    Effect of Cattle-Specific Diseases on Carcass Inspection and Meat Quality

    There are severe cattle-specific viral (foot and mouth, vesicular stomatitis, rinderpest, rift valley fever, malignant catarrhal fever, lumpy skin, rabies, bovine leukosis, bovine viral diarrhea, and bovine spongiform encephalopathy), bacterial (tuberculosis, black quarter, botulism, malignant oedema, leptospirosis, brucellosis, anthrax, hemogenic septicemia, actinomycosis, actinobacillosis, mastitis, and metritis), parasitic (lungworm, fasciolosis, cysticercosis, hydatid disease, and onchocercosis), and protozoal (trypanosomiasis, theileriosis, anaplasmosis, babesiosis, and sarcosporidiosis) diseases that affect the carcass judgment and meat quality. These diseases adversely affect cattle health, welfare, and red meat production. This chapter aims to describe the etiology, mode of transmission, ante-mortem and post-mortem findings, carcass and meat quality judgment, and differential diagnosis of these diseases

    Exploration of Shallow Geothermal Energy Aquifers by Using Electrical Resistivity Survey in Laki Range Jamshoro district Sindh, Pakistan

    Geothermal water is increasingly used around the world for its exploitation. Bulk electrical resistivity differences can bring significant information on variation of subsurface geothermal aquifer characteristics. The electrical resistivity survey was carried out in Laki range in lower Indus basin in the study area to explore the subsurface geothermal aquifers. The Schlumberger electrode configuration with range from 2 m to 220 m depth was applied. Three prominent locations of hot springs were selected including Laki Shah Saddar, Lalbagh and Kai hot spring near Sehwan city. After processing resistivity image data, two hot water geothermal aquifers were delineated at Laki Shah Sadder hot springs. The depth of first aquifer was 56 m and its thickness 38 m in the limestones. The depth of second aquifer of 190 m and with thickness of 96 m hosted in limestone. In Lalbagh hot springs two geothermal aquifers were delineated on the basis of apparent resistivity contrast, the depth of first aquifer zone in sandstone was in sandstone 15 m and thickness 12 m, while the depth of second aquifer was 61m and thickness was 35m. In Kai hot springs two hot water geothermal aquifers were delineated. The depth of first geothermal aquifer was 21m and thickness was 18 m and the depth of second aquifer was 105 m and thickness was 61m present in sandstone lithology. Present work demonstrates the capability of electrical resistivity images to study the potential of geothermal energy in shallow aquifers. These outcomes could potentially lead to a number of practical applications, such as the monitoring or the design of shallow geothermal systems

    Diagnosis and Identification of Zoonotic Diseases Associated with Cattle at Abattoirs: Current Trends and Future Prospectus

    Zoonoses are illnesses and infections that spread spontaneously from animals to people. They account for over 70% of recently developing infectious illnesses. Meat from cattle is one of the main sources of red meat and essential element of human diet. Meat inspection (MI) is an important aspect to ensure the safety during handling and consuming of meat and meat by-products. Abattoir or modern slaughterhouse is the place where infections are acquired by the workers or veterinary professional as zoonoses. Bacterial zoonotic diseases such as erysipelothricosis, brucella, listeria, and anthrax and viral zoonotic diseases like cow pox, foot and mouth disease, and rift valley fever are causing great economic losses and are important in terms of zoonoses. These zoonotic diseases are mostly diagnosed at abattoir levels using conventional approaches; however, diagnosis and identification of these diseases using latest methods is an important aspect for ensuring meat safety and hygiene. This chapter will discuss the current trends and future prospects about diagnosis and identification of these zoonotic diseases

    Mortality from gastrointestinal congenital anomalies at 264 hospitals in 74 low-income, middle-income, and high-income countries: a multicentre, international, prospective cohort study

    Summary Background Congenital anomalies are the fifth leading cause of mortality in children younger than 5 years globally. Many gastrointestinal congenital anomalies are fatal without timely access to neonatal surgical care, but few studies have been done on these conditions in low-income and middle-income countries (LMICs). We compared outcomes of the seven most common gastrointestinal congenital anomalies in low-income, middle-income, and high-income countries globally, and identified factors associated with mortality. Methods We did a multicentre, international prospective cohort study of patients younger than 16 years, presenting to hospital for the first time with oesophageal atresia, congenital diaphragmatic hernia, intestinal atresia, gastroschisis, exomphalos, anorectal malformation, and Hirschsprung’s disease. Recruitment was of consecutive patients for a minimum of 1 month between October, 2018, and April, 2019. We collected data on patient demographics, clinical status, interventions, and outcomes using the REDCap platform. Patients were followed up for 30 days after primary intervention, or 30 days after admission if they did not receive an intervention. The primary outcome was all-cause, in-hospital mortality for all conditions combined and each condition individually, stratified by country income status. We did a complete case analysis. Findings We included 3849 patients with 3975 study conditions (560 with oesophageal atresia, 448 with congenital diaphragmatic hernia, 681 with intestinal atresia, 453 with gastroschisis, 325 with exomphalos, 991 with anorectal malformation, and 517 with Hirschsprung’s disease) from 264 hospitals (89 in high-income countries, 166 in middleincome countries, and nine in low-income countries) in 74 countries. Of the 3849 patients, 2231 (58·0%) were male. Median gestational age at birth was 38 weeks (IQR 36–39) and median bodyweight at presentation was 2·8 kg (2·3–3·3). Mortality among all patients was 37 (39·8%) of 93 in low-income countries, 583 (20·4%) of 2860 in middle-income countries, and 50 (5·6%) of 896 in high-income countries (p<0·0001 between all country income groups). Gastroschisis had the greatest difference in mortality between country income strata (nine [90·0%] of ten in lowincome countries, 97 [31·9%] of 304 in middle-income countries, and two [1·4%] of 139 in high-income countries; p≤0·0001 between all country income groups). Factors significantly associated with higher mortality for all patients combined included country income status (low-income vs high-income countries, risk ratio 2·78 [95% CI 1·88–4·11], p<0·0001; middle-income vs high-income countries, 2·11 [1·59–2·79], p<0·0001), sepsis at presentation (1·20 [1·04–1·40], p=0·016), higher American Society of Anesthesiologists (ASA) score at primary intervention (ASA 4–5 vs ASA 1–2, 1·82 [1·40–2·35], p<0·0001; ASA 3 vs ASA 1–2, 1·58, [1·30–1·92], p<0·0001]), surgical safety checklist not used (1·39 [1·02–1·90], p=0·035), and ventilation or parenteral nutrition unavailable when needed (ventilation 1·96, [1·41–2·71], p=0·0001; parenteral nutrition 1·35, [1·05–1·74], p=0·018). Administration of parenteral nutrition (0·61, [0·47–0·79], p=0·0002) and use of a peripherally inserted central catheter (0·65 [0·50–0·86], p=0·0024) or percutaneous central line (0·69 [0·48–1·00], p=0·049) were associated with lower mortality. Interpretation Unacceptable differences in mortality exist for gastrointestinal congenital anomalies between lowincome, middle-income, and high-income countries. Improving access to quality neonatal surgical care in LMICs will be vital to achieve Sustainable Development Goal 3.2 of ending preventable deaths in neonates and children younger than 5 years by 2030

    Animal handling is a growing issue of concern in many countries around the world. Developed countries in particular show keen interest in the way animals are produced for processing. In such countries, animal welfare is increasingly becoming a primary matter in the process of keeping animals either as pets or for food and at homes or on farms. Not only are they protecting the rights of these animals but compromised handling of animal has negative effects on the carcass and overall meat quality characteristics. Poor quality animal and meat will have poor processing properties, functional quality, eating quality, and more likely to be unaccepted by consumers. Lesser attention has been paid by most developing countries on this issue. By this book chapter, it is expected that developing countries also take interest in proper on-farm and pre-slaughter handling of animals due to their beneficial effect on meat and carcass qualities

    Vulnerability Assessment & Analysis of Software-Defined Networking using a Virtual Testbed

    Software-Defined Networking is an advance and modern network architecture that is dynamic, cost-effective, manageable, and adaptable to support the nature of modern applications. Even though SDN solved many limitations and complexities available in traditional networks, the improved network architecture has also bought many new and existing security threats into account. The intruder's aim is to target the central controller, which makes this network the only point of network failure. It is essential to integrate SDN Network with Intrusion Detection System (IDS) to counter the security threats. The proposed work includes developing a virtual testbed for the simulation of the SDN network, where the OVS-switch supporting the OpenFlow protocol is connected to the network topology created using Mininet Simulator. SNORT (signature-based IDS) is integrated with the network to monitor traffic and detect security threats.     Effect of Wet Aging on Color Stability, Tenderness, and Sensory Attributes of Longissimus lumborum and Gluteus medius Muscles from Water Buffalo Bulls

    The present study aimed to investigate the effect of wet aging on meat quality characteristics of Longissimus lumborum (LL) and Gluteus medius (GM) muscles of buffalo bulls. Meat samples from six aging periods, i.e., 0 day (d) = control, 7 d, 14 d, 21 d, 28 d, and 35 d, were evaluated for pH, color, metmyoglobin content (MetMb%), cooking loss, water holding capacity (WHC), myofibrillar fragmentation index (MFI), Warner–Bratzler shear force (WBSF), and sensory evaluation. The pH, instrumental color redness (a *), yellowness (b *), chroma (C *), and MetMb% values were increased, while the lightness (L *) and hue angle (h *) values showed non-significant (p &gt; 0.05) differences in both LL and GM muscles in all aging periods. The cooking loss increased while WHC decreased till 35 days of aging. MFI values significantly (p &lt; 0.05) increased, while WBSF values decreased; in addition, sensory characteristics were improved with the increase in the aging period. Overall, the color, tenderness, and sensory characteristics were improved in LL and GM muscles until 28 and 21 days of aging, respectively. Based on the evaluated meat characteristics, 28 days of aging is required to improve the meat quality characteristics of LL, whereas 21 days of aging is suitable for GM muscle

    Development of K-doped ZnO nanoparticles encapsulated crosslinked chitosan based new membranes to stimulate angiogenesis in tissue engineered skin grafts

    Nanoparticles are well recognized for their biological applications including tissue-regeneration due to large surface area and chemical properties. In this study, K-doped zinc oxide (ZnO) nanoparticles containing porous hydrogels were synthesized via freeze gelation. The morphology and pore dimensions were studied by scanning electron microscopy (SEM). The chemical structural analysis of the synthesized hydrogels was investigated by Fourier Transform Infrared (FTIR) spectroscopy. In swelling studies, material containing ZnO nanoparticles with 2% potassium dopant concentration CLH-K2.0) showed greater degree of swelling as compared to all other materials. The degradation studied was tested in three different degradation media, i.e. phosphate buffer saline (PBS), lysozyme and hydrogen peroxide and relatively higher degradation was seen in hydrogen peroxide. The synthesized hydrogels were implanted on the chick chorioallantoic membrane (CAM) to investigate their angiogenic potential. The CLH-K2.0 hydrogel stimulated angiogenesis greater than all other materials; blood vessels were attached and grown inside this scaffold, showing its strong angiogenic potential

    Effect of Animal Age, Postmortem Calcium Chloride Marination, and Storage Time on Meat Quality Characteristics of M. longissimus thoracis et lumborum of Buffalo Bulls

    This study investigated the effect of animal age, calcium chloride marination, and storage time on meat quality characteristics of buffalo bulls to suggest a cost-effective method of improving buffalo meat quality. The current study was designed considering the importance of buffalo meat and the usage of meat from spent buffalo animals in local markets of South Asian countries. A total of 36 animals comprised of 18 young and 18 spent buffalo bulls were selected. After slaughtering and 24 h of postmortem chilling, striploins were separated and cut into 16 steaks and equally divided into two groups, i.e., either marinated with calcium chloride or not. Meat quality characteristics were recorded on 0, 2, 4, 6, 8, and 10 days of storage. The results showed that the pH value of young animals was higher than the value of spent animals and pH was increased over the storage time. Color b*, C*, and h* values were higher in spent animals as compared with the young animals; however, values of colors L* and h* were higher and a* was lower in marinated samples than the values of non-marinated samples. Color a* and C* values were increased and h* was decreased with lengthening the storage time. The meat cooking loss was higher in marinated and the water-holding capacity was higher in non-marinated meat samples. Shear force values were lower in young animals and marinated samples than the values of spent animals and non-marinated meat samples, respectively. Sensory characteristic scores of marinated samples were better than the non-marinated samples. In conclusion, calcium chloride marination can be used to improve the quality characteristics of buffalo meat
