    Dripping to jetting transition for cross-flowing liquids

    International audienceWe experimentally study drops formed from a nozzle into an immiscible, cross-flowing phase. Depending on the operating conditions, drops are generated either in dripping or jetting mode. We investigate the impact of the continuous and dispersed phase velocities, dispersed phase viscosity, and interfacial tension on the drop generation mode and size. We find that a dripping to jetting transition (DJT) takes place at a critical inner Weber number, a function of the outer capillary and Ohnesorge numbers. Two jetting regimes occur depending on the phase velocity ratio. When the continuous phase velocity is significantly greater (respectively lower) than the dispersed phase velocity, jet narrowing (respectively widening) occurs. In jet widening, the critical inner Weber number depends little on the outer capillary number whereas in jet narrowing, it sharply decreases as the outer capillary number increases. We propose a comprehensive model to describe the DJT based on the attached drop equation of motion. The model satisfactorily predicts the DJT and the effect of the outer capillary number on the critical inner Weber number. It also well accounts for the drop diameter in jet narrowing

    Glutenin and Gliadin, a Piece in the Puzzle of their Structural Properties in the Cell Described through Monte Carlo Simulations

    Gluten protein crosslinking is a predetermined process where specific intra- and intermolecular disulfide bonds differ depending on the protein and cysteine motif. In this article, all-atom Monte Carlo simulations were used to understand the formation of disulfide bonds in gliadins and low molecular weight glutenin subunits (LMW-GS). The two intrinsically disordered proteins appeared to contain mostly turns and loops and showed "self-avoiding walk" behavior in water. Cysteine residues involved in intramolecular disulfide bonds were located next to hydrophobic peptide sections in the primary sequence. Hydrophobicity of neighboring peptide sections, synthesis chronology, and amino acid chain flexibility were identified as important factors in securing the specificity of intramolecular disulfide bonds formed directly after synthesis. The two LMW-GS cysteine residues that form intermolecular disulfide bonds were positioned next to peptide sections of lower hydrophobicity, and these cysteine residues are more exposed to the cytosolic conditions, which influence the crosslinking behavior. In addition, coarse-grained Monte Carlo simulations revealed that the protein folding is independent of ionic strength. The potential molecular behavior associated with disulfide bonds, as reported here, increases the biological understanding of seed storage protein function and provides opportunities to tailor their functional properties for different applications

    International audienceLes propriétés d'hydratation et d'agglomération de la semoule de blé dur dépendent des caractéristiques de la matière à granuler, du liquide de granulation et de l'outil de granulation. Dans le procédé de fabrication des graines de couscous, la formation, la croissance et la densification des grains de semoule sont effectuées par addition d'eau, mélange et roulage. Une étude de caractérisation de la semoule de blé dur a été entreprise à différentes échelles d'observation : macroscopique, mésoscopique et moléculaire afin de comprendre les mécanismes d'hydratation et d'agglomération. La semoule de blé dur constitue une population de particules hétérogènes en granulométrie et en composition biochimique. Si cette hétérogénéité se traduit par des modifications des propriétés d'hydratation, d'autres études sont nécessaires pour mieux appréhender son influence sur les propriétés d'agglomération

    Association of Cumulative Lead Exposure with Parkinson's Disease

    BACKGROUND. Research using reconstructed exposure histories has suggested an association between heavy metal exposures, including lead, and Parkinson's disease (PD), but the only study that used bone lead, a biomarker of cumulative lead exposure, found a nonsignificant increase in risk of PD with increasing bone lead. OBJECTIVES. We sought to assess the association between bone lead and PD. METHODS. Bone lead concentrations were measured using 109Cd excited K-shell X-ray fluorescence from 330 PD patients (216 men, 114 women) and 308 controls (172 men, 136 women) recruited from four clinics for movement disorders and general-community cohorts. Adjusted odds ratios (ORs) for PD were calculated using logistic regression. RESULTS. The average age of cases and controls at bone lead measurement was 67 (SD = 10) and 69 (SD = 9) years of age, respectively. In primary analyses of cases and controls recruited from the same groups, compared with the lowest quartile of tibia lead, the OR for PD in the highest quartile was 3.21 [95% confidence interval (CI), 1.17-8.83]. Results were similar but slightly weaker in analyses restricted to cases and controls recruited from the movement disorders clinics only (fourth-quartile OR = 2.57; 95% CI, 1.11-5.93) or when we included controls recruited from sites that did not also contribute cases (fourth-quartile OR = 1.91; 95% CI, 1.01-3.60). We found no association with patella bone lead. CONCLUSIONS. These findings, using an objective biological marker of cumulative lead exposure among typical PD patients seen in our movement disorders clinics, strengthen the evidence that cumulative exposure to lead increases the risk of PD.National Institutes of Health (R01-ES010798, K01-ES01265
