    Biochemical Characterisation and Sensory Evaluation of Differently Coloured and Shaped Tomato Cultivars

    Antioxidant capacity, total phenolic content, colour, sugar, volatiles, ascorbic acid and carotenoid (β-carotene and lycopene) contents of differently coloured and shaped tomato cultivars (cvs) grown in the Eastern Mediterranean region, Turkey were determined, along with a sensory evaluation. Tomato cultivars of two different types (cherry and beefsteak) and four different colours (red, yellow, orange and brown) were analysed. All plants were simultaneously grown in the same field and subjected to identical horticultural practices to minimise the effects of environmental conditions and to maximise those related to genotype. The red cherry cultivar had the highest lycopene content, while the orange beefsteak cultivar had the highest β-carotene content. The highest antioxidant capacity, total phenolic content and hardness scores were found in cherry-type tomatoes, except the yellow one. The red cherry cultivar had the highest sugar content. Red and brown cherry cultivars were also significant in terms of their high carotenoid and sugar contents, along with a high antioxidant activity. The brown cherry cultivar had the highest total phenol content. The highest quantities of 2-hexenal, 3-hexen-1-ol, and 6-methyl-5-hepten-2-one were detected in red cultivars. The brown cherry cultivar had the highest sweetness, typical aroma and hardness scores, while the yellow beefsteak cultivars the lowest sweetness typical aroma scores. In conclusion, therefore, the enzymatic activity of polyphenoloxidase fruit browning meat in the first four day period, the MAP 1-MCP and was much lower compared to control. The food industry is one of the most important points of color, an important characteristic that affects the consumer's decision and brown foods (especially fruits) appears distorted. From this point of MAP enzymatic browning in fruit peels due to activity of polyphenoloxidase 1-MCP and better suppressed compared to control and has been determined at the same level throughout the study.Bu çalışmada muzun olgunluk aşamalarından üç numaralı olgunluk aşamasına kadar olgunlaştırılmış muz meyvesine modifiye atmosferde paketleme (MAP) ve 1-etilsiklopropen (1-MCP) uygulamaları yapılıp 20 oC'de rafta bekletilerek uygulamaların enzimatik ve pomolojik özellikleri üzerine etkisi araştırılmıştır. Çalışmada materyal olarak Alata Bahçe Kültürleri Araştırma İstasyon Müdürlüğü örtü altında yetiştirilen Dwarf Cavendish çeşidi muzlar kullanılmıştır. 1-MCP uygulaması, kontrol ve MAP uygulamalarına göre kabuk ve meyve eti sertliğinin daha iyi korunmasını sağlamıştır. Meyve kabuğu renginin parlaklığının bir göstergesi olan L değeri bakımından en yüksek değer 1-MCP uygulamasında elde edilmiştir. En fazla etilen üretimi kontrol grubu örneklerde, en düşük CO2üretimi ise 1-MCP uygulanan örneklerde saptanmıştır. Meyve eti polifenol oksidaz (PFO) aktivitesi kontrol ve MAP grubu örneklerinde 1-MCP'den, meyve kabuğunda ise kontrol grubu örnekleri diğer iki uygulamadan daha düşük saptanmıştır.Bu çalışma Ç.Ü.     Bu çalıflmada raf ömrü boyunca Anamur muzlarının kimyasal ve biyokimyasal özellikleri üzerine modifiyeatmosfer paketlemesinin (MAP) ve 1-metilsiklopropen uygulamasının (1-MCP) etkileri arafltırılmıfltır.1-MCP uygulanmıfl meyvelerin, MAP uygulanmıfl ve hiçbir uygulama yapılmamıfl meyvelere göreparlak ve yeflil rengini koruduğu L* ve a* değerleri ile ölçülmüfltür. 1-MCP uygulaması, muzların kabukrengi değiflimini ve meyve eti yumuflamasını geciktirmifltir.     Determining the morphologic, yield and phytochemical properties of ’damaye’ and ’nq-7’ goji berry varieties under semi-arid climate conditions

    This study has been conducted during the 2015–2016 period in Aksaray, with semi-arid climate conditions, with the purpose of defining the morphologic, yield and phytochemical parameters of ’Damaye’ and ‘NQ-7’ Goji Berry varieties. The trial was conducted with ‘Damaye’ and ‘NQ-7’ varieties in randomized blocks experimental design, with three repetitions and 10 plants in each repetition, tubed saplings in every 3m × 2m intervals, during the years 2015 and 2016. Morphologic and yield parameters such as plant stem diameter, plant crown height, plant shoot size, plant size, yield per plant, yield per decare, yield efficiency, 100 grain weight and phytochemical parameters such as antioxidant ratio, total phenolic matter quantity, C vitamin quantity, glycose quantity, fructose quantity and sucrose quantity were examined. In the study, year × variety interaction was found to be statistically meaningful at a rate of 5% in plant stem diameter, plant crown width, plant crown height, plant size, yield per plant, yield per decare parameters; while year was found to be statistically meaningful at a rate of 5% in plant crown width, plant shoot size and yield efficiency parameters. And in terms of phytochemical properties, the difference between varieties were found to be statistically insignificant. In 2015, the average plant stem diameter (4.01mm), plant crown height (71.12 cm), plant size (84.27 cm), yield per plant (0.22 kg/tree) and yield per decare (47.71 kg/decar) values of ‘Damaye’ variety were observed to be higher than the ‘NQ-7’variety. In 2016, the average plant stem diameter (15.12mm) and plant size (167.50mm) values were higher in ‘Damaye’ variety, while the average yield per plant (2.12 kg/tree) and average yield per decare (468.29 kg/decar) values were higher in ‘NQ-7’variety. As for plant corolla height, both ‘NQ-7’ (114.73 cm) and ‘Damaye’ (105.06 cm) varieties were ranked first and statistically placed within the same group. In conclusion, in 2015 ‘Damaye’ variety displayed a better performance in terms of morphologic and yield parameters, while in 2016, ‘NQ-7’variety displayed a better performance. But in both years, yield efficiency and yield per decare values were higher in ‘NQ-7’variety when compared to the ‘Damaye’ variety
