Desenvolvimento e implementação de um conceito de restauração comercial
Trabalho de natureza profissional para obtenção do TÃtulo de Especialista do Instituto Politécnico do Porto, na área de Hotelaria e Restauração, defendido a 07-05-2015.O trabalho agora apresentado – Desenvolvimento e implementação de um conceito de restauração comercial, no âmbito da candidatura à atribuição do TÃtulo de Especialista em Hotelaria e Restauração (área de formação 811), tem por base um projeto do Departamento de Desenvolvimento da empresa Ibersol, do qual o candidato era, há data, responsável.
O projeto em questão foi desenvolvido no perÃodo compreendido entre Junho e Dezembro de 2006 sendo representadas neste trabalho as diferentes fases do processo de desenvolvimento e implementação de um Conceito de Restauração Comercial no âmbito do Portfolio de Conceitos da Empresa
Imagining Futures for Intergenerational Ethics

UIDP/00183/2020This paper explores the relevance of intergenerational ethics in the context of climate change and argues that virtue ethics provides a suitable framework for addressing these ethical concerns. We suggest the inclusion of a new virtue, called prospection, which involves cultivating the ability to think and care deeply about the future, navigate its inherent uncertainties constructively, and ensure the availability of sustainable options for future generations. We suggest that thinking and imagining sustainable futures trigger good dispositions towards future humans, non-humans and nature and that ought to be part of the definition of a good life. We posit that fostering this disposition can inspire and motivate present actions that effectively mitigate climate change. Virtue ethics implies an element of timelessness in morality because the future tends to be there by default; with prospection, the future will be there by design, reinforcing its importance in intergenerational ethics.preprintepub_ahead_of_prin
Understanding consumers use of restaurants in Shopping Centers : an application of the EKB Model
Food and eating habits are getting very complex. The study of eating has become a multidisciplinary
task resorting to scientists from various fields of science like nutrition, public health, food engineering,
marketing, management and, more recently, psychology.
Understanding consumer’s lifestyles is of paramount importance in the actual customer-centric market
where anticipating consumer needs and desires represents a decisive competitive advantage.
Restaurants are the epitome of this complexity producing numerous day-to-day interactions with
consumers on a myriad of issues such as type of food, nutritional concerns, satisfaction of basic
physiological needs and even socialization with staff and other costumers.
Nowadays restaurants are facing rough times with VAT increase and diminishing use due to the
economic downturn. It has never been so important to understand consumer’s needs in order to make
businesses thrive.
The main objective of this study is to better understand how consumers choose one restaurant hoping
to use the acquired knowledge to improve business strategy and tactics. For that, the renowned
Engel-Kollat-Backwell model was used as a theoretical framework assuming that consumption occurs
to resolve a certain need. Due to methodological simplification purposes, work focuses on restaurants
located inside shopping centres, particularly on weekdays.
Literature review of the theoretical model and its application to restaurants combined with the study of
the different aspects of a meal was used to develop a survey about the consumer decision process
when using a restaurant. In order to validate empirical knowledge where substantial differences
between lunch and dinner time occur, participants were asked to share their opinions about both meal
times.
Time and money spent were chosen to be studied as dependent variables. Factorial analysis was
used to identify common factors amongst the independent variables. The independent variables with
the highest absolute loading factor were used to perform four linear regressions in order to find which
variables influenced time and money spent in a restaurant located inside a shopping centre on
weekdays. Demographic variables where also included in the regression models.
Money and time spent is influenced by different variables when it comes to meal time. Lunch time
seems to have a simple process with less relevant variables and dimensions. Attitudes and values on
food-related issues were found to be very significant in explaining the behaviour of the dependent
variables despite some conflicts between attitudes and actual behaviour. Cooking habits as in the
absence of time and will to cook also turned out to be good predictors despite the overall high cooking
skills of the respondents.
Companies should use some of the information delivered to improve some areas of their businesses.
This paper provides a general exploration of the consumer decision process when choosing a
restaurant inside a shopping centre opening the door to further work on a matter that has not received
proper attention from investigators, at least in Portugal.A alimentação e os hábitos alimentares estão cada vez mais complexos. O estudo da alimentação em
geral transformou-se numa tarefa multidisciplinar recorrendo a cientistas das mais variadas áreas
como a nutrição, saúde pública, engenharia alimentar, marketing, gestão e, mais recentemente, a
psicologia.
No atual contexto em que os mercados adotam uma postura centrada no consumidor, torna-se
fundamental entender o seu estilo de vida. A capacidade de antecipar as necessidades dos
consumidores representa uma vantagem competitiva decisiva.
Os restaurantes são o corolário desta complexidade sendo responsáveis por inúmeras interações
diárias com os consumidores em áreas tão dÃspares como o tipo de comida, preocupações
nutricionais, satisfação de necessidades básicas e a socialização com outros consumidores e com os
colaboradores dos restaurantes.
Atualmente, o negócio da restauração encontra-se extremamente pressionado pela subida do IVA e
pela retração do consumo provocada pela crise económica. Entender as necessidades dos
consumidores torna-se, mais que nunca, imprescindÃvel para garantir que os negócios têm sucesso.
Este estudo pretende essencialmente perceber como os consumidores escolhem um restaurante na
expectativa de utilizar o conhecimento adquirido para melhorar as estratégias e táticas dos negócios.
Para isso, recorreu-se ao reputado modelo Engel-Kollat-Backwell como suporte teórico partindo da
premissa que o consumo ocorre para satisfazer uma determinada necessidade. Por questões
metodológicas, o trabalho centra-se no consumo em restaurantes localizados em centros comerciais
durante os dias da semana.
A informação disponÃvel sobre o modelo teórico e a sua aplicação ao negócio da restauração, aliada
ao estudo conceptual das dimensões de uma refeição, deu origem a um inquérito sobre o processo
de escolha e utilização de restaurantes localizados em centros comerciais. Com o intuito de validar a
evidência empÃrica de que há diferenças significativas entre os diferentes perÃodos de refeição, foi
pedido a cada participante que respondesse ao inquérito em contexto de almoço e de jantar.
Foram escolhidas como variáveis dependentes o tempo e dinheiro totais gastos nos trinta dias que
antecederam o preenchimento do inquérito. Foi efetuada uma análise fatorial com o intuito de
identificar fatores comuns entre as variáveis independentes. As variáveis independentes que
apresentaram o fator com o maior valor absoluto foram utilizadas em várias regressões lineares que
pretendem explicar quais as variáveis independentes que influenciam as variáveis dependentes e de
que forma o fazem. Foram ainda incluÃdas nas regressões as variáveis demográficas escolhidas para
caraterizar a amostra de participantes.
Constatou-se que o tempo e dinheiro gasto nas refeições são influenciados por diferentes variáveis
consoante o perÃodo de refeição. Aparentemente, o almoço é um processo mais simples em que o
tempo e dinheiro gasto são explicados por um número mais reduzido de variáveis. As atitudes e
valores sobre determinados assuntos relacionados com a alimentação mostraram ser muito
relevantes na explicação do comportamento das variáveis dependentes apesar de poderem ocorrer
alguns conflitos entre convicções e o comportamento real. A falta de tempo ou vontade para cozinhar também se revelou decisiva na explicação dos modelos apesar de a amostra em estudo revelar
competências culinárias médias elevadas.
As empresas deverão utilizar a informação produzida para melhorar algumas áreas dos seus
negócios. Este estudo disponibiliza uma visão generalizada do processo de decisão na escolha de
um restaurante localizado num centro comercial, criando oportunidades futuras de investigação num
tema que não tem suscitado a devida atenção por parte dos investigadores, pelo menos em Portugal
A Novel Form of Environmental Pragmatism
UIDB/00183/2020 UIDP/00183/2020Moral reasoning typically informs environmental decision-making by measuring the possible outcomes of policies or actions in light of a preferred ethical theory. This method is subject to many problems. Environmental pragmatism tries to overcome them, but it suffers also from some pitfalls. This paper pro- poses a new method of environmental pragmatism that avoids the problems of both the traditional method of environmental moral reasoning and of the general versions of environmental pragmatism. We call it ‘justificatory moral pluralism’ – it develops the intuition that normative ethical theories need not be mutually exclusive. This leaves room for important forms of pluralist environmental ethics that do not require a once-and-for-all prior commitment to an ethical theory when deciding about policies or courses of action related to the protection of the environment. Justificatory moral pluralism offers a viable solution to the recurrent conflicts between efficient environmental decisions and the need for moral reasoning.authorsversionpublishe

Microbes and cancer: friends or faux?
Cancer is one of the most aggressive and deadly diseases in the world, representing the second leading cause of death. It is a multifactorial disease, in which genetic alterations play a key role, but several environmental factors also contribute to its development and progression. Infections induced by certain viruses, bacteria, fungi and parasites constitute risk factors for cancer, being chronic infection associated to the development of certain types of cancer. On the other hand, susceptibility to infectious diseases is higher in cancer patients. The state of the host immune system plays a crucial role in the susceptibility to both infection and cancer. Importantly, immunosuppressive cancer treatments increase the risk of infection, by decreasing the host defenses. Furthermore, alterations in the host microbiota is also a key factor in the susceptibility to develop cancer. More recently, the identification of a tumor microbiota, in which bacteria establish a symbiotic relationship with cancer cells, opened a new area of research. There is evidence demonstrating that the interaction between bacteria and cancer cells can modulate the anticancer drug response and toxicity. The present review focuses on the interaction between microbes and cancer, specifically aiming to: (1) review the main infectious agents associated with development of cancer and the role of microbiota in cancer susceptibility; (2) highlight the higher vulnerability of cancer patients to acquire infectious diseases; (3) document the relationship between cancer cells and tissue microbiota; (4) describe the role of intratumoral bacteria in the response and toxicity to cancer therapy.This research was funded by National Funds through FCT—Fundação para a Ciência e a Tecnologia, I.P., within CINTESIS, R&D Unit, grant number UIDB/4255/2020

Relatório de Estágio apresentado à Escola Superior de Educação de Lisboa para obtenção de grau de mestre em Ensino do 1.º e 2.º Ciclos do Ensino BásicoO relatório que se apresenta relata a intervenção no âmbito da Unidade Curricular Prática de Ensino Supervisionada II, do mestrado em Ensino do 1.º e 2.º Ciclo do Ensino Básico.
O presente documento incide na prática realizada no 4.ºano do 1.ºciclo, descre-vendo de forma reflexiva: os momentos de observação, integrando a avaliação diagnós-tica, a consequente problematização e definição dos objetivos gerais; os momentos de intervenção pedagógica e a avaliação de todo este processo.
No perÃodo de observação, surge o tema de investigação: que atividades desen-volver no sentido de promover o desenvolvimento das diferentes dimensões da Educa-ção para a Cidadania?
Os resultados foram obtidos através dos produtos de várias atividades desenvol-vidas no âmbito das diferentes áreas do currÃculo, e de um questionário efetuado aos alunos, no final do perÃodo de intervenção.
O estudo mostrou que a integração de atividades no âmbito da Educação para a Cidadania nas diferentes áreas curriculares é passÃvel de ser realizada, uma vez que os resultados obtidos, particularmente os aferidos no questionário final, demonstraram a aquisição da maioria das competências visadas.ABSTRACT
The report that is hereby presented accounts the intervention that has been under-taken as part of the II Supervised Teaching Practice Course, that being an element of a Masters in Primary Education.
This document focuses on the practice held at a primary school in a year 4 class. Consequently, this report reflects on the moments of observation followed by an analysis and diagnostic evaluation of the consequent questioning and definition of the overall ob-jectives; the moments of pedagogical intervention and evaluation of this process.
During the observation period, the research topic arises: Which activities should be established to promote the development of different dimensions of Education within Citizenship?
The findings were obtained as a result of the various activities developed in the numerous areas of the curriculum. Additionally, it was also obtained from a questionnaire made to students at the end of the intervention period.
The study showed that it is possible to make subjects cross curricular to integrate Citizenship. This can be achieved since the results, particularly those tested in the final questionnaire, demonstrated the acquisition of the majority of the targeted skills
