    Effect of different extrusion treatments and particle size distribution on the physico-chemical properties of rice flour

    Producción CientíficaRice flour is an interesting alternative for developing gluten free products, but its features do not meet the process requirements. The objective of this study was to modify the functional properties of rice flour by combining extrusion and size fractionation. Different extrusion conditions were applied to vary the severity of the treatment on the flour constituents. Extrusion and mechanical fractionation of the rice flours modified their behavior affecting hydration, thermal and pasting features, besides their susceptibility to enzymatic hydrolysis. Thermal properties (temperature and enthalpy) increased with the intensity of the extrusion and that effect was intensified with the greatest particle size of the flours. Fine flours with stronger extrusion showed the highest susceptibility to enzymatic hydrolysis and extrusion process increased that effect. Overall the combination of both physical treatment maybe an attractive alternative for obtaining clean label rice flours with modified features

    Consumer-brand relationships under the marketing 3.0 paradigm: A literature review

    Consumer-brand relationships encompass several dimensions, most of which have attracted growing research attention during the last years. Building these relationships is especially important in the marketing 3.0 era, where it is suggested that customers will choose those brands that satisfy their deepest needs. With these ideas in mind, this article provides a review of two key concepts implied in such relationships: brand love and customer engagement. Although both conceptions focus on different stages of consumer-brand relationships, they actually cover different perspectives on the same process. Moreover, they come from diverse conceptual paradigms: whilst brand love comes from the psychology discipline, engagement derives from diverse areas of the marketing field (e.g., the service-dominant logic perspective). However, their further empirical developments have taken place in marketing. Besides, both terms appear to be applied to different empirical perspectives: brand love is usually linked to the Fast Moving Consumer Goods industry and customer engagement to services

    Influence of health behaviours on the incidence of infection and allergy in adolescents: the AFINOS cross-sectional study

    [Background] Some health behaviours are liable to affect the incidence of allergies and/or common infections in young people; however, the extent and ways in which these might occur are mostly unknown. This study examines the association of health behaviours related to physical activity, sedentariness, diet and sleep with allergy and infection symptoms in adolescents, and also with biological markers that might mediate disease incidence.[Methods] The study comprised a total of 2054 adolescents (50.7% girls) from the Madrid region of Spain. The incidence of infection and allergy symptoms three months prior to the study was obtained from a self-administered questionnaire. Physical and sedentary activities, height and weight, food habits and sleep duration were also self-reported and their influence on infection and allergy incidence was assessed by logistic regression analysis. Blood biomarkers (IgE, eosinophil percentage, leptin, interleukin (IL)-2, IL-4, IL-5 and IL-10) were evaluated in a subsample of 198 subjects.[Results] Adequate sleep duration (OR = 0.79, 95%CI: 0.64 to 0.97) and unhealthy weight status (overweight/obesity) (OR = 1.35, 95%CI: 1.04-1.74) were independently associated with decreased and increased allergy incidence, respectively. No significant association was observed with infection incidence. IgE and leptin differed between adolescents with and without allergy symptoms. In regression models IgE was significantly associated with inadequate sleep duration and leptin with weight status.[Conclusion] Excess weight and inadequate sleep duration are independently associated with the incidence of allergy symptoms in adolescents. Adequate sleep duration and weight during adolescence might be relevant for a decreased risk of suffering allergy symptoms.The study was supported by the Spanish Ministry of Education and Science (DEP2006-56184-C03-02/PREV) and EU funding (FEDER).     EmotiBlog: towards a finer-grained sentiment analysis and its application to opinion mining

    Comunicación presentada en las IV Jornadas TIMM, Torres (Jaén), 7-8 abril 2011.EmotiBlog is a corpus designed for Sentiment Analysis research. Preliminary studies demonstrated its relevance as a Machine Learning resource for detecting subjective information. In this paper we explore additional features by a detailed analysis. In addition, we compare EmotiBlog with other well-known Sentiment Analysis resource such as the JRC corpus. Finally, as a result of our research, we developed an Opinion Mining application, which takes into account user opinions when rating the results of a search engine specialized in mobile phones

    Point defects on graphene on metals

    Understanding the coupling of graphene with its local environment is critical to be able to integrate it in tomorrow's electronic devices. Here we show how the presence of a metallic substrate affects the properties of an atomically tailored graphene layer. We have deliberately introduced single carbon vacancies on a graphene monolayer grown on a Pt(111) surface and investigated its impact in the electronic, structural and magnetic properties of the graphene layer. Our low temperature scanning tunneling microscopy studies, complemented by density functional theory, show the existence of a broad electronic resonance above the Fermi energy associated with the vacancies. Vacancy sites become reactive leading to an increase of the coupling between the graphene layer and the metal substrate at these points; this gives rise to a rapid decay of the localized state and the quenching of the magnetic moment associated with carbon vacancies in free-standing graphene layers

    A pesar de que la influencia de las infraestructuras urbanas en la práctica profesional del urbanismo es evidente, los arquitectos urbanistas que se forman en las Escuelas de Arquitectura que existen en España, reciben escasa información sobre esta materia. De entre todos los tipos de infraestructuras urbanas, la falta de referencias construidas de las destinadas a calefacción urbana en España, propicia la escasez de asignaturas sobre esta materia. Como consecuencia, si no se enseña, tampoco se investiga, generandose un negativo círculo cerrado para esta disciplina. Es por ello que se reivindica la necesidad de crear una metodología de investigación sobre este tipo de infraestructuras, que influya en la docencia que los futuros arquitectos urbanistas reciben en las Escuelas de Arquitectura españolas
