    Asociación entre consumo de alcohol y exceso de peso entre estudiantes universitarios de América Latina

    Introducción: El sobrepeso y la obesidad son problemas de salud pública de nivel mundial. Si bien existe información respecto al consumo de alcohol en estudiantes universitarios durante la pandemia, pocos autores han señalado la asociación entre este hábito y el exceso de peso en esta población. El objetivo fue determinar la asociación entre el consumo de alcohol y el exceso de peso en estudiantes universitarios de 10 países de Latinoamérica durante la pandemia por COVID-19. Metodología: Se realizó un estudio transversal y multicéntrico con 4.539 estudiantes universitarios matriculados en diez países de América Latina. Para la valoración del consumo de alcohol se utilizó la pregunta ¿Consumes bebidas alcohólicas? (1 porción 1 vaso de 200 ml). El índice de masa corporal (IMC) se determinó a partir del peso y la altura auto informado. Para determinar si el exceso de peso (IMC ≥25 kg/m2 ) estaba asociado con el consumo de alcohol, se utilizó un análisis de regresión logística, ajustado por edad, sexo, año de estudio, nivel socioeconómico, actividad física y tabaquismo. Resultados: Entre los estudiantes con estado nutricional normal, un 59,6% no consumía alcohol, mientras entre los que presentaban un exceso de peso era un 55,1%. Los estudiantes que consumían 2 o más porciones de alcohol al día tenían 2,18 veces más riesgo de tener exceso de peso (OR: 2.18 [95% IC: 1,26 a 3,77]), comparado con aquellos que no consumían alcohol. Conclusión: Se observó que aquellos estudiantes que consumieron más alcohol tuvieron más probabilidades de tener exceso de peso.     Dietary Patterns and Dietary Recommendations Achievement From Latin American College Students During the COVID-19 Pandemic Lockdown

    This study aimed to compare the diet quality of different dietary patterns among college students from Latin American countries, including vegetarians, vegans, and omnivores during the COVID-19 pandemic. A cross-sectional, observational, multicenter study was conducted including a non- probabilistic sample of university students from 10 countries. University students were invited to participate in the study through social network platforms. Participants were self-reported to have followed a specific dietary pattern; either the Prudent diet, Western diet, Ovo-dairy-vegetarian diet, Fish-vegetarian diet, Strict vegetarian diet (vegan) or other. The last three patterns (vegetarians and vegans) were grouped as following a plant-based diet. A self-assessment survey was used to evaluate healthy eating habits using a questionnaire with values between 1 (do not consume) and 5 (consume) for a total of 9–45 points (higher values represent better eating habits). Unhealthy habits were assessed with nine questions. A total of 4,809 students filled out the questionnaire, and the majority of them were females (73.7%). Murillo et al. College Dietary Patterns During COVID-19 A high percentage have been in lockdown for more than 5 months and were in lockdown when the survey was released. 74.3% were self-reported to follow a prudent diet, while 11.4% reported following a western dietary pattern and 8.8% a plant-based diet. When compliance with healthy and unhealthy dietary habits was analyzed, although all groups had low compliance, the plant-based diet group (56.09 ± 6.11) performed better than the Western diet group (48.03 ± 5.99). The total diet quality score was significantly higher for plant-based diet followers, who also tended to better achieve the recommendations than omnivorous students, especially the ones following a western diet. These results present evidence that young adults such as college-aged students have unhealthy dietary habits.     Blueberry consumption and healthy lifestyles in an emerging market

    Aim of study: This study focuses on the preference for and consumption habits of blueberries (Vaccinium corymbosum L.) in an emerging market. The objective is to analyze the determinants of blueberry consumption in Chile and evaluate to what extent traditional factors, such as income and price, are more determinant than other attitudinal factors and lifestyles.Area of study: The Biobío Region (Chillán City), the second most important region in Chile.Material and methods: A face-to-face survey is applied to a random stratified sample. The survey collected information on adoption of healthy lifestyles, knowledge of blueberries as a natural functional food, some sociodemographic characteristics, and traditional economic factors. A Heckman model is estimated by the Maximum Likelihood.Main results: Results suggest that higher blueberry consumption is positively associated with the adoption of healthy lifestyles, a higher self-perception of healthy habits, and the recognition of blueberries as a natural functional food. The nutritional status reflected that people with a lower body mass index consume fewer blueberries. Finally, traditional factors, such as income and price, are showed to be more influential on blueberry consumption than attitudinal and lifestyle factors.Research highlights: Chilean consumers perceive blueberries as a healthy product, which can contribute to adopt healthier lifestyles. Domestic markets should be supplied with higher quality product taking into account that the demand is price inelastic. Branding and packaging with functional claims could be an efficient strategy to increase domestic consumption

    Development and Validation of a Set of Instruments to Measure Food Environments

    Background: There is worldwide interest in measuring local food environments (FEs). The aim of this study was to develop and validate a set of instruments to evaluate FEs in Chile. Methods: Based on the development and validation of four instruments to measure FEs, a literature review, an evaluation by experts, and the implementation of a pilot tool in the FEs of schoolchildren from nine public schools in the commune of Chillán, Chile, were used. Results: A tool to evaluate FEs was provided, based on three dimensions: availability, variety, and advertising of healthy foods. A total of 1928 foods points of purchase were evaluated. The reliability was evaluated by Cronbach’s alpha. Some 74% of the foods’ points of purchase were store locations. The reliability of the four instruments was high to acceptable (store: 0.90; institution: 0.77; street food: 0.74; restaurant: 0.68). Unhealthy foods were highlighted by the scores obtained: store (6.08 ± 4.07; range: 0–13), restaurant (3.95 ± 1.75; range: 0–10), street food (1.18 ± 1.56; range: 0–7), and institution FEs (3.38 ± 2.78; range: 0–9). Conclusions: The results of this tool can provide information to governments for incorporating structural measures to ensure adequate availability, variety, and advertising of healthy foods in different FEs

    Valorization of extracts from maqui (Aristotelia chilensis) and calafate (Berberis microphylla) biowaste blends by supercritical fluid and pressurized liquid extraction

    Maqui and calafate biowastes were fractionated using emerging technologies such as supercritical fluid extraction (SFE) and pressurized liquid extraction (PLE) to obtain bioactive compounds. An extraction pressure of 450 bar and 60 °C temperature were the optimal conditions for SFE, which produced an 8.48 % extraction rate and 2011.6 μg TE/g oil antioxidant capacity. The optimal conditions for PLE included 60 °C temperature and 3 extraction cycles; values were 10.19 %, 2285.21 μg TE/mL, 11.28 μg GAE/ml, and 540.25 mg eq cya-3-glu/ml or 501.13 mg eq dpd-3-glu/ml for percentage extraction, antioxidant capacity, total polyphenol content, and total anthocyanin content, respectively. Temperature affected the process in both techniques by degrading antioxidant compounds in SFE and facilitating PLE penetration by softening the plant matrix. Serial extraction and biowaste blends increased the content of nutrients with health benefits, especially the maqui/calafate biowaste blend (BB-M/C (75/25). Industrial relevance: A combination of the SFE and PLE methods produced enriched fractions with different lipophilic and hydrophilic compound profiles from BB-M/C. This could be an innovative approach to obtain new bioactive compound blends of industrial interest

    Food Insecurity Is Associated with the Quality of Diet of Non-Institutionalized Older Adults from a Southern Chilean Commune: A Cross-Sectional Study

    As the population ages, greater attention to age-related health problems related to diet and lifestyles is needed. Here, we sought to evaluate the associations between demographic and clinical characteristics and food insecurity with the quality of diet of non-institutionalized elderly from a southern Chilean commune. We performed an analytical cross-sectional study in a sample of 376 older adults. Nutritional status was evaluated through anthropometric measurements. Quality of diet was determined by the healthy eating index (HEI), obtained through the frequency of consumption questionnaire. Socioeconomic, demographic, and lifestyle variables were also collected. Ordinal logistic and Poisson regression models were applied to study associations with quality of diet. The sample consisted of more women (81.6%) than men (18.4%). Most older adults were found to live in a situation of vulnerability or poverty (82.4%), with most having food security (65.7%). According to the HEI, only 14.1% had a good quality of diet, 83.8% had diet in need of improvement, and 2.1% had an unhealthy diet. There was an association of food insecurity and cardiovascular risk (according to waist circumference) with lower quality of diet categories. However, an association with the unhealthy quality of diet category was not confirmed with Poisson regression analysis, which was possibly due to the low number of subjects in that category (n = 8, 2.1%). Other modifiable factors like physical activity, hours of sleep, and polypharmacy were not associated with lower quality of diet categories. Socioeconomic status, which is a structural health determinant, was not associated with decreased quality of diet. Since this was a cross-sectional study performed on a small sample from a Chilean commune, directionality of associations cannot be discerned, and future longitudinal studies could aim to better characterize these associations in larger samples of elderly patients
