    Partial-hydrothermal hydrolysis is an effective way to recover bioactives from turmeric wastes

    Partial-hydrothermal hydrolysis using pressurized hot water was applied in waste turmeric, derived from extraction processes that employed supercritical and pressurized fluids, as a sustainable alternative for the recovery of bioactive constituents from this material. The reaction products consisted of a liquid extract of fermentable sugars and a solid fraction, which is a mixed biopolymer with relevant composition in terms of starch and antioxidant constituents. The effects of reaction conditions on resulting products were investigated. Economic evaluation was also performed showing that application of partial-hydrothermal hydrolysis from a residual feedstock is feasible in terms of low spend of energy and materials38228029

    Orientadores: Maria Angela de Almeida Meireles Petenate, Maurício Ariel RostagnoTese (doutorado) - Universidade Estadual de Campinas, Faculdade de Engenharia de AlimentosResumo: A cúrcuma (Cúrcuma longa L.) é uma planta cultivada em países tropicais e subtropicais que tem grande importância econômica devido à sua ampla utilização como corante natural. A cúrcuma é rica em curcuminóides, compostos que além de serem pigmentos naturais, também têm atividade para serem utilizados na prevenção de doenças devido às evidencias de suas propriedades farmacológicas. Apesar de sua utilização em grande escala, a indústria ainda utiliza processos convencionais e técnicas pouco eficientes para sua produção. A crescente exigência de qualidade e o aumento do conhecimento científico sobre o impacto dos alimentos na saúde estão promovendo o desenvolvimento de tecnologias para a produção mais eficiente e sustentável deste tipo de produtos. Entre estas tecnologias, o uso de fluidos pressurizados e fluidos supercríticos tem se mostrado como alternativas eficientes e economicamente viáveis para a extração e a formação de partículas a partir de matérias-primas vegetais, apresentando inúmeras vantagens em relação às técnicas tradicionais. Neste contexto, o objetivo deste trabalho foi desenvolver um processo de extração de curcuminóides a partir de cúrcuma desaromatizada. Etanol foi o solvente no processo de extração com liquido pressurizado (PLE = Pressurized Liquid Extraction). Na sequencia foi estudada a formação de partículas a partir dos extratos usando o processo antissolvente supercrítico (SAS = Supercritical Antisolvent). Em seguida, foi desenvolvido um método rápido de quantificação de curcuminóides via cromatografia líquida de alta eficiência (CLAE). No processo de extração de curcuminóides utilizando PLE foram avaliadas as influências da temperatura e da pressão sobre o rendimento de extração e de curcuminóides. Para a eliminação do etanol via SAS do extrato etanólico e a formação de micropartículas foram avaliados os parâmetros operacionais: tipo de injetor, temperatura, pressão e vazão de CO2 sobre processo de precipitação. A viabilidade econômica de um processo integrado denominado SFE ? PLE+SAS foi avaliada utilizando o simulador SuperPro Designer 8.5®. Inicialmente foi feita uma revisão sobre métodos de nanoencapsulação utilizando tecnologias emergentes, os quais poderiam ser utilizados na melhora da solubilidade das partículas de curcuminóidesAbstract: Turmeric (Curcuma longa L.) is a plant widely cultivated in tropical and subtropical countries that has a large economic importance due to their use as natural dye. Turmeric is rich in curcuminoids, compounds that besides being natural pigments, also have activity to be used in the prevention of diseases due their pharmacological properties. In spite of their use in large scale, the industry still utilized traditional and inefficient processes for its production. The growing demand for quality and the increasing of the scientific knowledge about the impact of food on health are promoting the development of novel and more efficient technologies for the production of this type of natural products in a sustainable manner. Among these technologies, the use of pressurized liquids and supercritical fluids has demonstrated to be an efficient and economically viable alternative for extraction and particle formation from natural sources, presented several vantages when compared with the traditional processes. In this context, the objective of this work was the development of an extraction process of curcuminoids from deflavored turmeric. Ethanol was used as solvent in the pressurized liquid extraction (PLE) process. Afterwards the particle formation through the supercritical antisolvent process (SAS) was studied. Then, a faster method for curcuminoids quantification via high-performance liquid chromatography (HPLC) was developed. For the PLE process were evaluated the influence of the temperature and pressure on the global yield and the curcuminoid content of the ethanolic extracts. To eliminate the solvent from the extracts and produce particles through SAS process, the effects of the operational parameters: type of injector, temperature, pressure and CO2 flow rate on the precipitation process were evaluated. The economic viability of an integrated process named SFE ? PLE+SAS was determined through the software SuperPro Designer 8.5®. The results indicated that the textural parameters such as the hardness, cohesiveness, adhesiveness and chewiness were dependent upon of the maturation period but not the springiness of the product. The physical-chemistry properties such as fat content, protein and moisture content also depended upon the maturation processing, with these changes being responsible for the modifications of the textural properties

    Obtaining anthocyanin-rich extracts from frozen açai (Euterpe oleracea Mart.) pulp using pressurized liquid extraction

    <div><p>Abstract Açai is considered a functional food, and in addition to being a source of energy and fiber, it is a valuable source of bioactive compounds such as anthocyanins, minerals and fatty acids. In the present work, antioxidant-rich extracts from açai pulp were obtained using pressurized liquid extraction (PLE). The effects of the independent variables, including solvent type (pure ethanol and ethanol/water (50:50 v/v)), citric acid (0 and 0.3%, w/w), pressure (20 and 80 bar) and temperature (30 and 60 °C) were evaluated using a full factorial design. The extraction was affected primarily by the solvent type and the citric acid percentage. The results indicate that the maximum overall yield (X0) was 64± 9 (%, d.b.) when the process was performed using ethanol (99.5%) and citric acid (0.3% w/w). The maximum total anthocyanin content and anthocyanin recovered from the raw material were 7 ± 1 (mg anthocyanin/g extract, d.b.) and 11 ± 2 (%, d.b.), respectively.</p></div

    Operations research applications in health systems in Colombia

    Sin duda, ver los sistemas de salud desde la perspectiva de la investigación de operaciones impone nuevos retos que no son insalvables. Hay en los sistemas de salud desafíos y dilemas a los que quizás antes no nos veíamos enfrentados al trabajar en otras industrias o servicios. Desde dilemas éticos, causados por la naturaleza del servicio de salud como un derecho fundamental, bien sea porque en las decisiones que se modelan muchas veces están involucradas las vidas y el bienestar de los pacientes, o porque los objetivos de los sistemas de salud van más allá de la rentabilidad o la disminución de costos a los que estamos comúnmente acostumbrados (v. g., mejorar la cobertura o lograr equidad). Por otro lado, entender los sistemas de salud y las decisiones que en ellos se toman (para el tratamiento de los pacientes, para la planeación de las operaciones de los servicios o para la definición de políticas públicas) exige apropiarse de conocimientos que son ajenos a la formación tradicional en investigación de operaciones. Por fortuna, esto último exige la conformación de equipos multidisciplinarios, con personal asistencial (médicos, enfermeras, instrumentadores, terapeutas, etc.), con epidemiólogos, con funcionarios del Estado, con expertos en sistemas de información, calidad y acreditación en salud, entre otros. En estos equipos es también importante la investigación de operaciones, pues los complementa aportando una visión cuantitativa, analítica e ingenieril que algunas veces no tienen.Certainly, viewing health systems from the perspective of operations research poses new challenges that are not insurmountable. There are challenges and dilemmas in health systems that we may not have faced before when working in other industries or services. From ethical dilemmas, caused by the nature of the health service as a fundamental right, either because the decisions that are modeled often involve the lives and well-being of patients, or because the objectives of the health systems are more beyond the profitability or cost reduction that we are commonly used to (eg, improving coverage or achieving equity). On the other hand, understanding the health systems and the decisions made in them (for the treatment of patients, for the planning of the operations of the services or for the definition of public policies) requires the appropriation of knowledge that is foreign to traditional training in operations research. Fortunately, the latter requires the formation of multidisciplinary teams, with healthcare personnel (doctors, nurses, instructors, therapists, etc.), with epidemiologists, with State officials, with experts in information systems, quality and health accreditation, among others. Operations research is also important in these teams, as it complements them by providing a quantitative, analytical and engineering vision that sometimes they do not have.Bogot
