    Development of a Model for Security and Usability

    This research addressed the development of a consolidated model designed especially to cover the security and usability attributes of a software product. As a starting point, we built a new usability model on the basis of well-known quality standards and models. We then used an existing security model to analyse the relationship between these two approaches. This analysis consisted of a systematic mapping study of the relationship between security and usability as global quality factors. We identified five relationship types: inverse, direct, relative, one-way inverse, and no relationship. Most authors agree that there is an inverse relationship between security and usability. However, this is not a unanimous finding, and this study unveils a number of open questions, like application domain dependency and the need to explore lower-level relationships between attribute subcharacteristics. In order to clarify the questions raised during the research, we conducted a second systematic mapping to further analyse the finer-grained structure of these factors, such as authentication as a subset of security and user efficiency as a subset of usability. The most relevant finding is that efficiency does not depend on the security level during the authentication process. There are other subfactors that require analysis. Accordingly, this research is the first part of a larger project to develop a full-blown consolidated model for security and usability

    Public perceptions and user experience study on the use and adoption of a mobile internet e-Voting smartphone app within the Australian context

    The Doctor of Philosophy (Innovation) (PhD.I) is a project-based higher research degree in which professional and industrial expertise combine with academic theory in the identification and creation of innovation. This innovation portfolio project is the culmination of a five-year journey on the first Australian university study on public perceptions and user experiences of using mobile internet e- Voting in the Australian context. This innovation portfolio project has produced baseline data on the perceptions of the Australian public, a prototype mobile voting smartphone app (the innovation), which allows for secure registration, casting a vote in a federal election and submitting a response to a national survey, and a user experience study on the app and A/B tests of various features. Trust is a core foundation of user adoption and, as such, is the underlying theme of the portfolio. Guided by the technology acceptance model (TAM) (Davis, 1989), data collected from an anonymous survey on perceptions of the Australian public towards using a mobile internet e-Voting platform (N = 295) are presented and analysed. Of the respondents, 72.88% either Completely Trusted or Slightly Trusted government and commercial systems as opposed to 15.93% who either Completely Distrusted or Slightly Distrusted government and commercial systems. The survey also found that 75.25% of respondents were in favour of using mobile internet e-Voting, with 15.93% of respondents requiring greater information about the technology and 8.82% being against its utilisation. The top appeals of the platform were its mobility (91.40%), verifiability (72.90%) and Innovation Portfolio Project speed (72.50%), with the top concerns being manipulation (75.10%), retrieval (65.30%) and monitoring (63.20%) of cast votes by malicious parties or software. This portfolio also provides a chronologically documented development journey of the “mobile voting app” project. Utilising the Scrum methodology, this portfolio documents the beginning of the development project (envisioning session), the product backlog construction, sprint cycles, retrospectives and features details. Next, the mobile voting app is user tested by way of qualitative in-depth interviews to gather perceptions of five participants from a young and tech savvy cohort who are likely to be early adopters (Rogers, 2010). This user experience study found that participants were pleased with the usefulness and simplicity of the app. Most participants stated that they would use the mobile voting app if it were made available in the next election. These findings correlate with the constructs of the TAM (Davis, 1989), which state that perceived ease of use (PEOU) and perceived usefulness (PU) directly influence a user's attitude towards new technology (A). Those who would not use the app in the next election were either those who had not voted in an Australian election previously and stated they would like to vote using paper ballots first then would use it in the following election or were those who has reservations about the technology and its usefulness, primarily around government support. These findings correlate with the unified theory of acceptance and the use of technology model (UTAUT) by Venkatesh, Morris, Davis, and Davis (2003), which states that the degree to which an individual believes that an organisational and technical infrastructure exists to support use of the system (facilitating conditions), directly influences the use behaviour and the moderating variable of experience. This portfolio concludes with a personal reflection on the findings and process of the works undertaken, the anticipations for this research and potential pathways for further development and application. Commentary is also provided on public events that occurred during the time of the research that widely impacted on public perceptions of the technology, including the 2016 census debacle, the 2015 NSW iVote hacking report and the Russian interference in the 2016 US presidential elections

    11th International Conference on Predictive Modelling in Food: book of abstracts

    It is our great pleasure to welcome you in Bragança, Portugal, for the 11th International Conference of Predictive Modelling in Food (ICPMF11). Since 1992, ten ICPMF editions have taken place, providing a forum for the exchange of ideas, identification of research needs and novel approaches for the advancement of predictive modelling towards ensuring safety and quality of foods. Bragança is a typically-Portuguese old town (Romanic origin dates back to the 10th century), located by the Natural Park of Montesinho – one of the wildest forest zones of Europe – and the Douro Valley – the third oldest protected wine region in the world; and surrounded by traditional villages of a distinctive rustic beauty. Bragança houses several traditional industries producing a myriad of local foods, such as cheese, fermented meats, wine, chestnuts and honey, which provide substantial economic sustainability to the region. ICPMF11 reunites food researchers, stakeholders, risk assessors and users of predictive models to present recent developments and trends in modelling approaches for food quality, safety and sustainability. We succeeded to gather a significant number of delegates from over the world to participate in a comprehensive scientific programme that includes keynote lectures, oral communications and posters, allocated in sessions focusing on: . Advances in predictive microbiology modelling . Predictive modelling in innovative food processing and preservation technologies . Advances in microbial dynamics and interactions . Advances in software and database tools . Meta-analysis protocols and applications . Advances in risk assessment methods and integration of omics techniques . Advances in predictive modelling in food quality and safety . Predictive mycology . Individual cell and whole-cell modelling Apart from those, ICPMF11 features for the first time a special session dedicated to “Innovative approaches for ensuring safety of traditional foods” and the Round Table: “Assuring the Safety of Traditional Foods: A Scientific Contribution to Protecting our Cultural Heritage”. We, as food researchers based in a Mediterranean mountain region, are aware that the production of traditional foods plays a key role in the development of rural regions, since the agricultural commodities used as raw materials are generally produced locally, allowing and stimulating local commercialisation, thus contributing to a sustainable environment, and employment in rural populations. It was inspiring for us to have received many submissions from both developed and developing countries on the valorisation of traditional foods through the application of up-to-date modelling research. Besides that, one morning workshop and three afternoon tutorials were programmed during the day before the scientific programme. The workshop “How to benefit from the Risk Assessment Modelling and Knowledge Integration Platform (RAKIP)” was organised by Matthias Filter. The parallel tutorials “Towards an integrated predictive software map: Practical examples of use of predictive microbiology software tools for food safety and quality”; “Advanced methods in predictive microbiology” and “Topics in quantitative microbial risk assessment using R” were organised by Fernando Pérez-Rodríguez, Pablo Fernández, Alberto Garre and Mariem Ellouze; by Lihan Huang, Cheng-An Hwang and Vasco Cadavez; and by Patrick Njage and Ana Sofia Ribeiro Duarte, respectively. We thank these organisers for their proposals. Abstracts, reviewed by the ICPMF11 Scientific Committee, are published in the present Book of Abstracts while peer-reviewed original research articles will be invited to be published in ICPMF11 Special Issues in the International Journal of Food Microbiology and Microbial Risk Analysis. To stimulate the participation of postgraduate students and young researchers, two kinds of awards were arranged: the Young Researcher Best Oral Presentation prizes, sponsored by Elsevier; and the Developing Scientist Best Poster prizes, sponsored by the International Committee on Food Microbiology and Hygiene (ICFMH) of the International Union of Microbiological Societies (IUMS). For the first time, this ICPMF edition gives out two awards for the Senior Researcher Best Oral Presentation, sponsored by the open-access journal Foods – MDPI. In addition to the scientific programme, we prepared an exciting social programme for delegates to appreciate the rich culture, gastronomy and traditions of Bragança, w includes welcome reception, live music, tasting of regional food and a gala dinner in the Castle of Bragança.     Authenticity and Quality of Muscle Foods: Assessing Consumer Trust and Fraud Detection Approaches

    Authenticity issues and fraudulent practices regarding animal products are affecting consumer confidence. Verifying the description, composition, processing or origin of foods can be challenging. To explore British and Kurdish consumers’ perceptions of kebab meat products, focus groups and questionnaire surveys were applied. About 40% of participants in the UK tend to purchase fewer processed meats after the European horsemeat scandal. Issues raised by participants indicated their concerns about the declaration of species, meat content, and other ingredients incorporated in kebab and other meat products. Lack of consumer trust has been linked to authenticity issues. Reactions towards the addition of fat-replacing inulin were positive by more than half of respondents. A further study aimed to investigate the effect of commercial inulin (CI) and Jerusalem artichoke (JA) tubers as fat replacers on the eating quality and overall acceptability of kebabs. Inulin flour prepared from JA by a simple protocol presented advantages with about 10% higher cooking yield and overall acceptability when compared with CI. Levels of inulin as low as 0.5% were detected in meat products using enzymatic assay, which could be relevant to detect additives and enforce labelling requirements. The authenticity (origin and species) was investigated in fish samples from commercial markets in Erbil, Kurdistan Region of Iraq (KRI). The declared fish species was checked using DNA barcoding with Cytochrome b region. A 10 % rate of mislabelling occurred only for wild common carp (Cyprinus carpio), with 9 out of 12 discovered to be the related species goldfish (Carassius auratus), which was deemed to be accidental rather than deliberate fraud. Such occurrences were from street markets and fishmongers, while none were from supermarkets. Wild and farmed common carp samples were not discriminated by DNA barcoding. Further fingerprinting using compositional profile and nearinfrared spectroscopy (NIRS) together with chemometric analysis aimed to predict composition and discriminate between wild and farmed common carp and species identity. NIRS-predictions of composition and some macrominerals of fish have a strong correlation with the references. NIRS with chemometric analysis is promising, but were not satisfactorily accurate for micro-minerals. Even with no clear solution from principal component analysis (PCA), NIRS-PCA may contribute to discriminating sample groups, but not for authentication when used alone.     Next Generation Sequencing (NGS) combined with powerful bioinformatic approaches are revolutionising food microbiology. Whole genome sequencing (WGS) of single isolates allows the most detailed comparison possible hitherto of individual strains. The two principle approaches for strain discrimination, single nucleotide polymorphism (SNP) analysis and genomic multi-locus sequence typing (MLST) are showing concordant results for phylogenetic clustering and are complementary to each other. Metabarcoding and metagenomics, applied to total DNA isolated from either food materials or the production environment, allows the identification of complete microbial populations. Metagenomics identifies the entire gene content and when coupled to transcriptomics or proteomics, allows the identification of functional capacity and biochemical activity of microbial populations. The focus of this review is on the recent use and future potential of NGS in food microbiology and on current challenges. Guidance is provided for new users, such as public health departments and the food industry, on the implementation of NGS and how to critically interpret results and place them in a broader context.     Subtitling Cookery Programmes from English to Traditional Chinese: Taiwan as a Case Study

    Within translation studies, the topic of food and translation is still underresearched and the understanding of subtitling cookery programmes is also very limited. This research hopes to bridge the current research gap, by providing an overview of the classification of food-related texts and their embedded linguistic characteristics, thus expanding the knowledge in regard to this matter. // The research also sets out to understand the nature of two specific linguistic items, sensory language and culture-specific references, as well as the translation strategies used in subtitling them. The methodological foundation of the thesis builds upon the framework of the Toury’s(1995) notion of translation norms, realised by Pedersen’s analytical model. In addition, the framework of product experience is also consulted to help contextualise sensory language and its classification. // The analysis is carried out on a corpus of 480 minutes which includes two cookery programmes and represents two formats: the modern format, Jamie’s 15-Minute Meals (Channel 4, 2012) and the cooking competition format, The Taste (Channel 4, 2014). All sensory language and culture-specific references present in the corpus have been identified and their translation from English into Traditional Chinese analysed from both quantitative and qualitative viewpoints in an attempt to reveal the prevalent translational trends
