    Garlic (Allium sativum L) and Its beneficial properties for health: A Review

    Generally, chefs use garlic as an ingredient that enhances the sensory qualities of foods. However, recent studies have shown that garlic contains Sulphur compounds, which provide a health benefit. This review identifies and describes those constituents in garlic responsible for their anti-microbial, antioxidant, anti-inflammatory, and in some cases anti-cancer properties. Also, this review reports the chemical and nutritional contents of garlic (Allium sativum L.) and shows its health benefits for humans. A large variability and diversity in the nutritional content of garlic was found in the literature, including functional properties (antioxidant, antimicrobial, antifungal, and immunological), and many health benefit components, such as antihypertensive, hypolipidemic, antiatherogenic, anticarcinogenic, antitumor, antiaggregant, fibrinolytic, immunomodulatory, and antianemic. Allicin and ajoene were identified among some of the compounds in garlic which are beneficial for human health. Quantity varies depending on bulb maturity and harvest location, and values range between approximately 1mg/g and 9mg/g for allicin and 0.12 mg/g to 0.22 mg/g of garlic oil macerate for ajoene

    Inactivation of Coronaviruses in food industry: The use of inorganic and organic disinfectants, ozone, and UV radiation

    Currently there is a worldwide pandemic due to Covid-19, which has caused a great impact on humanity in social, economic, psychological aspects and unfortunately on health. Due to the risk that food can also be a medium to cause virus diseases, the procedures in the food industry safety programs must be revised; and, to be more specific, to disinfect Covid-19. Some effective disinfectants that have been proved to inactivate the coronavirus are: chlorine dioxide, sodium hypochlorite, quaternary compound, ozone and UV-C (shortwave ultraviolet light). In this review, some treatments used to inactivate a virus, with an emphasis to the coronavirus family, and other influenza viruses, are reported. It has been concluded that the coronavirus could be inactivated using free chlorine solutions at 30 mg/L, sodium hypochlorite 0.25 %, or Chlorine Dioxide (99% purity) diluted at 1/2.5 relation. Also, alcohol is an effective disinfectant at concentrations of 62 to 71% of ethanol. With respect to the use of the quaternary compound, it can be used at concentrations of 0.10%. Ozone is another promising disinfectant to inactivate the coronavirus and Covid-19. Doses of ozone between 10 to 20 ppm for 10 to 15 minutes are recommended to inactivate the coronavirus with 3.5 log10 reductions. However, a warning should be reported to the use of high doses of exposure because it can be a risk to human health.     O futebol como programa esportivo para crianças com TEA no ensino fundamental

    The difficulties that children with Autism Spectrum Disorder (ASD) experience to perform physical and sports exercises is a reality. This situation causes a low participation in physical and sports activities with their peers. The difficulties they present regarding motor skills hinder their participation in physical activities in groups, also causing less socialization within the sports context itself (Kruger, et al., 2019). Therefore, it is necessary to propose programs oriented to physical and sports practice, encouraging the participation in physical activities and increasing the social relations (Wong et al., 2015). With the intention of promoting sports for this group, a sports training program was designed based on pre-sports football games. The sessions managed to enhance children's physical and social skills in order to attain a general improvement in both skills, and thus transfer their capabilities and learning to other sports contexts. The purpose of this type of sports schools is to promote and encourage physical and sport activities for this group of people with ASD, as well as to prepare all children to participate in any type of sport. Sometimes, the lack of information regarding disability can lead to a rejection of people with disabilities by those responsible of directing sport practices, with the wrong intention of protecting them (González & Sosa, 2008). In order to measure the state of the art regarding sport leisure of children with ASD and the level of satisfaction reached under the sport training program, a questionnaire was distributed to the families of participants. The results obtained at the end of the research were positive, evidencing the need of promoting physical and sports activities as an alternative of leisure for people with ASD.Las dificultades que tienen los niños con Trastorno del Espectro Autista (TEA) para realizar ejercicio físico y deportivo es una realidad. Esta situación provoca una baja participación en actividades físicas y deportivas con sus iguales. Los problemas que presentan a nivel motor dificultan la participación en actividades físicas grupales, provocando también un descenso en la socialización dentro del propio contexto deportivo (Kruger et al., 2019). Por ello es necesario proponer programas orientados a la práctica física y deportiva que favorezcan la participación en actividades físicas y un aumento de las relaciones sociales (Wong et al., 2015). Con la intención de promocionar el deporte para este colectivo se diseñó un programa de entrenamiento deportivo basado en juegos predeportivos de fútbol. Las sesiones sirvieron para potenciar las habilidades físicas y sociales con el fin de producir una mejora generalizada en ambas y, de esta forma, transferir sus capacidades y aprendizajes a otros contextos deportivos. La finalidad de este tipo de escuelas deportivas debe ser la de promover y fomentar la actividad física y deportiva para el colectivo de personas con TEA, además de preparar a todos los niños para que puedan participar en cualquier tipo de deporte. En ocasiones, la falta de información referente a la discapacidad puede provocar un rechazo hacia las personas con discapacidad por parte de los responsables encargados de dirigir la práctica deportiva, buscando la intención errónea de protegerles (González y Sosa, 2008). Para medir el estado de la cuestión referente al ocio deportivo de los niños con TEA y el nivel de satisfacción alcanzado con el programa de entrenamiento deportivo se administró un cuestionario a las familias de los participantes. Los resultados obtenidos al término de la investigación fueron positivos, lo que permitió justificar el impulso de la actividad física y deportiva como una alternativa de ocio para las personas con TEA.É uma realidade as dificuldades que meninos e meninas com Transtorno do Espectro do Autismo (TEA) têm para realizar exercícios físicos e esportes. Essa situação acarreta baixa participação em atividades físicas e esportivas com seus companheiros. Os problemas que apresentam no nível motor dificultam a participação em atividades físicas em grupo, causando também uma diminuição da socialização no próprio contexto esportivo (Kruger, et al., 2019). Portanto, é necessário propor programas voltados para a prática física e esportiva que favoreçam a participação em atividades físicas, bem como o incremento das relações sociais (Wong et al., 2015). Com o intuito de promover o esporte para esse grupo, foi elaborado um programa de treinamento esportivo baseado em jogos de futebol pré-esportivos. As sessões serviram para potencializar as aptidões físicas e sociais de forma a produzir uma melhoria geral em ambas e, dessa maneira, transferir as suas competências e aprendizagem para outros contextos esportivos. A finalidade desse tipo de esporte nas escolas deve ser a promoção e o incentivo à atividade física e esportiva do grupo de pessoas com TEA, além de preparar todas as crianças para que possam praticar qualquer tipo de esporte. Às vezes, a falta de informação sobre a deficiência pode causar uma rejeição por parte dos responsáveis pelo direcionamento da prática esportiva, às pessoas com deficiência, buscando a intenção equivocada de protegê-los (González e Sosa, 2008). Para mensurar o estado da arte em relação ao lazer esportivo de meninos e meninas com TEA e o nível de satisfação atingido com o programa de treinamento esportivo, foi aplicado um questionário às famílias dos participantes. Os resultados obtidos ao final da pesquisa foram positivos, o que permitiu justificar a promoção da atividade física e esportiva como alternativa de lazer para pessoas com TEA

    Subjetividade e meios de subsistência sustentáveis em famílias afetadas por um desastre hidrometeorológico na região do Atacama no Chile

    The increase of the hydrometeorological risks due the environmental global change has intensified the susceptibility of livelihood in exposed households, leading the need of strengthen agency capacities and local empowerment. According to this, the investigation analyzes a subjective dimension of capacities and livelihoods of households affected by hydrometeorological disaster occurred in Copiapo city from Chile. For this, a qualitative case design was used, and 15 household heads affected by the disaster were selected. The data is produced through an episodic interview, using grounded theory as analysis strategy. The results obtained highlights the (i) tactical coping provisions, and (ii) the articulation between capitals, and opportunities structure in terms of livelihood. We conclude emphasizing the psychosocial aspects of vulnerability-capacity to disasters, as mediating factors between agency and community, state and commercial structures.El incremento de riesgos hidrometereológicos, a causa del cambio ambiental global, ha intensificado la susceptibilidad de los medios de vida de hogares expuestos, conllevando la necesidad de fortalecer las capacidades de agencia y empoderamiento local. En función de esto, el presente trabajo analiza la dimensión subjetiva de las capacidades y medios de vida de hogares vulnerados por un desastre hidrometeorológico en Copiapó, Chile. Para esto, se utilizó un diseño de caso cualitativo seleccionando 15 jefe/as de hogar vulnerados por el desastre. Los datos son producidos mediante la entrevista episódica, utilizando como estrategia de análisis la teoría fundamentada. Los resultados obtenidos resaltan las (i) disposiciones tácticas de afrontamiento y (ii) la articulación entre capitales y estructura de oportunidades, en términos de medios de vida. Concluimos con el relevo de los aspectos psicosociales de la vulnerabilidad-capacidad ante desastres, en tanto factores mediadores entre el agenciamiento y las estructuras comunitarias, estatales y mercantiles.  O aumento dos riscos hidrometeorológicos, devido à mudança ambiental global, intensificou a suscetibilidade dos meios de subsistência das famílias expostas, levando à necessidade de fortalecer as capacidades de agenciamento e empoderamento local. Em função disso, o presente estudo analisa a dimensão subjetiva das capacidades e meios de subsistência das famílias afetadas por um desastre hidrometeorológico em Copiapó, Chile. Para isso, foi utilizado um desenho estudo de caso qualitativo, selecionando 15 chefes/as de família afetados pelo desastre.     Assessment of ICT in the educational process: a look from the kindergartners and their families

    Este trabajo tiene como propósito central diagnosticar los intereses de los párvulos y sus familias respecto al uso de las TIC, tanto dentro como fuera del aula. Se empleó un diseño metodológico mixto, donde se complementaron técnicas de obtención de información de naturaleza cualitativa (entrevista semiestructurada) y cuantitativa (encuesta), se llevó a cabo en un colegio subvencionado ubicado en la zona centro sur de Chile, participaron 32 párvulos y 26 apoderados, seleccionados intencionalmente a partir de criterios internos a la investigación. Entre los principales resultados se destaca la valoración positiva de los niños y niñas respecto a estas herramientas, aludiendo fundamentalmente a las posibilidades de entretención que les ofrecen, siendo la Tablet y el celular los dispositivos de su preferencia. Por su parte, los padres y madres valoran también positivamente la interacción de los sus hijos e hijas con las TIC, visualizándose disposición para apoyarlos, resguardando los tiempos de utilización y la seguridad de los párvulos al momento en que acceden fundamentalmente a Internet.The main purpose of this work was to approach the way in which kindergartners value the use of ICTs both in the home and in the classroom, and the opinion of their parents regarding the use of these tools from home. A mixed methodological design was used, where techniques for obtaining information of a quantitative nature (semi-structured interview) and quantitative (survey) were complemented, it was carried out in a subsidized school located in the south-central zone of Chile, 32 children and 26 parents participated, intentionally selected from internal criteria for research. Among the main results, the positive evaluation of children respect these tools stands out, mainly referring to the possibilities of entertainment offered to them, with the Tablet and cell phone being the device their preference. For their part, fathers and mothers value positively the interaction of their sons and daughters with ICT, visualizing themselves willing to support them, safeguarding the time of use and the safety of the children when they access the Internet

    In recent decades there has been a considerable global increase in urban population, industrial productivity, energy demand, waste generation, and the emission of greenhouse gases from energy conversion. The agricultural, forestry, textile and food sectors generate large amounts of waste and their environmental impact has become a major cause for concern in societies around the world. Current efforts are concerned with maximization of combustion efficiency and energy-related processes in general by making use of industrial residues and reducing particulate matter. The present review addresses the availability of different types of biomass that can be used to produce renewable energy and focuses on agricultural, forestry, urban and industrial residues. It also provides a description of the physical and calorific characteristics of the various raw materials available for the manufacture of briquettes and other fossil fuel alternatives

    En busca del consenso: encuentro usando Wooclap para la reflexión sobre la Innovación Docente

    La innovación docente desempeña un papel fundamental en la educación universitaria porque, gracias a ella, se preserva la calidad de la enseñanza y se promueven aprendizajes significativos. Durante la Semana de la Innovación Docente de la Universidad Rey Juan Carlos se organizó un encuentro para buscar un consenso entre expertos en torno al paradigma de la innovación educativa universitaria. Mediante el uso de la plataforma interactiva Wooclap, se llevó a cabo un debate de tres horas donde los participantes compartieron sus perspectivas e ideas. El objetivo de este trabajo es mostrar una estrategia de dinamización utilizando herramientas digitales de interacción y presentar los resultados de las reflexiones de los expertos en torno a la innovación docente, buscando proporcionar una base sólida para futuros desarrollos en este campo en constante evolución. De los resultados se infiere, como conclusión principal, que realizar acciones de innovación docente mejora el proceso de enseñanza-aprendizaje en el estudiantado universitario

    Currently there is a great demand for food products containing functional properties and/or bioactive compounds. One of the fruits that has been widely studied is the murta (Ugni molinae), which appears to contain various beneficial health properties. This review compiles scientific information on the functional and beneficial properties of murta for human health, such as the main components associated with anti-inflammatory activity, antimicrobial activity, antioxidant activity, nutritional composition, other uses of murta, economic aspects, and current and future challenges of murta, all based on updated scientific work.Actualmente existe una gran demanda de productos alimenticios que contengan propiedades funcionales y/o compuestos bioactivos. Uno de los frutos que ha sido ampliamente estudiado es la murta (Ugni molinae), el cual parece contener diversas propiedades benéficas para la salud. En la presente revisión se recopila información científica de las propiedades funcionales y benéficas de la murta para la salud humana; como, por ejemplo, los principales componentes asociados a la actividad antiinflamatoria, actividad antimicrobiana, actividad antioxidante, composición nutricional, otros usos de la murta, aspectos económicos, retos actuales y futuros de la murta; todo basado en trabajos científicos actualizados
