    El ámbito educativo, es un sector, donde menos conciencia se tiene de los problemas derivados de las condiciones de seguridad, la violencia, el malestar docente, el estrés, los riesgos ergonómicos; es por ello que es preciso implantar una cultura preventiva e invitar al conocimiento de ley de PRL y de las normas que lo regulan. Es preciso que los docentes sepan actuar de forma correcta en el caso de accidente como golpes, heridas, quemaduras, ..., para así minimizar las consecuencias de los mismos. Los centros educativos deben garantizar unas condiciones de seguridad y salud adecuadas no solo para el alumnado sino también para el docente y el personal no docente que presten sus servicios en el centro, todo ello siguiendo lo establecido en la normativa vigente. Algo que no siempre ocurre y que por tanto afecta en el trabajo diario de los docentes de forma negativa

    Effects of disease activity on lipoprotein levels in patients with early arthritis: can oxidized LDL cholesterol explain the lipid paradox theory?

    Background An increased risk of cardiovascular (CV) complications has been described in patients with rheumatoid arthritis (RA). It is the result of the combined effect of classic CV risk factors and others that are specific to the disease. Methods We assessed data from 448 early arthritis (EA) patients: 79% women, age (median [p25-p75]) at onset: 55 [44?67] years and disease duration at study entry 5 [3?8] months; and 72% fulfilled the 1987 RA criteria at 2?years of follow-up. Rheumatoid factor was positive in 54% of patients and anti-citrullinated peptide antibodies in 50%. The follow-up of patients ranged from 2 to 5?years with more than 1400 visits with lipoprotein measurements available (mean 2.5 visits/patient). Demographic- and disease-related variables were systematically recorded. Total cholesterol (TC), high-density lipoprotein (HDL-C), and low-density lipoprotein (LDL-C) levels were obtained from routine laboratory tests. Oxidized-LDL (oxLDL-C) levels were assessed using a commercial ELISA kit. We fitted population-averaged models nested by patient and visit to determine the effect of independent variables on serum levels of TC, its fractions, and oxLDL-C. Results After adjustment for several confounders, high-disease activity was significantly associated with decreased TC, HDL-C, and LDL-C levels and increased oxLDL-C levels. Standardized coefficients showed that the effect of disease activity was greater on oxLDL-C and HDL-C. Interestingly, we observed that those patients with lower levels of LDL-C showed higher oxLDL-C/LDL-C ratios.     Nanopartículas de quitosán mejoran el rendimiento, actividad enzimática y compuestos bioactivos en frutos de tomate

    Las nanopartículas de quitosán (NPsCS) son utilizadas como bioestimulantes naturales en la agricultura sustentable, ya que incrementan la productividad de los cultivos e inducen la síntesis de antioxidantes enzimáticos y no enzimáticos, protegiendo a la planta del estrés. El presente estudio se desarrolló con el objetivo de determinar el efecto de la aplicación foliar de las NPsCS sobre el rendimiento, actividad enzimática y contenido de compuestos bioactivos en frutos de tomate. El ensayo se estableció en un diseño completamente al azar con seis dosis crecientes de NPsCS: 0, 0.05, 0.1, 0.2, 0.4 y 0.8 mg mL-1. La aspersión foliar de 0.2 mg mL-1 aumentó el rendimiento, tamaño y firmeza de los frutos; en cambio dosis alta incrementan los compuestos bioactivos y la actividad enzimática. El uso de NPsCS aplicadas de forma foliar presentan un gran potencial para utilizarse como bioestimulantes para mejorar el rendimiento y obtener alimentos funcionales

    Sarcopenia assessed by 4-step EWGSOP2 in elderly hemodialysis patients: Feasibility and limitations

    In 2019, EWGSOP2 proposed 4 steps to diagnose and assess sarcopenia. We aimed to quantify the prevalence of sarcopenia according to the EWGSOP2 diagnostic algorithm and to assess its applicability in elderly patients on hemodialysis. Methods, Prospective study of 60 outpatients on chronic hemodialysis aged 75- to 95-years, sarcopenia was assessed according to the 4-step EWGSOP2: Find: Strength, Assistance walking, Rise from a chair, Climb stairs, and Falls (SARC-F); Assess: grip strength by dynamometry (GSD) and sit to stand to sit 5 (STS5); Confirm: appendicular skeletal muscle mass (ASM) by bioimpedance; Severity: gait speed (GS), Timed-Up and Go (TUG), and Short Physical Performance Battery (SPPB). Results, The sequential four steps resulted in a prevalence of confirmed or severe sarcopenia of 20%. Most (97%) patients fulfilled at least one criterion for probable sarcopenia. The sensitivity of SARC-F for confirmed sarcopenia was low (46%). Skipping the SARC-F step increased the prevalence of confirmed and severe sarcopenia to 40% and 37%, respectively. However, 78% of all patients had evidence of dynapenia consistent with severe sarcopenia. Muscle mass (ASM) was normal in 60% of patients, while only 25% had normal muscle strength values (GSD). Conclusions According to the 4-step EWGSOP2, the prevalence of confirmed or severe sarcopenia was low in elderly hemodialysis patients. The diagnosis of confirmed sarcopenia underestimated the prevalence of dynapenia consistent with severe sarcopenia. Future studies should address whether a 2-step EWGSOP2 assessment (Assess-Severity) is simpler to apply and may provide better prognostic information than 4-step EWGSOP2 in elderly persons on hemodialysisThis research received no external funding.     Stance4Health Nutritional APP: A Path to Personalized Smart Nutrition

Several e-services offer dietary advice. However, multifactorial and more individualized nutritional recommendations should be developed to recommend healthy menus according to the specific user’s needs. In this article, we present and validate a personalized nutrition system based on an application (APP) for smart devices with the capacity to offer an adaptable menu to the user. The APP was developed following a structured recommendation generation scheme, where the characteristics of the menus of 20 users were evaluated. Specific menus were generated for each user based on their preferences and nutritional requirements. These menus were evaluated by comparing their nutritional content versus the nutrient composition retrieved from dietary records. The generated menus showed great similarity to those obtained from the user dietary records. Furthermore, the generated menus showed less variability in micronutrient amounts and higher concentrations than the menus from the user records. The macronutrient deviations were also corrected in the generated menus, offering a better adaptation to the users.     Development of an Unified Food Composition Database for the European Project “Stance4Health”

    The European Commission funded project Stance4Health (S4H) aims to develop a complete personalised nutrition service. In order to succeed, sources of information on nutritional composition and other characteristics of foods need to be as comprehensive as possible. Food composition tables or databases (FCT/FCDB) are the most commonly used tools for this purpose. The aim of this study is to describe the harmonisation efforts carried out to obtain the Stance4Health FCDB. A total of 10 FCT/FCDB were selected from different countries and organizations. Data were classified using FoodEx2 and INFOODS tagnames to harmonise the information. Hazard analysis and critical control points analysis was applied as the quality control method. Data were processed by spreadsheets and MySQL. S4H’s FCDB is composed of 880 elements, including nutrients and bioactive compounds. A total of 2648 unified foods were used to complete the missing values of the national FCDB used. Recipes and dishes were estimated following EuroFIR standards via linked tables. S4H’s FCDB will be part of the smartphone app developed in the framework of the Stance4Health European project, which will be used in different personalized nutrition intervention studies.     Avances en las investigaciones sobre la encapsulación mediante gelación iónica: una revisión sistemática

    Encapsulation, a technology that creates a barrier between a compound of interest and the environment, improves the physicochemical stability of products during processing and/or storage. Therefore, it helps to reduce the degradation of compounds of interest, masks undesirable odors and flavors, controls the release of the bioactive compound, and can increase its bioaccessibility and bioavailability. The objective of this review was to collect and discuss recent scientific literature about encapsulation by ionic gelation of bioactive compounds, microorganisms, and enzymes, as well as its use in different applications of scientific and/or industrial interest in several fields. A literature review was carried out in indexed databases using descriptors such as capsule size, encapsulation efficiency, mixture matrices, sodium alginate, and ionic gelation. The results show that using of this kind of encapsulation offers variable advantages regarding the bioavailability of bioactive compounds, the stability of different compounds, the improvement of physical characteristics, the release of compounds, and the protection against adverse environmental effects. In conclusion, the ionic gelation method can have a wide range of applications to encapsulate food ingredients, microorganisms, drugs, etc. This review can guide further research into ionic gelation because it examines the diversity of its applications.La encapsulación es una tecnología que proporciona barreras entre los compuestos de interés en un producto y el medio ambiente. Ella brinda una mejor estabilidad fisicoquímica durante el procesamiento y/o almacenamiento del producto, por lo tanto, ayuda a tener una menor degradación de los compuestos de interés, enmascara olores y sabores indeseables, controla la liberación del principio activo y puede incrementar su bioaccesibilidad y su biodisponibilidad. El objetivo de esta revisión fue recopilar y discutir la literatura reciente enfocada en investigaciones científicas sobre la encapsulación mediante gelación iónica de compuestos bioactivos, de microorganismos, de enzimas y su uso en diferentes aplicaciones de interés científico y/o industrial. La revisión bibliográfica se realizó en las principales bases de datos indexadas, utilizando descriptores como tamaño de cápsula, eficiencia de encapsulación, matrices mixtas, alginato de sodio y gelación iónica. De acuerdo con los resultados se observó que la utilización de este tipo de encapsulación presenta ventajas muy variables que se centran en la mejora de diversos factores como la biodisponibilidad de compuestos bioactivos, estabilidad de diferentes compuestos, características físicas, liberación del compuesto de interés y la protección contra efectos ambientales adversos. En conclusión, existe una amplia gama de aplicaciones que puede tener la metodología de gelación iónica para encapsular ingredientes alimenticios, microorganismos y fármacos, entre otros. Finalmente, el estudio pretende que esta revisión sea de utilidad en la dirección de investigaciones sobre gelación iónica, debido a la diversidad de aplicaciones abordadas durante la investigación

    Characterization and in vitro spread of mesquite (Prosopis laevigata (Humb. & Bonpl. ex Willd.) M.C.Johnst.)

    Objective: To analyze fruit characteristics, genetic diversity, and in vitro spread of mesquite genotypes (Prosopis laevigata (Humb. & Bonpl.) ex Willd.) from the plains of Ojuelos-Aguascalientes, Mexico. Design/Methodology/Approach: Fruit and leaf samples were collected from 20 mesquite genotypes to analyze and extract DNA to determine their diversity using RAPDs. Simultaneously, in vitro spread tests were performed. Results: The Ojuelos de Jalisco genotype stood out for the weight of its fruits, while La Presa genotype stood out for its degrees Brix. Genotypes were grouped according to their best growth condition for their genetic analysis. In in vitro spread, AG3 with IBA allowed stem/shoot elongation and root formation; meanwhile, AgNO3 prevents leaf fall, allowing rooting and transfer to the soil. Study Implications/Limitations: This study about mesquite (P. laevigata) was limited to the plains of Ojuelos-Aguascalientes. Findings/Conclusions: Mesquite plants from the Ojuelos-Aguascalientes subregion, Mexico, were identified and georeferenced; likewise, a methodology for its in vitro spread was developed
