vegetated slopes, and riverbanks, providing a buffering function for natural hazards, crucial for these regions, with the aim to achieve the needs of creating a strategic GI to be implemented into the Luanda General Master Plan.publishersversionpublishe
